that happen? I cannot believe how quickly<br />

<strong>2015</strong> has gone, but it’s been a fantastic one.<br />

Bangladeshi Turkey<br />

BY AWARD WINNING CHEF ABDUS SHAHID<br />

Prep Time<br />

60 mins<br />

Cooking Time:<br />

2 hours<br />

Serves 4-6<br />

Method<br />

1. Wash the Turkey remove innards, and when<br />

done, pat dry. Then put all of the ingredients for<br />

the marinade in a large deep bowl, mix well and<br />

put the whole Turkey into this marinade, coat<br />

well and cover the dish with cling film wrap. Keep<br />

aside for 3-4 hours in the refrigerator.<br />

2. While the Turkey marinates, you can prepare<br />

the filling. Heat 5 tsp of cooking oil in wok or<br />

deep pan on medium heat. Add the cumin seed<br />

and fry for 1 minute, and then add the onion<br />

and fry until its golden. Add the ginger and<br />

garlic paste and fry for 1 minute, and then add<br />

the minced meat and all the powdered spices -<br />

coriander, cumin, garam masala, and salt to taste.<br />

3. Continue to brown the minced meats stirring<br />

often to prevent burning. This should take about<br />

8-10 minutes. To this add the tomatoes, peas and<br />

potatoes, stir and cook till the potatoes are soft.<br />

Turn the stove off and add the lime juice and<br />

chopped coriander leaves, mix well. Preheat oven<br />

to 175 C/ 350 F/gas mark 4.<br />

4. Remove the marinated Turkey from the<br />

refrigerator and fill the stomach cavity with<br />

the minced meat stuffing, try and get all of the<br />

stuffing in if possible. Put in baking/roasting dish<br />

and drizzle all over with cooking oil, roast the<br />

Turkey uncovered for 1 hour and 15 minutes it will<br />

ideally, be golden colour. Serve with (Lachcha<br />

paratha). Lacha Paratha is whole-wheat layered<br />

flat bread.<br />

• One whole Turkey roughly 2.5 Kg / 4.4Ibs in weight<br />

For the Marinade:<br />

• 2 tbsps lime/lemon juice<br />

• 2 tbsps garlic paste<br />

• 1 tbsp ginger paste<br />

For the filling:<br />

• 3 tsps vegetable/canola/sunflower cooking oil<br />

• 3/4 cumin seeds<br />

• 2 medium -sized onion chopped finely<br />

• 2 tsps garlic past<br />

• 1 tsp ginger past<br />

• 1 tsp coriander powder<br />

• 1 tsp cumin powder<br />

• 1 tsp garam masala.<br />

• 400 grams minced/ground meat<br />

(you can use beef or lamb)<br />

• 2 medium sized tomatoes chopped fine<br />

• 1 cup fresh/frozen peas<br />

• 1 cup chopped potatoes - 1”cubes (skin removed)<br />

• 1 tsp lime/lemon juice<br />

• 1/4 cup chopped coriander leaves<br />

• 3 tsp vegetable/sunflower oil to drizzle on<br />

Turkey when roasting

Bury’s Valley Connection voted best Indian restaurant in the East<br />

Valley Connection’s customers have voted it<br />

best Indian restaurant in the east of England.<br />

At an awards ceremony in London during<br />

November, the restaurant took home the title<br />

‘Best South Asian restaurant in the East of<br />

England’ in the Asian Curry Awards <strong>2015</strong>.<br />

Held at Park Lane Hilton the event hosted by<br />

ITN newsreader Natasha Kaplinsky, was set<br />

up to recognise the huge successes made by<br />

business owners across the whole of the curry<br />

industry and ensure that the key players are<br />

lauded for their achievements.<br />

Earlier this year owner Mr Shahid, received<br />

Curry Life’s Business Achievement Award,<br />

having been their Chef of the Year in the past.<br />

The restaurant itself also recently received<br />

a ‘highly recommended’ in the Houses of<br />

Parliament’s Tiffin Cup award for restaurants<br />

nominated by their MPs.<br />

Mr Shahid said: “Winning this award was an<br />

absolute honour. It reflects the dedication and<br />

hard work that my team and I have put into<br />

making our restaurant a cut above the rest.<br />

“This does not mean that we will now sit<br />

back, this motivates us to work even harder to<br />

improve our customer experience. We would<br />

like to take this opportunity to thank all of our<br />

customers who voted for us.”<br />

Well hello there! I’m back with my monthly column… Ok so firstly a<br />

reminder about me. I’m Zena (Zee for short) I’m 42, a mother and a<br />

grandmother.<br />

It’s up! The tree is up! This time of<br />

year makes me feel all fuzzy inside,<br />

and no it’s the Advocaat! (ok it is!)<br />

We are ready at Casa Batts for<br />

Christmas! This year I’m cooking,<br />

which I love! My favourite part<br />

is dressing the dinner table and<br />

dressing for dinner! It’s all about<br />

our granddaughter! I really enjoy<br />

wrapping presents too. We have<br />

quite a full social calendar over<br />

Christmas too which gives us a<br />

chance to really dress up. If you<br />

have any functions and you’re a bit<br />

stuck I’ve got a few ideas for you.<br />

I’m also going to give you men a<br />

nudge in the right direction when<br />

it comes to gifting the lovely lady<br />

in your life. Always try and buy her<br />

something she wouldn’t normally<br />

buy herself. We women begrudge<br />

buying underwear. So Janet<br />

Reiger and Ted Baker at<br />

Debenhams in Bury St Edmunds<br />

have some really luxurious night<br />

wear and underwear these are<br />

my top 3.<br />

Shoes are always a great idea,<br />

try and remember if she’s<br />

dropped you a few hints or has<br />

had her eye on something in<br />

particular. If you have a bigger<br />

budget try Nicola Sexton her<br />

shoes are utterly Devine.<br />

Accessory wise leather gloves<br />

are a fantastic purchase and<br />

will last a lifetime, the girls in<br />

Hobbs are fantastic so drop<br />

by and they will be happy to<br />

help you. Of course we all love<br />

jewellery and gift wear so my<br />

top two local women who are<br />

As a Grandmother it’s my job to buy annoying<br />

I don’t know about you but I<br />

always want it to feel cold around<br />

