Valpolicella Superiore Ripasso Classico“Croce del Gal”
Is a wine obtained from aged grapes of Corvina Veronese, Corvinone,
Rondinella and Croatina, selected from our best 50 year old vines. This
wine is produced in a limited amount. The grapes are collected at the
beginning of October, then left to rest in small racks until November,
and then they are prepared using the old technique of ”Ripasso”, which
is to referment the Valpolicella Superiore “d’annata”on the Amarone
Croce del Gal skins, resulting in an improvement of colour, intensity of
fragrance and tannicity.
Colour:
intense ruby red with garnet red reflections.
Fragrance:
full bodied and complex, ripe cherries, spices, tobacco, vanilla,
chocolate and soft fruits fragrance.
Taste:
persistent and austere, with excellent aromatic balance.
Cherries and soft, elegant tannicity aftertaste.
Vinification:
the “Valpolicella Superiore d’annata” is fermented on the Amarone
“Croce del Gal” skins.
Refining:
circa 12-18 months in french oak barrels of various sizes.
Gastronomic advice:
red meats, wild game, roasts, seasoned cheeses, tasty pasta dishes. This
is a good meditation wine; serving temperature is around 18-20 °C in
large crystal glasses. It’s advisable to open the bottle at least an hour
before serving.

Geographical area:
Sant’Ambrogio di Valpolicella (Verona) in the Gargagnago area,
also known as “Borgo dell’Amarone”, that is one of the five historical
communities of the Valpolicella Classica area.
