EDITOR’S
LETTER
Dear Forever You Readers,
I am delighted to welcome you to the
My goal is to provide you twice a year
with tips on fashion, beauty, health,
very fortunate to be surrounded by people who are as
passionate about Forever You as I am. I want to thank the
entire Forever You team for the hard work and dedication!
Enjoy reading this issue and hopefully you will be inspired
A Slice of HEAVEN
at SINGITA GRUMETI
V
ast and unspoilt, there is a sense of immense, unending space at Singita
Grumeti, a private concession spanning 350,000 acres of untouched wilderness
in northern Tanzania. Here, Singita operates a handful of properties,
each one strategically located to give guests the best opportunity of experiencing the
annual migration together with unrivalled sightings of high concentrations of game
throughout the year. Singita Explore is a luxury, mobile tend camp set up in prime
locations for the exclusive use of six to twelve guests. You can have a glamorous,
self-contained retreat with four guest suites, a 25-metre lap pool and tennis court
at Singita Serengetit House. For guests wanting extreme exclusivity and personal
attention, combining Singita Explore with a few indulgent days at Singita Serengeti
House is the perfect safari.
8
Singita Explore is as close to nature as you can get. It’s a return to the simplicity and authenticity of safari life
but with a thoroughly modern sensibility and freshness about it. It’s camping but without having to forfeit the
creature comforts or attentive service that are intrinsic to a Singita experience. Everything about the camp
is designed for minimal energy consumption with little environmental impact. A key difference with a mobile tented
camp is that it can be moved directly into the path of the annual migration or to a particularly scenic location in the
reserve depending on the season, the weather and movement of game. There’s nothing quite like having your tent
pitched in the perfect spot.
Being in the middle of the bush surrounded by miles and miles of nothingness lends an adventurous, spontaneous
atmosphere to each day. Connecting guests to their natural surroundings is subtly orchestrated by a dedicated team
of perceptive, creative staff in a myriad of ways, from conjuring up inventive meals to setting up unique locations
in which you can enjoy it all. Cleverly curated spaces dedicated to relaxed lounging, casual dining or drinks with a
view are set up beyond the tents in open grasslands or beneath the shade of trees, creating a sense of freedom and
abundant space and enticing guests out into the open. Whether it’s a table set up for an intimate dinner beneath
the stars or a wholesome breakfast cooked over the coals and eaten socially around the fire, each day has an air of
expectation and excitement about it.
With a private guide, chef, camp host and camp staff, activities can be arranged on a whim, game drives may be as
long or as short as you choose, and interactive bush walks or a horseback safari can easily be arranged, too. The
awe and wonder attached to each new discovery in the bush create precious bonds and priceless shared memories.
Singita Explore has six spacious guest tents and two large tents for dining and relaxation, allowing for two individual
mobile camps to be operated at the same time, depending on the number of guests. As few as two people can book
one camp and have complete privacy while a second camp can be set up elsewhere in the reserve for a separate party.
All the tents have luxurious, layered interiors by Cécile & Boyd’s, inspired by safari’s most dependable workhorse, the
Land Rover. As enchanting as they are practical, each tent has an en suite bathroom with a hot bucket shower and a
flush toilet. Attention to detail, from ample throws and cushions to books and deliciously scented bathroom amenities,
enhances the sense of luxury, generosity and comfort.
A couple of nights under canvas at Singita Explore followed by a few nights at Serengeti House maximises time spent
in the reserve for guests wanting exclusive use. Although the two experiences are quite different, what they have in
common is a level of privacy and exclusivity that meets a growing demand amongst global travelers for fluid, flexible
schedules that doesn’t have to be shared with anyone else and, in fact, don’t feel like schedules at all.
At Serengeti House, guests dictate the pace and rhythm of each day. Diversions such as tennis, swimming, spa
treatments, archery, and mountain biking, offer a soft landing after two nights of camping – even if it is the Singita
Explore way.
TIME
13
14
Vintage would be the most popular if
weddings were a clique. Why? Because
vintage weddings never go
out of style. Whether it’s vintage in terms of the
reception design, the bride’s wedding dress,
floral arrangements or any other wedding detail
that you can think of, you’re clearly headed
to the right direction because you can never go
wrong on this one. Stunning and timeless, that’s
what vintage is all about. Sadly, there are people
out there that only limit vintage to things and
schemes that are old or pre-loved. There are
actually a lot of wedding magazines, websites
and blogs out there that are all about vintage to
help you out, so it is impossible that you’ll run
out of inspiration. But one thing to start you off
with is that vintage must always be around pastel
shades of every sort, like lilac, blue, lemon,
and white or ivory. At the end of the day, vintage
will become more meaningful when it is personal
and original according to your heritage.
Also, it should be tagged not only as a theme,
but as a form of celebration of what is going to
be a life-long commitment. The wedding should
embody the uniqueness of the traits, personalities,
hobbies and interests of the couple that are
all about to be merged together forever. Thus,
don’t feel pressured to have this kind of wedding
just because it is the current trend - do it
because you both share a passion for vintage.

WEDDING
DREAM
WHITE LILAC INC.
22Event Design Studio
Dashing floral arches, decorated walls,
and a night to remember. Choosing
an event design studio may be the
way to go if your wedding calls for
a beautiful and custom theme. We
are glad to have had the opportunity
to speak with Sunny Ravanbach,
President of White Lilac Inc: A design
studio that creates phenomenal event
designs for any occasion.
Tell us a little more about who White
Lilac Inc. is and the services that the
company provides.
White Lilac is a comprehensive event
design studio. We provide everything
from invitations to full production. What
sets us apart is that we often custom
make each item to suit a client and we
maintain all production under our roof.
We have a team that builds structures,
a team that does graphic design, and a
team that does all florals.
Your website www.whitelilacinc.com
has many elegant themes to choose
from; where do all of the ideas come
from?
The inspiration for our events is a reflection
of each client’s individuality and style. Our
job is to best interpret what each person
sees in her or his head and bring it to life
while maintaining the white lilac stamp
(which is always a bit restrained ).
