Serves 3-4<br />

Chicken in a<br />

Cashew Nut Sauce<br />

By AWARD-WINNING Chef Abdus Shahid<br />

Method<br />

1. Put 100g of the cashew nuts into a bowl and add<br />

warm water to soak them for two hours. Drain and<br />

place them in a blender or food processor, adding a<br />

little warm water. Blitz to a thick, smooth paste. Set<br />

aside. Place 25g more of the cashew nuts in a small<br />

frying pan and stir over a medium heat until toasted.<br />

Set aside.<br />

2. Heat a small amount of the oil in the same pan<br />

and cook the sliced onion until crisp. Drain on kitchen<br />

paper and set aside. In a large frying pan, dry-roast<br />

the garlic, ginger, coriander seeds, cumin seeds, dried<br />

chillies, cloves and cinnamon over a low heat for five<br />

minutes, stirring. Add the coconut, 75g more of the<br />

cashew nuts and the chopped onions and roast for<br />

10 minutes more, stirring all the time. Remove from<br />

the heat and leave to cool. Grind the mixture either in a<br />

blender or food processor, adding 150–250ml water, to a<br />

very smooth consistency.<br />

3. Heat the remaining oil in a wide cooking pot, add<br />

the blended spice mixture and fry for 10 minutes over<br />

a low heat. Add the ground cashew paste with some<br />

salt and fry for two minutes, adding the green chillies.<br />

Increase the heat to medium-high, and add the chicken<br />

pieces. Fry for five minutes, then add the remaining<br />

un-toasted cashews. Stir-fry for a minute or so, then add<br />

600ml of water. Bring to the boil, reduce the heat and<br />

simmer for 10–15 minutes, until the chicken is tender and<br />

cooked through.<br />

Ingredients<br />

• 250g cashew nuts<br />

• 100ml vegetable oil<br />

• 2 onions, chopped, plus 2 onions, finely<br />

sliced<br />

• 12 garlic cloves<br />

• 2.5cm piece of root ginger, chopped<br />

• 2 tbsp coriander seeds<br />

• 1 tsp cumin seeds<br />

• 4 dried red chillies<br />

• 6 cloves<br />

• 8cm cinnamon stick<br />

• 100g freshly grated coconut<br />

• Salt<br />

• 2 green chillies, finely chopped<br />

• 1kg boneless chicken thighs and legs, cut<br />

into 5cm pieces<br />

• 3 tbsp yogurt<br />

4. Serve with a dollop of yogurt, the reserved toasted<br />

cashew nuts and the crispy fried onions.<br />

The Big Jam Sandwich... locals gather to raise money for<br />

Bramfield Primary School at Halesworth’s New Cut...<br />

The Big Jam Sandwich was kicked off by the<br />

pure talent of Matt Shepherd along with his band<br />

Henry and Carl. Launching his debut album he was<br />

then joined on stage by Jay, Till and Rory of Cove<br />

Hithe, sharing their brilliance with rich and delicate<br />

acoustic harmonies. Cove Hithe then returned<br />

for their own performance and had the crowd<br />

clapping and cheering the whole way through.<br />

Performing live at their first gig, 12 budding<br />

Bramfrield students took to the stage singing<br />

Matt’s song ‘Hangover”. They then proceeded to<br />

excitedly sell their new single to their new adoring<br />

fans at the Big Jam Sandwich.<br />

With LED finger lights secured, the party was in<br />

full swing, as energetic 6 piece brass covers band<br />

TURNTABLE took to the stage. The fever pitched<br />

finale had children, teachers, parents and friends<br />

all dancing in their seats, the aisles and on stage to<br />

Uptown Funk!<br />

£3700 WAS RAISED during the event - all proceeds will go to BRAMFIELD PRIMARY SCHOOL<br />