Christmas. <strong>December</strong> is the only<br />

month I find snow acceptable,<br />

mostly because I like to layer up in<br />

warm and festive outfits.<br />

Which is why, just in time, I’ve pulled together a<br />

list of items and accessories you might want to<br />

add to your wardrobe this winter.<br />

SCARVES<br />

Scarfs are the perfect way to add some colour<br />

and pattern to your outfit. Some very important<br />

for a time of year when we spend most of our<br />

time in our winter coats.<br />

for this very reason; it’s much cheaper to buy a<br />

now so why not go for a pair sure to add a<br />

Christmas twist to your look.<br />

HATS<br />

I personally love trapper hats (although<br />

only during actual cold weather and not<br />

worn ironically in the summer).<br />

Now there are several different styles and<br />

looks but for me, you can’t beat a simple<br />

wool style, like this one from Next.<br />

The hat has enough individuality in itself<br />

without worrying about any extras or bright<br />

colours.<br />

Get prepped for<br />

Christmas<br />

Continuing from last month...<br />

4. Get ahead with your Christmas cards<br />

If you’re the kind of person who sends out tons<br />

of Christmas cards, to everyone you know you’ll<br />

know this needs planning early in advance. Divide<br />

everyone up into family, friends, work colleagues,<br />

etc. Buy all the cards you’ll need, and write them<br />

out, so you’ve got plenty of time to find out<br />

everyone’s addresses.<br />

5. Book time off<br />

Depending on where you work, you may have<br />

to do this even earlier, as it can be difficult to<br />

organise with everyone when they want to be off.<br />

Keep in mind you may not get exactly what you<br />

want, everyone will have to compromise.<br />

6. Go to the Salon<br />

Dye your hair, get your eyebrows waxed, do<br />

whatever cosmetic things you like to do but won’t<br />

have a lot of time for during the Christmas rush.<br />

7. Set the date<br />

for any holiday parties you would like to host and<br />

try to send out invites one month prior to the<br />

date of the party.<br />

8. Stock the up<br />

with Christmas essentials… usually this includes<br />

lots of alcohol, nibbles, mince pies and lastly the<br />

Christmas TV guide.<br />

9. Make a Christmas Bucket List<br />

List things you’d really like to do as a family this<br />

holiday season and then find time for them on<br />

the calendar before it starts to fill up with other<br />

events.<br />

10. Get in the mood<br />

Go on its not too early, get on a Christmas movie.<br />

Finding the perfect venue...<br />

Firstly consider<br />

whether you would like<br />

a religious ceremony<br />

and then a separate<br />

reception venue or a<br />

civil ceremony and<br />

reception all in one<br />

location.<br />

If you are looking for a<br />

venue for both make sure<br />

it’s licensed to hold civil<br />

ceremonies and for the<br />

correct number of guests you<br />

want to invite.<br />

If you would like a religious<br />

ceremony consider how far<br />

away the reception venue is and the travel time<br />

between the two locations.<br />

If it’s a large distance some couples lay on<br />

transport, a coach for example, especially if it’s a<br />

rural location. If your budget does not stretch to<br />

that, make sure a map and thorough directions are<br />

given to all guests when sending invitations.<br />

Consider the size of the venue compared to how<br />

many guests you are looking to invite. Having a<br />

rough number before contacting venues is a good<br />

idea.<br />

Some venues have a minimum number required;<br />

others may be limited to numbers. If you are<br />

looking for an intimate wedding then a banqueting<br />

hall will probably not be quite right, on the other<br />

hand if you are planning a large number of guests,<br />

then a small venue may need extra structures<br />

adding, for example a marquee, which will increase<br />

your costs.<br />

Ellie Goulding has recently released her third studio<br />

album ‘Delirium’ just before Christmas. ‘Delirium’ is the<br />

follow-up to 2012’s ‘Halcyon’, which cemented Goulding’s<br />

status as a global artist.<br />

The first taste of the album comes<br />

in new single ‘On My Mind’ which<br />

turns out to be rather catchy!<br />

One albums, won two Brit Awards and had Vevo<br />

views and streams both in excess of one billion.<br />

This year’s ‘Love Me Like You Do’ single,<br />

meanwhile, was a worldwide Number One hitting<br />

the top spot in 70 countries and breaking the<br />

Goulding worked with Max Martin, Greg Kurstin,<br />

album of her career, a jubilant and euphoric pop<br />

statement.<br />

Songs such as ‘Devotion’, ‘On My Mind’, ‘Don’t<br />

anthems that retain a personal intimacy: epic<br />

tracks with a heart and soul.<br />

Concise case history and a series of tests can<br />

determine which structure is most likely to<br />

cause the pain. Typical sources of back pain is<br />

degenerated discs, strained superficial or deep<br />

muscles, irritated nerves or nerve roots that supply<br />

the legs or ligamentous sprain.<br />

While it is not common, there is a small chance<br />

that it could be more serious and your back pain<br />

could be caused by a spinal infection, cancer, aortic<br />

aneurism or multiple nerve root compression.<br />

Although the list is not exclusive, you should seek<br />

medical attention if your back pain is from a direct<br />

trauma or accompanied by the following:<br />

There can be a slight discomfort that gets worse<br />

over time or a sharp pain following the action.<br />

Even if it seems like the pain just appears there is<br />

This could be postural, prolonged repetitive<br />

It looks as though ‘coercive and controlling behaviour in an intimate<br />

or family relationship ‘will finally become illegal in <strong>December</strong>, so what<br />

