Beef kofta<br />

curry with fluffy<br />

rice, beans & peas<br />

By AWARD-WINNING Chef Abdus Shahid<br />

Prep Time<br />

30 mins<br />

Cooking Time:<br />

2 hrs<br />

Serves 4-6<br />

Curries don’t have to cook for<br />

ages, this aromatic beef curry is<br />

easy to prepare and full of flavour.<br />

Method<br />

1. Put the lentils into a bowl with salt, pepper, the<br />

garam masala and mince, then mix and scrunch<br />

together with clean hands • Divide the mixture<br />

in half, then with wet hands quickly squeeze and<br />

mould each half into 6 fat fingers • Put them into<br />

the frying pan with 1 tablespoon of oil, turning<br />

when golden.<br />

2. Put 1 mug of rice, 2 mugs of boiling water and<br />

the cardamom pods into the casserole pan, then<br />

halve and add the beans and put the lid on<br />

• Squash the tomatoes into the liquidizer, add the<br />

peeled ginger, trimmed spring onions, half the<br />

chilli, the coriander stalks, turmeric, honey, curry<br />

paste and coconut milk, then blitz until combined<br />

• Pour into the kofta pan, bring to the boil, then<br />

simmer and season to taste.<br />

3. Take the lid off the rice, add the peas, mix it all<br />

up and give it just a few more minutes • Crack up<br />

the uncooked poppadoms and pop them in the<br />

microwave for a minute or two to puff up<br />

• Add the coriander leaves and a dollop of yoghurt.<br />

Ingredients<br />

For the curry<br />

• 1x250g pack of ready-to-eat puy lentils<br />

• 1 heaped teaspoon garam masala<br />

• 400 g quality lean beef mince olive oil<br />

• 3 ripe tomatoes<br />

• 1 thumb-sized piece of ginger<br />

• 2 spring onions<br />

• 1 fresh red chilli<br />

• 1 bunch fresh coriander<br />

• 1 teaspoon turmeric<br />

• 1 teaspoon runny honey<br />

• 2 heaped tspns rogan josh curry paste<br />

• ½x400g tin of light coconut milk<br />

• 4 tbls fat-free natural yoghurt<br />

• 1 lemon<br />

For the rice<br />

• 1 mug (300g) 10-minute basmati rice<br />

• 5 cardamom pods<br />

• 200g green or yellow beans<br />

• 200g frozen peas<br />

Local author talks about her series of childrens books<br />

Launched last October, ‘Silly Eric’ a brightly<br />

illustrated fun picture book, sends children<br />

laughing as they walk with the adorable Eric<br />

through his day and identify with the little things<br />

he gets muddled up with.<br />

He finds there is nothing wrong with being silly<br />

because, at the end of the day, his mother loves<br />

him, just the way he is. It’s the perfect gift for<br />

little ones aged 2-5. And, perhaps, for silly older<br />

people too! We caught up with Suffolk raised<br />

author Gracie Wright about her book series.<br />

Gracie, where did ‘Silly Eric’ come from?<br />

I happen to be one of<br />

those itchy feet creative<br />

people who need to<br />

create all of the time<br />

- always dreaming,<br />

always moving. Perhaps<br />

it’s writing a song, or<br />

a melody, perhaps it’s<br />

painting a picture or<br />

starting a new venture.<br />

In this case it is<br />

children’s stories.<br />

What inspired you?<br />

After 15 years of working with children, I have<br />

decided to use my wealth of experience to write<br />

a collection of children’s books inspired by the<br />

little characters I have looked after and met along<br />

the way. Their wonderful imaginations and way<br />

of doing things have always made me laugh and<br />

I wanted to capture this and share it with other<br />

children and families. Although I am still young<br />

myself, I believe that no one says it better than a<br />

child, honest and to the point!<br />

What makes ‘Silly Eric’ so special?<br />

5% of book sales will go towards U2U World<br />

children’s charity, building homes for children<br />

without families.<br />

You’ve recently launched a ‘Silly Eric’ day camp?<br />

Yes we’ve organised at Southwold Rugby Club a<br />

range of fun filled activities to encourage children<br />

to have fun, work together and be celebrated for<br />

who there are. Our slogan is “we love you just the<br />

way you are”.<br />

35 years in business - not bad! I can<br />

honestly say that I have enjoyed every<br />

minute off it...<br />

Fashion never stands still and neither<br />

do I, so I’m very much suited to the ‘rag<br />

trade’ as it used to be called.<br />

My fashion store ‘Angela’s’ is situated in a<br />

magnificent old malting building in Long<br />

Melford, packed with glamorous chic clothes and<br />

accessories for all occasions, pockets and events.<br />

During the 80’s when we first opened our doors,<br />

German collections took off in England. At<br />

the height of fashion came co-ordinations and<br />

everything was big!<br />

Big shoulder pads and big buttons, big oversized<br />

jackets along with big hair together with turn-ups,<br />

culottes, pleated skirts and blouses, which had to<br />

have the collar turned up!<br />

STUNNING AUTUMN COLLECT<br />

This allows one of my lovely girlies to look after you<br />

for whatever occasion you may require an outfit for.<br />

We are like personnel shoppers each customer is an<br />

individual and our job is to select the perfect outfit<br />

for them, allowing the customer to enjoy the day<br />

and not worry about the clothes she is wearing.<br />

Having just competed Spring Summer 2016<br />

Collections, the trend this season appears to be<br />

getting smarter again, with wide trousers, culottes,<br />

fitted jackets and more bling!<br />

Fashion still reinvents itself for the times we now<br />

live in, and along my journey I have to thank<br />

everyone who has helped me on my 35 year fashion<br />

expedition, especially my Husband Paul, Donna my<br />

general manager and my wonderful team of fashion<br />

stylists.<br />

All very ‘Dallas’ style with masses of bling... it was<br />

such a fun time, customers just wanted to buy<br />

lots and lots of clothes and very much enjoyed<br />

the personnel service we offered… and still do of<br />

course!<br />

It’s time to look forward to the<br />

AW season. Many strong trends<br />

appeared during the various<br />

fashion weeks and runway shows<br />

this year.<br />

Remember, trends are just that; trends. So don’t<br />

feel pressured to introduce every single one into<br />

your wardrobe. Select those that work for you<br />

and incorporate them into your personal style.<br />

Ladies<br />

HIGH NECKS<br />

Many of the top designers featured polo necks<br />

in their shows. You won’t struggle to find<br />

something for every occasion as higher<br />

necklines are appearing on dresses<br />

and coats as well. When the weather<br />

gets colder try layering a polo under a<br />

knitwear piece.<br />

Eighties Revival<br />

We’ve already seen retro looks re-appear<br />

on the high-street but this season it’s<br />

time to embrace (or dig out) the polka<br />

dots, ruffles, statement belts and power<br />

shoulders. Velvet was huge on the runway<br />

as well which marries well with this look.<br />

Patchwork<br />

It’s all about bold, stand out patterns this<br />

time around, especially patch work and<br />

checks. These designs can be found on<br />

basically any item so even if you’re style is<br />

more conservative try braving it with some<br />

statement scarves and accessories. Those<br />

feeling braver might want to go full throttle<br />

and wear the “clash” look also seen on the<br />

runway.<br />

Gentlemen<br />

SHEARLING<br />

Traditionally seen on coats, this time<br />

designers were including shearling bags,<br />

