Pamela Wills is no stranger in the kitchen. Along with her fiancé, Johnny Fish, they have come up with an amazing recipe for Pork Ribs (with the bone-in) just in time for the Labor Day weekend. Ingredients Full Slab of Pork Ribs - Bone in Olive Oil Spice Rub BBQ Sauce Spice Rub Ingredients Old Bay Seasoning Dill Weed Seasoning Salt Ginger Parsley Flakes Directions Ground Black Pepper Onion Powder Garlic Powder Chili Powder Crushed Red Pepper (Optional) •Remove your ribs from its packaging and rinse with cold water. •Brush your ribs with Olive Oil. Choice of oil is up to you, but I know this great store on Treasure Island called, Vine and Grind. All natural oils! •Prepare your spice rub. I like to put a teaspoon and a half of each spice in a bowl and mix it up - then sprinkle it evenly over the ribs on each side. •You want to sear the flavor into the ribs on a high heat for approximately 8 - 10 minutes. Approximately 2 - 3 minutes on each side, flipping continuously until browned. (Don’t burn them, unless you like it that way.) I prefer Apple-Wood Charcoal for this, but you can use a gas grill with Apple-Wood Chips for added flavor. If using chips, be sure to soak them in water for at least 2 - 3 hours before using them. You will get the fullest flavor out of them this way! 14 / BAYBUZZ.ORG / SEPTEMBER 2016

•Preheat oven to 300˚. Place your ribs in a baking pan deep enough to add just enough water to cover the bottom of the pan. Wrap the baking pan tightly with aluminum foil. The idea is to steam your ribs slowly to tenderize the meat. •Bake the ribs for approximately 1 ½ to 2 hours. You can test it by using a fork to flake the rib meat. If it falls off the bone easily, it’s done. •Once the ribs are done baking, put your preferred BBQ sauce on each side. Set your oven on high heat broil (top rack or 2 nd down for more controlled broiling, as you don’t want to burn them… unless you enjoy them burnt.) For BBQ Sauce, I use Burman’s Hickory & Brown Sugar BBQ Sauce •Broil for 2 - 3 minutes on each side. Let them sit for 2 - 3 minutes before serving. Enjoy!