does this mean?<br />

It means that, for the first time, domestic abuse<br />

will be a criminal offence, before this, it had to be<br />

dealt with under existing legislation for assault,<br />

harassment and stalking.<br />

Under section 76 of the Serious Crimes Act <strong>2015</strong>,<br />

if found guilty, there is a possible maximum jail<br />

sentence of 5 years.<br />

The police and CPS have been issued with<br />

guidelines but there will be an expected transition<br />

period, mainly because of the huge culture<br />

change involved in identifying coercive control.<br />

The police and CPS will have to look at a pattern<br />

of behaviour rather than at single incidents and<br />

there is the problem of training all the relevant<br />

agencies, especially frontline police to help them<br />

identify the perpetrator in this insidious form of<br />

abuse. It will be interesting to see the first few<br />

test cases and how the law responds.<br />

It is also highly likely that the legislation will<br />

require some adjustments over time as the<br />

practicalities of investigating and prosecuting<br />

become known.<br />

On February 4 th 2016, there will be another<br />

Conference on Coercive Control in Bury St<br />

Edmunds, this time at the beautiful Theatre Royal.<br />

This Conference will have a slightly different<br />

format in that there will not just be speakers<br />

but also be a panel of experts who will answer<br />

questions set to them by the audience, rather like<br />

‘Question Time’.<br />

This will be an ideal opportunity for lawyers,<br />

social workers, doctors, police, magistrates, the<br />

judiciary, CAFCASS, counsellors and anyone<br />

working in the field of domestic abuse or who is<br />

likely to come across an incidence of domestic<br />

abuse that may well be coercive and controlling<br />

to ask questions to further their understanding.<br />

Eat, Drink<br />

and be Merry!<br />

Most people like to indulge a little over<br />

the Christmas holidays, but do you<br />

know where to draw the line? Here’s a<br />

quick guide on how not to overdo it.<br />

Firstly, be realistic and honest with yourself. Good<br />

intentions can quickly fade away when faced with<br />

a tasty selection of canapes or one more glass of<br />

wine….<br />

So if you are heading out to a party, eat a light<br />

meal before you go and avoid filling up on treats.<br />

Keep hydrated, drink water as often as possible.<br />

Why not alternate water and alcohol to keep<br />

away a hangover and pace your consumption.<br />

Water before a meal is also an excellent way to<br />

prevent overeating.<br />

At home, put away the treats when not<br />

entertaining - out of sight, out of mind. You can<br />

go to them if you really want something but won’t<br />

be tempted to pinch one every time you walk<br />

past the chocolate box.<br />

Also, don’t forget to eat a good breakfast,<br />

keeping to regular meal times helps prevent<br />

grazing throughout the day.<br />

If you receive lots of food treats as gifts, why<br />

not upcycle and gift them on to someone who<br />

deserves them. You don’t have to eat everything<br />

just because it is there. Eat when hungry, stop<br />

when full.<br />

Be gentle with yourself, it is the holiday season,<br />

we are supposed to enjoy it, so if you get a little<br />

carried away, don’t worry and beat yourself up, be<br />

kind but set a date to get back on track.<br />

At Upstairs at Baileys, Beccles...<br />

After attending one of our<br />

most loved reviews to date<br />

last month, we kept our word<br />

and returned to Upstairs at<br />

Baileys in Beccles, to sample<br />

the delights Xavier’s ‘Truffle<br />

Tasting event’.<br />

Along with our good friends Tom, Lucy,<br />

Will and Nancy, we arrived at the truffle<br />

extravaganza, which comprised of a six course<br />

truffle tasting menu. We were intrigued to try<br />

and test the exquisite line up freshly prepared<br />

by head chef Mauro!<br />

Cockles with an olive sphere, truffle broth and<br />

Martini Foam. It left a refreshing taste that<br />

somehow cleared your pallet for what was to<br />

follow.<br />

We continued onto the next course of Truffle<br />

Macaroon with foie gras Crème Brûlèe with<br />

a Truffle and Game Snack served with fresh<br />

Chanterelle mushrooms and sugar crackling.<br />

The Truffle Macaroon was inspired, I would<br />

have never have thought of this could have<br />

tasted so good, it was no afternoon tea.<br />

The truffles continued and next up was<br />

Scallop and textures of Cava with Parma ham<br />

crumbs and shavings of white truffle. Xavier<br />

explained to use the white truffles are always<br />

served raw, usually shaved over a dish just<br />

before serving. White truffles have a slightly<br />

garlicky aroma and a delicate but distinct<br />

flavor. They are rarely used in recipes with<br />

robust or complex flavours.<br />

This differs to the black truffle, which in<br />

general, are better when they are cooked.<br />

The full flavour and aroma is released when<br />

black truffles are heated or cooked, therefore<br />

they are often used with red meat and<br />

poultry, sauces, pates, and other more robust<br />

flavoured dishes. The flavour and aroma of<br />

black truffles is stronger and earthier than the<br />

more delicate flavour of white truffles.<br />

atmosphere in the restaurant became warmer<br />

and more vibrant. The intimate setting of the<br />

evening was apparent as tables started to<br />

interact with each other, making the night<br />

more enjoyable.<br />

To finish the savory line up, next came Pork<br />

Terrine with potato and truffle croquette, Brie<br />

de Meaux and cauliflower purée, leek, juice<br />

and wine reduction and white truffle. It almost<br />

looked to good to eat.<br />

Secretly I think we were all waiting for the<br />

final course, Chocolate “Financier” with<br />

passion fruit purée, white chocolate ice cream<br />

and vanilla foam. Thumbs up again to Xavier!<br />

I have to confess my favourite course of the<br />

evening was the Langoustine in Black Pudding<br />

Sand with smoked aubergine and Béarnaise<br />

sauce. Both flavourful and fun to eat this plate<br />

was served with a simple shaving of truffle.<br />

Green, were kindly invited along to experience<br />

the great delights the boutique hotel had to<br />

offer.<br />

“A girlie getaway commenced as we set off<br />

for Newmarket. Giggles filled the car when the<br />