jumpers<br />

and even trainers. Fear<br />

not those who are animal friendly, the high-street<br />

is sure to be full of synthetic-look shearling items.<br />

Just remember to weather protect any suede<br />

items.<br />

Wider Legs<br />

The skinny jean’s day is done. Once a full skinny<br />

convert I am relieved to already be wearing<br />

trousers that don’t take most of the day to get on<br />

and off. If you’re not ready for some of the flared<br />

look spotted, try and slim or straight leg.<br />

Shades of Grey<br />

While green and pink were also making their<br />

presence known throughout the shows, grey<br />

was in the spotlight across the board. Perfect for<br />

anyone who can’t quite pull of the starkness of<br />

black and ideal to make any outfit look just a little<br />

more sophisticated. Try layering different greys<br />

on top of each other.<br />

Taking up Tradition<br />

In a lot of ways, British<br />

wedding celebrations haven’t<br />

changed all that much over the<br />

ages.<br />

The process from church to reception,<br />

wedding breakfast to celebration – it’s much<br />

been the same for centuries.<br />

However, it can sometimes feel that with so<br />

many ideas out there, the traditional British<br />

wedding could be overlooked.<br />

Here are just a couple of simple ideas that<br />

could lend themselves to a more typically<br />

traditional wedding:<br />

Receptions and Toasting:<br />

Local Fruits<br />

Custom tends to lean towards champagne<br />

or a similar alternative for receptions and<br />

toasting, to the bride and groom.<br />

Traditionally, it would not have been possible<br />

to make wine from grapes proficiently in the<br />

UK or source from abroad with ease.<br />

Instead, the celebratory drink of choice would<br />

have been mead or cider.<br />

With such a beautiful array of mead and cider<br />

available both locally and nationally, why not<br />

take tradition by the horn and opt for a fruity<br />

cider reception and a toast with sweet honey<br />

mead.<br />

Dress to Impress? Or, ward<br />

off evil spirits?<br />

Way back in Roman times bridesmaids were<br />

instructed to wear similar attire to that of the<br />

bride, in order to ward of evils spirits when<br />

accompanying her on her wedding day.<br />

So while some may say not to wear white on<br />

a brides wedding day, as a sign of respect and<br />

tradition, it was actually regarded as common<br />

practice in the days of the Roman Empire.<br />

The Favours Five<br />

Traditionally guests would have received<br />

five almonds, each signifying a token of well<br />

wishing from the bride and groom:<br />

Health, Happiness, Prosperity, Fertility<br />

and Longevity.<br />

If you don’t want to give almonds as favours,<br />

why not a beautifully decorated crossword<br />

with the five words hidden with clues.<br />

Or perhaps a differing five items?<br />

Ultimately, it’s not always about the next best<br />

thing or what’s trending online.<br />

Planning a wedding should be focused on<br />

what you like as a couple.<br />

And if you get stuck for ideas – don’t be<br />

afraid to look back at tradition as well as the<br />

fashion for the season.<br />

When a wedding planner becomes<br />

a bride<br />

Having been in the<br />

industry for over 10<br />

years I have pretty<br />

much seen it all,<br />

colours and theme<br />

wise, so when it came to<br />

planning my wedding<br />

it was pretty difficult,<br />

you really can have too<br />

much choice.<br />

However once we had chosen<br />

our venue, Ravenwood Hall<br />

Hotel and decided on a<br />

colour scheme, the planning and design was easy.<br />

My husband and I love the 1920-1950’s so we had a<br />

silver screen theme, each table was named after an<br />

actor or actress from that era ie: Elizabeth Taylor.<br />

We had bird cages as a running theme with gold<br />

and ivory accents.<br />

Our flowers were peonies, roses, gypsophila and<br />

hydrangeas.<br />

I designed all the stationery including:<br />

• Invitations which were double fold ivory card, bird<br />

cage detailing, gold and ivory lace and dusky<br />

pink.<br />

• Order of ceremony<br />

• Menu cards<br />

• Table Plan<br />

• Place-settings, which were<br />

hooked over guests wine<br />

glasses using strings of pearls.<br />

We wanted a vintage feel<br />

so I used mini bronze keys,<br />

to the ladies, Trivial Pursuit<br />

cards on the tables, sugared<br />

almonds and chocolate<br />

hearts.<br />

For the evening there was<br />

a candy buffet, VW camper<br />

photo booth, disco, cheese<br />

board and sparklers, which<br />

finished off the celebrations.<br />

Keith chose a 3 piece navy<br />

suit with ivory tie, matching<br />

hankie and white shirt all<br />

from Six Whiting Street.<br />

summer time in Suffolk.<br />

So when the opportunity arose to<br />

attend one of their legendry events I<br />

jumped at the chance.<br />

The excitement was heightened<br />

knowing the evening’s main event was<br />

the Kaiser Chiefs, my friend’s favourite<br />

band!<br />

We always love an excuse to get dressed<br />

up and what better occasion than the<br />

stylish Newmarket Nights.<br />

There was a definite buzz as we arrived<br />

at the race course, picnics and bubbly<br />

were in full swing, the sun was shining<br />

and it looked set to be a great evening.<br />

With Pimms in hand we ventured to<br />

the Premier Enclosure to soak up the<br />

atmosphere and admire the fine attire of<br />

beautiful summer dresses.<br />

We were pleasantly surprised at the<br />

variety of delicious food and snacks<br />

catering for even our fussy palettes.<br />

Wanting the best view possible, which<br />

can be tricky with a vertically challenged<br />

best friend, we headed to the stage<br />

early determined to get a great view of<br />

the amazing Kaiser Chiefs!<br />

We were certainly not disappointed!<br />

Ricky Wilson had great stage presence<br />

and was a fantastic front man involving<br />

the excitable crowd.<br />

Performing songs old and new, I was<br />

reminded of how many fantastic hits this<br />

awesome British band have produced.<br />

Jones<br />

<strong>Bounce</strong> <strong>Magazine</strong> were delighted to<br />

attend Newmarket Nights. On the<br />

7th August the legendary Sir Tom<br />

Jones returned for a mind blowing<br />

performance.<br />

After his incredible show last year, he<br />

brought with him his huge repertoire of<br />

hits from across genres and generations<br />

including ‘Kiss’, ‘Delilah’, ‘She’s A Lady’<br />

and ‘It’s Not Unusual’ for another not-tobe-missed<br />

night on the green.<br />

His career, spanning over half a century,<br />

has seen him win many accolades<br />

including a BRIT Award for Outstanding<br />

Contribution to Music and a Silver Clef<br />

Award for Lifetime Achievement.<br />

Sir Tom is a global star, who received<br />

his knighthood from Her Majesty the<br />

Queen in 2006, has amassed 36 top 40<br />

UK hits and has a continued worldwide<br />

reputation as one of the great vocalists,<br />

earning the nickname ‘The Voice’.<br />

Sir Tom Jones commented before his<br />

show “I’m really looking forward to<br />

appearing at ‘An Evening At The Races’<br />

Meningitis<br />

Meningitis is a very serious, life-threatening<br />

infection of the lining of the brain.<br />

It can cause sudden illness that needs<br />

prompt diagnosis and treatment and if left<br />

untreated can cause severe brain damage,<br />

blood poisoning and in some cases can be<br />

