Location<br />
An Ode to light<br />
The Hotel <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong> is without<br />
doubt one of Europe’s most exquisite<br />
properties. Situated at the furthest tip of <strong>Cap</strong><br />
d’Antibes in a park of 22.5 acres, the superb<br />
Napoleon III building is a legendary haven .<br />
This temple form the 18 th century is located<br />
between Cannes and Nice, the old fortified<br />
town of Antibes and the lively<br />
neighbourhood of Juan-Les-Pins,<br />
Its pinewood with its fragrance and a<br />
romantic rose-garden flanks a majestic alley<br />
leading to the Pavilion <strong>Eden</strong>-<strong>Roc</strong>, built on a<br />
terrace above the sea: its spectacular infinity<br />
pool is, in itself, a living record of indelible<br />

d'Azur, only 20 minutes from the Nice Côte<br />

Memories<br />
A legendary hotel<br />
Crowned heads, politicians, artists,<br />
renowned intellectuals, businessmen, movie<br />
stars… In a century-and-a-half, the <strong>Hôtel</strong> <strong>du</strong><br />
<strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong> became a legendary refuge<br />
whose history intermingles with that of<br />
many celebrities from all four corners of the<br />
world.<br />
Built in 1870 by the founder of Le Figaro,<br />
Auguste de Villemessant, the former « Villa<br />
Soleil » as it was then called, was initially<br />
intended to play host to writers in search of<br />
inspiration. But the project was soon<br />
abandoned, and the villa became a luxury<br />
hotel.<br />
Years went by shrouded in the mists of a<br />
motley clientele, until the inauguration of<br />
the Paris-Marseille-Menton railway in<br />
1869 and the appearance of luxury trains<br />
such as the Saint-Petersbourg-Vienna-<br />
Cannes-Nice, which led to the emergence of<br />
a « Côte d'Azur » described by Elysée Reclus<br />
as « the future residence of all of Europe ».<br />
However, it was only in 1887, with the<br />
arrival of Antoine Sella, a highly imaginative<br />
hotelier from Piedmont, that the elegant<br />
building in pure Napoleon III style was first<br />
baptised « Hotel <strong>du</strong> <strong>Cap</strong> ».<br />
Brimming with innovative ideas, Mr Sella<br />
decided to re launch the establishment<br />
playing the ace of summer holidays. He was<br />
a man of vision, Antoine Sella. And since<br />
then, the Hotel <strong>du</strong> <strong>Cap</strong> has continued to<br />
shine...<br />
In 1914, a sea-water pool was hollowed<br />
out of the basalt rock, the <strong>Eden</strong> <strong>Roc</strong><br />
pavilion was built, followed by the<br />
famous « cabanas » facing the<br />
Mediterranean sea.<br />
The ‘fifties and ’sixties literally bore<br />
witness to the « landing » of the<br />
world’s elite – often by sea – in a very<br />
eclectic parade from the Kennedy<br />
familly to the Greek shipbuilder<br />
Niarkos, the Duke and Duchess of<br />
Windsor, Marlene Dietrich,<br />
Mr Hennessy, Eddie Constantine, Scott<br />
Fitzgerald arm-in-arm with his<br />
beautiful Zelda, Ernest Hemingway<br />
and even Nobel Prize winner George<br />
Bernard Shaw, all seeking their share<br />
of the dream : luxury in all simplicity.<br />
Succeeding his father, André Sella held<br />
the flag up high until 1970, before<br />
handing it over to Jean-Claude<br />
Irondelle who after a career of 50<br />
years, entrusted this precious « rock of<br />
paradise » in 2005 to Philippe Perd,<br />
today Managing Director of the Hotel<br />
<strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong> and the Château<br />
Saint-Martin & Spa in Vence.<br />

