Beat butter in a large mixing bowl with an electric<br />

mixer on medium to high speed for 30 seconds. Add<br />

the brown sugar, cocoa powder, coffee granules,<br />

baking soda, and cinnamon. Beat until combined,<br />

scraping sides of the bowl occasionally. Beat in egg whites and<br />

yogurt until combined. Beat in as much of the flour as you can<br />

with the mixer. Stir in remaining flour with a wooden spoon.<br />

Place granulated sugar in a small bowl. Drop dough by<br />

heaping teaspoons into sugar and roll into balls. Roll again in<br />

sugar. Place balls 2 inches apart on an ungreased cookie sheet.<br />

Bake at 175 C /350 F for 8 to 10 minutes or until edges are firm.<br />

Transfer cookies to wire racks and cool.<br />

3 tbsp. olive oil, divided<br />

1 1/2 c. chopped onion<br />

3/4 c. each chopped carrot & celery<br />

2 c. each Red Wine & beef broth<br />

1/2 oz. dried porcini mushrooms, rinsed<br />

1 head garlic, top third of bulb removed<br />

2 bay leaves<br />

5 slices thick bacon, chopped<br />

10 oz. pearl onions, blanched & peeled<br />

8 oz. mushrooms (cut to size of<br />

pearl onions)<br />

Heat oven to 300’F. Season beef with salt and pepper.<br />

Heat half the olive oil in Dutch oven. Working in batches, brown beef.<br />

Add remaining oil as needed. Transfer to bowl. Add onion, carrot and celery;<br />

cook until softened. Return beef to pan, add red wine, beef broth, dried mushrooms,<br />

garlic parsley, thyme and bay leaf. Bring to boil. Cover, and bake 2 1/2 to 3 hours.<br />

