bread recipe without the<br />
gluten. Easily made in your<br />
bread machine! Xanthan<br />
gum and the exotic flours<br />
are usually easily found<br />
in your local health food<br />
store."<br />
3 eggs 1 tablespoon cider vinegar 1/4 cup olive oil 1/4 cup honey 1<br />
1/2 cups buttermilk, at room temperature 1 teaspoon salt 1 tablespoon<br />
xanthan gum 1/3 cup cornstarch 1/2 cup potato starch 1/2<br />
cup soy flour 2 cups white rice flour 1 tablespoon active dry yeast<br />
Add all ingredients to list<br />
Place ingredients in the pan of the bread machine in the order<br />
recommended by the manufacturer.<br />
Select the sweet dough cycle. Five minutes into the cycle, check the<br />
consistency of the dough. Add additional rice flour or liquid if<br />
necessary.<br />
When bread is finished, let cool for 10 to 15 minutes before removing<br />
from pan.<br />
Tip<br />
Aluminum foil can be used to keep food moist, cook it evenly, and<br />
make clean-up easier.<br />
Preparing to<br />
cook: Heat<br />
the oven to<br />
450 degrees<br />
F. Lay down<br />
a piece of parchment paper<br />
on a baking sheet.<br />
Making the batter: Whisk<br />
together the buttermilk,<br />
paprika, garlic power, and<br />
onion powder. Add a pinch<br />
of salt and pepper and stir.<br />
Making the flour: Whisk<br />
together a pinch each of<br />
salt and pepper, flour mix,<br />
and smoked paprika.<br />
Dipping the chicken: Set<br />
a large cast-iron skillet on<br />
medium-high heat. As the<br />
pan is heating, line up the<br />
chicken, the bowl of batter,<br />
and the spiced flour. Pour<br />
the oil into the hot pan.<br />
Frying the chicken: When<br />
the oil has reached 375<br />
degrees F, dip a piece<br />
of chicken in the batter.<br />
Shake off any excess liquid.<br />
Dip the chicken in the<br />
flour and coat it entirely.<br />
Place the chicken in the<br />
hot oil. Repeat with all the<br />
pieces of chicken.<br />
(Don't overcrowd the pan.<br />
You can always do this in<br />
two batches.)<br />
Flip the chicken pieces<br />
when the bottoms are<br />
nicely browned. When both<br />
sides are browned, put the<br />
chicken pieces onto the<br />
prepared baking sheet.<br />
Finishing the chicken:<br />
When all the chicken has<br />
been browned and laid on<br />
the baking sheet, put the<br />
baking sheet in the oven.<br />
Cook the chicken until<br />
the legs have reached an<br />
internal temperature of 185<br />
degrees F and the breasts<br />
measure 155 degrees F.<br />

fourth time: performing<br />
in the Opera Theatre of<br />

Theatre in Pretoria from<br />
April 27 to May 15; the<br />
Baxter Theatre at the<br />
Baxter Theatre Centre in<br />

Harley Medcalf, discovered<br />
the ballroom dance<br />
world and its charismatic<br />
people, with their deep<br />
intensity, commitment,<br />
discipline, burning passion<br />
and total love of the<br />
ballroom art form.<br />
Initially, Medcalf’s<br />
idea of a new theatrical<br />
ballroom production sent<br />
shock waves through the<br />
ballroom dancing establishment.<br />
For decades,<br />
ballroom competitions had<br />
been performed behind<br />
closed doors, as a pastime<br />
for the privileged… and<br />
well before reality television<br />
embraced it with such<br />
shows as Dancing with<br />

The show Burn The<br />
Floor opened in England in<br />
<strong>19</strong>99. A decade later, after<br />
visiting thirty countries<br />
and over one hundred and<br />
sixty cities worldwide, it<br />
achieved its long standing<br />
dream, to bring Ballroom<br />
to Broadway – appearing<br />
at the Longacre Theatre in<br />
New York, followed by two<br />
hugely successful seasons<br />

