Welcome to our February 2017 Issue. 

This month of February we have chances to invest in yourself. 

We have both job and development opportunities throughout 

the magazine for you to consider. It’s not too late to start those 

resolutions with Fitness, Leisure and Dance opportunities still 

welcoming you to their doors. If you are looking to shed some weight 

look at Slimming World on page 11, they have sessions to suit many 

venues and times. 

It is not just personal resolutions that we make at this time of the year, traditionally people work on their 

homes and gardens in spring. Take a look at the handy men, and home improvement adverts to see 

who you need to help with your plans, and wander round the garden centre for ideas. 

Gents, the 14th February brings with it romance and a chance to spoil the lady in your life. You could

If you have an allergy or intolerance to one 

type of food, you may well be allergic to 

other types in the same food group. 

Diagnosis 

Wondering whether that dicky tummy or 

rash could be down to something you’ve 

eaten? Read on… 

What’s the difference between food allergy 

and food intolerance? 

A food allergy affects the immune system. 

Symptoms usually appear within a few 

minutes of eating the offending food, and 

can include a skin rash, upset stomach 

(eg vomiting), stomach pains and 

wheezing. The most severe allergic 

reaction is anaphylaxis, which can affect 

breathing and send the body into shock. 

Without treatment, anaphylaxis can be lifethreatening, 

which is why it’s so important 

for people with a known allergy to carry an 

EpiPen if they’ve been prescribed one, 

and to teach colleagues, friends and 

family members how to use it. 

Food intolerances are more common than 

food allergies. Symptoms include irritable 

bowel syndrome, bloating, stomach 

upsets, eczema, migraines and even 

arthritis. The immune system isn’t affected 

and symptoms might not appear for a 

couple of hours, which can make it harder 

to work out what type of food is causing 

the problem. 

While you can be allergic or intolerant to 

any type of food, there are eight common 

culprits: 

Peanuts 

Tree nuts 

Eggs 

Milk 

You’ll need to see your GP if you suspect 

you have an allergy or intolerance, so that 

they can rule out any other causes for 

your symptoms. They’ll then likely refer 

you to a specialist for tests. Food allergies 

can often be diagnosed with blood or skin 

reaction tests. Intolerances are more 

difficult to diagnose. You may be asked to 

follow an ‘elimination and challenge’ diet, if 

necessary, to try to determine what foods 

you’re intolerant to. You’ll be asked to cut 

out certain types of food for a period of 

time, then reintroduce them gradually. 

Treatment 

If you’re allergic or intolerant to a type of 

food, you’ll need to avoid it completely. Of 

course, that’s easier said than done. 

Ingredients such as milk powder and egg 

white are often used in products you 

wouldn’t expect to find them in. And 

restaurants aren’t always as vigilant as 

they should be about cross-contamination. 

So you might be prescribed steroids, 

antihistamines, or an epinephrine 

autoinjector (EpiPen) if you have an 

allergy. You may also be referred to a 

dietician, to make sure you’re still getting 

all the nutrition your body needs.

Make this as a treat for your Valentine. Pop it in 

a pretty box with a big bow and they will be yours 

forever…as long as you don’t eat it all first!

Preparation time: 15 minutes 

Cooking Time: 20 minutes + chilling 

A cooking thermometer is ideal but if you 

don’t have one use the method below. 

Ingredients 

100g butter 

550g light muscovado sugar /or 

Demerara for a lighter flavour. 

200g golden syrup 

350ml double cream 

1 tsp vanilla extract 

¼-½ tsp sea salt flakes 

Method 

Line a tin about 23 x 23cm / 9inches x 9 

inches with greaseproof paper. Melt the 

butter, sugar, syrup and cream in a 

medium-sized, high-sided heavy-based 

pan. Keep stirring until the sugar has 

dissolved. 

Bring to a simmer (without stirring) over 

a medium-low heat and cook, stirring 

only occasionally until it reaches 116C, 

stirring more regularly after it reaches 

100C and turning down the heat if it 

begins to catch. 

Take off the heat and beat in the vanilla 

and salt with a wooden spoon, then 

continue beating until the fudge has 

thickened and lost its shine. Add any 

ingredients such as raisins, chopped 

nuts, or chocolate chips at this point. 

Pour into the tin and leave to set. 

Once it’s firmed up a little, after about an 

hour, slice into squares and leave to cool 

completely. Best kept refrigerated. 

If you don’t have a cooking 

thermometer. 

Have a bowl of iced water and a metal 

spoon ready next to the cooker. As the 

mixture begins to simmer beat it more 

regularly then periodically take ¼ -½ tsp 

of the fudge mixture and plunge the 

coated spoon into the bowl of iced water. 

Then (still under the water) use your 

fingers to roll the mixture into a little ball. 

When it forms a soft, pliable ball it’s 

ready to take off the heat and continue 

with the recipe.

Community Christmas Meal 

Christmas day 2016 again saw the culmination of a lot of hard work and incredible generosity of time, patience and 

money from Gillingham and the surrounding community. A large band of helpers served Christmas dinner to guests 

including children at Gillingham Methodist Church Hall. 

Can you solve them? 

Jo Harvey, with the help a team of volunteers, cajoled, coerced and co-ordinated shops, business, services and 

people of Gillingham to donate food, money and time to make Christmas Day a very special event for those who 

may not have enjoyed it.

Chocolate Cake, Carrot Cake, Pistachio Cake, Christmas pudding, Shortbread, and plenty of juice or tea and coffee 

to wash it all down. They joined in with carols and Father Christmas helped to hand out presents to all.

or clear popping in and out. Others donated presents and food or equipment without which we could not lay on

Knowing how to go about getting a job can be 

tricky if you have limited experience in the job 

market, but here are five tips which will increase 

your chances of gaining employment. 

Network - Many people find jobs through people 

they know rather than traditional job adverts. Talk 

to family, friends and other people you know and 

ask if they are aware of any vacancies. 

Attract employers - Get potential employers to 

come to you. Post your CV online with various 

agencies and you could save yourself a lot of time 

and effort job hunting. 

Target companies - Look at the organisations 

which might make a good employer and 

concentrate on them. This may mean you only 

look at the big employers in your area or it might 

mean that you look into one sector but nationwide. 

Think positive - We all get a few knock backs 

when looking for work. Don't take it personally if 

you are rejected or don't even get a response. It’s 

probably not because of anything you have done 

wrong. 

Find hidden vacancies - Many jobs are landed 

before they are advertised but you need to act 

quickly. Look into internal recruitment and get 

friends to tune into their own company grapevines. 

It’s a good way of getting your foot in the door 

early. 

Knowing how to find a job is a skill in itself. Once 

you have been successful, the process becomes 

easier next time around.

The South Wiltshire mobile unit called “Kayleigh” based at Salisbury Hospital, visits locations across South Wilts, part of 

Hampshire and Dorset including Gillingham.
