BEANS<br />
As other legumes, pinto beans are a wonderful<br />
source of vegetableprotein. They can be used in any<br />
type of dish, whether stews, salads<br />
oraccompaniments, among others, due to their<br />
palatable flavor, soft tasteand consistent texture.<br />
Pinto beans are round or kidney-shaped, lightbrown<br />
with dark purple streaks.The main production of<br />
legumes in concentrated in northwesternArgentina,<br />
more speci_cally in the province of Salta, and nearly<br />
80% ofthe domestic consumption comes from this<br />
region. The beans are mechanicallyand/or<br />
electronically sorted in order to guarantee top<br />
quality,by selecting only those measuring 0.39 in x<br />
0.39 in x 1.18 in (1 cm x1cm x 3 cm) at the<br />
