The WHO is a special agency of the United Nations that is concerned with global health issues and brings to light new research, publications, and often solutions surrounding these issues. In previous years, World Health Day celebrations have brought awareness to important health topics such as blood pressure, aging, food safety, and making hospitals safe in emergency situations. This year, the subject of diabetes will be the main focus. According to the WHO, some 1.5 million deaths were the direct result of diabetes in 2012 across the globe. World Health Day will scale up diabetes prevention, strengthen care for diabetics, and enhance global surveillance. World Health Day is April 7, 2016. Educate yourself on diabetes and how Type 2 Diabetes can often be prevented by visiting www.who.int⁄diabetes. Seniors Qualify for Free Tax Preparation Free tax return preparation assistance is available for qualifying taxpayers, including seniors. The Volunteer Income Tax Assistance (VITA) program can help by connecting you with an IRS–certified volunteer who will provide help with your tax preparation and e–filing. To qualify, you must have an annual income of less than $54,000, have a disability, be elderly, and⁄or have limited English– speaking capabilities. Additionally, the Tax Counseling for the Elderly (TCE) offers help for those 60 years and older. The TCE specializes in questions regarding pensions and retirement– related issues. Add two cups of chicken broth, one 15– oz. can of black beans, drained and rinsed, one 15–oz. can of fire–roasted diced tomatoes, 1 tsp. ground cumin, and the meat of one deli rotisserie chicken, pulled off the bone and shredded. Reduce heat to medium and simmer, stirring occasionally, for about 10 minutes. Season with salt and pepper, to taste, and serve immediately with a dollop of sour cream and a warm tortilla on the side. Collect & Share Favorite Family Recipes – Put<br />

together binders of favorite recipes for your<br />

children. Don’t forget to include all of those<br />

holiday family favorites, as well as any recipes<br />

that were passed down to you!<br />

Create Photo Albums or Photo Books –<br />

Select several important, monumental family<br />

photographs and put them together in a photo<br />

book or album. Try to label the photographs with<br />

names, dates, and locations, as best as you can.<br />

Record Family Stories – Make a simple voice<br />

or video recording of important stories passed<br />

down from the generations. For example, tell the<br />

story of how you and your spouse met or what<br />

you did for your first job. Or, offer a good piece<br />

of advice that was given to you! These family<br />

stories will be a cherished piece of history for<br />

your family.<br />

Travel with Your Children – Taking the time to<br />

explore a new place to make memories with<br />

your children and grandchildren will benefit<br />

everyone. Stepping away from the daily<br />

busyness of life gives us the opportunity to truly<br />

connect and learn about one another. Don’t<br />

forget to make a “trip highlights” photo album<br />

after the trip.<br />

Contribute to an Organization – Donating to<br />

local charities, non-profit organizations, or<br />

museums is a great way to give back and show<br />

your family what causes are important to you.<br />

Ask your children to continue the trend of<br />

donating to your organization of choice, or their<br />

own, so as to honor the importance of giving<br />

back.<br />

Recipe vegetable lasagna<br />

This layered veggie lasagna is packed with so<br />

much flavor, you won’t even miss the meat!<br />

Ingredients<br />

1 (26-oz.) jar tomato pasta sauce<br />

1 zucchini, diced<br />

1 bell pepper, diced<br />

1 lb. mushrooms, diced<br />

½ onion, diced<br />

1 (9-oz.) package frozen spinach, thawed and<br />

drained<br />

1 (15-oz.) container low-fat ricotta cheese<br />

1/2 cup grated Parmesan cheese<br />

1 tablespoon dried oregano<br />

12-14 lasagna noodles, precooked according to<br />

package instructions<br />

4 cups shredded mozzarella cheese<br />

Olive Oil<br />

Heat oven to 375°F. Add two tablespoons of olive<br />

oil to a large skillet and turn heat to medium-high.<br />

Sauté together onion, zucchini, bell pepper, and<br />

mushrooms until just soft (about five minutes). In<br />

a large bowl, combine softened vegetables with<br />

pasta sauce and mix well. In another bowl, mix<br />

together ricotta cheese, Parmesan cheese, two<br />

cups of mozzarella, oregano, and spinach.<br />

Spray a 9x13 inch baking dish with nonstick<br />

cooking spray and spread one cup vegetable<br />

sauce into the bottom. Cover sauce with a<br />

single layer of lasagna noodles. Spread onehalf<br />

of the ricotta cheese mixture on top of the<br />

noodles, followed by another layer of vegetable<br />

sauce. Repeat layering until ingredients have all<br />

been used and top with remaining two cups of<br />

mozzarella cheese.<br />

Bake, uncovered, on center rack for about 40<br />

minutes or until cheese is bubbling. Let stand for<br />

15 minutes before serving. Serves 8-10.