fatal. It is something that I dread both as a<br />

parent and as a doctor.<br />

Recently there has been a rise<br />

in meningitis from two strains<br />

Meningitis B that mainly affects<br />

babies and Meningitis W that<br />

mainly affects teenagers.<br />

Meningitis can strike rapidly and<br />

it is important to be vigilant and<br />

trust your instincts. Your child<br />

may have a fever, or be vomiting;<br />

they may be drowsy, confused or<br />

irritable.<br />

They may complain of a severe headache,<br />

pain when looking at light, a stiff neck or<br />

may have a seizure. Look at their skin for<br />

signs of blotchiness or a rash, feels their<br />

hands and feet, as these are often very<br />

cold despite their fever.<br />

Babies may be ‘out if sorts’, not settling,<br />

crying more than normal and their cry can<br />

sound ‘different from normal’. They may be<br />

grunting or breathing rapidly. In all cases<br />

the patient will continue to get worse and<br />

urgent medical attention is needed.<br />

The good news is that this summer<br />

there are now 2 new life saving vaccines<br />

available to prevent these nasty strains of<br />

meningitis (W and B).<br />

From August <strong>2015</strong> all 17-18 year olds<br />

and university entrants will receive the<br />

Combined Meningitis ACWY to combat the<br />

rise in Meningitis W cases.<br />

From 1st sept <strong>2015</strong> all our<br />

newborn babies will be<br />

immunised for Meningitis<br />

B along with all the current<br />

vaccines from 2 months<br />

old, with a second Men<br />

B injection at 4 months,<br />

then a booster at 12<br />

months as part of the NHS<br />

vaccination programme<br />

available at your GP surgery.<br />

The UK is the first country in the world to<br />

vaccinate against this strain of meningitis<br />

in a national publicly funded campaign.<br />

There will also be a limited catch up<br />

programme for infants who are due their<br />

3-4month immunisations in <strong>September</strong>.<br />

Cranio-sacral therapy, how does<br />

it work?...<br />

I distantly remember the first time I was<br />

introduced to cranial. I nearly burst out laughing<br />

holding my fellow practitioner’s head trying to feel<br />

the supposed rhythmic pull of the tissues.<br />

The theory was that the bones, the dura and the<br />

cerebro-spinal fluid have a distinct movement in<br />

a specific direction and any deviation from that<br />

specific movement may cause dysfunction.<br />

My lack of faith was mainly due to the lack of<br />

scientific evidence; particularly the fact that the<br />

cranial bones firmly sutured together should be<br />

able to move at all. Nevertheless few lessons later<br />

I began to feel that rhythm myself exactly as<br />

described by my tutor. With practice I was able<br />

to feel different levels in that rhythm, which were<br />

supposedly coming from the deeper structures.<br />

Also I found out that there is definitely the right<br />

and wrong way of doing it after I had a severe<br />

headache brought on by my fellow student<br />

practitioner that was subsequently fixed by my<br />

tutor.<br />

So although it may not be clear how it works some<br />

people get up and feel better immediately after<br />

having just one session.<br />

We normally recommend cranial osteopathy<br />

for adults in conjunction with either structural<br />

osteopathy or acupuncture. However we can do a<br />

whole session of cranial on request.<br />

Are you sitting too comfortably?<br />

Sitting is the latest health hazard, according<br />

to a recently published study, which<br />

shows that being sedentary for hours at a<br />

time increases your risk of diabetes, heart<br />

disease and premature death.<br />

But you don’t have to take this risk lying<br />

down! There is an easy way to find out how<br />

fit you are and what exercise would benefit<br />

you. Bury Physio offers a Fitness For Life<br />

Test which will assess your ability and<br />

signpost the kind of exercise you need.<br />

Statistically, people aged 45 or over who sit<br />

down for 11 or more hours a day have an<br />

increased risk of dying over the next three<br />

years, compared with those who sit for no<br />

measuring your height, blood pressure,<br />

weight and aerobic fitness will be used as<br />

the basis for a full report. You will also be<br />

given advice on any health issues you wish<br />

It’s no longer just Sticks and Stones...<br />

‘He glared at me, shouting ‘You’re a leper, you<br />

suck people dry. Everyone hates you, your<br />

children hate you. You have no friends and you<br />

will die alone.’ I pleaded with him to stop. I was<br />

sobbing, but he just carried on screaming at me,<br />

louder and louder,’<br />

The old nursery rhyme of ‘sticks and stones may<br />

break my bones but words will never hurt me.’<br />

may have been good advice in the playground<br />

but is certainly not true of domestic violence<br />

where emotional and psychological abuse can be<br />

more scarring and harder to recover from than<br />

physical abuse. One of the reasons is that the<br />

damage is not immediately apparent. Get a black<br />

eye and the hurt is there for all to see, but mental<br />

scarring has always been much more difficult to<br />

define.<br />

Under the Serious Crimes Act <strong>2015</strong>, the definition<br />

of domestic abuse has been widened to include<br />

the offence of ‘controlling or coercive behaviour<br />

in an intimate or family relationship. When this<br />

law comes into force, the offence will carry a<br />

maximum sentence of 5 years.<br />

What is controlling and coercive behaviour?<br />

The law says that it will be illegal for an intimate<br />

partner or family member to repeatedly or<br />

continuously engage in behaviour towards<br />

another person that has a serious effect. Crucially,<br />

it is behaviour the offender knows or ought to<br />

have known would have a serious effect. The new<br />

offence will have links to harassment, stalking and<br />

revenge porn all of them already illegal, as well as<br />

to sexual coercion.<br />

Not One Single Act<br />

Coercive Control is a ‘course of conduct’ offence<br />

whereby it is not defined by one single criminal<br />

act but rather a number of acts occurring<br />

together, forming a pattern. Not all the acts<br />

are, of their own, coercive in nature, the act of<br />

coercive control is specific to the relationship but<br />

identifying it is not as difficult as it sounds, if you<br />

know where to look.<br />

It’s Not About Anger<br />

The important thing to understand with coercive<br />

control is that it is largely invisible and has<br />

very little to do with anger therefore anger<br />

management will have no effect on an abuser<br />

who uses controlling tactics in a relationship.<br />

Anger, quite often, is used as a tactic to<br />

subjugate, meaning that an abuser will ‘rev<br />

himself up’ to project anger in order to intimidate.<br />

The abuse happens so gradually that victims of<br />

coercive control may not even realise they are<br />

being abused.<br />

Low level violence<br />

It is not necessary for abusers to use violence<br />

although some do, the threat of it can be enough<br />

to frighten someone into submission. Low level<br />

violence that doesn’t mark and therefore leaves<br />

no evidence is another tactic. Being pushed into<br />

a wall, grabbed by the hair or wrist, maybe even<br />

by clothing, doors being slammed in the face,<br />