Meanwhile, cook bacon; set aside and discard all but 1 tbsp. fat.<br />

Add pearl onions; cook 5 minutes and add mushrooms and cook until browned.<br />

Stir in bacon, When ready to serve, stir into stew. Sprinkle in parsley.<br />

• 1 cup mayonnaise<br />

• 3 green onion<br />

• 1 can water<br />

chestnuts chopped<br />

• 1 rounded<br />

sourdough bread<br />

Antipasto Skewer<br />

• Basil leaves<br />

• Salami<br />

• Olives black or green<br />

• Small red tomato<br />

• Cooked small pasta<br />

Combine all ingredients and mix<br />

Cover tightly with plastic wrap, twisting<br />

ends. Refrigerate for several hours.<br />

cookie sheets. Melt butter, add worcestershire<br />

sauce, celery salt, onion salt. Mix well. Pour butter<br />

Bake at 150 C /300 F oven for 35-40 minutes.<br />

Stir every 10-15 minutes.<br />

1/4 cup Sugar<br />

2 tbsp. Baking Powder<br />

1/2 tsp. Salt<br />

3/4 Cup Margarine, chilled<br />

1 cup Milk<br />

1 Egg, beaten<br />

1 tbsp. Sugar<br />

1/2 cup Glazed red cherries, halved<br />

1/2 cup Glazed green cherries, halved<br />

Preheat oven to 305ºF (175ºC). Prepare muffin pans. Combine<br />

flour, sugar, baking powder and salt, cut in margarine until mixture<br />

resembles coarse crumbs.<br />

Beat together 1 egg and milk and stir into dry ingredients/ Turn<br />

dough out onto a floured surface and knead lightly about 9-10<br />

times.<br />

Roll out dough into a rectangle about 1/4” thick. Brush with beaten<br />

eggs, sprinkle with sugar and glazed cherries and roll up like<br />

a jelly roll starting from the long side.<br />

Cut into 1 1/2” slices. Place slices cut side down into muffin<br />

Baby Cheddar Tarts<br />

Cream cheese pastry: Beat margarine and<br />

cream cheese in medium bowl until smooth and<br />

light. Add flour, mix well. Roll into long thin log.<br />

Cut into 24 slices, and press into mini tart pans<br />

to form shells.<br />

Filling: Divide cheddar cheese evenly among<br />

tart shells. Beat egg in small bowl until frothy,<br />

add milk, onion salt and salt, mix well. Spoon<br />

into tart shells over the cheese.<br />

Bake at 175 C /350 F for 20-25 minutes until set.<br />

Makes 24 tarts.<br />

• 1 cup flour<br />

• 1 cup grated medium cheddar<br />

cheese<br />

• 1 egg<br />

• 1/2 cup milk<br />

• 1/4 tsp onion salt<br />

• 14 tsp salt<br />

Combine flour with 1/3 cup of the brown sugar.<br />

Cut in margarine until the mixture resembles<br />

coarse crumbs. Press mixture evenly and firmly<br />

into the bottom of an un-greased 15 x 10 x 3/4 inch<br />

jelly roll pan. Bake at 175 C /350 F for 15 minutes.<br />

Meanwhile beat egg slightly in a large bowl. Stir in the<br />

remaining 1/3 cup of brown sugar and salt. Add nuts,<br />

cherries and chips. Toss mixture lightly to coat. Spoon the<br />

fruit mixture evenly over the baked layer. Press firmly to<br />

adhere layers.<br />

Bake an additional 20 minutes.<br />

Sugar and Spice Pumpkin Pie<br />

BC WILDLIFE PARK<br />

KAMLOOPS<br />

Heat the oven to 325°F. In a large bowl, whisk the pumpkin,<br />

eggs, egg yolk, cream, and brandy. In a small bowl, mix the<br />

brown sugar, ginger, cinnamon, salt, nutmeg, pepper, and<br />

cloves. Whisk the sugar mixture into the pumpkin mixture.<br />

Pour the filling into thawed pie crust. Bake until the pie is set around<br />

the outside but still slightly wet and jiggly in the center, about 1<br />

hour. The filling will continue to set as it cools. Let the pie cool<br />

completely on a wire rack and then refrigerate for at least 2 hours<br />

and up to 2 days before serving.<br />

Make the cream just before serving. Whip the cream with an electric<br />

mixer on medium-high speed until it forms very soft peaks, about 2<br />

minutes. Add the sugar, ginger, and brandy and continue whipping<br />

until it forms medium-firm peaks, about 30 seconds longer. Dollop<br />

in the center of the pie, leaving a band of filling visible around the<br />

edge of the pie, or dollop<br />

on individual servings.<br />

Whisk egg yolks & zest together for about 2<br />

minutes, whisk in condensed milk till smooth<br />

then add lime juice and mix till smooth. Set<br />

aside at room temperature for 30 minutes.<br />

160 C /325 F for 15-18 minutes.<br />

Mix ingredients like pie crust and add 1<br />

beaten egg and 1/4 cup milk. Roll to 1/4<br />

inch thick and put into tart tins and fill<br />

with raspberry jam (about 1/2 tsp.) Notemedium-small<br />

tart tins are best, as pastry puffs up.<br />

Bake at 350 F until lightly brown. This pastry is<br />

very soft to work with; the best part is that is<br />

tastes like shortbread!<br />

Brandied Chiffon Mince Pie<br />

Combine 1/2 cup brandy (L.C.B.), 1<br />

cup mincemeat, 1 envelope unflavored<br />

gelatine and 1 tbs of lemon juice in<br />

small pan. Let stand for a few minutes.<br />

Heat slowly, stirring, until gelatine completely<br />

dissolved. Set aside.<br />

Combine 2 tbl of sugar, 1/4 tsp of salt in top of<br />

double boiler. Place over hot water & cook, stirring<br />

constantly, until slightly thickened, 5-8 min.<br />

Remove from heat & stir in mincemeat mixture.<br />

Cool until mixture begins to thicken and jell.<br />

Beat 3 egg whites until stiff. Beat in 2 tbp of sugar<br />

gradually. With same beaters, beat 1 cup whipping<br />

cream until stiff. Fold egg whites, cream & 1 cup of<br />

chopped candied cherries into filling. Chill a few<br />

minutes until mixture mounds on a spoon. Turn<br />

into baked 9” pastry shell and chill till firm. About<br />

5 hours.<br />

Serve with Brandy: Combine 1/3 cup brandy, 1/3<br />

cup orange juice, 1/2 cup water, 3 tbl of sugar, 1<br />

1/2 tbs of cornstarch, 1/2 tsp of grated orange peel<br />

and dash salt. Simmer stirring until mixture boils<br />

and thickens. Remove from heat and blend in 1 tsp<br />

of lemon juice. Cool thoroughly before serving.<br />

Sauce should be made same day it is served.<br />

Serves 8 people.<br />