Saga<br />
The Spirit of the Oetker Collection Masterpiece Hotels<br />
In 1891, a young chemist from Bielefeld in<br />
Germany, Doctor August Oetker, invented<br />
the chemical yeast...<br />
The immediate success of this self-raising<br />
powder gave birth to a genuine in<strong>du</strong>stry<br />
which gra<strong>du</strong>ally spread abroad and, thanks<br />
to important innovations, challenged the<br />
European food in<strong>du</strong>stry.<br />
Four generations later, the original small<br />
home in<strong>du</strong>stry had become an influential<br />
worldwide group with diverse sectors of<br />
activity, naturally including foodstuffs but<br />
also wines and spirits, maritime freight<br />
and… luxury hotels.<br />
The Oetker family entered this last field in<br />
1941 with the acquisition of its first<br />
establishment: Brenner’s Park <strong>Hôtel</strong> & Spa in<br />
Baden-Baden.<br />
Then, in 1964, Maja and Rudolf Oetker<br />
fall for the « Fitzgeraldian » charm of<br />
the Hotel <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong> in Antibes:<br />
« its impeccable linen, impressive<br />
wine-cellar and the sparkling old<br />
kitchen with its copper saucepans »,<br />
said Maja Oetker in François Simon’s<br />
book (“Hotel <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong>”,<br />
Editions Assouline).<br />
They had to wait five years before they<br />
could acquire and adapt this legendary<br />
hotel, already frequented by the elite,<br />
to the necessities of modern comfort.<br />
1978 : They also took over the Hotel Le<br />
Bristol in Paris, as well as the Park<br />
Hotel Vitznau in Switzerland, in 1980,<br />
that has been sold at the beginning of<br />
the year 2009 to the group Püringer,<br />
and the Château Saint-Martin in 1994,<br />
now known as the Château Saint-<br />
Martin & Spa.<br />
The soul of each hotel, affectionately<br />
preserved, has thus pro<strong>du</strong>ced a<br />
« collection » of prestigious properties<br />
of which the Hotel <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong>,<br />
an eternal elder brother, shines as their<br />
greatest pride.<br />

Gastronomy<br />
A sublime art of living<br />
From the garden to the table, from the pool to the bar, the brilliant trilogy at the Hotel <strong>du</strong><br />
<strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong> – colours, scents, flavours – enchants a loyal clientele used to regularity, to<br />
the genuine smiles of a top-notch staff and tiny details which make all the difference...<br />
In tandem with talented pastry chef Lilian Bonnefoi since 1995, elected best pastry chef of<br />
the Côte d’Azur in January 2008, Arnaud Poëtte manages the kitchens of this palace of the<br />
French Riviera.<br />
Restaurant <strong>Eden</strong>-<strong>Roc</strong><br />
In this gastronomic restaurant between sky and sea, surveying<br />
the Mediterranean and the Lérins Islands, guests appreciate<br />
essential specialities in a shimmering atmosphere : fillets of red<br />
mullet fried “à l’Antiboise” or wild seabass “façon <strong>Eden</strong>-<strong>Roc</strong>”<br />
with basil and a mousseline of fennel.<br />
Grill <strong>Eden</strong>-<strong>Roc</strong><br />
Offering a bar-lounge atmosphere, the Grill was entirely renovated<br />
in 2007. With changing lights that reflect the colours of sunsets and<br />
the pool, it offers a menu featuring grill and a Sushi-Bar.<br />
Piano-Bar « La Rotonde »<br />
Overlooking the Pavillon <strong>Eden</strong>-<strong>Roc</strong> with its « trompe l’œil »<br />
decors, the famous Rotonde, from now on a piano-bar, proposes<br />
cocktails in a warm and elegant ambiance.<br />
Bar « Le Bellini »<br />
With its Corinthian stone columns and sculpted coats-of-arms, this is<br />
« THE » meeting-point, a Hollywood-style stage for stolen hours on<br />
everyone’s sche<strong>du</strong>le.<br />

Antibes inspire Arnaud Poëtte to create a<br />
cheerful and elaborate cuisine based on<br />
absolute respect of natural ingredients, a<br />
deep sense of basics and spontaneous<br />
creativity .<br />
With his generous smile and the<br />
personality of a demanding « pater<br />
familias » who supervises a kitchen of 45<br />
people as if they were family, Arnaud<br />
Poëtte is one of those outstanding chefs<br />

Born in Soissons, in a family from Picardy ,<br />
he began his career by winning an<br />
encouraging reward – France’s Best<br />
Apprentice Cook, in 1977 –<br />
From 1977 to 1982, he alternated his first<br />
« seasons » between Loire-Atlantique and<br />
Haute Savoie -<strong>Hôtel</strong> Masson, Le Croisic;<br />
<strong>Hôtel</strong> La Montagne in La Clusaz, <strong>Hôtel</strong> Le<br />
Portetta in Courchevel - first as assistant<br />
and then as first assistant sauce-cook at<br />
the <strong>Hôtel</strong> Hermitage in La Baule.<br />

