He keeps his concepts consistent throughout each of the Taverns but he says each one
still has its own “flavor and feel.”
“We basically use the same décor in all the places except it’s not like a TGI Friday’s or a
Chili’s, each one has its own flavor and its own feel. It’s not a cookie cutter type of
restaurant.”
He has stayed true to his original relaxed pub concept over the years and he thinks it has
greatly contributed to his success. He also attributes his success to his friendly staff that
has committed to his idea of “Irish hospitality.”
“I have excellent managers. We devote a lot of time and effort into training each one of
the managers. They all have great work ethics and they become the owners of the
restaurant,” Hennessey said. “I go in there, I don’t even care if anyone knows who I am.
It is their restaurant. It is a matter of hiring real great people and letting them be the
best they can be.”
For the future Hennessey has plans to redesign one of his restaurants in Redondo Beach
with a completely new concept but other than that he has no concrete plan for future
locations but he is always looking for new opportunities.