being elbowed, rough sex when angry all feel<br />

threatening and act to undermine and dominate.<br />

I Want You All To Myself<br />

The early signs of coercive control can even look<br />

like devotion. ‘I just want to be with you’, ‘I really<br />

miss you when you see your friends.’ The coercive<br />

controller targets single mothers, the newly<br />

divorced, widows or those undergoing medical<br />

treatment as they are already vulnerable. After,<br />

for example, a divorce, it can be flattering to be<br />

loved so intensely but it is just one of the ways<br />

of isolating the victim from family and friends.<br />

When the controller becomes more established,<br />

he may even forbid his partner’s close friends and<br />

family from coming to the house or he may be<br />

deliberately rude or flirt inappropriately so that<br />

they become uncomfortable and withdraw.<br />

The abuser may not like his partner working or<br />

having interests outside of the relationship. He<br />

may sabotage any attempts at self-improvement<br />

saying ‘Why are you doing this course? You won’t<br />

get any clients. You should be concentrating on<br />

our relationship.’<br />

He may refuse to have any bills in his name<br />

saying ‘ In case something happens to me it’s<br />

better if the bills are in your name.’ and he may<br />

put the heating on full blast or leave all the<br />

lights on knowing you will stress over the bills.<br />

When he does offer to put the bills in his name,<br />

he will avoid paying them, arranging to have<br />

them deferred so the debt piles up without you<br />

knowing.<br />

Quite often, a controller will borrow money then<br />

refuse to pay it back or buy something (maybe a<br />

car) that is meant for the family but then register<br />

it as his so, when the relationship breaks down,<br />

you are still left with the bills. The added stress<br />

only serves further to undermine and subjugate.<br />

Monitoring and Blackmail<br />

The abuser will monitor your texts and emails.<br />

It may not even look like monitoring. ‘Here’s my<br />

phone, I have nothing to hide, why can’t I look at<br />

your phone what are you keeping secret?’<br />

‘He changed my password to ‘I love (his name)’<br />

saying that each time I logged on, I would be<br />

reminded of how much I love him.’<br />

He may blackmail his partner with information she<br />

doesn’t want in the public domain, for example<br />

intimate photos.<br />

‘Revenge porn’ is now illegal but he may threaten<br />

to post the images or show his friends in order to<br />

degrade her and further subjugate.<br />

He may threaten to tell everyone she has a mental<br />

illness when she tries to go to the Doctor for<br />

antidepressants so she doesn’t go and becomes<br />

more vulnerable without support.<br />

Disorientation and Gaslighting<br />

Some abusers deliberately wake up their partners<br />

several times during the night so that they<br />

become so exhausted they find it difficult to cope.<br />

They are then easier to manipulate. He may<br />

try and make his partner doubt her own sanity<br />

as in the film ‘Gaslighting’ where a husband<br />

deliberately tried to make his wife think she was<br />

going crazy by turning the light on and off and<br />

then denying it.<br />

Undermining Parenting<br />

Another tactic used by controllers is in reducing<br />

the amount of time a mother spends with her<br />

children.<br />

This can be done by scheduling ‘couple time’<br />

when the children need their mother.<br />

‘He would deliberately keep me in bed when<br />

the alarm went off to stop me from getting the<br />

children their breakfast. If they tried to come into<br />

the bedroom he would scream at them to wait<br />

downstairs.’<br />

Many will threaten the mother with social services<br />

or the police so she ends up fearing the agencies<br />

that are there to protect her.<br />

Health<br />

Living in constant fear and always on eggshells<br />

can cause IBS, palpitations, headaches, difficulties<br />

in eating and sleeping, anxiety, depression and a<br />

complete loss of self-esteem. The abuser knows<br />

this and knows that his partner will find it difficult<br />

to cope so she will end up reliant on him which is<br />

exactly how he wants it. A coercively controlling<br />

relationship has been described as less about<br />

domestic abuse than being in a hostage situation.<br />

Criminalising this could not come sooner.<br />

A skillfully applied MLD treatment results in greater performance of the<br />

A brief insight into the lymphatic<br />

system:<br />

This helps to maintain blood volume, blood<br />

pressure and prevents oedema.<br />

A healthy lymphatic system also plays an important<br />

part in the body’s immune system.<br />

The lymphatic nodes help to fight infection<br />

by filtering lymph and destroying invading<br />

microorganisms.<br />

Lymphocytes are reproduced in the lymph nodes<br />

and following infection they generate antibodies to<br />

prevent the body from subsequent infection.<br />

The lymphatic system does not have a pump like<br />

the cardiovascular system. It depends on muscle<br />

movement, internal pressure changes during<br />

respiration and on the pull of the skin and fascia<br />

during movement.<br />

There are many aspects that can compromise the<br />

activity of the lymph system. Examples can be lack<br />

of movement and injury and even muscle tension<br />

can prevent lymph flow.<br />

This month <strong>Bounce</strong> <strong>Magazine</strong><br />

were delighted to stay at the<br />

award-winning Strattons Hotel in<br />

Swaffham, Norfolk, here’s what we<br />

thought…<br />

‘Nestled away, just off Swaffham’s high street you<br />

will find the beautiful surroundings of Strattons<br />

Hotel in Norfolk.<br />

With 14 individually themed rooms, local food and<br />

eclectic interiors, the family-run, award-winning<br />

boutique hotel is a place you may never want to<br />

leave.<br />

Owners Les and Vanessa Scott have done a<br />

fantastic job on giving the establishment an<br />

imaginative, arty feel, complete with hotel or selfcatering<br />

options. Every room holds a different<br />

story.<br />

As we arrived in the mid-afternoon sun, turning<br />

up the lane leading to the grand exterior, we also<br />

noticed neatly tucked away, a rather scrumptious<br />

delicatessen.<br />

You can pop in for great coffee, triple alliance<br />

teas, homemade cakes and cookies, light bites, all<br />

day breakfast, brunch, lunch, afternoon tea, early<br />

suppers and tasty takeout meals, you name it<br />

they do it. This is definitely worth a visit on or off<br />

route from Strattons.<br />

This is also a great time for Afternoon Tea within<br />

the hotel, either alfresco in summer or by the fire<br />

in winter with prices from £15.50pp.<br />

After checking in we were shown to our room.<br />

We were in the popular ‘Boudoir’ room, which<br />

had a luxurious yet quirky feel to it with the most<br />

amazing renaissance styled wallpaper giving the<br />

room a grand feel and a huge Clawfoot bathtub<br />

to soak in.<br />

The little touches such as personalised Strattons<br />

biscuits which were left on the pillow, and mini<br />

bar options, all made the stay feel very special.<br />

Another popular room is named the “Red Room”.<br />

Warmed by an open log fire, there’s a carved<br />

four-poster bed, heavy swag curtains, cosy sofas<br />

and tented bathroom.<br />

As we relaxed in the lounge, (meeting Bert the<br />

famous Strattons cat mascot), we sipped our way<br />

