My month 

in pictures 

October is such an exciting month, it’s finally time to purchase 

your autumn wardrobe at long last. Although the shops have 

their woollies in from August, it just doesn’t seem right to 

purchase when you haven’t even said goodbye to your bikini! I 

have my eye on anything velvet, suede and ideally in berry and 

brown. Another wardrobe item which needs winterising is my 

running kit. It’s only recently (during the summer months) that 

I have found a fondness for the sport. Now the temperature 

has dropped, it will be time to put the shorts away and invest 

in more appropriate attire in time for my next half marathon. 

Anyone who enjoys running should check out Positive Steps 

events, who put on some fab courses varying from coastal to 

forest trail runs.

Having opened last month, The Tack Room: 

Food by The Pantry, the National Heritage Centre for 

Horseracing & Sporting Art’s restaurant/café, is 

already proving to be a popular spot here in Newmarket 

Serving traditional British food using the very best of our region’s produce, 

they’re offering breakfast, lunch and even afternoon tea. Evenings at The 

Tack Room welcome a wine and cocktail bar with a menu centred upon fresh

This month’s recipe courtesy of Waitrose 

Serve with the soured cream and grated 

cheese, and invite everyone to fill and roll 

their own tortillas 

INGREDIENTS: 

• 340g pack essential Waitrose 

British Beef Frying Steak, cut into 

2cm-wide strips 

• 2 cloves garlic, finely chopped 

• 1 tsp dried oregano 

• Juice of 2 limes 

• 2 tbsp olive oil 

• 2 ripe avocados 

• 1 Waitrose Classic Vine Tomato, 

finely chopped 

• 1 red chilli, seeded and diced 

• 2 tbsp chopped chives 

• 2 Waitrose Red Romano Peppers, 

seeded and cut into 10cm-long 

strips 

• 4 flour tortillas 

• Soured cream and grated Gruyère 

to serve 

Steak Fajitas with Avocado Salsa 

1. Place the steak, garlic, oregano, half the lime 

juice and 1 tbsp olive oil in a large bowl and toss 

well together. Leave to marinate for 10 minutes. 

2. Meanwhile, skin, stone and finely dice the 

avocados. Mix with the remaining lime juice and 

olive oil, the tomato, chilli and chives, then set 

aside. 

3. Heat a large frying pan and stir-fry the steak and 

peppers over a high heat for 5 minutes until the 

peppers are tender and the steak is nicely browned. 

Tip into a large serving bowl. 

Serves 4, Prep 15 mins, Cook 30 mins 

4. Wipe out the pan with kitchen paper and briefly 

warm the tortillas. Plate the steak and peppers, 

salsa and tortillas on separate serving dishes.

With just two months to go before the Christmas 

celebrations begin, Velvet visits Best Western Heath 

Court Hotel to see what the Christmas period has in store 

The Heath Court Hotel, situated in the heart of Newmarket is all set for the Christmas 

party season which kicks-off in December. The party season at the Hotel will include a 

selection of Festive Party Nights, a Christmas Carvery and a New Year’s Eve party to 

remember! 

Festive Party Nights 

The welcoming Hotel never disappoints 

when it comes to Christmas. This year, 

its delicious menu combined with great 

entertainment is set to get everyone on 

the dance floor this festive season. The 

Hotel can cater for small parties of just two, 

to larger groups of 110 in the restaurant. 

Guests can also hire the venue’s Guineas 

Suite, which can accommodate up to 140 

guests.

proving very popular and we are getting a 

lot of repeat business and new guests who 

are booking as we are being recommended, 

which is fantastic. We have reached 

capacity and stopped selling places on 

Friday 16th and Saturday 17th December. 

We still have availability on other nights, but 

places are going fast. 

This year we’ve invested in a new sound 

system and Resident DJ Martin Gear, 

who is already busy DJing at the Hotel for 

weddings and parties. The feedback we have 

received has been great and Martin really 

knows how to get a party started!