a big thank you GOES OUT to all WHO WERE involved!<br />

Denim is a back in a big way for the<br />

Spring / Summer <strong>2015</strong> season.<br />

This might sound strange considering heavy<br />

jackets and jeans aren’t obvious go to items<br />

as the temperature rises (that’s not to say you<br />

shouldn’t own both of these items).<br />

Then again, we all know summer doesn’t<br />

necessarily mean three months of sun.<br />

ushers close friends.<br />

Ushers tend to be needed more for<br />

a church wedding however they<br />

defiantly have an important role for<br />

a larger civil ceremony.<br />

The main duties for a best man:<br />

• Arranging a suitable stag do<br />

• Spending the night before with the groom, making sure he<br />

gets plenty of sleep and wakes up on time<br />

• Helping the groom dress on the morning<br />

• Standing next to the groom at the alter or ceremony table<br />

while he waits for his bride<br />

• Keeping the rings safe<br />

• Standing in the receiving line, if you are having one<br />

• Mingling with guests making sure everyone is OK<br />

• Giving a speech<br />

• Organising suits to be stored safety or returned to hire shop<br />

• Give a reading or be a witness, if required.<br />

Rachel Ducker interviews Suffolk’s chef to the celebrities,<br />

Franck Pontais...<br />

For over twenty years, Franck<br />

has been creating the finest<br />

gastronomic experiences for<br />

celebrities, large corporations and<br />

small groups of friends and family.<br />

At the age of 22 years old he was head hunted by<br />

Harrods to expand their delicatessen counter.<br />

He joined Selfridges six years later where he<br />

launched their delicatessen counters in both<br />

London and Manchester.<br />

In 2005, Franck decided to set up his own<br />

catering and events company specialising in<br />

tailor-made menus for exclusive corporate and<br />

private events as well as fine dining and boutique<br />

delicatessen food.<br />

Since then, Franck’s published his first book and<br />

started undertaking major consultancy work for<br />

international corporations.<br />

Rachel caught up with Franck for a Q&A session<br />

about his career to date and what is to come in<br />

the future...<br />

Q: How did you get into cooking?<br />

I went to work to be a qualified butcher at the<br />

age of 14, from the butcher shop I was preparing<br />

ready meal dinners to take away for a couple of<br />

elderly people. I was really interested in cooking<br />

and I enrolled in to a famous culinary school in<br />

Paris for 5 years after that, the rest is history…<br />

Q: What brought you to England?<br />

I was working at the time with “A Meilleur ouvrier<br />

De france“ and passed with success in my first<br />

culinary competition; I was also leader of my class<br />

and always looking out for challenges. One day<br />

the chef executive of Harrod’s in London called<br />

the school and was looking to extend his brigade<br />

in Knightsbridge, I went and never came back.<br />

Q: What has been the highlight of<br />

your career to date?<br />

There are so many, on a personal level, I did enjoy<br />

taking part of the program “iron chef UK“ for<br />

ITV. It was a great experience in itself and I had<br />

to really push the limits for the competition. I did<br />

win the challenge, but above all, it did bring me<br />

confidence and dexterity, something that we all<br />

need.<br />

Q: How do you describe your<br />

cooking style?<br />

My cooking style is very clean, using the very best<br />

of the ingredients in season, with a little emphasis<br />

on the presentation. I would call it a modern<br />

European style.<br />

Q: How and where can we sample<br />

some of your food dishes?<br />

I am specialise in private dining, so the best way<br />

to sample my food would be to invite me to your<br />

house and let me cook for you. Don’t wait for a<br />

special occasion either! I am very affordable, you<br />

are looking in a region of £50.00 per person for a<br />

3 courses meal in your house, give me a try!<br />

Q: What is your signature dish?<br />

It’s a dessert inspired by the South of France.<br />

Q: Have you ever considered<br />

opening your own restaurant?<br />

I had a couple of “pop up“ restaurants in London<br />

and it was a great experience. However, this is not<br />

for me, I do a lot of travelling all over the UK and<br />

abroad and I love meeting people.<br />

you come up against as a chef<br />

living in Suffolk?<br />

Although Suffolk, Norfolk and Essex are very<br />

open in terms of embracing changes and different<br />

cultures, they are also very attached to their<br />

roots, it did take some time to be recognised<br />

and appreciated.

