Introducing Jane...<br />

Jane is 42 and resides locally. Jane works a full time<br />

job and commutes 60 miles per day. Jane has lost 8<br />

stone and kept it off. This is her story:<br />

“I had tried most of my adult life to lose weight but kept gaining it,<br />

sometimes at an alarming rate. I had developed a very unhealthy<br />

relationship with food and yo-yo dieting and binge eating habits.<br />

With a medical deadline looming and other methods failing me,<br />

I searched social media and found Dee and <strong>Million</strong> <strong>Dollar</strong> <strong>Fitness</strong>.<br />

I made the initial call tentatively, as exercise to me was a last resort!<br />

The thought of exercising in the presence of others terrified me.<br />

After meeting with Dee initially, I came away reassured and<br />

confident enough to give a class a try. There really was<br />

no looking back after that. In the first week following<br />

Dee’s nutritional plan I had shredded 10 pounds off.<br />

I am now 3 years down the line and have achieved so<br />

much more than I ever believed possible - 5km fun run,<br />

firewalking, increased knowledge and confidence,<br />

new friends and most importantly Dee cared enough<br />

to commit to working with me to help me overcome<br />

my issues with binge eating. Binge eating fuelled my<br />

biggest fear of gaining back the weight I had lost...<br />

and I haven’t!<br />

Juggling work, family and social life demands means<br />

that it can be a challenge at times to maintain exercise<br />

and nutrition plans, however Dee has a knack of making<br />

things easy! Simple things like changing your morning / evening routines to set the<br />

tone for the day can make the difference in succeeding to remain on plan or not.<br />

Preparing lunch the previous evening, getting up earlier, showering, having my<br />

coconut coffee and listening to my happy music during the commute to work make<br />

it more likely for a successful day.<br />

When I was very overweight, life was a struggle, everyday tasks like walking were<br />

difficult. My daily life now is physically easier, I have increased confidence, my<br />

knowledge has increased significantly, I can shop in high street shops, I have more<br />

energy and I am able to keep up with my little dog, Millie. I feel better now at 42<br />

than when I was 25 years old!<br />

I love to cook and bake all kind of foods and my favourite things to eat are:<br />

zoodles (courgette noodles), sautéed in coconut oil with some crushed<br />

garlic; roasted cauliflower florets tossed in olive oil, seasoned with<br />

salt and pepper and roasted in the oven. Both of these are great<br />

accompaniments for a homemade chilli. As a treat<br />

quick and creamy<br />

Coconut Chicken<br />

Serves 4<br />

300ml coconut milk<br />

2 tablespoons tomato puree<br />

1 tablespoon (or to taste) dried<br />

crushed chilli<br />

2 tablespoons ground almonds<br />

2 teaspoons turmeric<br />

2 teaspoons garam masala<br />

2 teaspoons cumin<br />

4 chicken breast fillets, cut into<br />

bite-size pieces<br />

2 onions, chopped<br />

2 cloves garlic, crushed or<br />

finely chopped<br />

2 tablespoons coconut oil<br />

4 tablespoons fresh coriander<br />

Mix the coconut milk with<br />

the tomato puree, chilli,<br />

almonds, turmeric, garam<br />

masala, cumin and 1<br />

tablespoon of water. Add<br />

the chicken and coat all<br />

of the pieces. Cover with<br />

cling-film and refrigerate for at least 1 hour.<br />

Cook the onions and garlic in 1 teaspoon of coconut<br />

oil until soft.<br />

Remove the chicken from the marinade, add to the<br />

pan with the onion and cook for 2 minutes, covered<br />

over a low heat. Add the marinade and the remaining<br />

oil and cook for 15-20 minutes.<br />

Stir in the fresh coriander and serve.<br />
