10–257.1. 92G—Food Service Operations (Food Service<br />

Ops), CMF 92<br />

a. Major duties. The food service specialist supervises or prepares,<br />

cooks <strong>and</strong> serves food in field or garrison food service operations.<br />

Duties for MOS 92G at each skill level are:<br />

(1) MOSC 92G1O. Performs preliminary food preparation procedures.<br />

Prepares <strong>and</strong>/or cooks menu items listed on the production<br />

schedule. Bakes, fries, braises, boils, simmers, steams <strong>and</strong> saute’s as<br />

prescribed by <strong>Army</strong> recipes. Sets up serving lines, garnishes food<br />

items, <strong>and</strong> applies food protection <strong>and</strong> sanitation measures in field<br />

<strong>and</strong> garrison environments. Receives <strong>and</strong> stores subsistence items.<br />

P e r f o r m s g e n e r a l h o u s e k e e p i n g d u t i e s . O p e r a t e s , m a i n t a i n s , a n d<br />

cleans field kitchen equipment. Erects, strikes, <strong>and</strong> stores all types<br />

of field kitchens. Performs preventive maintenance on garrison <strong>and</strong><br />

field kitchen equipment.<br />

(2) MOSC 92G2O. Performs duties shown in previous skill level<br />

<strong>and</strong> provides technical guidance to lower grade personnel in garrison<br />

<strong>and</strong> field kitchen operations. Ensures that proper procedures,<br />

temperatures, <strong>and</strong> time periods are adhered to during food preparation.<br />

Directs safety, security, <strong>and</strong> fire prevention procedures. Performs<br />

limited supervisory <strong>and</strong> inspection functions including shift<br />

supervision.<br />

(3) MOSC 92G3O. Performs duties shown in previous skill level<br />

when required <strong>and</strong> prepares more complex menu items. Supervises<br />

shift, unit, or consolidated food service operations in field or garrison<br />

environments. Establishes operating <strong>and</strong> work procedures, inspects<br />

dining, food preparation/storage areas, <strong>and</strong> dining facility<br />

personnel. Determines subsistence requirements. Requests, receives,<br />

<strong>and</strong> accounts for subsistence items. Applies food service accounting<br />

p r o c e d u r e s . P r e p a r e s p r o d u c t i o n s c h e d u l e a n d m a k e s n e c e s s a r y<br />

menu adjustments. Establishes, administers, <strong>and</strong> maintains OJT <strong>and</strong><br />

apprenticeship training programs. Prepares technical, personnel, <strong>and</strong><br />

administrative reports concerning food service operations. Implements<br />

emergency, disaster, <strong>and</strong> combat feeding plans. Coordinates<br />

logistical support.<br />

(4) MOSC 92G4O. Performs duties shown in previous skill level<br />

when required <strong>and</strong> assigns personnel to duty positions. Coordinates<br />

with food service officer, food advisor, <strong>and</strong> first cooks. Coordinates<br />

with TISA, facility engineers, <strong>and</strong> veterinary activity. Plans <strong>and</strong><br />

implements menus to ensure nutritionally balanced meals. Ensures<br />

accuracy of accounting <strong>and</strong> equipment records. Develops <strong>and</strong> initiates<br />

St<strong>and</strong>ing Operating Procedures (SOP) <strong>and</strong> safety, energy, security,<br />

<strong>and</strong> fire prevention programs. Evaluates contract food service<br />

operations. Ensures contractor compliance in food service contract<br />

operations.<br />

(5) MOSC 92G5O. Develops, coordinates, implements, advises,<br />

<strong>and</strong> evaluates food service programs. Monitors requests for food<br />

items <strong>and</strong> equipment. Develops <strong>and</strong> analyzes troop menus <strong>and</strong> coordinates<br />

menusubstitutions. Evaluates operation of garrison <strong>and</strong> field<br />

kitchens, field bakeries, food service training facilities, <strong>and</strong> maintenance<br />

of equipment. Surveys individual preferences, food preparation,<br />

<strong>and</strong> food conservation. Prepares reports, studies, <strong>and</strong> briefings<br />

on food service operations. Provides assistance to food service officers<br />

<strong>and</strong> NCOs.<br />

b. Physical dem<strong>and</strong>s rating <strong>and</strong> qualifications for initial award of<br />