satnav confirmed we were actually heading to a<br />

village named ‘Six Mile Bottom’. Always a good<br />

icebreaker!<br />

Set back from the road, the hotel sits at the<br />

bottom of a tree-lined drive, this chic hotel<br />

is definitely a hidden gem, the perfect rural<br />

retreat, and just a stone’s throw from Newmarket<br />

Racecourse, the home of racing.<br />

With close connections to Newmarket’s<br />

horseracing world, it’s worth mentioning that<br />

legendary racehorse Brigadier Gerard is buried in<br />

the grounds.<br />

Steeped in history, to top it off, the house was<br />

once owned by the sister of poet Lord Byron,<br />

who reportedly wrote some of his romantic<br />

poetry there. That says it all ladies!<br />

As well as fifteen impeccably decorated rooms;<br />

Paddocks House boasts several multipurpose<br />

function spaces including the magnificent<br />

Garden Room. It’s a popular wedding and civil<br />

partnership venue amongst those looking for<br />

country house glamour with a contemporary<br />

twist.<br />

Grand trees and large areas of grass outside<br />

the house are sculpted and pruned to show off<br />

beautiful shapes. Although visiting on a dark<br />

and gloomy grey day, the imagination wonders<br />

to summertime, where you can picture the<br />

surroundings blossoming to make the perfect<br />

country retreat.<br />

Speaking of the grey day, the grey theme<br />

continued into the décor. The stylish scheme<br />

is evident from the moment you pull up at the<br />

handsome building’s black and white facade,<br />

and continues when you open the heavy wooden<br />

front door, to enter a monochrome hall room.<br />

Here we were warmly greeted at reception to<br />

check in. After declining help with our luggage (at<br />

the fear they would see how much our baggage<br />

weighed), we were lead upstairs with our very<br />

large tassel key fobs, great for those like me who<br />

like to lose keys in their handbags!<br />

We were given a brief demonstration of how to<br />

lock our door (handy, as it wouldn’t simply lock<br />

behind itself) then left to enjoy our rooms.<br />

As your eyes continue to wander, black satin<br />

curtains, vintage prints and a large faced clock<br />

give the room a slightly more masculine feel<br />

without losing its glamorous touches along with<br />

branded “H” carpets and brass detail on the<br />

wardrobe doors. This signature room screams<br />

class.<br />

I stayed in Room 7, while Luchea was in room 6<br />

(which was great we knew as neighbours this<br />

would perfect for getting ready in the evening).<br />

As the grey theme continues, the first thing you<br />

notice as you enter your room is the oversize<br />

freestanding copper bateau bath by William<br />

Holland.<br />

I have to admit in such lavish surroundings, I<br />

could have filled up the bath, switched on the TV<br />

and grabbed a glass of wine right there and then,<br />

but of course there was too much else to explore<br />

at Paddocks to do that...<br />

As Luchea and I headed downstairs we decided<br />

to retire to ‘The Study.’<br />

Firstly we went down the sensible route by<br />

ordering coffee, however after an hour we got<br />

a little carried away and upgraded to a cheeky<br />

afternoon cocktail. Well why not?<br />

The staff went out of their way to make us feel<br />

welcome, checking in on us from time to time to<br />

see if there was anything else we needed.<br />

After lots of chattering and at the risk of further<br />

cocktail temptation, we both headed up to our<br />

rooms for relaxing bath and some reality TV,<br />

before getting ready for dinner.<br />

A pre-drink in the Brigadier Bar awaited, and<br />

Nick, our very clued up waiter introduced himself<br />

to us, offering to create some cocktails especially<br />

for our specific tastes.<br />

My drink of choice always has to be a Martini,<br />

(nothing to do with the fact I am a James Bond<br />

fan), whilst although it wasn’t on the menu<br />

Luchea’s drink of choice is a Daiquiri. Two shakes<br />

of a cocktail maker later and we were in cocktail<br />

heaven.<br />

As we entered the candle lit restaurant, dinner<br />

began with some homemade bread with truffle<br />

butter and an assortment of amuse.<br />

From the à la carte menu I could not resist the<br />

Aspall Cyder Mussels with bacon, tomato and<br />

crusty bread, whilst Luchea opted for the Seared<br />

Scallops with cauliflower puree, braised fennel,<br />

apple and vanilla butter sauce.<br />

Nick once again coming to our rescue, kindly<br />

picked the most perfect drink accompaniment<br />

for our starter, which just happened to be a glass<br />

of Tattinger Champagne. The way to a girls heart<br />

of course! I have to say it somehow redeemed<br />

my lack of classiness after having had both hands<br />

stuck into my bowl of mussels!<br />

For the main event, Luchea followed with Daube<br />

of Beef, with creamed potato, herb roasted<br />

root vegetables served with a 2004 Chaeau<br />

de Tertre, Margaux, Bordeaux France, whilst I<br />

selected the Supreme of corn-fed chicken, with<br />

bubble and squeak, confit wings and squash<br />

puree accompanied by a glass of 2011 Chateau<br />

de Mercey, Bourgogne, Chardonnay France, both<br />

fantastic dishes.<br />

But we were glad we saved room for dessert, I<br />

indulged in the Pear and Frangipane Tart and<br />

Luchea picked the traditional favourite, Sticky<br />

Toffee Pudding, which absolutely blew us away at<br />

the end of the meal.<br />

After dinner we politely retired to room 6 with decafe<br />

coffees. The free Wi-Fi, smart TVs with Netflix<br />

came as standard, so it would have been rude not<br />

to catch up with our current favourite programme<br />

‘Masterchef’. At the end of the episode we wished<br />

each other good night and enjoyed the king-size<br />

beds to ourselves.<br />

After a wonderful sleep and a healthy breakfast it<br />

was time to wish Paddocks House goodbye, but<br />

as we journeyed back up the drive, after some<br />

quality girl time and a satisfying midweek stay,<br />

Paddocks House is definitely somewhere we<br />

wanted to venture back to again.<br />

CANDY CANE REINDEER<br />

Oh my gosh, I am so excited! I can almost hear Father Christmas treading<br />

carefully on the roof. It’s <strong>December</strong> and Christmas is so close I can almost taste<br />

it. But the big day isn’t quite here and one thing you can taste is these delicious<br />