Q: Do you feel being French helps<br />

you as a chef in England or hinders<br />

you?<br />

It depends; it certainly did 20 years ago but the<br />

times have changed. The vast amount of culinary<br />

programmes on TV have changed the perception<br />

of cooking, i’m not sure if the job as a chef<br />

became more of a entertainment show than a<br />

respectful job in peoples minds, I don’t know, we<br />

will see in the years to come… The main thing is to<br />

stay true to yourself at all times.<br />

Q: You have cooked for many<br />

celebrities, who is the most famous<br />

person you have cooked for?<br />

I was part of the chefs who catered for the<br />

Stella McCartney wedding on the isle of Bute in<br />

Scotland. I will always remember the tap on a<br />

back from Sir Paul Mc Cartney and cooking all<br />

week long for my “Teen Idol“ Madonna.<br />

Q: Would you ever consider<br />

becoming a celebrity chef<br />

yourself?<br />

You can’t consider and clutter your mind with<br />

such a thing, I just want to enjoy cooking and<br />

embrace every opportunity, and the Journey of<br />

a chef is fantastic. “Celebrity Chef“ is just a label.<br />

I am already a celebrity through the eyes of my<br />

little boy Jack, and that’s essential!<br />

Q: What can we look forward to<br />

seeing from you in the near future?<br />

I am also a business professor at Grimsby institute<br />

and work as a development and innovation<br />

chef for Koppert Cress (micro greens grower).<br />

Consultancy work is very challenging and<br />

fulfilling, you might find my recipes on a famous<br />

supermarket magazine very soon! Or at the<br />

university doing some motivational talks.<br />

1) How to detect a serious illness<br />

in babies?<br />

It can be very frightening when your child is ill<br />

and even with a medical degree I sometimes am<br />

not sure when to get my children checked. Often<br />

I turn to my husband for a more objective view!<br />

The best advice really is to trust your instinct as<br />

a parent.<br />

You know your child better than<br />

anyone and if you feel they are not<br />

themselves then get them checked.<br />

Signs to look out for are a change in<br />

behavior or appearance.<br />

They may have a different high-pitched<br />

inconsolable cry, a high fever, they<br />

may not be feeding as much as usual<br />

or vomiting repeatedly. Check to see if<br />

your child is more sleepy or drowsy than normal<br />

or seems more floppy.<br />

For it to be a febrile convulsion the fit will last <<br />

20 mins and the baby returns entirely to normal<br />

after the fit has settled.<br />

To watch a child fitting, especially when it is<br />

unexpected is terrifying, as they will arch their<br />

heads back and all their limbs will shake. They<br />

may be asleep for some time afterwards and may<br />

have wet themselves.<br />

Febrile convulsions can be the<br />

first sign of illness in around<br />

30% of cases but others may<br />

have a known upper respiratory<br />

infection. Febrile convulsions<br />

can run in families and if a child<br />

has had one fit they are at a<br />

higher risk of having more in<br />

the future. If it is the first time a<br />

child has had a fit they must be<br />

seen by a medical professional<br />

as conditions such a meningitis or a urinary<br />

infection need to be excluded.<br />

Look over their body for a rash or even just a<br />

change in the colour of their skin. Feel their skin<br />

– it can be a worrying sign if your baby has very<br />

cold hands or feet. The younger your child is the<br />

lower the threshold is for seeking medical help.<br />

2) Febrile convulsions<br />

A febrile convulsion is when an otherwise healthy<br />

baby starts to fit due to a high temperature or<br />

illness, most commonly in the 2nd year of life but<br />

can go up to 5 years old.<br />

In order to prevent a febrile convulsion try to<br />

manage a high fever with paracetamol that<br />

should help to bring the fever down. Keeping<br />

the child cool by removing extra clothing and<br />

bed linen may also help prevent the child from<br />

overheating but extreme methods of cooling is<br />

not recommended. Most children who have a<br />

febrile convulsion will make a full recovery.<br />

Look up ‘confidence’ in the dictionary and you’ll<br />

find that it’s “the feeling or belief that one can<br />

have faith in or rely on someone or something”.<br />

So if you have self-confidence it means you have<br />

faith in yourself. If you have faith in yourself so<br />

will everyone else! But sometimes that’s easier<br />

said than done. Sometimes we need to take<br />

time to remember who we are and what we’re<br />

capable of. If you’re unsure whether you can<br />

do something, remember all the times you’ve<br />

succeeded before. If you don’t know the answer<br />

to a problem, think about what you’d advise a<br />

friend in a similar situation. Most of all, be as kind<br />

and understanding to yourself as you would be to<br />

that friend.’<br />

Irritable bowel syndrome (IBS) is a mix of symptoms like bloating or<br />

gas, distention, constipation, diarrhea, cramping—where your bowel<br />

is just irritable.When you look into the bowels with a camera, you<br />

don’t really see anything. There is no structural problem, no tumor or<br />

obvious cause.<br />

What causes IBS?<br />

The root problem is a dysfunction of your gut<br />

ecosystem, which can have many causes. If you<br />

took five people with IBS, the causes may be<br />

quite different for each person.<br />

For example, someone may experience any one<br />

of the below:<br />

Food Allergens or Sensitivities<br />

Foods can irritate your bowel and digestive<br />

system. They are called food intolerances. It’s not<br />

a true allergy like a peanut allergy or shellfish<br />

allergy, but it can cause terrible symptoms, and<br />

they are very common.<br />

The Human Microbiome<br />

This is where there are imbalances in your gut<br />

ecosystem. You have 10 times as many bacterial<br />

cells in your gut, as your own cells. These bugs<br />

have to be in balance for you to be healthy.<br />

Also, if you have bugs in the wrong spot, you can<br />

Yeast Overgrowth<br />

Yeast overgrowth happens because of taking<br />

sugar, drink alcohol, or you are diabetic.<br />

Situated at one end of the Harmony Centre is a busy<br />

chiropractic practice that has been an integral part of<br />

the centre since just after it was built in 2001.<br />

People from all over Suffolk,<br />

Norfolk and beyond travel to have<br />

their spine and nervous systems<br />

corrected. At the heart of the<br />