M O S . T h e f o o d s e r v i c e s p e c i a l i s t s m u s t p o s s e s t h e f o l l o w i n g<br />

qualifications:<br />

(1) A physical dem<strong>and</strong>s rating of heavy.<br />

(2) A physical profile of 222332.<br />

(3) Normal color vision.<br />

(4) A minimum core of 90 in aptitude area OF.<br />

(5) Must possess a valid motor vehicle operator license or meet<br />

the criteria for motor vehicle driver <strong>and</strong> equipment operator selection,<br />

training, testing <strong>and</strong> licensing contained in AR 600-55, paragraph<br />

1-5.<br />

( 6 ) F o r d u t y o n p e r s o n a l s t a f f o f g e n e r a l o f f i c e r , i n d i v i d u a l s<br />

must:<br />

(a) Volunteer in writing for such duty.<br />

(b) Meet the qualifications above <strong>and</strong> the requirements of AR<br />

614-200, section XI, para 8-78 inclusive.<br />

(7) MOS qualification may be attained by meeting the civilian<br />

acquired skills criteria listed in AR 601-210.<br />

10–257.2. 92M—Mortuary Affairs Specialist (Mortuary<br />

Affairs Sp), CMF 92<br />

a. Major duties. The mortuary affairs specialist performs or supervises<br />

duties relating to deceased personnel to include recovery,<br />

collection, evacuation, establishment of tentative identification, escort<br />

<strong>and</strong> temporary burial. They also inventory, safeguard <strong>and</strong> evacuate<br />

personal effects of deceased personnel. Duties for MOS 92M at<br />

each level of skill are:<br />

(1) MOSC 92M1O. Searches areas for unburied dead, hasty, isolated,<br />

or unmarked graves, personal effects, <strong>and</strong> identification med<br />

i a . D i s i n t e r s r e m a i n s , r e c o r d s p e r s o n a l e f f e c t s a n d e v a c u a t e s<br />

remains <strong>and</strong> personal effects to designated points. Determines <strong>and</strong><br />

records recovery locations on maps, sketches, <strong>and</strong> overlays. Establishes<br />

<strong>and</strong> records tentative identification. Assists in preparation,<br />

preservation, <strong>and</strong> shipment of remains. Inventories, safeguards, <strong>and</strong><br />

evacuates personal effects. Assists in mass casualty burials.<br />

(2) MOSC 92M2O. Plans <strong>and</strong> supervises search <strong>and</strong> recovery<br />

operations of deceased personnel, personal effects, <strong>and</strong> identification<br />

media. Instructs in special h<strong>and</strong>ling, marking, <strong>and</strong> shipping of contagious<br />

disease cases <strong>and</strong> processing of contaminated remains. Superv<br />

i s e s r e c e i p t , s t o r a g e , a n d i s s u e o f s u p p l i e s a n d e q u i p m e n t .<br />

Accompanies remains <strong>and</strong> personal effects to designated locations<br />

<strong>and</strong> assists with arrangements for military honors at place of burial.<br />

(3) MOSC 92M3O. Performs duties shown in previous skill level<br />

when required <strong>and</strong> prepares more complex menu items. Advises<br />

comm<strong>and</strong>ers <strong>and</strong> headquarters staff on mortuary affairs activities<br />

a n d c o o r d i n a t e s a c t i v i t i e s o f s u b o r d i n a t e u n i t s . E s t a b l i s h e s a n d<br />

maintains liaison with support <strong>and</strong> combat units. Coordinates transportation<br />

requirements for deceased personnel.<br />

(4) MOSC 92M4O. Performs duties shown at the preceding skill<br />

level <strong>and</strong> provides technical guidance to lower grade personnel.<br />

Advises on temporary cemetery locations, emergency burials, <strong>and</strong><br />

security <strong>and</strong> disposition of remains <strong>and</strong> personal effects. Coordinates