Candy Cane Reindeer that will really get you in the mood for Christmas.<br />

It’s time to get crafty! So take a brown<br />

pipe cleaner and wrap it around the<br />

top of the candy cane to make the basis of<br />

the head and neck.<br />

Next take a second pipe cleaner and wrap<br />

it around the top of candy cane and twizzle<br />

it so it stays in position. You should have<br />

2 long bits sticking out from the top of the<br />

candy cane now. These can be twisted and<br />

bent until they resemble antlers.<br />

That’s it, just let the glue dry for a bit<br />

and they are ready. You can tie a string<br />

around them to hang them from your<br />

tree and when you are ready to eat them<br />

just unwrap the plastic and remove the<br />

reindeer to enjoy the tasty candy canes!<br />

a mammoth?!<br />

Once you are happy with the antlers,<br />

it is time to add a nose and eyes. Using<br />

a small blob of pva glue, attach the red<br />

bobble to the now brown end of the candy<br />

cane. Use the same method to attach the<br />

eyes just in front of the antlers.<br />

As the weather turns<br />

colder and I finding myself<br />

having more spare time,<br />

so typically I turn to<br />

comfort food...<br />

One Sunday afternoon in particular, I<br />

suddenly had a craving for a chicken<br />

casserole, (one just like mamma<br />

used to make), but then I realized - I<br />

don’t actually know how to make<br />

one?<br />

Somewhere between a stew and a braise, this<br />

rich and warming dish is perfect to serve in<br />

winter!<br />

Naturally if there is something I need advice on,<br />

I pick up the phone, and mum is on speed dial!<br />

I am sorry to say - and I believe this to be true,<br />

(though it may depend on the mum), but there<br />

is no food that’s better than your mums grub<br />

especially roast dinners, so in this ‘first time<br />

dilemma’, she was my first port of call.<br />

The chicken is tender and tasty and I never<br />

know how she did it until I asked.<br />

For all of your first time casserole<br />

makers, here is my Mummy Ducker’s<br />

Chicken Casserole Recipe “made easy”…<br />

Ingredients<br />

2 x Chicken Breasts<br />

2 x Know Chicken Stock Cubes (they don’t<br />

have the artificial flavourings)<br />

500ml hot water<br />

200g Mushrooms<br />

1/2 Onion<br />

1 Parsnip<br />

150g New Potatoes<br />

3 tspns cornflower<br />

1 tspn gravy granules.<br />

to put my own creative spin on things, I also<br />

serve my recipe with stuffing… in a giant<br />

Yorkshire pudding!<br />

This recipe is easier than it sounds. Get hold of<br />

a suitable casserole dish. Into that you put the<br />

Chicken, stock cubes, hot water, mushrooms,<br />

parsnip, onion and potatoes.<br />

a paste of cornflower and cold water (three<br />

teaspoons) and then a teaspoon of gravy<br />

granules.<br />

That’s it? Who’d have thought a casserole<br />

would have been that easy. I guess the only<br />

factor is the time issue, but on a lazy day there<br />

is nothing better than the waft of chicken and<br />

gravy floating through your house.<br />

The Roman era was probably the start of<br />

winemaking in Germany between 70 and<br />

270 AD.<br />

area with the City of Trier being a Roman Garrison<br />

Liebfraumilch was born as well as other brands to<br />

meet this objective. This was very successful and<br />

brought the German wine industry back to the<br />

Winemaking gradually increased over the centuries<br />

mostly situated along or close to The Rhein river. It<br />

also coincided with the spread of Christianity.<br />

Before the Second World War German wine had a<br />

high reputation and was at times more expensive<br />

than the top Bordeaux wines. The war changed<br />

all that and with defeat the vineyards became<br />

drinking more wine and our appetites improved.<br />

This has led to a demand for better quality and a<br />

search around the world for other wines.<br />

These have now taken over as the tall slim bottle<br />

of Liebfraumilch and the Gothic writing on the<br />

produce wine. This has led to using only grape<br />

varieties that that can cope with what is a cool<br />

climate. To counter this the grapes are left on the<br />

vine longer to over-ripen and achieve more sugar<br />

in the juice.<br />

Winemaking<br />

By utilising this method of harvesting they can<br />

produce a variety of good wines where the sugar<br />

can be used to either make a sweeter wine of<br />

achieve higher alcohol levels.<br />

This leads to a range of wines that are<br />

increasingly sweeter or of higher alcohol levels.<br />

The range stretches from Table Wine (Deutscher<br />

Tafelwein) and Landwein to<br />

Quality Level wines (Qualitatswein<br />

bestimmpter Anbaugebiete (Qba)<br />

and Qualitatswein mit Pradikat<br />

(Qmp).<br />

The Qba range is a problem as<br />

it includes Liebfraumilch in its<br />

category.<br />

The Qmp Category is the most<br />

important as it takes into account the sugar<br />

levels at time of harvest. You will find delightful<br />

names on the label, Kabinett, Spatlese, Auslese,<br />

Beerenauslese, and Trockenbeerenauslese. They<br />

range from medium dry to very sweet. Other<br />

terms used are Trocken which stands for very dry<br />

and Halb trocken which means half dry.<br />

The Regions and Vineyard areas<br />

A single vineyard would be called an Einzellage,<br />

and a group would be called a Grosslage. Several<br />

Grosslage would add up to a Commune called<br />

a Germeind. A Bereich is a district containg<br />

numerous Gemeind and an Anbaugebiete<br />

would end up as a Quality Region. There are 13<br />

Anbaugebiete in Germany.<br />

Grapes<br />

The grapes used in Germany are unique in<br />

that they have to cope with the climate and<br />

include the Reisling, grown worldwide, Muller-<br />

Thurgau, unique to Germany and the UK and<br />

Silvaner amongst others. For the reds we have<br />

the Spatburgunder (Pinot Noir) and Dorfelder<br />

amongst others. Red wine in Germany is difficult<br />

to produce owing to the climate.<br />

Conclusions<br />

Liebfraumilch was developed to<br />

revive a wine industry which had<br />

been virtually destroyed in WW2. It<br />

was success beyond expectations<br />

and by the 1980’s was one of the<br />

main wines to be found in the UK.<br />

This success however led to<br />

more demand and new vineyard<br />

sites planted in the wrong areas to<br />

increase production. Quality took<br />

a downturn and with the advent<br />

of New World wines coming along the exports<br />

suffered. One other problem was that the tall<br />

flute shaped bottle became an emblem for poor<br />

quality wine and also the Gothic Script on the<br />

labels were resented as being too difficult to<br />

read.<br />

A shame really because there are some wonderful<br />

wines to be had from Germany. Look into trying<br />

some but pay it but more for the privilege.<br />

Try this at home...<br />

Try a QMP Kabinett wine and then an Auslese etc and you will be pleasantly surprised.<br />

