months. Lewinsohn’s white wines do not un<strong>de</strong>rgo malolactic fermentation in or<strong>de</strong>r to<br />
maintain their naturally high acidity and balance.<br />

Winemaking: Fermented in neutral Burgundy oak barrels and aged sur lie for eight<br />
months. Nearly all of the stages of transferring the wine are done through a gravitational<br />
process, which prevents the <strong>de</strong>licate aromas from being lost. Lewinsohn’s white wines<br />
do not un<strong>de</strong>rgo malolactic fermentation in or<strong>de</strong>r to maintain their naturally high acidity<br />
