Steeped in tradition and
history, Fawsley Hall Hotel in

Rachel Harris is head chef at Fawlsey
Hall Hotel in Northamptonshire, where
she’s been creating the mouth-wateringly
delicious menu for the last nine years.
She recently took some time out of the
kitchen to chat food with us…

INTERVIEW
What made you want to be a chef and how
long have you been doing it?
A passion for cooking from a very early age
meant becoming a chef was an obvious and
logical choice, and I’ve now been doing it for
20 years.
What do you look for when you create a
new dish or menu? What’s your main
considerations?
Pleasing the guest is my top priority. Classic
dishes prepared and presented in a modern way
is a great concept. Consistency is also important.
A dish must be delivered the same, whether we
have 20 or 200 guests.
What’s proving to be the most popular dish
on your menu this month and why do you
think that is?
Caramel Custard, Honeycomb, Banana Sorbet,
Coffee Soil. This dessert has classic flavour
combinations that work really well. I think a
guest can easily envision the hmmmm factor
when they see this on the menu!
What’s your favourite cuisine and why?
Impossible to pick just one. Although sushi is
a firm favourite with its fresh, clean, bold
flavours. Pickled Ginger, Wasabi, Soya,
Toasted Sesame – in a word, heaven!
Which famous person, dead or alive,
would you love to cook for and what
would you serve them?
I love cooking for anyone. Great tasty food,
in the moment!
The #shelfie - a chef’s five must have herbs
and spices always available on the shelf!
What are yours and why?
Cardamom because it’s wonderfully fragrant
and has in-depth flavour that works very well
with chocolate.
Vanilla, of course, for its flavoursome simplicity.
Thyme and Basil as they’re versatile herbs that
lend themselves perfectly to fruit.
Salt! A seasoning essential!
Do any celebrity chefs inspire you?
Marco Pierre White, The Roux Brothers and
Raymond Blanc were all very inspirational
early in my career. Rather than resembling a
peer perhaps we as chefs share a collective
ethos for passion, hard work and great food.
If you were stranded on a desert island and
allowed one item or ingredient from your
kitchen, what would it be and why?
A large heavy duty chef’s knife. Hopefully to
enhance the preparation of local produce like
fish and coconuts!
When you go home, who does the cooking?
Are you territorial in the kitchen!?

Serves one

CHEF’S CORNER GROUP
Caramel
Custard
Ingredients
10 egg yolks
500g double cream
170g whipping cream
100g castor sugar
70g white chocolate
Method
Place the sugar and 30g of water in
a pan. Bring to the boil watching
constantly. The colour of strong tea
is required. Remove from heat and
gently add the cream, being careful to
pour away from yourself because the
mix is likely to bubble and splatter.
Return to a medium heat, stirring
until the caramel has dissolved and
simmering has occurred.
Depending on your oven, this could
be between 20 and 30 minutes.
Carefully remove from the water bath
and allow to cool, ideally overnight is
best. The custard can be lifted easily
from the dish and cut into your desired
shapes using a hot knife.
For a lovely crunchy caramelized
top sprinkle lightly with castor sugar
and glaze gently with a blow torch.

chocolate and honeycomb flavours.

In a heat proof bowl whisk the yolks
until just combined. Very slowly pour
in the caramel cream whisking
constantly. Add the white chocolate
and stir until melted. Pass the mix
through a fine sieve.
Line an oven dish approx. 22cm
square and 5cm deep with a double
layer of foil. Pour in the custard mix
and place in a second larger heat
proof dish. Fill half way with cold
water thus creating a water bath.
Cook at 110C until the custard is no
longer liquid but has the slightest
wobble.