Couple this with the fact that they are usually much lower in alcohol, which adds another<br />

benefit.<br />

Method<br />

• Bring a large pot of water to the boiling<br />

point and plunge the live lobster to cook for 8<br />

minutes (no less, no more!).<br />

• Take off the water and let cool down on a<br />

rack for 15 minutes, then open into two and<br />

remove the flesh and reserve.<br />

• Peel and dice the baking potato into 1cm<br />

cubes, keep in fresh water ready to be drained<br />

and fried.<br />

• Toast the lobster flesh in olive oil and<br />

seasoning then chargrill on a very hot grill for<br />

1 minute.<br />

• Fry the potatoes and mix them with the<br />

chopped parley and chopped garlic.<br />

• Fill the lobster case with the sautéed<br />

potatoes and lay on top the Lobster flesh.<br />

• Pour some hot lobster bisque on top of each<br />

Lobster and serve with cos lettuce, 2 pot of<br />

Aioli sauce lemon wedges, melba toast and a<br />

few spring of dill.<br />

for the ride of our lives, here is what we<br />

thought…<br />

“When we arrived at Nowton Park in Bury St Edmunds, I have<br />

to admit I wasn’t really sure what to expect?<br />

I had a worrying feeling in the pit of my tummy that once I was<br />

up in the air I would suddenly look down feel afraid of heights!<br />

However you’ll be pleased to hear it wasn’t the case at all!<br />

Ben Pettitt, owner of Wizard Balloons, warmly greeted us at the<br />

park, he also happened to be our pilot for the evening. Upon<br />

arrival, he briefed us about the set up of the balloon (which<br />

we were allowed to help with) and other safety<br />

procedures including how to stand when landing.<br />

Then it was time for the fun part… the inflation<br />

method commenced. This entailed two people<br />

using large fans to blow cold air into the balloon,<br />

whilst Sam and Ben guided the top by holding<br />

the lines. It took around ten minutes to fill and<br />

another ten to heat. Once complete all of the<br />

passengers climbed on board. Before anyone had<br />

even realised, we were floating up, up and away.<br />

In total the experience lasted between 3-4 hours,<br />

so what we thought was going to be just a<br />

balloon ride turned out to be an adventure and<br />

an experience, one of which we will remember for<br />

a long time. <strong>Bounce</strong> would like to say a big thank<br />

you to Ben for having us on board!<br />

Once airborne, it was amazing to see how much<br />

countryside and farmland surrounds Bury St<br />

Edmunds, its not often you get to obtain a<br />

Birdseye view of the surrounding areas. We<br />

travelled down towards the Long Melford area<br />

past houses and fields. During this time we<br />

enjoyed taking photos of the panoramic views,<br />

waving to people below, chatting amongst<br />

ourselves, asking questions and enjoying the<br />

relaxing sensation of floating above the ground.<br />

Our flight lasted around an hour although<br />

because we enjoyed it so much time flew by.<br />

As we touched down on an open field there<br />

seemed a sense of fulfilment from everyone.<br />

As we all chipped in to fold the balloon away<br />

(including a ride off road in the basket) we<br />

finished up with a refreshing glass of bubbly and<br />

received our very own flight certificates.<br />

fear not I have a last minute idea<br />

If I think about it, some of the<br />

best presents I have received all have a bit of meaning to<br />

them and nothing beats something unique. Well there is an<br />

easy way to achieve this! I recommend a personalised gift.<br />

There is a whole scale of ‘personalised’ ranging from the<br />

first letter of someone’s name to the complete length and<br />

I’ve found all have a certain warmth to them when It comes<br />

to receiving.<br />

Of course it depends on who you are buying your gift<br />

for on what sort of thing you go for. But this is the good<br />

aspect about the personalised idea, as you can get pretty<br />

much anything!<br />

For example start with a mug for that new friend at work,<br />

or go for the sparkling necklace that will get you in your<br />

sister’s good books. I came across book ends recently, so<br />

this can cater to specific interests too!<br />

8. Beef up your brows<br />

Thick brows are a sign of youth, so filling them<br />

in correctly is crucial. Draw in hairs with a ticking<br />

And never more so than the last<br />

week, for I have just returned from<br />

the Languedoc in France where we<br />

have just done the interior of an<br />

amazing 300 year old house.<br />

The house is situated in a very small village just<br />

outside a beautiful town called Uzes.<br />

The house has been bought as a second home<br />

and therefore my client wanted the house to be<br />

as homely as possible.<br />

My first visit there was the end of the summer<br />

accessories to give it a personnel touch<br />

and to give me a template to work on with<br />

colours and for the design of the blinds and<br />

curtains.<br />

In Uzes itself, we found some amazing home accessories shops with a definite stylish French<br />

vibe including an amazing large chair in the style of Louis 16th but the fabric used on it was an<br />

orange velour!<br />

So back in lovely Bury the client and I worked on choosing paint colours, fabrics and trimmings<br />

and I think we came up with some gorgeous things!<br />

So last week I flew out there to install everything, a local decorator had driven down to France<br />