Christmas Carvery 

Heath Court Hotel is renowned for its 

fantastic Sunday roast and the Christmas 

Carvery never disappoints. The Christmas 

Carvery is being served every weekday and 

evenings throughout December except 

Party Nights and is only £8 for a main 

course. With succulent roast turkey, crisp 

roast vegetables and traditional, fruity 

Christmas pudding on the menu, the Hotel 

is going to be an ideal place for getting into 

the Christmas spirit. Restaurant Manager, 

Sarah Voss, said, “Our Chefs prepare and 

cook all our meals at the hotel, which makes 

it a lot easier to accommodate dietary 

requirements and our Sunday Carvery will

The finale of Christmas at the Heath Court 

Hotel is the fabulous Gala Dinner on New

VEGAN DELIGHTS 

Alex Higgs, of food and lifestyle blog Bone White China and co-organiser 

of Ely Markets Vegan Fair, talks to us about its upcoming event 

Once side-lined as a foodie niche, vegan food is now booming, with 

interesting and exciting producers and street food vendors popping 

up every week. No longer ‘just for vegans’, its appeal is broadening, 

thanks to the rise of vegan comfort food such as Food by Lizzi’s 

‘Vegan Scotch Eggless’ and sweet treats such as Audrey’s vegan 

cakes. 

“From the start, it was really important to me to show people that 

vegan cakes could taste as good, if not better, than traditional 

dairy-based cakes… I love it when customers don’t actually realise 

that my cakes are completely vegan until I tell them, and they’re 

amazed at how good they are. I have regular customers who love my 

baking regardless of it being vegan, and I like to think that by giving 

them delicious animal-free food, it might make them think about 

making further changes in their diet and stepping away from animal 

products,” Audrey Hewerdine, of Audrey’s Vegan Cake, tells us. 

It’s not just the rise of innovative producers that is championing 

this change, it’s also how easy it is to discover and find them, as 

Iain of Replete Flatbreads puts it... “The use of social media such as 

Facebook, Twitter and Instagram, has really connected the vegan 

and vegetarian communities. This is especially the case on Ely 

Farmers Market, where the hashtag #VeganAlley has united several 

of the producers and boosted trade for the market.” 

Ely Markets are celebrating this boom in Vegan traders by 

launching the Ely Vegan Fair. “We are really looking forward to our 

first Ely Markets Vegan Fair complementing our regular weekly 

markets and know that our visitors will find loads of delicious food 

and unique products to sample!” Julia Davis of Ely Markets tells us. 

“Our vegan offering is just part of the fantastic variety of stalls we 

have on our markets every week! The Vegan Fair is the first of our 

special events on Ely Markets showcasing the diverse choice for all 

tastes we have all year round.” 

Expect familiar faces alongside regional and national vegan traders, 

a vegan and organic bar, plus really exciting street food including 

Cambridge Food and Drink Award-Winner, The Wandering Yak.

lawyer Matt Murdoch as he attempts to balance his budding law 

firm with a crimefighting career that brings him into conflict with 

the larger than life Kingpin of crime.

Although 2017 might seem a million miles away now, next year 

kicks off with the hotly anticipated sequel to one of the best British

sequel ‘Porno’. With Danny Boyle returning as director too, the 

stage seems set for a reprise of the mucky, quirky and inventive

find myself sitting in this camp. One of

in elastin, a 2% improvement in fine lines

subjects reported that their skin felt twice 

as radiant. 

At the beginning of my treatment, Fiona 

assessed my skin’s needs and uncovered 

which areas were of a concern to me. I 

always feel like I have a slightly bloated 

face - I blame too much tea and a chronic 

lack of sleep! My eyes are often puffy and, 

at the moment, I am lacking a glow due 

to dehydration. Just a few things for LPG 

to tackle, but Fiona assured me this was 

all possible. Stage one uses an electronic 

hand-held device that stimulates collagen 

and elastin, the building blocks for firm and 

supple skin. The machine could be targeted 

to areas of concern. For me, these are my 

forehead and eyes. However, Fiona told 

me that one of the most popular areas to 

treat is the chin. As we age, it is one of the 

first areas where gravity shows its work. 

Fiona performed the treatment on one 

side of my face to show me the difference; 

I was very impressed and could clearly see 

a lifted appearance, especially around my 

cheekbones. This stage of the treatment 

lasted for 30 minutes; it was quite relaxing 

and not uncomfortable at all. 

