Recipe by: Aaron
Atkinson "A basic white
bread recipe without the
gluten. Easily made in your
bread machine! Xanthan
gum and the exotic flours
are usually easily found
in your local health food
store."
3 eggs 1 tablespoon cider vinegar 1/4 cup olive oil 1/4 cup honey 1
1/2 cups buttermilk, at room temperature 1 teaspoon salt 1 tablespoon
xanthan gum 1/3 cup cornstarch 1/2 cup potato starch 1/2
cup soy flour 2 cups white rice flour 1 tablespoon active dry yeast
Add all ingredients to list
Place ingredients in the pan of the bread machine in the order
recommended by the manufacturer.
Select the sweet dough cycle. Five minutes into the cycle, check the
consistency of the dough. Add additional rice flour or liquid if
necessary.
When bread is finished, let cool for 10 to 15 minutes before removing
from pan.
Tip
Aluminum foil can be used to keep food moist, cook it evenly, and
make clean-up easier.
Preparing to
cook: Heat
the oven to
450 degrees
F. Lay down
a piece of parchment paper
on a baking sheet.
Making the batter: Whisk
together the buttermilk,
paprika, garlic power, and
onion powder. Add a pinch
of salt and pepper and stir.
Making the flour: Whisk
together a pinch each of
salt and pepper, flour mix,
and smoked paprika.
Dipping the chicken: Set
a large cast-iron skillet on
medium-high heat. As the
pan is heating, line up the
chicken, the bowl of batter,
and the spiced flour. Pour
the oil into the hot pan.
Frying the chicken: When
the oil has reached 375
degrees F, dip a piece
of chicken in the batter.
Shake off any excess liquid.
Dip the chicken in the
flour and coat it entirely.
Place the chicken in the
hot oil. Repeat with all the
pieces of chicken.
(Don't overcrowd the pan.
You can always do this in
two batches.)
Flip the chicken pieces
when the bottoms are
nicely browned. When both
sides are browned, put the
chicken pieces onto the
prepared baking sheet.
Finishing the chicken:
When all the chicken has
been browned and laid on
the baking sheet, put the
baking sheet in the oven.
Cook the chicken until
the legs have reached an
internal temperature of 185
degrees F and the breasts
measure 155 degrees F.
Recipe courtesy of Shauna
James Ahern, from glutenfreegirl.com
Burn The
Floor
The world’s
toughest
dance show
returns to SA
Sibaya Casino,
Durban: 8 – 19 June
Burn The
Floor, the
show that
revolutionised
the image
of dance, returns to
South Africa, its “home
away from home”, for the
fourth time: performing
in the Opera Theatre of
The South African State
Theatre in Pretoria from
April 27 to May 15; the
Baxter Theatre at the
Baxter Theatre Centre in
Cape Town from May 19
to June 5; and the iZulu
Theatre at the Sibaya Casino
in Durban from June
8 to 19.
The original concept
of Burn The Floor grew
from an electric display of
ballroom and Latin dancing
at Sir Elton John’s 50th
birthday party in London,
March 1997. There, producer
Harley Medcalf, discovered
the ballroom dance
world and its charismatic
people, with their deep
intensity, commitment,
discipline, burning passion
and total love of the
ballroom art form.
Initially, Medcalf’s
idea of a new theatrical
ballroom production sent
shock waves through the
ballroom dancing establishment.
For decades,
ballroom competitions had
been performed behind
closed doors, as a pastime
for the privileged… and
well before reality television
embraced it with such
shows as Dancing with
The Stars and Strictly
Come Dancing
The show Burn The
Floor opened in England in
1999. A decade later, after
visiting thirty countries
and over one hundred and
sixty cities worldwide, it
achieved its long standing
dream, to bring Ballroom
to Broadway – appearing
at the Longacre Theatre in
New York, followed by two
hugely successful seasons
in London’s West End.
Burn The Floor today
remains focused on its
ballroom origins, but this
new edition to be seen in
South Africa, the “gloriously
sinful” Burn The
Floor: Fire in The Ballroom,
choreographed and
directed by Peta Roby, has
more surprises in store
and promises to blow the
roof off the theatre! It has
the same rebellious spirit
as the previous editions,
though more daring with
a theatrical rock angle –
including music from Santana,
Janis Joplin, Christine
Aguilera and Led Zeppelin.
Burn The Floor has
the reputation of being the
world’s toughest dance
show and the dancers are
handpicked to embrace a
new Latin American feel.
The international cast of
dance champions now
includes the sensational
South Africans, Johannes
Radebe and Kylee Brown.