from Suffolk and he duly took all the soft<br />

furnishings with him, which was very helpful.<br />

The installation took a couple of days, was<br />

not easy with solid stone walls but I think<br />

the end effect was amazing!<br />

It was great to do something out of the<br />

ordinary and I really enjoyed the whole<br />

process and would love to do another, like in<br />

all our working lives it’s the unexpected that<br />

keeps us going!<br />

MY LAST TWO IPSWICH TOWN<br />

COLUMNS HAVE BEEN A LITTLE<br />

DOWN IN THE DUMPS.<br />

First, calling on the players to<br />

dig Mick McCarthy out of the<br />

hole he was appearing to slip<br />

into.<br />

Then, fearing that the Ipswich<br />

boss was in danger of being<br />

swallowed up by that very<br />

same hole.<br />

But in the space of four<br />

sweet days, everything<br />

changed.<br />

There is an old football<br />

adage that there is a bad<br />

time to play a team (when<br />

they have just got a new<br />

manager for example) and, equally,<br />

there are good times to face an opponent.<br />

On a Tuesday night under the lights at<br />

Portman Road, a woeful Bolton side arrived<br />

in Suffolk, shot-shy upfront and lacklustre at<br />

the back.<br />

It may have only been 2-0, with a second goal<br />

only coming with 20 minutes left, but it was<br />

arguably the most comfortable three points of<br />

the season.<br />

On the back of seven league games without a<br />

win, it was a perfect time to play Bolton and<br />

confidence was duly restored.<br />

Such is the freakish nature of football that such a<br />

poor run was quickly turned round to make it three<br />

games without a defeat – one win and two draws.<br />

That quickly became four unbeaten when<br />

Rotherham were put to the sword. Two-up inside 22<br />

minutes, four goals to the good by the 48th minute,<br />

eventually Ipswich fans left the New York Stadium<br />

swinging after a 5-2 away victory. Five goals scored<br />

in any match is cause for celebration.<br />

The fact last season’s top marksman Daryl Murphy<br />

finally got off the mark and ended the game with<br />

the matchball was simply pure icing.<br />

After a sluggish start, which led to this columnist to<br />

suggest Ipswich should have sold their number nine<br />

when big-money Middlesbrough<br />

came calling, Murphy had<br />

returned to form in recent<br />

weeks. What he was lacking was<br />

a goal, or three as it turned out.<br />

His season – which should now<br />

end in France and the European<br />

Championships – should kick on<br />

from here. Two comprehensive,<br />

much-needed, wins in four days<br />

has got everyone looking up and<br />

dreaming of the top-six again<br />

– while ending any doubt about<br />

McCarthy and some of his players.<br />

Where will Ipswich go from here? Difficult to say<br />

after the Rotherham win was followed by a twoweek<br />

international break with a testing <strong>December</strong><br />

on the horizon. It will be a typically gruelling festive<br />

programme – including, finally, a home match on<br />

Boxing Day – and once again, it could all change by<br />

the time I write the next column.<br />

BIKING...<br />

One of the best things about being<br />

Action Man is the awesome gifts I get<br />

for Birthdays and Christmas, one<br />

of the most recent was a voucher for<br />

quad biking with East Anglian<br />

activities at either of their locations<br />

in Cambridge or Bury St Edmunds.<br />

So I took my father-in-law Mick to their Suffolk<br />

sight just off the A134 for the 1 hour long course.<br />

Having never been on a quad before I was<br />

relieved to find that they were very easy<br />

to handle, a thumb control throttle with an<br />

automatic gearbox made acceleration simple<br />

whilst grip lever brakes made the equally<br />

important deceleration also straight forward.<br />

The group started with a few guided laps of an<br />

easier flatter course giving us an opportunity to<br />

master the controls, it wasn’t long before you<br />

discovered that sharp turns were possible with<br />

a swift flick of the handle bars and some clever<br />

weight distribution (Action Man don’t need<br />

brakes!).<br />

We then headed for the more challenging,<br />

undulating and damp wooded area still following<br />

the lead of our tutor we twisted and turned<br />

through a series of channels and paths with a<br />

number of hills and mud filled trenches, there was<br />

Amie and Rob Gannaway have two sons Luke,<br />

7, and Haydon, 9.<br />

Amie said: “We joined the club two years ago<br />

and we really enjoy it.<br />

It gives Haydon a safe environment in which to<br />

try out new sports alongside his brother and<br />

other children of their age. It is so inclusive<br />

and with Rob working during the week it gives<br />

the whole family a chance to be together and<br />

relax and meet others in same position.<br />

The club organises golf, archery, football and<br />

martial arts under the guidance of qualifed<br />

instructors.<br />

Haydon has Down’s Syndrome and each<br />

month the whole family attends the West<br />

Suffolk Tigers Club at Bury St Edmunds<br />

Leisure Centre, which aims to introduce<br />

people of all ages with physical and learning<br />

disabilities to a variety of sporting activities.<br />

It has enabled the whole family to take part in<br />

multi-sports together one Saturday a month,<br />

gives mum, Amie, a well deserved coffee<br />

break, and for them to meet other families<br />

whose children have disabilities.<br />

Amie added: “It has given the boys<br />

interested in<br />

different sports<br />

and mixing with<br />

other children.<br />

They really<br />

enjoy it and we<br />

all get to keep<br />

active together.”<br />

IAN BELL...<br />

I would like to start this month<br />

by saying I have thought about a<br />

couple of topics to write about... the<br />

one I would have liked to have done<br />

was regarding the legend that was<br />

Jonah Lomu.<br />

However I do not think my knowledge of the<br />

great man is good enough to do him justice.<br />

Thus I shall start simply by saying R.I.P Jonah,<br />

you were a rugby legend and by all accounts a<br />

great man too. You were taken too young but<br />

you shall not be forgotten.<br />

The topic I have decided to write about is Ian<br />

Bell and his omission from the England Cricket<br />

squad for the upcoming tour of South Africa.<br />

The Duke of Bellington as he is affectionately<br />

known by some is one of England’s most<br />

experienced cricketers having played 115 Test<br />

Matches, having scored 7,569 runs and has<br />

a batting average of 43. For those who do<br />

not know much about cricket, these are very<br />

impressive stats. To put Ian Bell’s career so far<br />

into context, he is 8th on the all time list of<br />

England run scorers, he is 3rd on the all time<br />

list of England appearances, joint 3rd on the<br />

list of England all time century makers having<br />

scored 22. The only players ahead of Bell on<br />

the century list are Kevin Pieterson who is one<br />

ahead on 23 and Alistair Cook who has 28.<br />

It is safe to say that the past 12 months have<br />

not been the best for Ian Bell in regards to his<br />

scores. I think however that his performances<br />

should be put into context a little bit. England<br />

did not play Test Match cricket between<br />

September 2014 and April <strong>2015</strong> due to the<br />

World Cup in February and March. Instead,<br />

England focussed upon playing ODI (One Day<br />

International) cricket to get practice for the<br />

World Cup. Whilst in theory, this was a good<br />

thing, where England went to warm up (Sri<br />