practice is a focus on family health<br />

and wellbeing.<br />

It is not unusual to see three generations<br />

coming through the door. “Age is no barrier to<br />

chiropractic care.” says Paul Parolin who has been<br />

helping East Anglian people since 1998. He treats<br />

newborns, octogenarians and manual workers<br />

alike with a tool box of techniques ranging from<br />

the very subtle to the more physically assertive.<br />

Paul not only sees people who are in pain but<br />

also those he has helped out of pain. When asked<br />

why would anyone want to have a treatment if<br />

they are feeling ok? His answer is “Because I see<br />

the future of health care as both preventative and<br />

wellness oriented. Why wait to become unwell?<br />

Why wait for your body to inform you something<br />

is wrong by sending out signals in the form of<br />

pain? If we look after our bodies as well as we<br />

look after our cars and houses there would be a<br />

lot less illness.<br />

There is a strong argument for lifelong treatment<br />

either of chiropractic or another complementary<br />

therapy to help optimise health and wellbeing<br />

alongside a good diet and exercise.” It would<br />

save the NHS a lot of money. Imagine that! The<br />

demands on the NHS decreasing instead of<br />

increasing. Not soon perhaps but sometime in<br />

the future.<br />

Halesworth<br />

This month <strong>Bounce</strong> focuses on the quaint<br />

Market Town of Halesworth...<br />

Halesworth is a small market town situated in<br />

Suffolk, it has a population of approx 6000, with<br />

the surrounding villages pushing the number to<br />

nearer 12,000.<br />

Halesworth is a town rich in heritage and history<br />

dating back to the Middle Ages.<br />

The town reached the peak of its prosperity<br />

when the River Blyth, on which it sits, was made<br />

navigable in 1756. This breakthrough greatly<br />

increased the town’s trade particularly for the<br />

maltsters and brewers.<br />

By the 17th Century Halesworth was one of the<br />

fastest growing towns in East Anglia. In the 18th<br />

Century it had developed into a town of small<br />

businesses supplying the local urban market and<br />

the needs of the surrounding countryside.<br />

I have lived in Halesworth throughout my life,<br />

the town has a relaxed pace and has been a very<br />

quaint and friendly place to live and visit although<br />

beneath its calm exterior there is plenty of activity.<br />

The main stem of the town is the ‘Throughfare’<br />

over the years I have seen the town itself develop<br />

from being a sole route through Halesworth to the<br />

now pedestrianised and distinguished street.<br />

It’s a great place to shop for any occasion and on<br />

a Wednesday the local market visits, found within<br />

the Market Place.<br />

The town has a wonderful mix of new and old<br />

buildings bringing a traditional feel into our<br />

modern society.<br />

With the river improvement scheme completed,<br />

this enabled keels and wherries to sail from<br />

many fine buildings in the town, ranging from<br />

a Tudor rectory, an Elizabethan almshouse and<br />

Gothic House, home of the Bedingfield family from<br />

1540 with a jetted first floor, hooded windows and<br />

unusual Jacobean porch.<br />

At the bottom end of the Throughfare you can<br />

find an amazing piece of architectural structure,<br />

this is Halesworth’s Library. Only a few minutes<br />

walk away from this is the train station, which is<br />

recognised for its movable platform.<br />

Around the town you may notice circular signs, of<br />

a duck, sunk into the ground, these are waymarks<br />

for the route of the town trial, together with the<br />

informative boards they make an excellent way of<br />

getting to know Halesworth and its history.<br />

Speaking of which, I have my own family history<br />

in Halesworth, my great, great, great uncle John<br />

Ducker was accused of mudering a Policeman in<br />

Chediston Street and was the last man to be hung<br />

in Suffolk, in 1863. We won’t go into that too much<br />

further!<br />

Now the important bit… there is plenty of choice<br />

for eating out and accommodation in the town.<br />

In the 19th century Halesworth became a major<br />

centre for the brewing and malting industries, so<br />

you can expect some good ale here!<br />

The 16C Angel Hotel has two bars and an<br />

excellent Italian restaurant so is well worth a<br />

view.<br />

Tillys in the Market Place and The White Hart<br />

in Thoroughfare Way are also well worth<br />

investigating, however a favourite hang out of<br />

mine is Focus Organic in the middle of town.<br />

With a range of organic produce (and in my<br />

opinion the best coffee in town,) you can sit out<br />

the front on sunny days and watch the world<br />

go by.<br />

For other types of cuisine it is well worth<br />

checking out the Sing Tong Neeyom Thai<br />

Restaurant or the Raj Put Balti House, which<br />

happens to be situated right next to our offices,<br />

the smell in the evening always makes us hungry!<br />

In terms of leisure Halesworth boasts the largest<br />

green in the UK, consisting of a staggering 43<br />

acres! This is grazing land that is part of the Blyth<br />

Valley Environmentally Sensitive Area, and is a<br />

haven for wildlife.<br />

For those of you a little more enteric Halesworth<br />

has its own Bowling Green tennis courts and 18<br />

and 9-hole golf course, set in 90 acres of stunning<br />

undulating countryside.<br />

For entertainment The Cut houses the vibrant<br />

community Arts Centre and is located in a<br />

former 19C malting building. The Cut offers a full<br />

programme of exhibitions, dance, theatre, music,<br />

workshops and courses. It has a cafeteria and<br />

licensed bar, and food is now available an hour<br />

before most evening events.<br />

Halesworth for me will always be home, but for<br />

anyone visiting or living here already I am sure they<br />

would agree with me that this town has a certain<br />

something about it.<br />

Having grown up on boats and rivers,<br />

Woodbridge is the sort of place to make me<br />

feel at home. The Crown is no exception, made<br />

apparent as we arrived…<br />

Looking up from the long, stylish bar, you’re met<br />

with the underbelly of a fishing boat, suspended<br />

from a glass ceiling. Think trendy London bar<br />

meets rustic Suffolk, with a nautical twist!<br />

Like the décor, the food balanced the refined with<br />

the rustic. The restaurant boasted a 2AA Rosette<br />

and a recommendation in the Michelin Guide - we<br />

were not to be disappointed.<br />

The menu showed the connection with the<br />