Speaking of themes, what is the most
exciting, out of this world, or difficult
wedding theme White Lilac Inc. has
created?
I would say the most difficult jobs /
themes don’t stem from weddings. They
come out of our corporate events for
high end fashion brands and are difficult
not because the clients are difficult, but
rather the standard of creativity and
uniqueness is set so high that we have
to constantly re-invent the wheel and
push ourselves beyond our comfort
zone. These events in turn become the
inspiration for our brides and weddings.
23
WHEN DREAMS
COME TRUE...
What are the latest flower trends
for weddings?
Don’t get me started with trends
for weddings and flowers! I try very
hard to push brides out of their
comfort zone of blush and ivory but
it’s a difficult task. I would say the
trend is slowly infusing elements
brides see in our events into their
wedding - meaning I’ll do an event
with all custom walls and floors
but it’s too far out of the comfort
zone for a wedding so brides will
incorporate bits and pieces like
a custom floor but still within the
frame of the super feminine floral
desires of blush and ivory. If I had
one piece of advice for a bride :
be bold, be brave and push the
envelope ever further!
Does White Lilac Inc. have a
signature style? If so, how has
was it created and how has it
evolved?
White Lilac definitely has a signature
style. The philosophy is
restrain; more and more doesn’t
mean it’s better. I often tell my
clients, “No, you don’t need this.
Even in the most over the top wedding
or event you’ll never see an
element that you can say, “Well the
wedding was not necessary“.
What sets White Lilac Inc. apart
from other event and floral
designers?
24
What sets White Lilac apart from
other event companies is the
cohesiveness of vision. Because
we keep everything under one
roof, every detail matches perfectly.
From the smallest element to the
large picture, we create a seamless
story with texture, color and style.
Why should people choose White Lilac Inc. as
their event and floral designer?
I can’t convince anyone to choose us vs. another
design firm, but what I can tell you is that the deep
level of care we have for the outcome of the event
supersedes anything. We care; we care a lot about
our clients and the end product. If things need to
be added to make it perfect, but it’s out of a clients
budget, we still do it. Heck, maybe we even care
more than the client at times!
25
26
INSPIRATION
How long in advance should couples contact White
Lilac Inc. to begin planning?
The time line for planning and production is different with
every project. I’ve been asked to produce events for Louis
Vuitton with custom walls, floors, tables, and chairs in less
than 10 days and I can always pull it off. I think it’s more
important to book in advance so I don’t get booked with
multiple events. That way I can dedicate myself to the
details of one project!
Is there any advice you would like to give to future
newlyweds out there?
If there is any advice I could give, and I mentioned this
earlier, try and break out of your comfort zone. You have
one opportunity to make your big day a signature affair of
your personal style, so do it! Do not conform!
is nothing compared
to natural beauty, but that
doesn’t mean you can’t
There
have extra shine. Picking
the Beauty in Nude theme for your
wedding can accentuate all of your
natural beauty. Start off with an
elegant walk down the aisle with a
glimmering nude gown and have all
your guests in awe. A nude gown
exudes confidence and class. It enhances
all of your best features and
takes you back to a posh natural. To
push your look over the top, add a
slick and chic hair style and a shimmery
heel. Unlike other themes, this
theme looks just as or even more
elegant with less work. It allows you
to mix and match all natural products
and looks great on any skin tone.
Celebrities have displayed various
nude gowns over the years at many
live events. Reviewers have used
words such as dashing, elegant, and
beautiful in their recollections of the
theme. The popularity and the beauty
of this theme make great for the posh
wedding you want.
If your wedding is a dream your heart wished, you
might want to think about a Cinderella-inspired gown.
These dresses are tighter at the top and fuller at the
bottom, with tulle and lace accents throughout. Brides
love this style because they can customize the top half
to meet their
specifications
– whether they
want a strapless
LEE
SEUNG-JIN
THE KOREAN STAR ON
THE WEDDING SKY
Since Lee Seung-Jin was a little girl, her heart has been beating for fashion.
During her childhood she spiced up her clothes and drew all kinds of
dresses that she saw. Nevertheless, at the beginning of her college days,
fashion seemed to be just a hobby and not her future job. So she took a more conservative
way and studied education until the moment when she felt that she was
meant to be in the wedding industry. She decided to follow her big passion and
changed her major to fashion. This was the start of her success.
Now Lee Seung-Jin is not only the star on the Korean wedding sky, but she is also
the first Asian designer who joined the Barcelona Bridal Week. Lee knows exactly
how to enhance the beauty of every woman. This is probably the reason why celebrities
wear her divine dresses on the famous red carpet and on their big days.
Her simple design and beautifully handmade details capture the elegance of the
bride and highlight her body contours in a very flattering way. The dresses are constructed
from the finest fabrics. Lee especially loves to work with solid silk.
Lee’s advice for the wedding dress is choosing one which highlights the bride’s
personality and style. A bride should wear a gown because it makes her feel unique
and special, not because it is in fashion.
Justin Alexander
Designer Sketch
Justin Alexander creates Artwork that
allows Brides to relive their Wedding Days
after saying, “I do.”
At Justin Alexander, every wedding dress begins with a sketch. Beginning today, Brides will
now be able to preserve their memorable wedding dresses with a customizable, made to
order Justin Alexander Designer Sketch.
The designer will illustrate the vintage-inspired Justin Alexander gown of the bride’s choice in
pencil on an 8 ½” by 11” artisan piece of paper. It will emphasize the wedding dress’s unique
features such as delicate lace, feminine necklines and intricate embellishments that Justin
Alexander is known for. The sketch will capture and embody the gown’s essence to remind the bride where
her memorable day began.
An original designer sketch is the perfect gift to receive from a bridesmaid, family member, friend, or husband
(especially since paper is the traditional gift for one-year anniversaries!).
The original designer sketch is customizable and allows brides to create a truly unique piece of art to showcase
in her home. The sketch offers four beautiful framing options to choose from in various colors, with or
without matting. Prices range from $150 to $329.