Born and talent
nurtured in South Africa,
Johannes Radebe started
dancing at the age of
seven. He is the current
reigning South African National
Ballroom and Latin
American Champion and
is a season dance trainer
for the TV production
Strictly Come Dancing SA.
Radebe recently became
a very recognisable figure
in South Africa when he
and his celebrity partner,
Capetonian Leigh-Anne
Williams, were the runnersup
in the 2015 season of
the TV show.
Kylee Brown was
born in Pretoria and started
dancing at the age of
eight. Brown is the undefeated
WDC South Africa
Under 21 Latin Champion.
In 2011 she won the Under
21 WDC World Latin
Championships and the
highlight of her dancing
career to date was winning
the Under 21 Open British
Latin Championship in
Blackpool in 2012.
Burn The Floor: Fire
in The Ballroom is brought
to South Africa in 2016
by Dance Partner Productions,
in association with
The South African State
Theatre and Bernard Jay.
Karkloof Crane
& Conservation Centre
The Karkloof
Crane and
Conservation
Centre
is an exquisite
natural resource in
the heart of the scenic
South African province
of KwaZulu-Natal. While
it offers visitors plenty of
beautiful vistas and variety,
it is, essentially, an
attraction for bird-lovers
and avian enthusiasts.
Guided walks through
Karkloof allow visitors to
spot an impressive array of
bird species. Significantly,
the centre is home to all
three of the crane species
that can be found in this
country (the Wattled Crane,
Blue Crane and Grey
Crowned Crane). In addition,
visitors can expect to
see Red-knobbed Coots,
Little Grebes, African Fish
Eagles, South African Shelducks,
Southern Pochards,
African Marsh Harriers,
White-faced Ducks, Jackal
Buzzards, African Harrier-
Hawks, Steppe Buzzards,
Black-headed Herons,
Giant Kingfishers, Black
Crakes, Lesser Kestrels,
Bald Ibises and the Greater
Striped Swallows.
There are two bird
hides in the centre, which
invite guests to take some
time out to enjoy the tranquillity
of the countryside
as they watch these fascinating
bird species in their
natural habitats. These
also make for excellent
spots from which to take
stunning photographs.
The Karkloof Crane
and Conservation Centre
is committed to ecotourism;
educating and raising
awareness among members
of the public from all
over the world. There is an
interpretive facility, which
is an important part of the
ecotourism aspect of the
facility.
Other activities in the
Karkloof Crane and Conservation
Centre include
hiking, picnicking and
exhilarating canopy tours.
World Champion, Hank McGregor
(Euro Steel/Epic Kayaks),
McGregor’s regular local rival,
Matt Bouman (Epic Kayaks) and
rapidly improving lifesaving convert,
Wade Krieger (Epic Kayaks/
Falcon World Travel) all from KZN
shores, the local challenge is set
to be a strong one.
The event has however also
enjoyed a prominent presence of
classy, experienced surfski paddlers
from the Western Cape in
the past with the likes of Mocké’s
brother, Dawid (Fenn Kayaks/
Mocké Paddling), Sean Rice
(Think Kayak), Kenny Rice (Think
Kayak) and junior flyer Mark
Keeling having all claimed top
ten finishes previously, setting
up another tough task for KZN’s
racing snakes should they hope
to reign supreme.
It remains to be seen if international
contenders such as defending
champion Booth and fellow
Australian and 2014 Durban
Downwind sixth place finisher,
Mark Anderson will make the trip
out to South Africa for this year’s
mouthwatering match-up.
While the majority of the focus
will be on the singles racing, Durban’s
affinity for doubles racing is
likely to draw a healthy S2 field as
well, an event that will run concurrently
to the S1 clash.
Through the generous support
of title sponsors FNB, the first
100 online entrants will receive a
complimentary moisture management
race garment while R40
000 will be up for grabs across
all age and gender categories and
all participants stand the chance
of claiming one of the various
sought-after Thule lucky draws
prizes at the event’s prize giving.
Online entries, submitted
via www.roag.co.za, close on
Wednesday, 22 June with registration
taking place at Marine SLC
on Friday, 24 June from 17h00-
The 2016 FNB Durban Downwind
takes place on 25 or 26 June, the
final race date and venue will be
announced on the series' Facebook
"I heard that the target of
R250 000 has been set
for the ride this year," said
Lauren Varty, who has ridden
every edition of The Cows
100 Miles of Nowhere. "To
be able to aim at a figure like
that, and to know that it is
now happening nationally at
all eight Cadence centres is
Durban –
Having
ridden in
every edition
of the
100 Miles Of Nowhere
cycling fundraiser, teenager
Lauren Varty can't
wait to jump back on her
static bike and cover the
160km kilometers on Friday
24 June as a celebration
of what this project
has achieved in a short
space of time.