local area, with ‘Farm to Fork’ and ‘The Catch’<br />

sections. Knowledgeable and friendly staff were<br />

all too happy, and proud to talk us through the<br />

personalized and locally sourced menu. Deben<br />

spinney creek oysters came au naturel with<br />

Adnams vodka bloody mary. Or, deep fried with<br />

wasabi mayonnaise & pickled ginger for those of<br />

us less brave... Cowardly and content, I found the<br />

latter were delicious and the perfect introduction<br />

to oysters.<br />

Sold on the local ingredients of ‘Farm to Fork’,<br />

I went for the Suffolk rack of lamb, braised<br />

shoulder croquette, caramelised onion purée and<br />

balsamic beats. On a similar theme, Rachel opted<br />

for the Marsh View Farm red poll ground rump<br />

steak burger which was as equally delicious.<br />

With regards to the hotel, the whole of the<br />

second floor of the historic hotel has been<br />

transformed, creating beautifully designed<br />

bedrooms. Stylish but cosy, the rooms were<br />

designed by award-winning London based<br />

designers, Bentheim. Like the menu, the rooms<br />

meet luxury with the rustic. Wicker feature walls<br />

and pitch fork wall hangings contrast the goosedown<br />

pillows, crisp cotton bed linen and large,<br />

modern bathrooms.<br />

You are sure to be made to feel completely<br />

welcome at the Crown, with a warm and friendly<br />

atmosphere. Staff members were genuine and<br />

seemed to have a real love for the hotel, which<br />

was clear in their knowledge and passion in<br />

describing their locally sourced menu and<br />

extensive range of quality wines.<br />

Recipe<br />

• In a deep heavy pan heat the oil and add the<br />

cloves, onions, squash, celery and carrots.<br />

• Fry until they begin to colour, then stir in the<br />

tomato and sugar. Cook the tomato until the<br />

water reduced a little.<br />

• Stir in the tomato puree, ras el hanout,<br />

tumeric and chopped coriander. Pour in the<br />

stock and bring to boil. Reduce the heat and<br />

simmer for 30-40 minutes until the vegetables<br />

are very tender and the liquid has reduced a<br />

little.<br />

• Simply add the pasta at the end to the<br />

unblended soup (blend if wished) and cook for<br />

a further 6 to 8 minutes. Pour into a bowl, stir<br />

in the yoghurt and garnish with fresh coriander.<br />

Single Origin V’s Blended?<br />

Most of the coffees we love are blended but<br />

why do we blend coffee? In a simple answer, to<br />

ensure the correct taste profile to cerate multiple<br />

drinks. A blended espresso coffee needs to be<br />

quite punchy to cut through the milk for lattes<br />

and Cappuccinos; it also needs to be smooth<br />

enough to work as a standalone Americano, with<br />

or without milk. It’s similar to creating a blended<br />

whisky to work brilliantly in a cocktail or with a<br />

soft drink mixer, or simply on its own. It’s quite<br />

normal for a blended coffee to contain both<br />

Arabica and Robusta beans.<br />

Single Origin coffees tend to be from the Arabica<br />

plant, dry processed and are more akin to single<br />

malt whisky. They tend to be lightly roasted with<br />

a higher acidity and a delicate sweetness. Best<br />

served in smaller 8oz glasses as a Flat White or<br />

Cortado. Independent coffee farmers in South<br />

America and Africa produce our single origin<br />

coffees in small batches. Grown in microclimates<br />

with rich soils and the ideal rainfall patterns to<br />

produce genuinely rare coffees.<br />

Wines of<br />

Australia<br />

Wines from Australia could have been<br />

available in 1788 when Governor Phillip<br />

planted vines at the Penal Colony in New<br />

South Wales.<br />

It took until 1822 for Gregory<br />

Blanchard exported wine for sale.<br />

A major step forward occurred in 1830 when<br />

vineyards were established in New South Wales<br />

and in 1833 James Busby planted classic, mostly<br />

French varieties. As more settlers arrived<br />

from Europe, some with winemaking skills, so<br />

the premium wine regions of Australia were<br />

established. During the 1800’s many medals<br />

were won in France against French premium<br />

wines. This all came to a stop with the arrival<br />

of the phylloxera bug in 1870, which decimated<br />

European vineyards and threatened elsewhere in<br />

the world.<br />

Until the late 1970’s Australian wine was largely<br />

bulk wine, sometimes in a box and also sweet<br />

fortified wines. During the 20th Century, with<br />

domestic consumption growing, overproduction<br />

produced problems leading to a wine lake.<br />

The Government had to step in with financial<br />

incentives to pull up vines to overcome the<br />

problem.<br />

At present Australia produces world beating<br />

wines and has many experienced winemakers.<br />

These are taken on by many countries, even<br />

France, to apply their skills locally to improve<br />

their own wine.<br />

The Climate and Soils<br />

The majority of wine regions in Australia are<br />

coastal and enjoy a Mediterranean climate. This is<br />

ideal for ripening but needs careful consideration<br />

if too hot. Many vineyards are planted where<br />

conditions are more moderate.<br />

New South Wales<br />

The Hunter Valley is the main wine area in<br />

this state, some 160 km north<br />

if Sydney. The best soils are<br />

volcanic. The grapes include<br />

Chardonnay, Shiraz and Semillon.<br />

Victoria<br />

Largely destroyed in the 19th<br />

Century by Phylloxera, it is now<br />

producing great wines. The Yarra<br />

Valley is tops with Chardonnay,<br />

Pinot Noir and Cabernet<br />

Sauvignon among the best grapes. Moet and<br />

Chandon have a Sparkling wine made the same<br />

way as Champagne. The Goulburn Valley growing<br />

delightful Rhone Grapes such as Marsanne,<br />

Roussanne and Viognier.<br />

South Australia<br />

Producing nearly half of Australian wine it is<br />

also has top vine areas. Riverland in the north<br />

provides more bulk but good quality wine.<br />

The Barossa Valley is thought of as one of the<br />

best areas and in the past has been helped by<br />

German immigrants with wine making expertise.<br />

The cooler areas such as Eden Valley is also<br />

outstanding. Further south of the capital Adelaide<br />

are McLaren Vale, Coonawarra and Padthaway. All<br />

top producing areas. Most of the classic French<br />

varieties such as Merlot, Cabernet Sauvignon,<br />

Shiraz etc are grown.<br />

Western Australia<br />

More boutique wines, with a cooler climate due to<br />

the proximity of the Indian Ocean. As a result of<br />

the cooler climate their wines are more European<br />