Sketch The Original Justin Alexander Designer Sketch without a frame. The piece will be wrapped delicately
and presented in a fitted plastic sleeve.
Modern The modern frame has a smooth satin finish, which adds just the right amount of sophistication.
The smooth antique coloring creates a distinctive border to give every sketch a clean and classy look.
Formal The formal frame’s moulding features a natural leafed pattern that is intensified by a rubbed finish,
which illuminates the contours of every sketch with a sophisticated look and vintage feel.
Premium The premium option includes an ornate frame that is the ultimate compliment to the hand drawn
sketch. This embossed frame features a bold width and contemporary petal ornament that brings the
sketch to life at every glance.
One of America’s and Europe’s most influential producers of wedding fashions, Justin Alexander designs
We all know the saying:
“Something old, something
new, something borrowed,
and something blue”. This well-known
rhyme is used in many cultures to
provide good luck on your wedding day.
Over the years, the basis of the blue
color remains the same, representing
love, purity, and fidelity to your spouse.
When used correctly, blue can add a
touch of elegance or luxury to your big
day. Make it pop or use more of a subtle
undertone to showcase your color.
Whether it’s a spectacular accessory
or a hidden gem like lingerie, there are
many ways to honor this tradition. How
you feature it is all up to you.
DIAMONDS
IN THE SKY
Getting engaged is back in fashion
Until recently, it was not very trendy - now the art of getting engaged has made a comeback. There is
no recipe for the perfect proposal. The way men pop the question, just like people, can be very different
from each other. Whether it’s an extravagant affair in a hot air balloon or a simple setting among rose
petals, it won’t be perfect without an engagement ring. With a silver, gold or platinum ring, men can
show women they are meant to be together.
The diamond – the king of precious stones
A sure fire way to knock her socks off: choose a solitaire, a single diamond with a brilliant cut. The
diamond is a symbol for infinity and is the king of precious stones. As a “child of fire,” it was born millions
of years ago. Deep beneath the earth’s surface, at over 1200 degrees celcius and under immense pressure,
carbon is transformed step by step into a diamond.
The four “C”s indicate the value.
Carat is the mass of the precious stone. The word carat comes from the Latin word “Ceratonia siliqua,”
which means: “St. John’s bread / carob.” In ancient times there were no scales, so people used seeds
to measure the weight. Because there is no substance harder than a diamond, its transformation is an
art form.
Selecting between 350 different Cuts is a big task because it makes the “fire” burn brilliantly. Shaping
the diamond causes the loss of half its weight. The third “C” is the Color. The color spectrum ranges
from white, red and yellow to green and blue. Clarity describes the diamond’s visual appearance. The
flawless diamond has no inclusions. The tradition of the diamond has evolved over time; until the 15th
century, ONLY men could be seen wearing them. When Archduke Maximilian of Austria gave his fiancée
a diamond ring, everything changed.
RING
GRAFF ENGAGEMENT
RING SETTINGS
Inspired by Laurence Graff’s lifetime love of diamonds, Graff has named its engagement ring settings after the
notable stones that have passed through the House over the course of its history; Paragon, Promise, Flame,
Legacy, Star Flower and Constellation.
Laurence Graff, Chairman of Graff Diamonds says: “We are involved in every stage of the jewellery-making process
- from the sourcing of a rough stone, through to the highly skilled science and art of cutting and polishing,
design and hand craftsmanship of each piece.
“I’m extremely proud to have played a key part in the journey of many of the most important and unique stones in
the world - and now that legacy will continue through our engagement ring settings.
He continues, “I truly believe that we offer the very finest diamonds. We collect them, we adore them, we love
them - we find the best in the world and we pass the best onto our clients. After all, a diamond is the ultimate
romantic gesture of love.”
Every diamond engagement ring from Graff relies on stone-led craftsmanship, meaning it is crafted by hand to
cradle a diamond’s unique silhouette.
Graff doesn’t believe in a ‘one size fits all’ philosophy. Every stone is a precious gift from Mother Nature and Graff
respects and honours the subtle nuances that make each diamond unique - this is the Graff Difference.
Master Ring Mounters ensure that each stone is perfectly positioned in its bespoke platinum mount so that light
can reflect through it, amplifying the brilliance of its natural luminescence. It takes many years for Graff’s Craftsmen
to hone this ability to enhance and complement the innate beauty of a stone the Graff way.
It is often said that Laurence Graff has handled more important gem quality diamonds than any other diamantaire
of our time - indeed, possibly of any time. These are the rare stones that include both noble historic jewels and
astonishing new discoveries cut and polished by Graff, destined to be the famous diamonds of the future.
To mark the launch of its newly named engagement rings settings, Graff has launched a bridal-focused print
advertising campaign across the UK and Europe, Asia, North America and the Middle East.
There’s no reason to let your bridesmaids fade
into the background this year. Their dresses can
be the perfect accent to highlight your personality
with the beautiful color choices and the cutting edge
designs on the runway this year. You really can’t go
wrong with any of the styles out there; they not only bring
grace and beauty to your ladies in waiting, but they are a
gorgeous touch to your wedding as well. Shorter styles
are dominating the fashion world right now, with added
touches to make them shine even brighter. You can see
beautiful half trains making the rounds in shining colors
and touches of beads or stitching to set off these briefer
styles.
Cabotine
This year’s designs also feature lace accents to add a
marvelous way for you to bring a delicate touch and when
they are added to the already glowing colors in these lines,
you can make sure that your wedding will still be just as
modern as you are. Other fabrics all range for this season
also, and no combination is off the table. Pinks, corals and
eye-catching blues and purples are sure to stand out while
still drawing the attention to the bride amongst all of this
beauty. Look for tulle or other dramatic pieces to set off
the style of your wedding party and to bring out their best
sides.
2015 is truly the year for your whole wedding party to
shine in these styles and to set your look off with a bang.