through a mixture of Strattons original cocktails.<br />

Moments seemed to drift away and it was soon<br />

time for dinner at ‘The Rustic’, celebrated for<br />

its organic and local ingredients such as tasty<br />

cheeses and free-range meats.<br />

After dressing to impress, a fabulous meal<br />

followed; starting with the homemade bread slate<br />

to wet our appetite.<br />

Sam opted to start with the twice baked Binham<br />

Blue soufflé with mixed salad herbs and mustard<br />

dressing, whilst my taste buds were yearning<br />

for something a little lighter, so I went for the<br />

chickpea and courgette hummus with chilli<br />

roasted walnuts, cocoa nib crispbreads and<br />

heritage tomatoes.<br />

For mains we both tucked into the slow cooked<br />

brisket of beef, bay roasted hasselback potatoes,<br />

sautéed courgettes, bacon, thyme & tomatoes,<br />

tarragon mayonnaise, delicious!<br />

To finish, we are so full we had to pass on dessert<br />

but instead choose to finish the bottle of the<br />

restaurant’s gorgeous house wine in the garden<br />

to end what was a perfect evening.<br />

After a wonderful nights sleep there is still much<br />

in the area to explore, perfect for those who<br />

need that special escape and great if you want to<br />

explore Breckland, Norwich, King’s Lynn and the<br />

coast and maybe even a bit of Seal spotting!<br />

The Brecks area is a truly unique landscape, which<br />

contains some unusual features whose origins go<br />

back to the Ice Ages, like Pingo ponds.<br />

Strattons Hotel was a really delightful break<br />

away, the staff were incredibly friendly. What was<br />

really noticeable was the attention to detail that<br />

transforms Strattons from a gorgeous place into<br />

an exquisite place to stay. We will certainly be<br />

venturing back!’<br />

To continue from a previous theme where we looked at the<br />

knowledge of coffee and how much we actually know about<br />

where and how it is grown I wanted to introduce our clever<br />

dripper coffees.<br />

These are all purchased from smaller, artisan<br />

growers in smaller batches with limited<br />

availability, which makes these coffees highly<br />

sought after. All are single estate and have been<br />

chosen due to the quality and complexity of<br />

flavour.<br />

Why do we use single origin coffees for<br />

our Clever Dripper?<br />

Our Clever Dripper Coffees have complex, flavours<br />

produced by precise brewing techniques (fine<br />

filter), which extracts the real flavours from the<br />

coffee. These delicate flavours are sometimes<br />

lost in the high-pressure extraction process of an<br />

espresso coffee.<br />

Our fine filter coffees Are strictly single origin<br />

coffees grown in microclimates, within rich soils<br />

and the ideal rainfall patterns, to produce a<br />

Wines of<br />

England &<br />

Wales<br />

English wines have been produced for a<br />

surprisingly long time, despite the fact that it is<br />

thought to be a fairly recent phenomena.<br />

The Romans are normally credited<br />

with introducing the vine to<br />

England but it may well have been<br />

growing here before they came.<br />

Under Roman rule wine production<br />

flourished and the spread of<br />

Christianity and the building of<br />

monasteries enhanced that.<br />

Winemaking continued in Saxon times and by<br />

the early Middle Ages many nobles and religious<br />

groups had vineyards. English monks particularly<br />

developed expertise and experimented with<br />

grafting to improve the crops.<br />

By 1080 there were 45 recorded vineyards which<br />

increased to 139 by Tudor times. Manuscript<br />

evidence proves the level of use at that time.<br />

By the 14th Century there was a gradual decline<br />

which may have been caused by the Black Death,<br />

climate change and cheap imports.<br />

Over the next 200 years the trade just survived<br />

until Henry 8th closed the monasteries in the<br />

1540’s leading to a prolonged period of decline.<br />

It was only after the Second World War that the<br />

revival of English Viticulture took place and by<br />

1994 there were 436 vineyards in the UK. By 2014<br />

this had become 470. 135 wineries take care of<br />

these vineyards and now produce in the region of<br />

6.7 Million bottles of wine.<br />

Since the 2010 harvest, sparkling wine now<br />

exceeds still wine in quantity. Sparkling accounts<br />

for 66%, white still wine 24% and red 10%. The<br />

sparkling success is mainly due to the use of<br />

the 3 main Champagne grapes, Chardonnay,<br />

Pinot Noir and Pinot Meunier. These account for<br />

about 50% of the production. These wines have<br />

won 8 trophies for Best International Sparkling<br />

Wine and reaches about 1/8th the volume of<br />

Champagne imports.<br />

Vine Growing in England<br />

With our marginal climate for the satisfactory<br />

growing of vines, it has always been a difficult<br />

task for anywhere in the northern part of the<br />

country. For this reason most<br />

vineyards are situated in the<br />

south. The soils that give the<br />

best results are also critical and<br />

the best are also found in the<br />

south. In particular Kent and<br />

Sussex have an abundance of<br />

chalky soils and this gives rise<br />

to the success of Sparkling wines<br />

coming from these counties.<br />

The Grapes<br />

Many of the successful grapes grown in the UK<br />

are of German origin, due to the similarities in<br />

climates. Most European vines have to be grafted<br />

onto American rootstocks because of resistance<br />

to the Phylloxera pest. Hybrid vines are crosses<br />

between American and European vines to achieve<br />

a Phylloxera resistant vine without grafting. These<br />

however are not recognised under European law,<br />

as being able to produce a Quality Wine.<br />

Seyval Blanc is such a vine which is successful in<br />

producing a good wine for general drinking<br />

Other common varieties found in England and<br />

Wales include:- Reichensteiner, Muller-Thurgau,<br />

Riesling (The top German Grape), Sylvaner,<br />

Bacchus, Huxelrebe, Ortega, Madeline Angevine<br />

and Kerner. The main success story is Pinot Noir,<br />

Chardonnay and Pinot Meunier, which as stated<br />

produces some of the best English Sparkling<br />

Wine and accounts for over 50% of all plantings.<br />

Vineyards<br />

These are found over most of the south of<br />

England and a small amount in Wales. In all there<br />

are about 169 of which about 100 are open to the<br />

public.<br />

The largest numbers come from Kent<br />

14, Surrey 6, Sussex 25, Hampshire 16,<br />

Essex 7, Suffolk 6 and Norfolk 5.<br />

The future<br />

Cabernet Sauvignon has<br />

remarkably intense blackcurrant<br />

flavours. The deep plummy Merlot<br />

with some ageing is alongside the<br />

Carmenere which has some spicy and<br />

blackberry flavours. The Pinot Noir performs<br />

well in the coastal and high altitude areas with<br />

flavours of red fruits and chocolate.<br />

• Peel and chop the garlic and put into a saucepan with<br />

cold olive oil. Start cooking the garlic on a low heat.<br />

• Peel and chop the onion and add to the garlic add<br />

some salt and cook in low temperature.<br />

• Dice the peppers and add them to the pan. Stir all<br />

together and let it cook until the vegetables are soft.<br />

• Fill another saucepan with water and bring it to the<br />

boil. Take the tomatoes and make a cross with a small<br />

knife on before putting them into the boiling water and<br />

