Hall Hotel in Northamptonshire, where<br />

she’s been creating the mouth-wateringly<br />

delicious menu for the last nine years.<br />

She recently took some time out of the<br />

kitchen to chat food with us…<br />

What made you want to be a chef and how<br />

long have you been doing it?<br />

A passion for cooking from a very early age<br />

meant becoming a chef was an obvious and<br />

logical choice, and I’ve now been doing it for<br />

20 years.<br />

What do you look for when you create a<br />

new dish or menu? What’s your main<br />

considerations?<br />

Pleasing the guest is my top priority. Classic<br />

dishes prepared and presented in a modern way<br />

is a great concept. Consistency is also important.<br />

A dish must be delivered the same, whether we<br />

have 20 or 200 guests.<br />

What’s proving to be the most popular dish<br />

on your menu this month and why do you<br />

think that is?<br />

Caramel Custard, Honeycomb, Banana Sorbet,<br />

Coffee Soil. This dessert has classic flavour<br />

combinations that work really well. I think a<br />

guest can easily envision the hmmmm factor<br />

when they see this on the menu!<br />

Caramel<br />

Custard<br />

Ingredients<br />

10 egg yolks<br />

500g double cream<br />

170g whipping cream<br />

100g castor sugar<br />

70g white chocolate<br />

Method<br />

Place the sugar and 30g of water in<br />

a pan. Bring to the boil watching<br />

constantly. The colour of strong tea<br />

is required. Remove from heat and<br />

gently add the cream, being careful to<br />

pour away from yourself because the<br />

mix is likely to bubble and splatter.<br />

Return to a medium heat, stirring<br />

until the caramel has dissolved and<br />

simmering has occurred.<br />

Depending on your oven, this could<br />

be between 20 and 30 minutes.<br />

Carefully remove from the water bath<br />

and allow to cool, ideally overnight is<br />

best. The custard can be lifted easily<br />

from the dish and cut into your desired<br />

shapes using a hot knife.<br />

For a lovely crunchy caramelized<br />

top sprinkle lightly with castor sugar<br />

and glaze gently with a blow torch.<br />

Delicious paired with banana,<br />

chocolate and honeycomb flavours.<br />

In a heat proof bowl whisk the yolks<br />

until just combined. Very slowly pour<br />

in the caramel cream whisking<br />

constantly. Add the white chocolate<br />

and stir until melted. Pass the mix<br />

through a fine sieve.<br />

Line an oven dish approx. 22cm<br />

square and 5cm deep with a double<br />

layer of foil. Pour in the custard mix<br />

and place in a second larger heat<br />

proof dish. Fill half way with cold<br />

water thus creating a water bath.<br />

Cook at 110C until the custard is no<br />

longer liquid but has the slightest<br />

wobble.<br />