Mother of the
BRIDE
Being a bride can be a difficult task,
but being the mother of the bride
can be even more stressful. Mothers
often want their daughter’s weddings
to be near perfection and will work day and
night to ensure a smooth ceremony. The
mother of the bride position comes with its
many difficulties, but seeing the bride walk
down the aisle ready to start a new chapter
of her life makes it all worth it.
Dressing as the mother of the bride can
be a daunting affair; after all, mom’s more
focused on the bride. An elegant, mature
gown will bring out her strength and true
beauty. Complete the look with classic heels
and elegant diamond jewelry and she will
pave the way for the woman of the hour, her
beautiful daughter and bride to be.
their faces. This is your day, but the little
the little ones may take a little more work
than the rest of your wedding party but
choosing outfits that bring out their innocence
and beauty is essential. Match
the flower girls’ dress to the bridesmaid’s
dresses in color but a little more
cover style. Match the ring bearer with
the groomsmen with an under-flair of
bridesmaid style. After all, they are both
BEN YEW
We chat with Ben Yew, Australia-based expert in the field of natural and honest portraits of love, laughter and
happiness, and ask his advice on videography, choosing someone to shoot your big day, and what’s hot on the
horizon for the wedding photography industry.
What would you say sets an outstanding wedding
photographer apart from the rest?
If the photographer is shooting firstly from the heart and
then from the eyes. After that, it’s her or his combination
of personality, creativity and experience. Photography
is a journey there are always new ways to learn and explore
exciting possibilities; the photographers who keep
discovering really do set themselves apart.
Your shots tend to focus on natural light and natural
environments, as opposed to a more ‘staged’
set-up. Why is it that you prefer to photograph
weddings and couples in this way?
I love working with natural light, natural environments
and natural moments – it’s my recipe for photographing
a passionate couple in love, creating the softest
glow around them while capturing their raw emotion
for each other.
You also offer wedding videography - would you
say that this is something that more couples are
leaning towards?
Thanks to technology, the gap between wedding
photography and videography is smaller than ever
before. Most cameras come with video features and
photographers can now shoot both formats with the
same camera.
On top of the technological improvements, video
records the vows and speeches while photos capture
the candid moments and bridal party photos to
be framed and displayed. Couples love to have this
combination to be able look back and relive their
memorable day in two different formats.
You must have lost count of the number of weddings
you’ve attended. What would you say is
your favourite part of the event to photograph?
My favorite part of a wedding is the bride getting ready.
There’s so much excitement in the morning and mixed
emotions from everyone there, with the bride receiving
so much love and support from her family and friends;
it’s the perfect time to capture the real emotion.
Any unusual requests or particularly challenging
shoots?
I don’t think I’ve received any unusual requests from a
couple yet... In general, the most challenging shoots
are working in bad weather with a time constraint.
This is when I need to push myself to be flexible and
still make things work.
Do you have any useful tips on how to choose a
wedding photographer?
Besides loving his or her work, it would be beneficial
to find a photographer that really clicks with you, one
who can really guide you, ensuring that everyone has
a memorable and fun session.
What can we expect from wedding photography
in the future, both from your own work and from
up-coming trends?
Hmm... this is tough one. For me, my work will continuously
evolve towards a fusion of contemporary art
and weddings with real emotion.
Future trends in wedding photography involve the
technological advancement of the gadgets; for
example, drones kitted out with cameras flying above
the event to capture an aerial view. This will affect
wedding photographers’ styles and really impact the
industry.
REAL WEDDINGS
MARK
& DIANA
Photography by BEN YEW
80
Mark & I were born in the
same little hospital, in the
same small country town
of Donnybrook, WA. Mark being 2
years older, meant we never spoke at
school. Little did we know, we would
end up marrying 15 years later! We
had both moved to Perth after high
school, where Mark added me on
MySpace and asked me out on a
date. I was 18 and Mark was 20. We
went from small town country kids, to
living in Melbourne and South Korea
together…and so it went from there.
Our wedding day began, standing
underneath an arch of Donnybrook
stone in the cutest chapel at St
George’s College, Nedlands. Here, we said
our vows in front of the people closest to
us and a priest who was a childhood family
friend from Donnybrook. The chapel was decorated
with white wisteria trees and candles
down the aisle. A string quartet entertained
guests. The bride and groom walked back
down the aisle to Concerning Hobbits from
Lord of the Rings, a happy piece of music!
81
REAL WEDDINGS
Our wedding reception was held at Fraser’s
Kings Park overlooking the Perth skyline
and Swan River. It was an elegant, all white
affair, accented with large pink, purple and yellow
blooms encasing silver candelabras as centerpieces.
Small matching vases with flowers and candles sat on
the tables. To tie in with the ceremony, white wisteria
trees were dotted around the venue.
We added whimsical touches to our day. A Hello Kitty
bride and groom sat on top of our three-tier wedding
cake decorated with blooms. A pink vintage typewriter
was on display for our guests to type up their messages
and the bonbonniere was handmade by my
mum and nanna. It held sugared almonds representing
my Italian heritage.
82
I work in advertising and specialise in social media, so
naturally Pinterest is where I found all of my inspiration
for my wedding. Cutting up magazines and creating
mood boards is another way to piece together your
day. Having mood boards is a great way to look back
on your day. Now we’re moving onto our honeymoon
in the Maldives at Constance Halaveli Resort, complete
with an overwater bungalow and private plunge
pool. together…and so it went from there.
Welcome to
CAKES
PARADISE
CULINARY ART
The most delicious part of any wedding is
the wedding cake. A cake is so important
that it has become the center of attention
for traditions, television shows, magazines,
and many Pinterest boards. Wedding
cakes can be critical to continuing the
theme of the wedding while allowing the
bride and groom to show off personal style and tastes.
Here are some different ways to spice up the traditional
wedding cake:
A POP OF COLOR
Many wedding cakes are vanilla or have vanilla icing –
what a great place to add some color! If you want to
make it a surprise, just color the actual cake to match
the centerpieces or the bridesmaids’ dresses. Maybe you
could even be daring and go for a rainbow tiered cake?