The next stage was a facial peel. Facial 

peels remove the dead skin cells, revealing 

a fresh radiant glow and skin that becomes 

more receptive to your regular topical 

facial products. The LPG facial peel offers 

a superficial chemical exfoliation using 

either 10% or 20% glycolic acid. When 

this was applied, I felt a slight tingling, 

enough to know that some good was being 

done, but without any discomfort. As the 

product is very active, it can only remain 

on the skin for four minutes, after which 

Fiona brought out the soothing hot mitts 

to delicately remove the peel. 

The final stage is the treat - a refreshing 

and soothing collagen mask. After your 

skin has been through the mill (sucked, 

prodded and exfoliated, but all for a good 

reason!) the mask makes everything 

worthwhile. After application, the mask 

was left on for 10 minutes, and Fiona 

offered to use the LPG machine on either 

my hands or chest; these two areas are 

prone to sun damage and fine lines. I opted 

for it to be used on my hands, and was 

incredibly impressed with the results.

Gone is the idea that all hair extensions 

are good for is increasing length; the 

most popular reasons for requesting hair 

extensions are to build up gaps in the hair, 

add volume and give a healthy aesthetic, 

which can be done with anything from as 

little as 50 bonds. Extensions can also be 

used to add colour and vibrancy to the hair, 

subtle highlights to the ends of the hair, or 

for a complete colour change. 

When it comes to the different methods 

and types of extensions, there are lots to 

choose from. Fusion, for example, uses 

small strands of hair that are pre-bonded, 

usually with a keratin-based tip, and then

or vibration. Dependent on the brand, a 

professional set can last anywhere between 

3-5 months. Tape-in extensions are 

semi-permanent, lasting up to 6 weeks. 

An invisible strip is used to attach tiny hair

They are cost effective, and can be easily 

removed, but doesn’t last as long as the 

fusion technique. If you’re after a more 

DIY approach, clip-in ones are the way to 

go. They allow you to change your style in 

minutes without any of the compromises of 

the semi-permanent solutions. It’s always 

best to buy them from a salon, and to 

have them trimmed for 

the most natural result. 

Micro-ring extensions are where your hair 

is passed through a small copper micro-ring 

and the extension hair is clamped within the 

micro ring. It does not use any heat or glue, 

so is a good alternative for those who are 

concerned about heat application methods. 

Jo from The Moore Hair Company in Ely, 

tells us a little more about the Balmain 

range they use. “Although all of the

FUEL THEIR FUTURE

Group, talks to us about the importance of keeping our kids active 

There are some frightening studies and 

statistics surrounding child obesity, but 

in a world where it seems the norm and 

far easier to point the finger than offer a 

guiding hand, I would like to break the cycle. 

With over 5,000,000 children in 2,000 

schools around the UK, and following 

the release of a collection of studies, it is 

believed that over 25% of all children leave 

school obese. This results in poor selfimage, 

low self-esteem, and a tendency to 

withdraw from others and in some severe 

cases depression which can be taken on 

into adult life. As adults, teachers, coaches 

and activity professionals, we have a 

responsibility and a duty to the youth of 

today, and to ourselves to step up, take 

positive action and be the guiding force that 

inspires change. And it is easier than you 

think. I’ve outlined three simple steps... 

1. LEAD BY EXAMPLE 

It’s the same in adults as it is in children. A 

healthy and balanced nutritional program 

and regular exercise helps with both 

physical and mental states, no matter how 

old you are. Practice what you preach and 

be the change that inspires. Staying active, 

eating healthily and encouraging children 

to do the same is a great way to learn about 

new foods and activities and get healthy 

together. It’s as simple as finding a healthy 

recipe online or in a magazine, cycling 

or walking to the shops to collect the 

ingredients to cook for all the family. 

2. KIDS NEED TO BE KIDS 

Play is the way! Put down the tablet, games 

console or phone and get outside. A trip 

to the park, a cycle ride or forest walk with 

friends can not only help increase physical 

attributes but encourage social interaction, 

communication skills and skills like problem 

solving and working as part of a team. 

Games such as capture the flag, tag and 

obstacle courses plus cycle rides round the 

village, are a great source of exercise as well 

as working on agility, strength, competitive 

nature and problem solving in a fun way. 