Summer 1983 , he turned up in front of the<br />
majestic gate of the <strong>Hôtel</strong> <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<br />
<strong>Roc</strong>.<br />
Arnaud Poëtte then struck anchor on the<br />
« <strong>Roc</strong>k of Paradise », returning every<br />
summer to assume different posts and<br />
accepting the most incredible culinary<br />
challenges, untill he took the toque in 1992,<br />
becoming chef des cuisines at the <strong>Hôtel</strong> <strong>du</strong><br />
<strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong>.<br />
Embarking on a great human adventure,<br />
this long-haul captain of the kitchens has<br />
delighted the palates of the world’s<br />
celebrities for the past 27 years.<br />
Publication of a recipe book<br />
While fondly juggling between the habits<br />
and sometimes unexpected desires of a<br />
demanding elite, Arnaud Poëtte has<br />
become the chef who makes everything<br />
possible. You can discover his recipes<br />
of the stars in a book published by<br />

Pastry Chef, Lilian Bonnefoi<br />
At the age of 9, Lilian Bonnefoi was<br />
already helping his uncle to embellish the<br />
tables of the Troisgros Brothers !<br />
Born in Roanne, he grew up in the cradle<br />
of high gastronomy. Often scolded for<br />
being an « enfant terrible » not too keen to<br />
get down to his studies, he found his<br />
vocation as a teenager by opting for a CAP<br />
qualification in pastry-making that showed<br />
him to be dedicated, creative and<br />
determined.<br />
After pocketing his « brevet de maîtrise »,<br />
he joined the Troisgros kitchen brigade in<br />
1990 as “chef de partie”, then “sous-chef<br />
pâtissier”, up until 1992.<br />
This unique experience opened his eyes to<br />
the outside world – he travelled as far as<br />
the United States – and served as a<br />
springboard enabling him to become<br />
manager of the pastry-making service at<br />
the prestigious <strong>Hôtel</strong> Guanahany at Saint-<br />
Barthélémy.<br />
1996: his meeting with Arnaud Poëtte, chef<br />
at the <strong>Hôtel</strong> <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong>, marked a<br />
turning-point in his career and the start of<br />
a relationship based on real complicity.<br />
The two men exchange ideas, combine<br />
their talents, share fundamental values and<br />
accompany each other in a mission in<br />
search of excellence which is constantly<br />
reviewed.<br />
Consecrated at the age of 38 as Best Pastry<br />
Chef on the Côte d’Azur, in January 2008,<br />
Lilian Bonnefoi has a gift for always<br />
pushing back established limits to<br />
sublimate sugar like a sculptor, combine<br />
matter and colours like a poet, invent new<br />
accords and awaken gustatory souvenirs<br />
from our childhood days.<br />
Active member of the APRECA –<br />
« Association des Pâtissiers de Restaurants<br />
de la Côte d’Azur » –, Liliane Bonnefoi<br />
promotes the art of pastry-making in its<br />
entirety through events, encounters,<br />
courses abroad, inspired by wizards such<br />
as Gaston Lenôtre, Pierre Hermé or, closer<br />
to his style, Christophe Michalak, head<br />
pastry chef at the Plaza Athénée (3<br />
Michelin stars) and Stéphane Klein,<br />
unrivalled master in the art of sugar, for<br />
whom he wrote the preface for the book<br />
« Voyage en sucre d’art ».<br />
Publication of a recipe book<br />
Always ready to shate his « secrets », he<br />
has published some of his best recipes in<br />
the book « Cuisine and cravings of the<br />
Stars » (Editions Assouline).<br />