One way to make sure your cake stands out is to go for
metallic accessories.
DECONSTRUCTED CAKES
Have your baker make a deconstructed cake with sprinkles
or berries baked right into the cake to give it some
color. You can choose to ice only the top of the cake,
ice every other tier, or even mix it up with several smaller
cakes in an arrangement.
GROOM’S CAKE
The Groom’s Cake is a tradition in the Deep South where
the bride and groom have separate cakes. Often, the
Groom’s cake will resemble something the groom enjoys
such as the shape of a football or having the colors of his
favorite baseball team. This is a great tradition because it
allows your guests to have some variety and it also helps
the groom feel included in some of the planning.
Planning your wedding cake can be difficult. However,
by simply thinking outside of the box, you can have a
statement cake that takes everyone’s breath away and
will have little girls dreaming of the day they can choose
their own. Make sure your wedding cake is your own little
slice of heaven!
LADURÉE
The Parisian tea room’s history is intimately tied to
the history of the Ladurée family.
It all began in 1862, when Louis Ernest Ladurée,
a miller from France’s southwest, created a bakery in
Paris at 16 rue Royale.
The same year, the first stone of the Garnier Opera was laid, and the area surrounding the Madeleine was rapidly
developing into one of the capital’s most important and elegant business districts. The most prestigious names in
French luxury items had already taken up residence in this neighborhood.
In 1871, while Baron Haussmann was giving Paris a “new face”,a fire in the bakery opened the possibility of a
transformation into a pastry shop. The decoration of the pastry shop was entrusted to Jules Cheret, a famous turnof-the-century
painter and poster artist. Monsieur Cheret sought inspiration from the painting techniques used for
the ceiling of the Sistine Chapel and the Garnier Opera. By integrating them in his work, he added depth and relief
to the ceilings ornamented with cherubic children.
Under the Second Empire, cafés developed and
became more and more luxurious. They attracted
Parisian high society. Along with the chic
restaurants around the Madeleine, they became
the showcases of the capital. The beginning of
this century found Paris wrapped up in a frenzy
of distraction and going out in public. Parisians
flocked to the Universal Exposition. Women
were also changing. They wanted to make new
acquaintances. Literary salons and literature
circles were outmoded.
Ernest Ladurée’s wife, Jeanne Souchard, had
the idea of mixing styles : The Parisian café and
pastry shop gave birth to one of the first tea
rooms in town. The salon de thé had a definite
advantage over the cafés : women could gather
in complete freedom. Jeanne Souchard succeeded
in combining the turn-of-the-century
trend to modernism with knowledge of the
merits of a craft transmitted by her family.
The rue Royale tea room was enlarged in 1930
by Pierre Desfontaines, second cousin of Louis
Ernest Ladurée.
The MERINGUE
GIRLS
Trained chefs Alex and Stacey
have only been making meringues
as a duo for two years,
but their business has gone from
strength to strength! With Jamie
Oliver as one of their biggest
fans, their products are stocked
in Harvey Nichols, Selfridges
and Fortnum & Mason and with
a second cookery book in the
pipeline after the huge success
of Meringue Girls Cookbook, the
only way is up!
92
ALEX &
STACEY
Using free range eggs and
British-grown sugar, they offer
some brave flavors (Gin & Tonic
and Pistachio & Rosewater included!)
and cater for weddings,
too. We were lucky enough to
get the chance to chat with them
about all things meringue.
it’s such a wonderful idea to have an Eton
Mess bar. People are sick of being restricted
to traditional wedding cakes!
What’s your top tip for couples faced with
the daunting task of planning their wedding
catering and finding a caterer?
We are all about the street food wedding!
Hiring a number of different street food
vendors is the perfect choice because you
can cater to all your guests’ needs as well as
create a buzzing atmosphere.
What do you think is the key to the perfect
wedding cake?
We don’t think there is one perfect wedding
cake. We think every girl is different
and therefore her wedding cake should be
beautifully unique!
When did your passion for
baking and, more specifically,
meringues develop?
We have both been keen bakers
our whole lives! Alex’s love for
baking started when she was
little, making meringue with her
Dad and getting hooked straight
away. Stacey’s love came from
weekends away with Grandma;
no matter what day of the week
it was, dessert would always be
on the menu. Grandma taught
her everything she knows about
baking and caking, and coming
from New Zealand, pavlova was
a family favorite.
How did you come up with the
idea of a meringue business?
We were working in a hot,
sweaty, male-dominated kitchen
in Hackney, London, pondering
ideas about how to get out and
do it on our own! We were thinking,
“What will be the next sweet
food trend? The cupcakes have
had it!” Then we had the light
bulb moment!
What’s been the highlight of
your meringue-crafting careers
so far?
We’ve had a roller coaster of
a ride over the last 2 years. I
think the highlight for both of us
was holding our first published
Meringue Girls Cookbook in our
hands and then getting a second
cookbook deal; knowing that
the book has been successful
enough that they have come
back for seconds!
What is the most unusual
request you’ve had?
Making edible artwork of British
diver Tom Daley using only hula
hoops...
Why is it, do you think, that
meringues and weddings go
so well together?
Ladies love to impress on their
special day. Having a beautiful
rainbow display of meringue
kisses at your wedding is not
only unique, but delicious! And
Stacey’s dream wedding cake would be not
one but eight different beautifully decorated
cakes on vintage tiers. Alex’s would be a
really tall naked cake: Victoria sponge with
loads of berries and zero fondant icing to
cover its natural beauty!
You sell a whole range of unique flavors
and bold combinations - what would
you say is your favorite?
Stacey’s favorite flavour is manuka honey
and Alex’s is honeycomb and salted peanut!
THE SOMMELIER
1) Why did you become a wine sommelier and
what do you love most about your job?
I grew up in a wine region, the Wachau, at a winery.
I guess I took my first sip of wine when I was very
little. We had a “Heurigen,” a little local wine tavern,
where I used to help when I was a child. After this
I went to culinary school in Krems and after my
degree I started to work in great restaurants. I was
always fascinated by the sommeliers who I worked
with and I decided to start studying and became
a certified sommelier. What I like the most about
my job is that every day is different! You are able to
travel, to meet new and interesting people, you find
new friends who also love wine and food. And being
a Sommelier brought me to NYC!