in style and command higher prices than the rest<br />

of Australia.<br />

Queensland<br />

Some wine is produced in this state but being so<br />

much hotter in climate.<br />

Tasmania<br />

There are 100 or so growers in this state which<br />

has the coolest climate. Capable of producing<br />

great wines they are mostly concentrating on<br />

Pinot Noir and Alsace varieties.<br />

Styles<br />

Australia is capable of making top<br />

class wines as has been evidenced<br />

by their success in comparisons<br />

with Europe. Their wine laws<br />

encapsulate requirements that<br />

what is stated on the label must be<br />

factual. Also the grapes used must<br />

be stated and in what proportions.<br />

Capable of producing great wines<br />

they are mostly concentrating on<br />

Pinot Noir and Alsace varieties.<br />

Note - If a wine is said to come from South East<br />

Australia it is usually a blend of wine from South<br />

Australia, Victoria and New South Wales.<br />

Australian wine produces wines to satisfy all<br />

tastes and this is evident by its success in many<br />

worldwide Awards.<br />

Give them a try. It is useful to compare one grape<br />

variety in one country to the same grape variety<br />

in another. Of course you will need a bottle of<br />

each and separate glasses to go from one to<br />

another. Serve them at the same temperature<br />

and don’t forget the Drink Drive Laws.<br />

So preferably try this at home.<br />

This sweet blueberry gin cocktail recipe<br />

balances southern charm with smooth<br />

sophistication for the ultimate summer<br />

Method<br />

Line the bottom of a jar or<br />

tumbler with a single layer<br />

of blueberries. Add brown<br />

sugar to your liking, and<br />

using a spoon or pestle mash<br />

berries until sugar begins to<br />

dissolve into berry juice, but<br />

blueberries are still chunky.<br />

Mix in lemon juice. Fill glass or jar with<br />

crushed ice, top off with gin and ginger<br />

ale and gently stir.<br />

Set deep in the delightful Tudor<br />

buildings, offering sightseers views of character<br />

and charm. As we entered the alluring building,<br />

friendly staff greeted us and accompanied us to<br />

our room.<br />

As we ducked and dived the twisting low-beamed<br />

corridors I tried to remember how I would ever<br />

find my way back to reception. In fact during the<br />

stay I failed on many attempts, often ending up<br />

circling back on myself… though I have to admit<br />

it was rather fun to get lost in such an old and<br />

interesting building.<br />

With 45 rooms in total, each boasts a mix of<br />

rich fabrics and luxurious furnishings in mellow<br />

colours, along with colossal feather pillows<br />

and soft sheets making the night’s sleep a<br />

comfortable one.<br />

As we settled, it soon came time to venture back<br />

through the maze of corridors leading to the<br />

brand new ‘Weavers’ Spa’ for a little bit of R&R.<br />

After a long day of business meetings in London,<br />

it was just the tonic I needed and I was thankful<br />

the Swan had a Spa for me to unwind in.<br />

AN ENCHANTING PLACE<br />

As I entered the spa, a beautiful scent filled the air<br />

automatically relaxing my senses.<br />

My therapist Abbie greeted me at reception and<br />

led me to a spotless changing area where I was<br />

given the softest fluffy bathrobe to wear, so cosy I<br />

wanted one of those at home!<br />

I was then taken to a communal room and offered<br />

a healthy smoothie as I filled out my details within<br />

a treatment form. Normally this is the boring part<br />

however, what I really appreciated about this<br />

process was the option to tick a box to state if<br />

you would like to talk during your treatment or<br />

to have quiet time (as this can usually be quite<br />

awkward, I gratefully ticked the quiet box on this<br />

occasion). I selected a massage called ‘drift-away’<br />

which I would highly recommend for those who<br />

get stressed easily, and drift-away I did. After a<br />

60-minute treatment I felt so calm and almost<br />

spaced out.<br />

Weavers’ Spa is all about the little touches and<br />

as I came back to life after my massage a cold<br />

homemade lemon sorbet was waiting for me. I can<br />

honestly say that it has been one of my favourite<br />

spas to visit to date. As I clocked the time I<br />

scurried back towards my room to change for<br />

dinner, picking Sam up en route who was enjoying<br />

a few beers whilst working remotely in the garden.<br />

After enjoying some classic cocktails and tasty<br />

canapés in one of the many lounge areas, we<br />

made our way to dine in the Gallery Restaurant,<br />

which echoed that of a candlelit medieval galleried<br />

hall. Quite magnificent in itself.<br />

The food was superb, from the fresh bread to the<br />

dessert. I started with a smoked salmon scotch<br />

egg with lemon butter sauce and caviar whilst Sam<br />

opted for the confit pork cheek with piccalilli and<br />

pea shoot salad. I have to say on this occasion I<br />

heading up the stairs to bed.<br />

After a great night’s sleep we decided to have<br />

breakfast in the brassiere next to the garden rather<br />

than the gallery, this was a bright and airy room<br />

with a fusion of contemporary furnishings and<br />

medieval features.<br />

although sad our time here had come to an end, as<br />

we walked out of the entrance we both agreed we<br />

will be returning to the Swan Hotel very soon.<br />

For the main event, the corn fed chicken with<br />

pearl barley, confit shallots, baby leeks and crispy<br />

chicken wings jumped out at me, however Sam’s<br />

selection of Denham Estate venison with carrot<br />

puree, thyme mash and char-grilled sprouting<br />

broccoli was described as incredible.<br />

The atmosphere of the restaurant was pleasant, it<br />

was full but not noisy, the room catered for dining<br />

large parties particularly well. As we sipped on a<br />

glass of Malbec studying the room, our desserts<br />

arrived, (always my favourite part to any meal).<br />

Sam enjoyed a lemon cheesecake whilst I tried<br />

the Pistachio financier (which is like a cake) with<br />

raspberry sorbet.<br />

With full bellies we enjoyed a final drink in the<br />

Airmen’s bar, whilst viewing the world war two<br />

memorabilia displayed on the walls and then<br />

Seim Reap, Cambodia, is famous as the landing spot for<br />

tourists who want to discover the ancient ruins of the<br />

Angkor Wat site in Cambodia.<br />

The site is named after the iconic three towered that it was Ancestors Day, a special holiday, so there were<br />