After one year in his own chocolate<br />
factory, Lilian Bonnefoi and his entire<br />
brigade made up of 9 confectioners will<br />
ensure for this 2011 season the<br />
“homemade” pro<strong>du</strong>ction of chocolates of<br />
the Hotel <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong>.<br />
Providing a pro<strong>du</strong>ction of 1,5 ton of<br />
candies coated chocolates, 800kg of brut<br />
chocolate for both desserts and meals<br />
creation, 2011 already promises to be a<br />
year strong on emotions !<br />
New creations will be added to the<br />
delicious chocolate and fruits bar, caramel,<br />
hazelnuts… and the different delights of<br />
our menu card.<br />
Created for both restaurants and in-roomservice<br />
prestigious boxes of chocolate are<br />
realized according to the desires of our<br />
clients and presented at the <strong>Eden</strong> <strong>Roc</strong><br />
Pavilion on sale…<br />
Invited to visit the chocolate and pastry<br />
factory, this will be the occasion for the<br />
lovers of chocolate to discover the wrapper<br />
with our chef, Lilian Bonnefoi.<br />

Head sommelier, Xavier Dinet<br />
Jealously watching over the cellar of the gourmet restaurant « <strong>Eden</strong>-<strong>Roc</strong> » since 2006, there<br />
are some of those destinies that are written in the story of a man from his childhood…<br />
Only aged of 6 years old, it’s in following the footsteps of his brother and sister, that Xavier<br />
Dinet learned the various positions in restoration and developped over the years an<br />
endless passion for oenology.<br />
Starting his career at 15 years old as an « apprenti de salle » at the Château de Beaulieu in<br />
Joué-les-Tours, he climbed the ladder one by one to become at 18 « commis sommelier » in<br />
the Relais & Châteaux of « La Côte Saint-Jacques ».<br />
Called at 21 to become the « sommelier » of the highly reputed gourmet restaurant of the<br />
<strong>Hôtel</strong> Le Bristol in Paris, he will however leave, 4 years after, the french capital to join the<br />
French Riviera and the <strong>Hôtel</strong> <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong>… finally accessing to the coveted position<br />
of « chef sommelier » in the gourmet restaurant « <strong>Eden</strong>-<strong>Roc</strong> ».<br />
With a card counting more than 585 references, the favorites of this young chef sommelier<br />
speak for fine, elegant and fruity wines like the Saint-Romain 2006 – Domaine Philippe<br />
Colin Chardonnay, the Côte de Provence La Londe – Domaine Château les Valentine 2008<br />
or the Côte de Provence Columelle 2004 – Domaine Richeaume.<br />

Background of the Managing Director,<br />
Mr. Philippe Perd<br />
Born in Marseille in 1965, Philippe Perd<br />
began his career in the fine town of Orange<br />
as a Commis in the kitchens of the<br />
restaurant « Le Forum », already honing<br />
his keen curiosity and real passion for<br />
French gastronomy.He then obtained a<br />
Diploma in Management from the I.U.T. in<br />
Montpellier<br />
In 1989, he joined the Savoy group,<br />
embarking on his training in reception<br />
management at the Connaught Hotel in<br />
London. He then worked in the Savoy<br />
Hotel’s accommodation department and<br />
was promoted to the post of Room<br />
Division Manager in 1995.Three years<br />
later, Philippe Perd accepted an<br />
appointment as Assistant Manager at the<br />
Hotel de Crillon in Paris. The following<br />
year, he was promoted to Manager.<br />
Philippe PERD left the Hotel de Crillon in<br />
May 2001 to run the Château Saint-Martin<br />
& Spa on the hills above Vence as General<br />
Manager, until October, 2005.<br />
He then took over management of the<br />
unique and prestigious Hotel <strong>du</strong> <strong>Cap</strong>-<br />
<strong>Eden</strong>-<strong>Roc</strong> in Antibes.<br />
The challenge involved modernising the<br />
premises without detracting from the<br />
myth, inspiring creativity on the part of the<br />
teams and awakening their sense of<br />
responsibility, without overthrowing the<br />
habits of an extremely loyal clientele.<br />
Owned by the Oetker family, the most<br />
discreet of the Riviera’s palace hotels then<br />
saw its areas renovated always respecting<br />
the authenticity and past.<br />
July 2007 , the Oetker Group entrusted<br />
him jointly, and for the second time, with<br />
the management of the Château Saint-<br />
Martin & Spa with the aim of developing<br />
a real synergy between these two<br />
flagships of the hotel in<strong>du</strong>stry. Philippe<br />
Perd thus became managing director of the<br />
the Hotel <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong> in Antibes and<br />
the Château Saint-Martin & Spa in Vence.<br />
November 2009 , Philippe Perd has been<br />
gra<strong>du</strong>ated from Harvard Business School<br />
with the Advanced Management Program .<br />
October 2011, Philippe Perd has been<br />
awarded one of France’s highest medals<br />
for services to tourism ,the Bronze Medal,<br />
in recognition of the quality of service .<br />