3. SUPPORT PE AND ORGANISED 

RECREATION 

Organised clubs and PE support in schools 

and in extra-curricular clubs has been 

proven to improve learning capacity and 

classroom performance by up to 25% in 

areas such as productivity, attentiveness 

and achievement. As little as 30 minutes 

exercise has been proven to, not only 

improve the in-class participation, but 

overall performance in exams.

The Wrong Way? 

This month, Adam Prescott asks if we’re looking at losing 

weight from the wrong angle... 

Last month, I explained why focusing on 

results instead of health has actually, in 

a weird ironic way, become detrimental 

to your results. If you missed it, you can 

still read my column from last month at 

www.velvetmag.co.uk. I also gave a few 

challenges to help start adjusting your 

mindset and boosting your confidence, so 

I hope you have been giving them a go as it 

can all contribute to a ‘healthier you’ in the 

long run. 

This month I want to dive into 

something a little more ‘foodie’ 

related and ask, how do we eat 

to feel good and lose weight? 

Well, isn’t that the million dollar 

question?! How many people 

do you know that are trying to 

lose weight, or wanting to start 

losing weight? Exactly... quite a 

few! How many ‘diets’ do you know 

about? Atkins, Paleo, Ketogenic? 

Or perhaps some of the more, what 

I would call, ‘hideous diet schemes’ 

like ‘The Special K Diet’, ‘The Cambridge 

Diet’ or ‘The Cookie Diet’ (yes that is a real 

thing)... 

If there are so many diets out there, 

how come everyone is still trying and 

struggling to lose weight? Well, as I briefly 

said up top, last month I spoke about how 

confidence (or lack of) and mindset is a 

huge contributor to whether we succeed 

in losing body fat, feeling healthy and, 

fundamentally, feeling confident again. 

Let’s forget about the psychological aspect 

this month and automatically remove 

these ‘diets’ as they just contribute to more 

misinformation and confusion amongst 

people who truly want to change their 

appearance and feel more confident long 

term, not to mention they can damage 

people’s health. Let’s focus more on the 

real food diets. 

The three real food diets I’ve already 

mentioned above (Atkins, Paleo, 

Ketogenic), along with many others, all 

have a couple of things in common... they 

all have many success stories and they all 

favour one macro 

nutrient, 

whether it 

be fat, 

protein or 

carbohydrates. 

I’ve seen professionals that favour one 

of these particular diets argue their way 

of eating over the other until they are 

red in the face. Yet, at some point in the 

argument they will all state that ‘everybody 

is different’. That’s exactly my point! The 

tricky thing about nutrition is everybody 

is different. I personally feel that macro 

nutrients have been dumbed down over 

the years. When a lot of people think of 

protein, they only think of meat or eggs. 

What about beans and legumes that have 

lots of protein as well as many other micro 

and phytonutrients? 

That leads to my point: this critical 

thinking should instead be focused on 

getting optimal amounts of micro and 

phytonutrients into the body without 

an excess of any macro nutrients. You 

could be relatively healthy on a diet 

that is high in fats, proteins or 

carbohydrates (providing they’re of 

high quality). The key focus should 

be on a comprehensive nutrient 

intake - are we getting enough 

micronutrients, phytonutrients 

and antioxidants into our bodies to 

maximise our bodily functions? 

Let’s now look at obesity, or being 

overweight. The common action 

when someone wants to lose weight, 

for whatever reason, is to reduce the 

amount of food we eat and increase 

the amount of energy we output. The 

classic calories in vs calories out. But hold 

on, what are the key symptoms of being 

obese? Tired, demotivated, unhappy (not 

always but generally), bags under the eyes, 

maybe signs of metabolic syndrome; high 

blood pressure, high blood glucose levels, 

early onset of type 2 diabetes... I’m not 

saying if you are overweight that all of 

those apply to you, you may only have a 

couple, particularly the first few. But if 

that’s the case, is restricting your nutrient 

intake the right thing to be doing, let alone 

coupling that with increasing exercise? All 

of a sudden you find your body craving for 

nutrients, sending you all of these signals,

‘diet’ you feel even worse and your willpower

This almost always 

happens on the 

quick fix diets you hear about, but it can 

also happen on the real food diets when one 

macro nutrient is favoured too much. 

All of those side effects from eating 

excessive amounts of calories and poorquality 

‘foods’ are just that - side effects. 