blanch them for 30 seconds, then remove them and<br />

put them in a bowl full of cold water. Peel and remove<br />

the seeds, chop the flesh and add it to the base adding<br />

some more salt and cook for 20 minutes to reduce the<br />

water.<br />

Bailey’s in Beccles.<br />

And, lucky for <strong>Bounce</strong> readers, over the next few<br />

issues, Mauro has agreed to share some of his<br />

delicious recipes with us.<br />

A graduate of the world-famous Escola Joviat<br />

catering college in the heart of Catalonia,<br />

30-year-old Mauro comes from a long line of<br />

family butchers.<br />

“I started cooking when I was 14 on my school<br />

holidays,” he says in heavily-accented English,<br />

which is improving all the time since his arrival in<br />

the Waveney Valley 18 months ago.<br />

“Food is my life and I hope to be able to share a<br />

little bit of that passion with <strong>Bounce</strong> readers.<br />

I have chosen dishes which are packed with<br />

flavour but I hope they will be simple enough for<br />

people to follow”.<br />

Wet Lobster Paella<br />

Ingredients for paella base:<br />

1 onion<br />

1 red pepper<br />

1 green pepper<br />

4 tomatos on the vine<br />

1 garlic<br />

Bay leaves, rosemary, thyme<br />

Ingredients for the fish stock:<br />

1 hake head<br />

1 monk fish bones<br />

2 lobster heads<br />

1 onion<br />

1 leek<br />

1 branch celery<br />

2 carrot<br />

A splash of pernot<br />

• Peel all the vegetables and cut them into big chunks,<br />

then put them into a stockpot with some oil. Cook the<br />

vegetables until they start taking colour.<br />

•Add then the lobster heads and cook them all<br />

together for a couple of minutes. It’s then time to add<br />

the fish heads and bones and cover them in cold water.<br />

Boil for 45 minutes and then serve.<br />

Method<br />

1. In a deep, wide saucepan pour 4 tsp of olive oil and<br />

heat.<br />

2. Add 2 sliced lobsters to the pan and cook with salt<br />

for one minute. Take them out and keep them for later<br />

to add to the plate once finished.<br />

3. It’s time to create the paella base so add 320g of<br />

bomba rice and cook together until the rice starts to<br />

take a white colour, then pour 500ml of the hot boiling<br />

fish stock and cook on a high temperature. Add 500ml<br />

more, and stir from time to time to let the rice thicken<br />

the juice.<br />

4. Add stock until the rice grains are cooked. Finish<br />

by adding 50g of butter in small cubes and stir until it<br />

melts completely.<br />

5. Finally add the lobster and it will be ready to serve.<br />

Morning<br />

The <strong>September</strong> Morning cocktail<br />

is one of those easy-going, highly<br />

drinkable cocktails that are<br />

just fun and tasty.<br />

The traditional recipe calls for a raw<br />

egg white; if that worries you, you can<br />

use an egg substitute product. Rum,<br />

brandy and grenadine form the basis<br />

of this flavor, with the egg white marrying<br />

the ingredients and giving the<br />

whole drink a lift, and the little bit of<br />

lime juice adding a note of deep citrus.<br />

Ingredients<br />

• 1 1/2 ounce light rum<br />

• 1 teaspoon cherry brandy<br />

• 1/2 ounce lime juice<br />

• 1/2 teaspoon grenadine<br />

• 1 egg white<br />

Method<br />

1. Fill a shaker halfway with<br />

ice cubes.<br />

2. Pour all ingredients into<br />

the shaker and shake well.<br />

3. Strain the mixture into a<br />

chilled cocktail glass.<br />

4. Garnish with lime wheel.<br />

Recipe makes 6 portions as a starter<br />

I am using here some Rock Oysters from<br />

Thornham (Norfolk)<br />

Ingredients for poached oysters<br />

Full fat milk 400ml<br />

Fresh thyme 3 sprig<br />

Salted butter 30 g<br />

Rock Oysters 12 each<br />

Rock salt<br />

2 pinches<br />

Black Pepper 1 pinch<br />

Ingredients for the Cauliflower mousseline<br />

Fresh Cauliflower 250g<br />

Full fat milk 400ml<br />

Salted butter 20g<br />

Rock salt<br />

1 pinch<br />

White pepper 1/2 pinch<br />

Ground nutmeg 1 pinch<br />

Garnish with Samphire and Scarlett cress<br />

Method<br />

• Fully cook the Cauliflower in the milk with the<br />

butter and seasoning.<br />

• Pass through a chinois and blitz the<br />

cauliflower with a hand blender, add some hot<br />

milk to the puree if it’s too thick.<br />

• Season to taste and reserve.<br />

• Open the oysters and reserve the flesh in a<br />

bowl, clean six shells and reserve.<br />

• Bring the milk to simmer with the seasoning,<br />

the butter and the thyme.<br />

• Poached the oysters in the simmering milk for<br />

1 and a half-minute.<br />

• Fill the 6 Oysters shells with the cauliflower<br />

puree and dispose on top two poached oyster<br />

in each one.<br />

• Make a foam of milk by using a hand blender<br />

and some left over hot milk, skim the top and<br />

dispose on the oysters.<br />

• Garnish with Samphire and Scarlett Cress,<br />

serve.<br />

MIA’s STRAWBERRY JAM<br />

My big sister's fabulous strawberry jam can be enjoyed all year round!<br />

This month we are making Mia’s favourite Strawberry<br />

Jam. A really fun activity that can be made by anyone.<br />

This is another recipe from our second book ‘Oliver’s<br />

Kitchen - Seconds’ where you can find the recipe in<br />

more detail.<br />

Well first of all you are going to need a<br />

lot of strawberries and the best way to<br />

get these is to go pick them yourself!<br />

That way you know they are lovely and<br />

fresh and it’s a whole lot of fun picking them!<br />

There are always pick-your-own places<br />

scattered around our great British<br />

countryside this way you know exactly<br />

where they have come from and you are<br />

supporting local farmers which is always a<br />

good thing to do!<br />

This is easy, you just need to plop a small<br />

teaspoon full onto the cold plate and after<br />

a minute or so, push the jam with your finger<br />

to see if it is setting. If it wrinkles on top then<br />

it is ready. If it is not ready then return to the<br />

boil for another 2 minutes then repeat the<br />

test.<br />

Once done, you need to get clever with<br />

your butter, this helps remove the scum.<br />

Add a knob of butter to the mixture. If it<br />

doesn’t work then spoon some of the scum<br />

off the surface.<br />

Now add the strawberries to a<br />

preserving pan with the sugar and<br />

lemon juice. You can slice a few bits of lemon<br />

up and add them too. Ask your big person to<br />

heat it gently to dissolve the sugar.<br />

Whilst they are doing this, you can pop<br />

a plate carefully in the freezer. We will<br />

need this later. Whilst you are there, why<br />

not try your luck and ask for an ice pop, you<br />

never know, it is summer!<br />

Ask your big helper to turn up the heat<br />

so that the mixture boils for 4 minutes.<br />

Once it has bubbled away for 4 minutes you<br />

need to test it.<br />

Let the jam cool for 15 minutes when it<br />

is ready. Give it a gentle stir. Ask your<br />

big helper to heat the oven to 140°c and<br />

sterilise the jam jars in it by heating them for<br />

30 minutes. Once the jars are ready the jam<br />

can be poured into them. Leave this to the<br />

big people and tell them to be careful!<br />

Immediately cover the jam with a<br />

waxed disc and seal the jars.<br />

The jam can be stored for like 6 months in a<br />

cool, dry place.<br />

We used smaller jam jars as we found<br />

that homemade jams and preserves are<br />

fantastic gifts for special occasions.

