W<strong>at</strong>er Crystals<br />

W<strong>at</strong>er Kefir or Japanese W<strong>at</strong>er Crystals have also been<br />

referred to as Sugary Fungus, Tibicos, Ginger Beer Plant,<br />

California Bees, W<strong>at</strong>er Kefir Grains, Tibetan Mushroom<br />

grains, snow lotus, w<strong>at</strong>er crystals, tibi, Kephir, Paris, Kephir,<br />

kefir fungus, kefir d'aqua,and more. Regardless if they all<br />

are the same or are as unique and different - they all typical<br />

share a similar recipe and each are healthy and beneficial.<br />

They all are small gel<strong>at</strong>inous masses <strong>of</strong> beneficial bacteria<br />

and yeasts. Which yeasts and bacteria domin<strong>at</strong>e will<br />

contribute to supple as well as dram<strong>at</strong>ic differences. The<br />

influence <strong>of</strong> wild bacteria and yeasts as well as personal<br />

brewing preferences play an active ongoing role. For most<br />

home brewers wh<strong>at</strong> is important is simply taste, pleasure<br />

and a hint <strong>of</strong> health.


W<strong>at</strong>er Crystal is different than Milk<br />

Kefir, though Milk Kefir Grains may<br />

also ferment juices similar to<br />

W<strong>at</strong>er Kefir.<br />

W<strong>at</strong>er Crystals grains are reusable. Once a b<strong>at</strong>ch <strong>of</strong> w<strong>at</strong>er<br />

kefir is finished culturing, simply remove the w<strong>at</strong>er kefir<br />

grains and place them in fresh sugar w<strong>at</strong>er, juice, or coconut<br />

w<strong>at</strong>er.


Milk Kefir Grains<br />

Milk Kefir is considered as the original or traditional form <strong>of</strong><br />

Kefir and can be made using cow or go<strong>at</strong> milk. To prepare it<br />

<strong>at</strong> home, start by taking a teaspoon <strong>of</strong> kefir grains in one cup<br />

<strong>of</strong> milk. Keep it loosely covered with cheese cloth in a warm<br />

place for 24 hours. The bacteria and yeast from the grains<br />

will ferment the milk and convert it into Kefir. The Kefir will<br />

have a thicker consistency than milk and will have a tangy<br />

flavor, somewh<strong>at</strong> like drinkable yogurt. All you need to do is<br />

strain the grains using a plastic sieve & wooden spoon and<br />

your cup <strong>of</strong> Kefir is ready. You can reuse these milk kefir<br />

grains till they remain healthy, by making Kefir every 24<br />

hours, or you can put them in a cup <strong>of</strong> milk and refriger<strong>at</strong>e.