Why Have a Facial?...<br />

Having a facial is often thought of as a<br />

luxury.<br />

With many of us citing lack of time, money and often<br />

feeling slightly guilty about ‘treating’ ourselves, facials<br />

are not always a regular date in the diary. However,<br />

some of us don’t understand the benefits of a good<br />

professional facial, so we will enlighten you…<br />

The majority of us would wait until we notice a skin<br />

concern such as a breakout, dry itchy skin areas or<br />

discolouration; or, have an upcoming special event<br />

before coming in for a facial.<br />

Investing in proper skincare has a value that can be<br />

(arguably), more important than buying a new dress<br />

or going out for a meal to that new restaurant in town.<br />

Facials are affordable, and most spas and salons are<br />

very reasonably priced, good skincare shouldn’t break<br />

the bank! If affordability is an issue, always look at the<br />

special discounts section on the spa/salon’s website or<br />

their social media pages.<br />

Facials are recommended once a month, however,<br />

if you have a specific skin concern you are trying to<br />

overcome, then an intense course of treatments might<br />

be necessary. Skin renews itself approximately every 28<br />

days, so having a facial regularly ensures the skin which<br />

is visible, looks its absolute best.<br />

A good facial will increase the circulation of the blood<br />

under the skin. This allows the skin to renew its cells<br />

more efficiently. Facials will also decrease waste found<br />

underneath the skin which can cause puffiness and fluid<br />

retention, by stimulating the lymphatic system that lies<br />

just under the skin’s surface. Specialised anti-ageing<br />

facials will help to smooth fine lines and promote<br />

collagen production, to prevent premature ageing,<br />

wrinkles, and sagging skin.<br />

For those suffering with breakouts or congested skin,<br />

a facial will cleanse the pores on a much deeper level.<br />

Similar to an appointment with your dental hygienist, a<br />

facial will do something similar for the skin and pores.<br />

Finally, facials allow you to relax, something, which most<br />

But this extra light and warmth also means weeds<br />

Keep on top of them by hoeing regularly in dry<br />

conditions.<br />

Along with all the flourish and splendour this month,<br />

weeds are thriving too, so keep on top of the<br />

situation; hoe on warm days and leave them on the<br />

surface to wither and die in the sun.<br />

Watering is essential once the weather is drier and<br />

warmer - water thoroughly once or twice a week<br />

rather than little and often (containers and hanging<br />

baskets need watering every day and sometimes<br />

even twice a day if it is hot and windy) - this<br />

encourages plants to put down roots in search of<br />

water rather than coming up to the surface.<br />

PARTY TIPS<br />

I recently celebrated my 29th Birthday<br />

and to mark the occasion I decided to<br />

throw a garden party with my friends<br />

and family. Here are some of my top<br />

tips to throwing a memorable summer<br />

garden party...<br />

Choose an appropriate space: consider<br />

the level of the ground, you don’t want your<br />

guests stumbling over especially after a few<br />

drinks.<br />

Festive element: paper lanterns or balloons<br />

hung haphazardly on tree branches are a fun and<br />

festive element that signifies to guests where the<br />

party’s at.<br />

Blooming plants: placing a few blooming<br />

plants in inexpensive buckets around the garden<br />

provides instant colour and texture. And using<br />

a variety like lavender also gives off a heavenly<br />

scent.<br />

Plan the lighting: your location should have<br />

just the right amount of light and shade. If you<br />

plan a party for the evening, you will need to use<br />

candles, lanterns, string lighting or torches for<br />

extra lighting. When using candles, opt for votive<br />

and/or large pillar candles.<br />

Drink station: arrange a variety of beverage<br />

options on a shelving unit with all the necessary<br />

accoutrements.<br />

Tasty appetizers: bite-sized appetisers are<br />

easy to munch on while socialising with other<br />

party guests. I cheated and ordered everything<br />

pre-prepared from Tesco Easy Entertaining!<br />

Such a time saver!<br />

Create a music list: the type of music you<br />

use is relative to your personal tastes. Either set<br />

up speakers outside, or use a portable sound<br />

system to play your music.<br />

It might have ended in<br />

defeat but season was<br />

nothing but a success<br />

How do you sum up the last nine<br />

months in under 500 words?<br />

The best football season I have ever witnessed<br />

- in the Championship or any other league<br />

for that matter. A season where Ipswich Town<br />

found their soul again, where Mick McCarthy<br />

and his band of brothers defied the odds over<br />

and over again only to taste brave defeat at<br />

the end. Here goes…<br />

THE GOOD<br />

Where do I start? Almost everything about<br />

this season was good when it comes to<br />

Ipswich Town. The<br />

emergence of youngsters,<br />

Tyrone Mings and Teddy<br />

Bishop, the fact long-term<br />

contacts replaced the dark<br />

days of loan signings. A<br />

skipper, Luke Chambers,<br />

who rivalled any to ever<br />

lead the blue and white.<br />

A manager, as straighttalking<br />

and straight-acting<br />

as they come, who proved<br />

he didn’t need Marcus<br />

Evans’ millions to shape a<br />

promotion-chasing team - in fact he needed<br />

just £110,000. Ipswich might remain the<br />

longest-serving Championship club, but midtable<br />

mediocrity was replaced by promotion<br />

dreaming, which next season will be replaced<br />

by real excitement and expectations. Daryl Murphy’s<br />

goals, Cole Skuse’s assured presence in the heart<br />

of midfield, the lionhearted Christophe Berra at<br />

the back. The amazing Super Blues, especially<br />

the fans who got up at dusk to follow their team<br />

away. They have a club to be proud of again - one<br />

where even the illusive Evans stepped out, briefly,<br />

from the shadows. At home, the crowds returned<br />

to Portman Road and they were treated with heroic<br />

endeavour from one of the Championship’s smallest<br />

- but closest - squads. The good times have finally<br />

returned.<br />

THE BAD<br />

I can’t ignore the standard of football, especially in<br />

the second half of the season when Town sometimes<br />

clung on to that top-six spot. They became too<br />

reliant on the long ball, even though the way<br />

opposition defenders were turned and constantly<br />

put under pressure should be admired. And let’s<br />

not forget that Ipswich were one of the best teams<br />

in the whole league prior to Christmas. Then there<br />

was the way the season ended. Four winless games<br />

against Norwich, three defeats and a play-off exit at<br />

the hands of the arch rival, are the grim statistics.<br />