branding for University College London...<br />

This concept is an abstract<br />

interpretation of a wireless<br />

Internet signal. It also<br />

references lines on a computer<br />

chip board as well as multiple<br />

fiber optics, cables and wires.<br />

The main element of the logo is<br />

made up of pixels. The three plus<br />

symbols relate to the polarity<br />

symbols in electronics. The<br />

colours overlap to show joining<br />

and connecting.<br />

The letters are broken up<br />

which helps to create a<br />

feeling of a pulse or a signal.<br />

It give the impression of<br />

computer like text.<br />

The chosen concept combines<br />

two signals overlapping. This<br />

connotes communication and<br />

interaction. It also combines<br />

the two ‘C’s’ taken from the<br />

title of the institute.<br />

The aim<br />

UCL recently engaged local based website and<br />

design agency, Apparition Marketing & Design,<br />

to participate in a branding exercise to create an<br />

original logo for a new institute being launched<br />

this year.<br />

The aim was to create a brand that related to<br />

communication, signals and networks.<br />

The creation<br />

Opting for a simplistic style Apparition<br />

created an icon, which combines two signals<br />

overlapping. This connotes communication<br />

and interaction. It also combines the two ‘C’s’<br />

taken from the title of the institute.<br />

Two styles<br />

So that the brand can be used on various<br />

marketing platforms, Apparition created two<br />

versions of the logo which can be used with<br />

the full title or the acronym.<br />

What’s next ?<br />

Now that the branding has been completed,<br />

Apparition will be undertaking the website<br />

design and development for the new UCLICCS<br />

website. This will involve the use of the circular<br />

shapes within the brand to keep the look<br />

consistent.<br />

“DA ES SAALAM”<br />

One of the hardest things to do when your<br />

travelling is knowing who to trust...<br />

The internet is full of stories about<br />

rip-offs and scams but you never<br />

hear about the helpful people.<br />

When I was at the bus stop in Dar Es Salaam,<br />

Tanzania, my head was full distrust. This month<br />

I share an excerpt from my book, How to Clean<br />

your Underwear in Africa...<br />

After another awful breakfast I left my hotel<br />

and grabbed a tuk tuk to the bus station.<br />

Outside the main entrance are lots of<br />

touts desperately trying to sell you tickets.<br />

Generally they can’t be trusted, they’l<br />

often be selling false tickets, which is why I<br />

always like to buy my ticket before I get to<br />

the bus station. Having navigated a sea of<br />

touts before and knowing how frustrating<br />

it can be I asked my driver to take me<br />

all the way into the bus station, ideally, exactly<br />

where my bus would depart from. I had read<br />

stories online about the bus station in Dar and it<br />

didn’t disappoint. The place was enormous with<br />

people rushing around all over the place making<br />

it a very confusing place to be.<br />

When inside, we walked around for a while but<br />

could not find my bus - my tuk tuk driver spoke<br />

to a couple of people and told me they were<br />

still waiting for it to arrive but wait here and<br />

it will come. I wasn’t convinced he knew<br />

what he was talking about but with no<br />

other option I just sat and waited.<br />

While I sat, various people approached<br />

me trying to sell me stuff but they were<br />

friendly enough. One guy came up to ask<br />

me which bus I was waiting for so I told<br />

him, he then informed me that it had been<br />

cancelled but he could get me a ticket for another<br />

one! Hmmm, sounded like a scam to me ... good<br />

try mister. So I sat and I waited ... waited … and I<br />

waited.<br />

I was starting to get a bit worried so I tried to<br />

find someone to help, the problem was who to<br />

trust. I managed about three laps of the bus<br />

station before I considered going to the ticket<br />

office, however, that meant wandering through<br />

100s of touts so I just kept walking. I thought it<br />

would be a good idea to find someone who was<br />

working but it was difficult as no body wears a<br />

uniform. By now it was 9:30am and my bus was<br />

due to leave at 9, so I was understandably a little<br />

anxious. I finally found a man who was organising<br />

the boarding of another bus and asked him - he<br />

pointed me in the right direction.<br />

As it turns out, my original bus had been<br />

cancelled with a replacement service being<br />

offered and my ticket was valid. Relieved, I<br />

boarded the bus, found my seat and waited to<br />

leave. As I patiently sat there waiting, I couldn’t<br />

help but wonder ... was the first man who told<br />

me about the bus telling the truth and genuinely<br />

wanted to help? Had I have listened to him, could<br />

all my panicked wanderings avoided? Maybe he<br />

just wanted my money? I guess I’ll never know<br />

but this moment was quite a turning point for my<br />

travels, maybe trusting people a bit more isn’t<br />

such a bad thing.<br />

We all have our favourite brand of<br />

makeup, so I have decided to do a<br />

few articles on brands around here<br />

and their best products.<br />

I got to sit down and talk with Lancomes elite<br />

Makeup Artist Fortunato Benavoli to get some<br />

tips and his must have products from Lancome.<br />

When he works at the Baftas (and any other<br />

makeup he does) he always uses Advance<br />

Genifique Serum for thee face, it suits every skin<br />

type and ethnicity, smoothing the completion<br />

giving you perfectly clear and luminous skin.<br />

Absolue Moisteriser comes with a premium price<br />

tag, but for a good reason, it does exactly what<br />

it says it does, giving radiance regeneration,<br />

smoothing wrinkles, firms the skin and ultra<br />

hydrating.<br />

This is a product that even if he left Lancome he<br />

would still come back to buy as he cannot use<br />

anything else now.<br />

As for primers he uses two at once to give that<br />

ultimate perfect makeup.<br />

The Pore eraser he uses around the nose and<br />

chin, which helps hide pores and is a matter<br />

finish, then for that glowing skin he uses the<br />

Hydra Glow Primer on the cheeks.<br />

In doing this it gives the perfect balance of matt<br />

Low Pony Tails<br />

Steering sideways<br />

Embrace your messy side - the classic<br />

French twist is now back and worn more<br />

loosely. Simply sweep your hair to the side<br />

tucking the ends in – just pin it into place.<br />

Tie the knot<br />

The word ‘bun’ is out this season, replace<br />

it with the word ‘knot’. Knots are thrown<br />

together when you’re having too much fun<br />

to care about your hair. They end up looking<br />

as good, if not better, than the strict bun.<br />

To create simply divide your hair into two<br />

pieces and tie it in a knot. You could do a<br />

few little ones throughout the hair or one<br />

statement knot. The possibilities are endless!<br />

Late summer progresses<br />

Kates Top Tip : Plan ahead - Buy springflowering<br />

bedding plants and buy or order<br />

spring-flowering bulbs.<br />

<strong>September</strong> is generally a cooler,<br />

gustier month than August and the<br />

days are noticeably shorter.<br />

While there’s not as much to do in the ornamental<br />

garden at this time of the year, if you have a fruit or<br />

vegetable patch, you’ll be busy reaping the rewards<br />

of harvest.<br />

Propagation<br />

Take cuttings of tender perennials, such as<br />

Pelargonium and Osteospermum.<br />

These plants often do better grown from new<br />

cuttings each year. If you do not have a greenhouse,<br />

then use a light windowsill to grow them on.<br />

It’s also time to get out and start planting springflowering<br />

bulbs for next year and you can collect<br />

seeds for next summer’s colour too. Make the most<br />

of the remaining warmth while you can!<br />

Continue collecting and storing seed from perennials<br />

still forming seed heads. Bring inside any tender<br />

perennials, such as Fuchsia, Gazania, Lantana and<br />

Abutilon, before frosts cause damage.<br />

Keane Ipswich Town team once made exactly the<br />

same excellent start – 10 points from a possible 12.<br />

And we all know how that ended.<br />

Early days, but why<br />

shouldn’t we get excited<br />

along IP1?<br />

I think we all had high hopes<br />

going into the new season.<br />

Another tilt at the top six<br />

was a realistic prospect<br />

after a summer of keeping<br />

hold of virtually all our big<br />

names and then delicately<br />

interweaving some new<br />

faces.<br />

12 months ago, we had<br />

Frank Nouble and Anthony<br />

Wordsworth. Now we have<br />

Brett Pitman and Ainsley<br />

Maitland-Niles.<br />

And what a start it has been. I can push<br />

<strong>Bounce</strong> editors so much when it comes to<br />

deadlines but as I write this, Ipswich Town are<br />