2) How would you describe a typical day of work?
KATJA
Scharnagl
We met Katja Scharnagl, a sommelier
at ‘Le Bernadin’ in New York, to talk
about her job and to get some essential
advice about wine for your big day.
Most people think that Sommeliers are only attending
tastings and selling wine on the floor. Well, the
truth is that there is so much more to do.
Starting in the morning with answering emails, they
are either from our sales rep regarding new wines,
vintage or price changes, or from our event department
asking for wine recommendations for upcoming
events. Almost every day we have appointments
for tasting in the morning at Le Bernardin. Lunch
service can be very busy and we are a team of six
Sommeliers here and there are always two of us on
the floor. The afternoon is filled with more emails,
phone calls, as well as taking care of deliveries,
cellar work – putting new wines away, ordering new
wines, working on the inventory program, tasting
new dishes and finding the perfect pairing… and by
5pm we are ready for the dinner service filled with
great wines. At Le Bernardin we have a very extensive
wine list with about 1200 references and we are
also very well known for our wine pairings.
3) What skills are required to be a successful
sommelier?
Besides a good knowledge and a taste? Most
people forget that we are still servers – wine servers
and we are here to provide a service. We are
part of the restaurant team and the guest who is
eating at the restaurant needs to get the whole
perfect picture. You can be the best Sommelier
who is perfectly trained and is a walking lexicon,
but if you don’t listen to your guests you won’t
be successful. You can guide people, you can
introduce them to new regions, new grapes and
they will be very thankful and happy and will come
back. And please don’t forget to smile when you
are on the floor.
94
4) Which VIPs have you served?
We have a very strong policy at the restaurant
regarding VIP’s, we are protecting them and
serve them as every other guest.
5) What is your favorite wine?
I don’t have just one favorite wine. It’s like asking
a mum who’s your favorite child. I have memories
of great wines which I shared with wonderful
people! I do have some favorite regions: of
course the Wachau, but also the whites and
reds from the Burgundy region, old German
Rieslings, Jura, old Cabernets from California, ….
And there are so many more out there…
EVERYTHING YOU
HAVE TO KNOW
ABOUT WINE
6) What is the best way to store wine?
If you have just a couple of bottles you can
always keep them in the fridge. If you have
more, a wine cooler makes sense. You can
purchase great wines, but if you don’t store
them properly they can go bad. It should be in
a room or a cooler, where it’s dark, no shaking,
steady temperature, not too much humidity
and not too crowded. Don’t put your wines in
the kitchen, laundry room or boiler room, you
won’t be happy after you open the wine. If you
spend money on great wines why not invest in
something to properly store them?
7) What is the ideal serving temperature?
White Wine: young, fresh and easy one 8-10
degrees (46 - 50 °F). Same for champagne
and dessert wines, White wines with more
weight and age to it can be a little be warmer:
11-13 degrees (52 - 55 °F)
Red Wine: never ever room temperature! Between
15-18 degrees (59 - 64 °F) is fine.
8) Can you give advice for pairing wine
and food?
What grows together goes together. A simple rule,
but very effective. Also you should always look at
all ingredients of a dish, sometimes you have a side, or a
vegetable, or a sauce which is the key flavor. Or how the
dish is prepared. For example, you have a pan-roasted
or grilled fish with richer flavors you certainly can go into
a red wine direction. We have currently a Striped Bass
with Bhutanese Red Rise and a ginger red wine sauce
on the tasting menu which we pair with a pretty bold red
wine from the Ribera del Duero region in Spain. I also
like to pair food with Champagne, which is probably the
most versatile food wine in the world. And if you love
big reds with your meal, go for it! At the end of the day
it’s your dinner and you should enjoy it the way you like
it the most! And if someone else is paying for a bottle of
Petrus or La Tâche, don’t worry about the food.
9) Does the type of glass affect the taste of
wine? Which glasses can you recommend?
Of course, if you put a bold, concentrated young red
wine into a little glass you will not like the wine. If you
give the same wine some room, for example in a bigger
bowl and maybe more delicate and thinner you
will discover the different. I personally love the Zalto
DenkArt Glasses. All of them are hand blown in a small
factory in Austria. The glasses are both powerful and
subtle and along with their shape and architecture, help
to enhance the wine.
10) Some claim women have a better sense of
smell than men. Are they better wine testers?
I don’t know if we are better, I met so many great
tasters who have been men and women. Each of
us has great and sometimes not so great days in
terms of tasting.
11) What do you think about the health effects
of wine?
I think it’s like all things that give us pleasure. If you
overdo it, it will be too much and you will lose the
enthusiasm. In the right dose, everything can be
fun.
12) Which wine would you take with you as a
gift to a wedding?
Champagne!!! It can be pink, white, vintage or
new. And the couple can open it and enjoy it and
reminisce about memories of their most beautiful
day of their lives! And they can do it by themselves
or surrounded by beloved people, creating new
memories….
Cheers, Katja
1.HAVE AN EARLY START.
If you can help it, give yourself at least six months to
one year for the wedding preparation. This will give you
2.
enough time to canvass more wedding vendors and
avoid last minute decisions. Preparing early will also help
you in sticking to your budget.
ALLOW YOURSELF SOME TIME OFF WITH YOUR FIANCÉ.
Wedding preparation will consume most of your time, if not all. Don’t let yourself get burned
out, schedule a ‘no wedding talk’ date with your fiancé. Chill and just enjoy your time without
thinking about the flowers, the invitations, etc.
3.KEEP EVERYTHING ORGANIZED.
Know what you want from the start. Visualize the
kind of wedding that you want to have, what theme
or mood you want to set, do you prefer a big
wedding or want to invite a few people only, what
is your maximum budget to spend, among others.
Write it all down so you will not forget anything, this
will then be your ultimate guide as you go along the
wedding preparations.