Burn The Floor today<br />
remains focused on its<br />
ballroom origins, but this<br />
new edition to be seen in<br />
South Africa, the “gloriously<br />
sinful” Burn The<br />
Floor: Fire in The Ballroom,<br />

directed by Peta Roby, has<br />

seven. He is the current<br />

Ballroom and Latin<br />
American Champion and<br />
is a season dance trainer<br />
for the TV production<br />
Strictly Come Dancing SA.<br />
Radebe recently became<br />
a very recognisable figure<br />
in South Africa when he<br />
and his celebrity partner,<br />
Capetonian Leigh-Anne<br />
Williams, were the runnersup<br />
in the 2015 season of<br />
the TV show.<br />
Kylee Brown was<br />
born in Pretoria and started<br />
dancing at the age of<br />
eight. Brown is the undefeated<br />
WDC South Africa<br />
Under 21 Latin Champion.<br />
In 2011 she won the Under<br />
21 WDC World Latin<br />
Championships and the<br />
highlight of her dancing<br />
career to date was winning<br />
the Under 21 Open British<br />
Latin Championship in<br />

25 and 26 <strong>June</strong> for the <strong>2016</strong> FNB<br />
Durban Downwind, setting the<br />
stage for another world class duel<br />
as the World Surfski Series title<br />
event draws top elite ocean racers<br />
to Durban idyllic wintery conditions<br />
for the 26km clash.<br />
With a two day window period<br />
and course flexibility, organisers<br />
hope to provide participants<br />
with the best possible downwind<br />
conditions to enjoy between Marine<br />
Surf Lifesaving Club (SLC) at<br />
Addington beach and La Mercy, or<br />

(Think Kayak), Kenny Rice (Think<br />
Kayak) and junior flyer Mark<br />
Keeling having all claimed top<br />
ten finishes previously, setting<br />
up another tough task for KZN’s<br />
racing snakes should they hope<br />
to reign supreme.<br />
It remains to be seen if international<br />
contenders such as defending<br />
champion Booth and fellow<br />
Australian and 2014 Durban<br />
Downwind sixth place finisher,<br />
Mark Anderson will make the trip<br />
out to South Africa for this year’s<br />
mouthwatering match-up.<br />
While the majority of the focus<br />
will be on the singles racing, Durban’s<br />
affinity for doubles racing is<br />
likely to draw a healthy S2 field as<br />
well, an event that will run concurrently<br />
to the S1 clash.<br />

of what this project<br />
has achieved in a short<br />
space of time.<br />
The bubbly Westville<br />
woman, who is pursuing<br />
her dream of becoming a<br />
vet with a first year B.Sc<br />
at the University of Pretoria,<br />
was instrumental in<br />
establishing The Cows in<br />
KwaZulu-Natal, a group of<br />
passionate athletes who<br />
take part in popular endurance<br />
sporting events to<br />
raise funds and awareness<br />
for Childhood Haematology<br />
and Oncology Clinics<br />
(CHOC) for children battling<br />
cancer.<br />
Varty will be returning<br />
home for the varsity holidays<br />
and will ride the 160<br />
kilometers at the Westville<br />
The Cows stalwart set to<br />
maintain 100% record at<br />
100 Miles Of Nowhere<br />
branch of the Cadence Cycle<br />
Performance Centres,<br />
one of five in KwaZulu-<br />
Natal being used for the<br />
fundraiser, along with two<br />
in Gauteng and one in<br />
Cape Town added in this<br />
year to make the project<br />
national.<br />
With a target set of R250<br />
000 for the project, Varty<br />
is excited and humbled by<br />
what started on a much<br />
smaller scale in 2011.<br />
Despite her full schedule of<br />
school commitments, the<br />
former St Mary's pupil has<br />
done every one of the 100<br />
Miles Of Nowhere rides<br />
since then, even managing<br />
to squeeze it into her<br />
matric year last year.<br />
Last year Varty and her<br />
mother Iris Varty rode the<br />
full 160km ride on static<br />
bikes in the oversized furry<br />
suits that The Cows have<br />
become famous for, making<br />
the already arduous<br />
ride a lot tougher. But Varty<br />
won't have it any other<br />
way.<br />
"Sure it was tough. But<br />
in the bigger scheme of<br />
things, what we were going<br />
through was nowhere<br />
near as tough as what the<br />
kids battling cancer have<br />
to go through every day. If<br />
we can inspire the children<br />
to push through by seeing<br />
us struggling through our<br />
100 Miles Of Nowhere ride<br />
then I am really excited,"<br />
she said.<br />
"Luckily both my mom and<br />
I are really stubborn, so<br />
we got through the tough<br />
times together without<br />
much trouble. We are a<br />
really good team and can<br />
battle through, and it feels<br />
like we are in sync!," said<br />
Varty.<br />
As a teenager determined<br />
to make a difference to the<br />
charity that she stumbled<br />
on in 2011, she is in awe at<br />
how the 100 Miles Of Nowhere<br />
project has grown in<br />
such a short space of time.<br />