top of the embryonic Championship table.<br />

Promotion favourites Burnley have been<br />

comfortably dealt with and a tricky trip to<br />

Preston was negotiated thanks to a cracking<br />

goal by Ryan Fraser – both from a team and<br />

individual perspective.<br />

We shouldn’t get carried away after just four<br />

games and we know a Mick McCarthy-led<br />

squad certainly won’t. Especially after one<br />

wag on Twitter reminded fans that a Roy<br />

But why shouldn’t fans a) enjoy the present and b)<br />

remain positive and hopeful for the future.<br />

Isn’t that what being a football fan is all about?<br />

There are enough bad times and mediocre times, so<br />

why not embrace the exciting ones and live in the<br />

moment.<br />

For me, what is particular satisfying is that other<br />

clubs are offering astronomical fees for players (yes,<br />

I’m looking at you Burnley and Bristol City) whereas<br />

having the right man in charge can be priceless.<br />

In McCarthy, Ipswich have that man and whatever<br />

this season brings, you know Ipswich will end it in a<br />

stronger overall position.<br />

What has been particularly<br />

impressive is the way they have<br />

bounced back from losing those<br />

two late, woeful, goals at Brentford<br />

to turn three points into one on<br />

opening day.<br />

It became a poor start to the<br />

season, in one way, but the three<br />

games since has been anything but.<br />

The Championship looks as tough as<br />

ever with sleeping giants, up-andcomers<br />

and fallen Premier League<br />

sides licking their wounds.<br />

But Ipswich have a chance. They finally have pace<br />

in their ranks in the shape of the hugely impressive<br />

Fraser and Maitland-Niles.<br />

In David McGoldrick, Daryl Murphy, Freddie Sears<br />

and Pitman, they have the best strike force in the<br />

second tier. And at a cost of £100,000 whereas<br />

Burnley have just spent a reported £9 million on<br />

Andre Gray. I’ll let that sink in for a bit.<br />

And while we are ending on discussions around<br />

money, Ipswich still have quite a bit in the pot from<br />

the Tyrone Mings sale. It is indeed hard not to get<br />

excited.<br />

TO RUMBLE...<br />

This month Action Man steps<br />

into the ring with professional<br />

mix martial artist Arnold<br />

‘Almighty’ Allen.<br />

Arnold, who hails from Felixstowe,<br />

at just 21 years old, is already a full<br />

time MMA fighter with a record of<br />

10-1 with his latest bout being an<br />

outstanding win by submission in<br />

the UFC.<br />

The critics who weren’t already talking about<br />

Allen certainly are now with the young Suffolk<br />

man set to go very far indeed.<br />

So I caught up with ‘Almighty’ at his base with<br />

BKK Fighters in Colchester for my first taste of<br />

MMA and to find out how Arnold started and<br />

what’s next.<br />

It started from a very young age from wrestling<br />

his brother to training with his father, strongman<br />

turned MMA fighter, Pacer Allen. Arnold’s love for<br />

the sport grew rapidly as did his skill level which<br />

saw him turn professional at the age of just 18.<br />

With string of very impressive fights and victories<br />

he was pushing for a UFC fight and there was<br />

no hesitation in accepting the offer when the<br />

call came in despite having only 1 weeks’ notice<br />

to fight at UFC 69 in Berlin. His opponent was<br />

German based Alan Omer who had a record of<br />

18-4 including 12 first round finishes, a formidable<br />

record but Allen lived up to his ‘Almighty’ billing<br />

by forcing the submission by guillotine choke in<br />

the third round.<br />

As the forth youngest fighter on the UFC roster<br />

time is on Arnold’s side but he is already keen to<br />

push on and is planning on a trip to the States to<br />

team up with MMA group Team Alpha Male for a<br />

month on intense training.<br />

It’ll take a few fights for him to work his way up<br />

the rankings and push for a title shot but do not<br />

be at all surprised if you see a UFC title bouncing<br />

its way across the pond following Bruce Buffer’s<br />

announcement “and the NEW…”<br />

Keen to try out some MMA? Want to learn from<br />

which has an MMA class starting at 1830hrs every<br />

weekday evening this is also followed with a<br />

Don’t worry about going toe to toe with the pros<br />

all classes are suitable and open to beginners,<br />

they welcome some fresh meat! Action Man<br />

sparred with Arnold in his class and it’s fairly safe<br />

to say that my UFC call up won’t be coming any<br />

time soon! But it was a great session, I learnt a<br />

lot and will definitely be back there soon. MMA at<br />

BKK is A-OK!<br />

We’ve spent the last five<br />

issues talking about how<br />

to get started and what<br />

exercise is right for you.<br />

For our last edition, it’s all about how to keep<br />

your motivation and make those first few<br />

sessions into a habit.<br />

Bring a friend: Working out with<br />

someone else is a great motivator. Not only is<br />

there an element of friendly competition, but<br />

there’s also now someone who you don’t want<br />

to let down. Unfortunately, we let ourselves<br />

down all the time and make excuses for<br />

why we can’t do things; but we’re more<br />

committed to our friends.<br />

Pack your bag: A simple one, but effective.<br />

Pack your back for exercise the night before.<br />

That way, you’re ready to roll out of bed and<br />

get moving, or grab the bag after work. Keep<br />

the momentum going and don’t let having<br />

to get everything together when bed is more<br />

comfortable be an option!<br />

Track your progress: Make a check list<br />

and tick off your progress. If you have visible<br />

evidence of your exercise, you’ll be more<br />

inclined to keep moving forward. Any days<br />

you don’t exercise or train, mark with a big red<br />

X – after seeing a few of those, you’ll want to<br />

get back out there!<br />

Set achievable goals: Don’t set<br />

yourself up to fail. By giving yourself<br />

unachievable targets, you may lose<br />

the drive and will you need to reach<br />

them. Instead, set smaller targets which<br />

culminate if your larger ambition.<br />

Example: I want to be able to run one<br />

mile, rather than I want to run a half<br />

marathon. One mile will become three<br />

which will become six.<br />

Change it up: If you’re getting<br />

bored doing the same exercise,<br />

make a change. If that’s in the gym,<br />

ask for a programme change. If<br />

you’re running, change your route<br />

and if you’re training at home, try<br />

a new DVD. Keep evolving and<br />

learning and you’ll find your niche.<br />

trying to do exercise<br />

after a long day at<br />

work. If you keep<br />

your training to<br />

when you feel fresh, you’ll<br />

find it easier to commit.<br />

There are too many after<br />

you finish at the office to<br />

distract you.<br />

Theatre Royal Bury St Edmunds with<br />

comedy, music, memories and drama<br />

all featuring – we even talk football!<br />

Kicking off the month with an evening of<br />

hilarious comedy from the West End are<br />

that iconic double act, Jeeves & Wooster in<br />

Perfect Nonsense (2-5 <strong>September</strong>). With five<br />

star reviews and such gloriously-named characters<br />

as Gussie Fink-Nottle and Roderick Spode, it’s an<br />

evening of bonkers comedy featuring madcap<br />

Bertie Wooster and his ever-dependable butler,<br />

Celebrating the 50th anniversary of one of the most<br />

loved musicals of all time, Sing-a-Long-a Sound<br />

A DOG NAMED ROSA…<br />

It hits us at the most unexpected of<br />

moment’s… yes folks they do call it<br />

puppy love.<br />

I’ve recently moved to a new little<br />

village called ‘Huntingfield’ it’s<br />

bloomin’ marvelous, I be spoilt by<br />

country life everyday now, not to<br />

mention the new walks through<br />

Heveningham Hall and fields of<br />

sheep.<br />

Mind you, those sheep are noisy<br />

little toe rags, but I am now showing<br />

those rascals whose boss with our<br />

‘baa’ vs barking competitions at night.<br />

Not sure what the neighbours think of that mind<br />

you? Probably not the quickest way to make friends,<br />

however the pub… now that’s a different bowl of<br />

biscuits.<br />

The Huntingfield Arms, lets us four legged friends<br />

through the door and I’ve made plenty of new<br />

chums there, Mylo and Ruby to name a few.<br />

Anyway… getting to the point whilst on my country<br />

trots, I see a young female whippet.<br />

Whilst mesmerized by her pounces and<br />

bounces through the fields I couldn’t<br />

help but to hang out my tongue. If<br />

only I could wolf whistle.<br />

Oh Rosa!<br />

I have been pretending to not<br />

like her, playing a hard pup<br />

to get – I even growled at her<br />

the other day but that’s the<br />

Terrier in me. I might be a small<br />

lad but I am mighty tough.<br />

Perhaps I should just bite the bone and<br />

ask her to the pub, but its more complicated<br />

for us furry ones.<br />

courage!<br />