4. ACCEPT HELP
As much as you want to be a hands-on bride, it is impossible
to do everything by yourself. Your family and friends will be
more than willing to be a part of your wedding, so delegate
some minor tasks that you can no longer fit in your schedule.
And while on the topic, this is also your groom’s big day, so
be sure to involve him in all the decision making as well.
5.EXERCISE AND MAINTAIN A HEALTHY LIFESTYLE
Exercise will allow you to think clearly, sleep well at night, and eat properly. It will also keep
your body toned so your dress will fit you perfectly. It will also give you that healthy glow and
keep your happy hormones steady so you can walk down the aisle with a radiant beauty.
We love YOGA
FREE YOUR MIND
Planning a wedding can be the
most exciting time of your life.
It is a time to express yourself
and celebrate your engagement. However,
wedding planning can be crazy stressful.
Luckily yoga can help relax everyone
in the wedding party before the special
day. Yoga is helpful when you feel burned
out and it is a perfect way to relieve all
that wedding stress. All of the work that
goes into preparing a wedding can cause
pressure from family or friends and yoga
allows you to reconnect with yourself
during meditation. Yoga is a series of exercises
and can ultimately help you keep
your weight under control as well as tone
and strengthen your muscles, helping you
feel your best for the wedding.
It is important for you to take some time
to focus on yourself after a long day of
wedding planning. Brides should enjoy
themselves relatively stress-free, treat their
bodies right, and practice yoga. Throw on
a “Bride” tank and yoga pants and you’re
all set for a relaxing yoga session that you
deserve.
STEP TO THE ALTAR
STRESS-FREE THANKS
TO ZUMBA
N
o question, one of the best days in a couple’s life is their own wedding day; the months between
the engagement and the big day are marked by anticipation and excitement. Equally, however, the
months leading up to the big day are filled with nervousness, delays, unexpected, sudden changes
and a flurry of appointments. Planning a wedding is not an easy task and with all the stress it is all too
easy to forget who the real stars of the wedding are. The personal wellbeing of the bride and groom
often fade into the background and exercise and relaxation activities are neglected.
So what is a couple to do to relax and de-stress during this busy time while still getting in the right mindset and
physical shape for the wedding? The solution comes from Miami and is called Zumba. The popular fitness program
combines workout, dance and international rhythms into a fitness party and is the perfect way for a bride and
groom to be to clear their minds and do something great for their bodies. More than 15 million people around the
world appreciate the benefits of Zumba. No wonder, because a Zumba® class brings both positive psychological
and physical effects. When people take a Zumba class, they don’t just see a change in fitness level and body shape
– their happiness, self-esteem and confidence are also affected. You also burn up to 1000 calories in a Zumba
class, but you won’t even realize you’re working out! Zumba is a fitness party! Music is the special motivational
ingredient that helps make the Zumba® program exercise in disguise! The moves are exciting, the music is infectious—it’s
easy to get lost in the music and that’s part of the reason why it’s such an effective workout.
Even busy brides and grooms who can’t find time
to make it to the gym can still practice Zumba in the
comfort of their own homes with the Exhilarate
DVD Collection. It really brings the Zumba experience
home. The DVD collection is unlike any athome
fitness program. It’s packed with contagious
routines set to a blend of international rhythms, and
the each disk offers a different experience.
Zumba Education Specialist Vicky Zagarra recommends,
“A few Zumba classes in the months before
the wedding helping to feed the mind with oxygen,
relax, reduce stress and meet your groom with a
relaxed smile at the altar. Additionally, Zumba gets
you in great shape. So nothing stands in the way for
the dress of dreams.”
The
4 Week
Health
Beauty
Detox
Enjoy and embrace
the process to a slimmer, healthier,
and more radiant you!
BEAUTY
Your big day is just four weeks away, so it’s time to adapt your diet to
give your health and beauty that final boost! We’ve devised this easy-tofollow
plan that revolves around clean, lean and nutritious foods to detox
the body and help it to revitalize; this will improve the skin’s appearance,
flatten the stomach, and guarantee a firmer silhouette on the day itself!
TOP TIP
Weeks 1 and 2 will focus on introducing clean eating
and working towards reduced bloating, improved digestion
and clearer skin. Week 3 is the toughest, so make
sure you keep yourself busy to distract yourself from
temptation! Week 4 involves a diet high in nutrients
and low in carbohydrates to ensure optimal health
and vitality leading up to the day itself.
112
WEEK 1.
OUT
Caffeine and sugar irritate the nervous system,
cause skin irregularities, and disrupt your digestive
health, which is likely to already be affected
by your stress levels!
• Why not try replacing coffee with organic,
caffeine-free alternatives, such as green or
white tea?
• You should also try to replace sugar with
agave syrup or a touch of raw honey, using
any sweetener sparingly.
• Try sprinkling cinnamon to add sweetness
to foods – this will trick your senses and
stabilise your cravings.
• Avoid chemical ‘sugar-free substitutes’ at all
costs, as these will only reverse your efforts
in the long run.
Red meat is high in saturated fat and difficult
to digest and could disrupt healthy hormone
functions. As your want to keep your tummy flat,
your mood in control, your skin glowing, and the
cellulite at bay, meat must go!
porridge, or sliced tomato with
olive oil to a wholegrain pita.
Incorporate a pro-biotic as well; this
helps to maintain the healthy bacteria
in your digestive system, keeping
gas-causing bacteria out and
aiding digestion and the absorption
of nutrients.
• Why not try half a cup of kefir
as a mid-morning snack?
Alternatively, why not give
pickles, sauerkraut, miso soup
or kombucha a go?
Add 2 servings of wild salmon to
your meals; this is rich in Omega 3
fatty acids and antioxidants.
Pick one of the following every day
and add a small serving to a meal
or eat as a snack: avocado, walnuts,
almonds, flaxseeds, coconut
oil. Don’t forget to mix it up by having
something different each day!
• If you must, you can still eat poultry such as
chicken and turkey this week, but be sure
to stick to organic options.