The event was first done<br />
in 2008 by an American<br />
blogger Eldon Nelson who<br />
goes by the name of the<br />
Fatcyclist or Fatty. The<br />
original event was a personal<br />
challenge for Fatty<br />
during his wife’s treatment<br />
for cancer. He did the first<br />
100 Miles of Nowhere by<br />
himself, on a set of rollers<br />
in his garage. Before he<br />
knew it, his blog followers<br />
wanted to join him and do<br />
the event and so it become<br />
an annual and international<br />
event.<br />
The next year — and every<br />
year after that — hundreds<br />
of people have done it.<br />
The event has since grown<br />
and there are participants<br />
across the globe. The Fatcyclist<br />
edition has an entry<br />
field of 500; who sign up<br />
and pay/donate to Fatty’s<br />
chosen charity. About The<br />
Cows<br />
The Cows were started in<br />
2008 by a group of eight<br />
enthusiastic cyclists keen<br />
to make a difference and<br />
raise funds for CHOC. Cordi<br />
van Niekerk was one of<br />
the founder members and<br />
joined Kerrin and Grant<br />
Bain in cycling the 94.7<br />
Cycle Challenge in memory<br />
of their little daughter,<br />
Jessica, who had recently<br />
died from cancer at just 20<br />
months old. As CHOC had<br />
played a significant role in<br />
the Bain family's life in the<br />
last few weeks of Jessica’s<br />
life, specifically with palliative<br />
care and emotional<br />
support, the decision was<br />
to make CHOC the beneficiary<br />
of their quest. They<br />
decided to don cow suits<br />
and succeeded in raising<br />
R230 000.<br />
In 2009, the herd gained<br />
momentum and grew to<br />
an incredible 140 energetic<br />
cows. Just two years later<br />
the herd numbered a staggering<br />
350 cows all riding<br />
for a purpose. Armed with<br />
the ‘Love Living Life’ slogan<br />
and a healthy dose of<br />
enthusiasm, the herd has<br />
enjoyed much success and<br />
acclaim.<br />

including tales of<br />
giant snakes and cannibals.<br />
The mountain has<br />
served as a refuge for<br />
its community throughout<br />
history as its cliffs<br />
make it easy to defend.<br />
The runners will have<br />
to make their way up<br />
the steep sides and<br />
over rocks to summit<br />
the mountain where<br />
stunning vistas await<br />
as they circumnavigate<br />
the top. Distant<br />
views of Pietermaritzburg<br />
and the Umsunduzi<br />
River across to<br />
the Umngeni River and<br />
the hilltop panorama<br />
of the Valley of 1000<br />
Hills. The view down<br />
onto Nagle Dam is also<br />
impressive and on a<br />
clear day, the Drakensberg<br />
can be viewed<br />
from this spectacular<br />
vantage point.<br />
The 7km course is challenging<br />
due to the ascent<br />
up the mountain – even<br />
the top racing snakes are<br />
reduced to a walk! The<br />
trail on top is a network of<br />
cattle tracks that and the<br />
course traverses half of<br />
the mountain edge before<br />
cutting back though the<br />
middle along a beautiful<br />

set of robots, then turn<br />

Cross the Baynespruit<br />
stream and go straight<br />
through the first set of<br />

Garage. Travel up the hill<br />
for +- 2km and turn right<br />

wetland and stream. The<br />
12km course completely<br />
circumnavigates the<br />
mountain and involves<br />
significantly more ascent<br />
and descent. In sections<br />
of the course the trail disappears<br />
and participants<br />
have to follow markers<br />
through open grassland.<br />
The 20km course will<br />
circumnavigate the top<br />
of mountain, as well as<br />
about 20km until in turns<br />
into a dirt road. Soon after<br />
turn right onto the D1001.<br />