The bubbly Westville
woman, who is pursuing
her dream of becoming a
vet with a first year B.Sc
at the University of Pretoria,
was instrumental in
establishing The Cows in
KwaZulu-Natal, a group of
passionate athletes who
take part in popular endurance
sporting events to
raise funds and awareness
for Childhood Haematology
and Oncology Clinics
(CHOC) for children battling
cancer.
Varty will be returning
home for the varsity holidays
and will ride the 160
kilometers at the Westville
The Cows stalwart set to
maintain 100% record at
100 Miles Of Nowhere
branch of the Cadence Cycle
Performance Centres,
one of five in KwaZulu-
Natal being used for the
fundraiser, along with two
in Gauteng and one in
Cape Town added in this
year to make the project
national.
With a target set of R250
000 for the project, Varty
is excited and humbled by
what started on a much
smaller scale in 2011.
Despite her full schedule of
school commitments, the
former St Mary's pupil has
done every one of the 100
Miles Of Nowhere rides
since then, even managing
to squeeze it into her
matric year last year.
Last year Varty and her
mother Iris Varty rode the
full 160km ride on static
bikes in the oversized furry
suits that The Cows have
become famous for, making
the already arduous
ride a lot tougher. But Varty
won't have it any other
way.
"Sure it was tough. But
in the bigger scheme of
things, what we were going
through was nowhere
near as tough as what the
kids battling cancer have
to go through every day. If
we can inspire the children
to push through by seeing
us struggling through our
100 Miles Of Nowhere ride
then I am really excited,"
she said.
"Luckily both my mom and
I are really stubborn, so
we got through the tough
times together without
much trouble. We are a
really good team and can
battle through, and it feels
like we are in sync!," said
Varty.
As a teenager determined
to make a difference to the
charity that she stumbled
on in 2011, she is in awe at
how the 100 Miles Of Nowhere
project has grown in
such a short space of time.
"I heard that the target of
R250 000 has been set
for the ride this year. To be
able to aim at a figure like
that, and to know that it
is now happening nationally
at all eight Cadence
centres is really humbling,"
said Varty.
Entries are limited at
each of the Cadence
centres and are allocated
on a first-come-firstserved
basis by booking
on the event website,
100 Miles of Nowhere
The event was first done
in 2008 by an American
blogger Eldon Nelson who
goes by the name of the
Fatcyclist or Fatty. The
original event was a personal
challenge for Fatty
during his wife’s treatment
for cancer. He did the first
100 Miles of Nowhere by
himself, on a set of rollers
in his garage. Before he
knew it, his blog followers
wanted to join him and do
the event and so it become
an annual and international
event.
The next year — and every
year after that — hundreds
of people have done it.
The event has since grown
and there are participants
across the globe. The Fatcyclist
edition has an entry
field of 500; who sign up
and pay/donate to Fatty’s
chosen charity. About The
Cows
The Cows were started in
2008 by a group of eight
enthusiastic cyclists keen
to make a difference and
raise funds for CHOC. Cordi
van Niekerk was one of
the founder members and
joined Kerrin and Grant
Bain in cycling the 94.7
Cycle Challenge in memory
of their little daughter,
Jessica, who had recently
died from cancer at just 20
months old. As CHOC had
played a significant role in
the Bain family's life in the
last few weeks of Jessica’s
life, specifically with palliative
care and emotional
support, the decision was
to make CHOC the beneficiary
of their quest. They
decided to don cow suits
and succeeded in raising
R230 000.
In 2009, the herd gained
momentum and grew to
an incredible 140 energetic
cows. Just two years later
the herd numbered a staggering
350 cows all riding
for a purpose. Armed with
the ‘Love Living Life’ slogan
and a healthy dose of
enthusiasm, the herd has
enjoyed much success and
acclaim.
is steeped
in local folklore
including tales of
giant snakes and cannibals.
The mountain has
served as a refuge for
its community throughout
make it easy to defend.
The runners will have
to make their way up
the steep sides and
stunning vistas await
as they circumnavigate
the top. Distant
onto Nagle Dam is also
impressive and on a
clear day, the Drakensberg
can be viewed
from this spectacular
vantage point.
The 7km course is challenging
due to the ascent
up the mountain – even
trail on top is a network of
cattle tracks that and the