Processed food can cause nervous, digestive,
and hormonal disruptions. For best results, you
should avoid white bread, white rice, deli meats,
canned food or pre-prepared/fast food.
IN
For optimal results, incorporate vegetables into
every meal.
• Vegetables are a rich source of antioxidants
and phytonutrients, which help repair and
protect your skin from evidence of weddingrelated
stress! What’s more, they’re great
sources of fibre, keeping your tummy flat
and aiding detoxification!
• Veggies at breakfast can be tricky. Try adding
spinach to a smoothie, grated carrots to
Eat raw, steamed and baked foods
as much as possible. These cooking
methods preserve food and
don’t cause protein alterations,
which can age cells, affecting both
your health and your skin.
Have a baked sweet potato with
lemon for dinner twice this week,
and how about a herbal tea on the
side!
Choose quinoa as your staple
carbohydrate twice this week.
Try using dark, leafy greens as your
main side dish.
Use a small amount of olive oil
for meals that are served raw or
cooked at a low temperature, and
sesame, grape seed, or avocado
oil for foods cooked at a higher
temperature.
113
WEEK 2.
OUT
All dairy (including milk and butter)
• Dairy products are not easy for the body to digest
and may cause mucus, which affects how you absorb
nutrients.
Pasta, potatoes and bread
• These make you feel heavy and actually increase
hunger, too.
White meat
• Now’s the time to cut out all meat. In doing so, you’ll
be optimising your body’s ability to process food. Try
adding more fresh fish to your diet to compensate.
• Don’t forget that eggs can still be used as a great
source of protein, as can organic tofu.
All alcohol during the week
• Allow yourself two glasses of red wine at the weekend,
though – it’s proven to benefit cardiovascular health
and has anti-aging properties too! The grapes used to
produce wine contain numerous phytonutrients, most
significantly resveratol antioxidants. If you’re going to
go without alcohol altogether, try a resveratrol supplement
to enhance circulation, protect cells and improve
the skin’s appearance.
• In the case of an important social event, where you
may want to have something a little stronger, try a
vodka and soda with lemon or lime or a whisky and
water.
• Alcohol dehydrates you and makes you more susceptible
to forming irregular eating habits, which will ruin all
your hard work detoxing!
IN
Start the day with half a pint of water with lemon
every morning.
Tackle hunger pains by having a pear, apple or
peach.
Pick whole foods wherever possible. Think vegetables,
fruit, nuts, fish and eggs.
Have beans or pulses for lunch twice this week.
• They are high in protein and fibre, and therefore
both filling and nutritious.
Add garlic and spices to your lunchtime meal.
Try adding chia seeds to two of your meals this
week.
• Chia seeds are also high in protein and fibre;
they’ll keep you full, keep your gut clean, and
bring an extra dose of nutritious goodness.
Try a cup of peppermint, ginger, or mint tea in the
evening.
• This will give your digestive system a helping
hand and control hunger, too.
Maksim Šmeljov / Fotolia.com
Remember to avoid any sugary, caffeinated drinks – anything
‘sugar-free’ could actually be endangering your health
and your waistline!
114
BEAUTY
WEEK4.
WEEK3.
This will be your toughest week, so make your
meals simple. Remember to stay active, but don’t
overdo it with anything too strenuous.
OUT
Eggs
Rice
Fish
TIPS
Use fruit, vegetables, and leafy greens as the basis
for all meals.
• Have a portion of quinoa or beans on the side.
• For extra satisfaction, add walnuts, pistachios,
goji berries, flax seed, or almonds. Pick only
one of these per day – they are high in nutrients,
but overindulge and it becomes quite a
calorific treat.
Put almond butter on your fruit for a tasty snack.
Drink plenty of water between meals.
How about a vegetable soup or stew for dinner?
Now that the hard part is over, this week is all about
reincorporating protein before the big day.
Choose only organic sources of protein and only
one per meal.
• For example, wild-caught fish, eggs, legumes,
and other vegetables high in protein. These
are light and will stimulate long, lean muscles.
As far as carbs are concerned, bread, rice, pasta,
and white potatoes are still not on our ‘OK’ list, but
sweet potato is!
For optimal results, eat only fruit before 10am and
only vegetables after 4pm. If you need a carb boost
in the evening, try a bowl of oatmeal with berries
and cinnamon, alongside an herbal tea.
The night before:
Dinner should consist of your favorite lean protein
with grilled vegetables.
Save the alcohol and high-sugar high-carb desserts
for tomorrow!
If you must have a treat, try a bowl of sweet berries.
And most importantly, go to bed early!
Best of luck with your detox-to-beauty journey!
Make sure you plan meals ahead, drink
plenty of water, and avoid sugar, chemicals
and processed food. Surround yourself with
positive people, exercise to build your mental
and physical strength, and save the celebrating
for the big day!
1Mouthwatering Walnut Oil: Although sugary sweets can be a temporary
relief from the stresses of planning your wedding, eliminating excess
sugar lowers the risk of that pesky pimple showing up on the morning of
your ceremony and helps get rid of that last pound, which could mean
being able to zip up that gown! Every bride deserves a little boost, so
when you’re in need of that extra jolt to finalize your seating chart, reach
for a teaspoon of Dribble Dots Mouthwatering Walnut Oil to accompany
your coffee instead of sugar. In addition to a unique and delicious flavor,
you will give your body a boost of Omega 3 and natural antioxidants with
high levels of polyunsaturated fat, linoleic acid, and alpha-linoleic acid.
2Wicked White Truffle
Oil: No, this is not another
word for your motherin-law
to be. You don’t
have to opt for a radical
diet to look fit in front of
the wedding photographer. A simple
gluten-free pasta with a variety of fresh
vegetables will keep energy levels up.
Flavoured with Dribble Dots Wicked
White Truffle Oil, your dish will taste
luxurious down to the very last bite
with a rich, natural source of cholesterol-fighting
linoleic acid.
BEAUTY
3Seductive Sesame Oil:
Salads are a great way