You may think that you’re eating too much 

because of the amount of calories you are 

consuming, however your body is screaming 

at you for nutrients. All of the side effects; 

feeling down, excess body fat, tiredness 

etc, can be reversed if you give the body 

the nutrients it needs to thrive. And that is 

exactly what optimal consumption of micro 

nutrients, phytonutrients and antioxidants 

can do. 

This is why at Revolution Fitness, we look 

at excess body fat as a deficiency issue. By 

loading the body up with an ample amount 

of micronutrients, phytonutrients and 

antioxidants (by that I mean a large variety 

of vegetables!) we can give the body what 

it needs to start optimising its functions, 

boosting energy levels and dropping the 

inches. When you consume excess amounts 

of these nutrients without the excess of 

calories, the body starts to function at a 

higher level and you will naturally consume 

enough macro nutrients by eating large 

variations of fruits and vegetables such as, 

avocados, nuts, seeds, onions, mushrooms, 

green vegetables and cruciferous vegetables 

to name just a few. 

So what are the types of nutrients I keep 

going on about? Micronutrients are 

non-caloric elements and substances that 

play a crucial role in our daily functions, 

from regulating your metabolism to bone 

density, such as magnesium or calcium. 

Phytonutrients are the ‘new kids on the 

block’, only being discovered in the 1990s. 

They are natural chemicals found in a lot 

of our fruits, vegetables, beans, nuts and 

seeds. They are paramount in disease 

prevention and keeping you functioning 

optimally. Antioxidants? Well we’ve all 

heard of these and know they are good for 

you but what do they do? Put simply, they 

are elements that prohibit the oxidation of 

other molecules in the body, keeping you 

strong and lively. A couple of examples 

would be Vitamin C and selenium. 

Eating raw is important too. There are 

up to 50% more nutrients in raw foods 

than there are in cooked foods. I’ll give 

you a quick example, phytochemicals like 

isothiocyanates (ITCs) are formed after an 

enzyme reaction. The enzyme needed for 

this reaction is called myrosinase, and can 

only happen after the cell wall is broken 

down (chewed or blended). If you cook 

the food first, it destroys the myrosinase 

inhibiting the formation of the ITCs, 

lowering the nutrient and craving-reducing 

value of the food. Whenever you eat a meal, 

ask yourself, is there any way I can add 

some raw additions to this meal? 

When I have my omelette in the morning, I 

choose a variety of veg, normally something 

along the lines of onions, mushrooms, 

peppers, spinach, thyme and garlic. I put 

half of all of those in the pan along with 

the eggs, whilst the other half I put straight 

onto the plate... RAW! It all tastes great and 

I get the full nutrient value of those foods. 

For the next 30 days, until the next issue of 

Velvet, try focusing on cutting out all of the 

processed food and bring back the veg. Add 

in spices and herbs to flavour everything, 

and then add anything raw which comes to 

mind. Try my top tips from last month, and 

my ‘extra veg challenge’ this month and see 

how you feel by the end of October.

If you’re looking for the latest technology in 

a spacious, fully-equipped gym, then stop 

the search. In a bid to improve the facilities 

for both customers and staff, the team at 

Abbeycroft Leisure have just invested in 

a complete overhaul at their current site 

here in Newmarket. Not only have they 

introduced an abundance of the latest new

the space, Studio 3 and the internal staff 

office will be knocked through to create a

These additional training stations will mean

increased gym space, the interior itself 

will see a fresh new look. For the majority 

of the refurbishment, the gym has been 

able to remain open keeping disruption to 

a minimum for existing members. Closing 

for just three days, the new refreshed space 

will open on Saturday 8th October when 

all work will have been completed. On 15th 

and 16th October, they will hold an open 

weekend to showcase their new facilities to 

current members as well as welcoming new 

ones too.

drop, there’s nothing quite like lighting 

a fire in the evenings. Not only do fires 

add warmth and comfort to your home, a

For more years than I care to think about. I have always sewn, but as a business I started by

I think it mainly comes from my clients themselves. Every one is an individual with unique 

likes, dislikes and ways of living their lives. They may say to me that they don’t know what 

they want, but finding out what they don’t like and what they are passionate about soon 

shows me the way to go. 