Lanka) and what happened whilst there was<br />

nothing short of ridiculous. The pitches in<br />

Sri Lanka are nothing like those in Australia<br />

and New Zealand where the World Cup was<br />

being staged and thus all you are doing is<br />

getting batsman to used to slow spinning<br />

pitches instead of fast bouncy ones. This<br />

along with the sacking of the Captain only<br />

caused turmoil. Ian Bell however was one of<br />

the stand out performers for England in the<br />

World Cup and grew in stature with the added<br />

responsibility given following Alistair Cook’s<br />

sacking.<br />

a supposed drop in form and also started to<br />

drop some catches. However if you look at his<br />

stats he scored 3 scores of 50+ and it was his<br />

2nd innings score of 65 not out which took<br />

England over the line to win the crucial 3rd<br />

Test in Birmingham.<br />

The reason as to why I decided to write this<br />

piece is down to who England has in their line<br />

up without Ian Bell in their side. Bell has been<br />

dropped for Gary Ballance who was previously<br />

dropped part of the way through the Ashes<br />

due to his inability to come forward to the full<br />

ball from the fast bowlers. Unless something<br />

has changed since then, he will be essentially<br />

cannon fodder to a fast bowling line up which<br />

is by far and away the best in the world.<br />

The other player who comes in for Ian Bell<br />

is Nick Compton who has also previously<br />

played for England back in 2012/13 after<br />

Andrew Strauss retired. Compton is however<br />

an opener, so it is not quite clear whether he is<br />

there to replace Bell or fight for the opener’s<br />

spot with Alex Hales. Between the two<br />

replacements you have less than 35 caps and<br />

neither has played in South Africa before. You<br />

are swapping a proven International player<br />

who has played for over 10 years for England<br />

with two players who have both had a go and<br />

been found not good enough. Only time will<br />

tell whether this move will prove to be a good<br />

one or not however I would have liked to see<br />

England’s 2nd most capped player (who is<br />

still playing) go with the squad to help with<br />

his experience, even if he does not play.<br />

Following the disaster which was the World<br />

Cup, England went to the West Indies where<br />

they played 3 Test Matches. Whilst England<br />

drew the series 1-1, Bell played well and scored<br />

his 22nd Test Match hundred. When England<br />

returned however the Australian’s were on<br />

the horizon in the much anticipated Ashes<br />

series. England were underdogs however<br />

went on to win the series. Whilst making 60<br />

in the 1st Test match in Cardiff, Bell suffered<br />

future from London Academy of Music and<br />

Dramatic Art (LAMDA) present A Midsummer<br />

ONES TO WATCH - A selection of<br />

new music for the New Year<br />

Here’s some new things to keep<br />

you intrigued in the lead up to<br />

Christmas… we’re hoping to hear<br />

much more from these guys in<br />

2016.<br />

The latest stirring around Norwich Lanes<br />

seems to be a trio playing dark, slow grungeinfused<br />

alt rock.<br />

No Holy Men are a new outfit, and fresh<br />

from supporting Keep Up last month in<br />

their hometown (apparently their first live<br />

performance), and have been showcasing<br />

very little online, which adds to the mystery.<br />

Catch them on their last date of the year on<br />

the 12th of <strong>December</strong> as Tilting Sky present<br />

another of their fine showcases at the<br />

Norwich Arts Centre; a double headline slot<br />

for these guys alongside The Big Alabama,<br />

with doors at 8pm.<br />

Another promising act in the early stages of<br />

formation have begun flowering further down<br />

the A11, In Cambridge. A former member of<br />

post hardcore / noise act the Tupolev Ghost<br />

has begun a new project, going under the title<br />

of Grieving. From the very little material to go<br />

on at this stage, you can tell it’s already less<br />

abrasive than the ‘Ghost work… with hooks<br />

that display an indie punk influence. Certainly<br />

exciting.<br />

Progressively getting heavier now into the<br />

third paragraph, and ending on a Bury St.<br />

Edmunds based quartet creating a dark blend<br />

of noises… Featuring members of Voices,<br />

Akercocke and Obscene Entity is a new death<br />

/ black metal influenced doom prog band<br />

called Shrines. The self-titled debut has been<br />

picking up attention from the likes of Metal<br />

Hammer, and the band has been busy with live<br />

dates as of late, including a series of London<br />

performances that went throughout the<br />

Autumn.<br />

Ok, I’m off to drink all the Gin that I can in<br />

<strong>December</strong>. Toodles.<br />

Eagle has landed – but their new<br />

eagle is soaring.<br />

In <strong>2015</strong> Eagle Veterinary Group has clocked up 65<br />

continuous years of providing veterinary care in<br />

Halesworth and the surrounding areas.<br />

During this time the nature of the work<br />

undertaken at the practice has transformed.<br />

“Originally we were very much focused on<br />

livestock, mainly Dairy Cattle and Pigs, but the<br />

changing nature of Farming and the decline in<br />

smaller livestock enterprises over this time means<br />

that we are now 100% dedicated to providing<br />

and even the occasional pet chicken, which keeps<br />

the vets on their toes” explains current owner<br />

In 1988 Mr Roche MRCVS, became a partner<br />

and the partnership changed its name to Eagle<br />

Veterinary Group. In this 65th year he believed<br />

it was time to retire the old eagle and re-launch<br />

with a brand new one.<br />

Mr Roche says “Our staff uniform has been<br />

updated, and a new website is under construction<br />

to go live in the New Year. You may have noticed<br />

our new wall, which has allowed us to enlarge<br />

the parking area, I would like to thank Stephen<br />

and Carl Thurston, and Kerslake Construction for<br />

their good work, and also to Derek Hammond<br />

of Hammond Group for providing the staff with<br />

offsite parking during this period.”<br />

THE KITTEN CLIMB CONTINUES…<br />

So folks, as you know, the kittens<br />

have been with us for over a month<br />

now and by that I mean they’re still<br />

‘trying’ to climb their way to the<br />

bloomin’ top!<br />

But so far they’ve been unsuccessful as I am still the<br />

one who gets to sleep in the big bed, uff!<br />

However, the problem is this… they have claws,<br />

spikey ones, they can be rather freaky with them<br />

rising to higher places! I admit sometimes I have a<br />

bloomin’ hard time of tracking them down, but I<br />

think they both really know whose boss.<br />

the ground. We all know that when they’ve landed<br />

on their feet again, I am chief in command. The deal<br />

on the Christmas table is this they can either join my<br />

brigade or the battle is on.<br />

Christmas is my favourite time of year, so I feel I<br />

ought to give them one more chance (my name isn’t<br />

Scrooge after all).<br />

And maybe if my Christmas present from them is<br />

a big one, I will let all of this go for and start a New<br />

Let me give you an example… There is nothing<br />

more daunting that trotting into your own kitchen<br />

to have a guzzle of water, but to look up and see<br />

two little faces looking down on you from the<br />

vertical wooden beam.<br />

Firstly, I might need to remind them it’s not a scratch<br />

pole, you don’t see me pissing up it pretending it’s a<br />

tree do you? But secondly, its crazy they even want<br />

to be up that high, I like to keep my feet firmly on<br />