But fans have already begun reflecting on a truly<br />

memorable season where Ipswich - only just - fell<br />

short at the penultimate hurdle.<br />

THE HOPES & DREAMS<br />

I used the word ‘expectation’ earlier and<br />

that is what McCarthy’s men will have<br />

to cope with next season. A top-six<br />

finish was simply brilliant, a surprise and<br />

victory for team spirit and unity over<br />

big-spending. But next season, a playoff<br />

place is the minimum requirement.<br />

In truth, to really progress, Ipswich<br />

must be fighting for a top-two spot<br />

even harder than they just have.<br />

But what a situation to be in. I have watched and<br />

reported on too much dire football at Ipswich Town in<br />

recent years. This last season was an absolute joy. Bring<br />

on August!<br />

Does Dodgeball...<br />

Dodge with the Ipswich Mavericks<br />

Dodgeball Club!<br />

Action Man teamed up with the only dodgeball<br />

club in Suffolk at their regular training session at<br />

Copleston High School, Ipswich every Monday<br />

evening from 6–8.<br />

The dodgeball season runs from September to<br />

April and following a highly successful campaign<br />

which saw them top the Non-League standings<br />

at their first attempt, having lost only one<br />

competition during the entire season, they’ve<br />

been promoted to the Dodgeball National<br />

League Two. This jump in class shouldn’t faze<br />

the Mavericks who boast an impressive 3<br />

internationals within their ranks. Now everyone<br />

loves the film ‘Dodgeball’ right? Well come give<br />

it a go, you’ll have a blast! The rules are fairly<br />

straight forward and self-explanatory… DODGE<br />

THE BALL! T<br />

here’s a truly great spirit during a match and<br />

within the group, all games are supposed to<br />

be fun but I don’t think I’ve ever laughed so<br />

hard during a competitive bout in any sport<br />

as wild shots are met with even wilder evasive<br />

manoeuvres. You certainly get a buzz when<br />

you catch an opponent’s throw especially when<br />

that’s come from the arm of an international<br />

dodgeballer and even more so when that sees<br />

you become the game’s MVP! (ofcourse! MVP<br />

can be found under Action Man in a thesaurus,<br />

right next to awesome.) However this is swiftly<br />

followed by a full barrage of balls hurtling in your<br />

direction.<br />

The Mavericks summer training is a string of<br />

practice matches with more tactics and drills<br />

being introduced close to and during the season<br />

so now is a great time to get involved. Your first<br />

training session is free with following sessions<br />

costing just £3. All are welcome and I can’t<br />

recommend it enough.<br />

Suffolk College’s performing arts faculty), and<br />

spearheaded by Karen Simpson, director of the<br />

Theatre Royal Bury St Edmunds, the festival will<br />

see shows for children scattered across three<br />

venues in the town, the Theatre Royal, Apex and<br />

Conservatoire East.<br />

working theatre ticks.<br />

Throughout the festival, organisers are looking for<br />

Despite the rain pouring down outside<br />

as I write this, summer is just around the<br />

corner and we all know what that means –<br />

festival season is upon us! Suffolk has<br />

an inspiring collection of local festivals<br />

featuring the finest of local, national and<br />

international talent.<br />

The Unthanks<br />

Twisted Piglet<br />

First up is RED ROOSTER at Euston Hall. An<br />

entire weekend of R&B, Americana, Blues, Soul,<br />

Roots and Country music, this is not to be missed<br />

by any fans of the music of the Deep South. This<br />

relatively new festival is back from 5th to 7th<br />

<strong>June</strong> <strong>2015</strong> and features the likes of KITTY DAISY<br />

& LEWIS, CW STONEKING, IAN SIEGAL and THE<br />

THINKING MEN.<br />

Next is perhaps the region’s biggest and most<br />

well-known festival LATITUDE from 16th to 19th<br />

July. This year marks LATITUDE’s 10th birthday<br />

so expect all sorts of shenanigans to celebrate<br />

this momentous occasion. Countless stages,<br />

tents, arenas and performance spaces will be<br />

positively bursting with talent, covering music,<br />

film, comedy, theatre, dance and everything in<br />

between. A very small selection of what’s on<br />

offer includes headliners ALT-J, PORTISHEAD,<br />

NOEL GALLAGHER’S HIGH FLYING BIRDS and<br />

JAMES BLAKE, WARPAINT, LA ROUX and YEARS<br />

& YEARS.<br />

There’s a bit of a to-do on from 21st to 23rd<br />

August with FOLK EAST taking over Glemham<br />

Hall. Join in for the chance to relax in the<br />

wonderful grounds and eat, drink and be merry<br />

with THE UNTHANKS, FALSE LIGHTS, THE<br />

YOUNG’UNS, PEATBOG FAERIES and many,<br />

many more.<br />

HOMEGROWN festival returns to Barrow to<br />

bring together the best of East Anglian music<br />

during the August bank holiday weekend. I loved<br />

it last year and very much look forward to this<br />

year’s event where I can’t wait to be treated to<br />

TWISTED PIGLET, BOX OF LIGHT, THY LAST<br />

DROP, MIRROR SIGNAL and too many others to<br />

fit within my word count.<br />

Not your ordinary dog…<br />

Whether human or dog none of us<br />

are the same - we are all originals,<br />

and that’s the way I bloomin’ like it.<br />

Its good to stand out from the crowd,<br />

I don’t want to be just another pup<br />

in the pack, so I have been doing<br />

a few things lately that may push<br />

the boundaries.<br />

Like the other day, I visited the<br />

town park on my usual track;<br />

walkies got rather boring and<br />

I didn’t care who was watching,<br />

so I jumped on this piece of kids<br />

equipment. I had a wicked time circling<br />

around and around, mind you I got the funniest<br />

looks – but I like to feel the wind in my fur you see, it<br />

gave me that car window feeling.<br />

My video ‘dog on a roundabout’ had many hits on<br />

the social media streams, I was aiming for ‘Charlie<br />

bit my finger’ volumes but it didn’t quite take off as<br />

well as Charlie’s... still there is plenty of time.<br />

Another thing I like to do is sleep in the bed, but not<br />

like a dog… like a human... on my back with my legs<br />

in the air. I was mentioned on BBC Radio Suffolk the<br />

other day in a debate about taking pets to<br />

bed. My owner stuck up for me, which<br />

was a relief, as no way do I want to<br />

At the weekends I am also<br />

known to be a bit of a<br />

daredevil. I go cliff diving! You<br />

wouldn’t think it to look at my<br />

little paws but they can run up<br />

and down those cliffs faster than<br />

any professional climber could. My<br />

rabbit catching skills aren’t quite as<br />

sharp... but I can ride roundabouts remember!<br />

I guess the most original fact about me is that I can<br />

write, my column in <strong>Bounce</strong> has been running for<br />

over two years now and I have a great following so<br />

cheers for that peeps! Uff!<br />