IF YOU COULD PICK ONE WORD TO DESCRIBE YOUR STYLE, WHAT WOULD IT BE? 

I think my one word would have to be stylish, although other words such as individualistic, 

classic and practical spring to mind. 

WHAT DO YOU ENJOY MOST ABOUT BEING AN INTERIOR DESIGNER? 

It has to be the end result. It is a privilege to be invited into someone’s home and for them 

to trust me to be able to do the best for them. Everyone has things which are important to 

them, such as that inherited piece from Granny or a cherished painting by little Tommy for 

example, and it is imperative they are respected and worked into the finished scheme as the 

client wants. 

WHAT IS YOUR BEST PIECE OF ADVICE FOR SOMEONE LOOKING TO RESTYLE THEIR INTERIOR? 

Step back and thing about how you live your life and again the practicality of your home. 

It is no good adding things into a room if the layout is fundamentally wrong or if you are 

always moving things or tripping over them. Storage is imperative. 

WHAT ARE YOUR AREAS OF EXPERTISE? 

Interior design is just the tip of the iceberg for me! I also offer room styling, bespoke 

curtains and blinds, and sourcing those elusive items to complete your look. In fact, I also 

have a beautiful selection of hats, fascinators and jewellery and much, much more. 

WHAT DO YOU PREDICT IS GOING TO BE PROMINENT NEXT YEAR? 

Neutrals have been big and will remain so. They make a safe choice for those bigger 

purchases such as sofas, curtains or carpets, especially in economic uncertainty, but also 

make a great base for splashes of trendy colour like acid green or amethyst. Greys are 

great, through to storm blue, glowing with metallic and pearlescent hues.

When Hiring a Tree Surgeon 

Simon Luckings, of S P Landscapes & Tree Contractors, talks to 

us about what you should consider when hiring a tree surgeon 

1. ARE THEY INSURED? 

A reputable tree surgery company 

should be able to provide a copy of their 

Employers’ & Public Liability insurance 

before any works are carried out. The 

recommended minimum cover is £5 million, 

but we have insurance for up to £10 million. 

2. DO THEY WORK TO BRITISH 

STANDARD BS3998:2010 TREE WORK – 

RECOMMENDATIONS? 

All competent tree surgeons should be 

undertaking works to this standard, where 

applicable. This may be difficult for the 

client to check, but a company which holds 

ARB Approved Contractor status with 

the Arboricultural Association, means that 

they are regularly monitored by industry 

specialists. We provide a copy of our ARB 

Approved Contractor certificate with all 

our quotations, but clients can check to 

see if a contractor is ARB Approved on the 

Arboricultural Association website, which is 

www.trees.org.uk 

3. WILL THEY PROVIDE A WRITTEN 

QUOTATION WITH A FIXED PRICE? 

We provide a written quotation that details 

all of the works with the prices clearly stated 

and that they are subject to VAT. Any 

contractor that does not provide a written 

quotation should be avoided, as there may 

be difficulties if the work is not completed 

as the client had hoped, and the contractor 

is in disagreement. It is also essential to 

confirm in the quote what will happen with 

the timber and brushwood resulting from 

the works and if you want this removed 

from site, make sure this is detailed in the 

quote. 

4. ARE THE STAFF QUALIFIED TO UNDERTAKE 

THE WORK? 

If a company holds the relevant insurance, 

and is an ARB Approved Contractor, it 

would have been vetted to ensure their staff 

are adequately qualified. The client can still 

ask to see the individual staff qualifications 

and they can check these online through 

the NPTC or Lantra Awards websites, 

which are the main two training providers 

for chainsaw and aerial tree work. All our 

staff carry individual NPTC skills cards that 

list their qualifications and have photograph 

identification. 

5. CAN THEY PROVIDE A NAME AND NUMBER 

OF A REFEREE FOR COMPLETED TREE WORK 

OF A SIMILAR NATURE? 

Our current client list includes Forest 

Heath and South Cambridgeshire District 

Councils, Cambridge City Council, The 

Forestry Commission, Flagship Housing 

Association and Godolphin for commercial 

tree works. We also have over a thousand

Personally I love cars, I love driving cars, 

I love motor racing, and I love working 

with and selling cars. Perhaps this makes 

me different from other ladies, however, I