Background of the Resident Manager,<br />
Mr. Laurent Van Hoegaerden<br />
He is one of those people one doesn’t<br />
notice immediately: they, on the other<br />
hand, see absolutely everything…<br />
His attention to detail, his obsession with<br />
impeccable service drive him discreetly<br />
pacing behind the scenes for more than 20<br />
years at the top end of the hotel sector.<br />
Born in 1960 in Picardy, Laurent Van<br />
Hoegaerden entered the restaurant trade at<br />
the age of 15 by doing summer jobs that<br />
took him to the “Lycée Technique Hotelier<br />
de Paris Plage” (Le Touquet).<br />
Three years later, he managed to get his<br />
first experience in Cannes (<strong>Hôtel</strong> Mont<br />
Fleuri), discovered the festival atmosphere<br />
of the Croisette and did successive<br />
apprenticeships in the kitchens as:<br />
“commis”, “demi-chef”…<br />
In 1981, he returned to Paris for the<br />
opening of the Nova Park Elysées where<br />
he was “maître d’hôtel. He gained<br />
invaluable professional experience which<br />
launched him to the position of restaurant<br />
manager at the <strong>Hôtel</strong> <strong>du</strong> Louvre (Groupe<br />
Concorde) from 1985 to 1987.<br />
Over the next five years, he was in charge<br />
to supervise the restaurant two sister<br />
hotels – the Hotel Balzac and Hotel De<br />
Vigny –<br />
From 1992 to 1993, a detour through<br />
Florida and Quebec took him far from<br />
France, the time it took to launch a new<br />
Italian chain of gastronomic restaurants .<br />
Returned from the far side of the<br />
Atlantic, he enters into the prestigious<br />
circuit of the Hotel Crillon in Paris.<br />
First restaurant manager with chef<br />
Christian Constant, he became Food &<br />
beverage director six years later, then<br />
resident manager… He thus worked<br />
alongside chefs Dominique Bouchet and<br />
Jean François Piège until Philippe Perd,<br />
newly appointed general director of the<br />
Hotel <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong>, called on him to<br />
join the team on the shores of <strong>Cap</strong><br />
d’Antibes.<br />
Responsible since 2006 for the food and<br />
beverage at the Hotel <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong>,<br />
Laurent Van Hoegaerden was promoted<br />
to the position of resident manager at<br />
the Hotel <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong> last<br />
September 2008.<br />

Successive renovations…<br />
Since the arrival of Philippe Perd, the <strong>Hôtel</strong> <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<strong>Roc</strong> has been treated to successive<br />
renovations every winter. With hotel premises comprised of the main Napoleon III building, the<br />
Pavilion <strong>Eden</strong> <strong>Roc</strong> and the building “Les Deux Fontaines”, the establishment today offers 118<br />

flat screens and Wi-Fi systems, as well as the private villas, which offer comfort on a par with the<br />
expectations of a by a top-notch international clientele. The past two years have also been<br />
devoted to renovation of the kitchens, entrusted to Serge Hairabétian, designer of « haute<br />
couture » kitchens for luxury palaces.<br />
Winter 2008-2009, the hotel is focusing on the well-being of the staff with the construction of<br />
new accommodation and complete refurbishment of the collective restaurant. As for clients, they<br />
will enjoy the privilege of discovering the restructuring of the upper beach, pool and fully<br />

Winter 2009-2010 was undertaken the construction of the new villa of the Hotel <strong>du</strong> <strong>Cap</strong>-<strong>Eden</strong>-<br />
<strong>Roc</strong>, the Villa Eleana.<br />
Combining the services of a luxury hotel to the advantages of a private property this sumptuous<br />
house, built on two floors, having its own pool, 3 bedrooms and bathrooms, a kitchen, a living<br />
room, is one of the most beautiful project created in 2010.<br />
Winter 2010-2011<br />
The Hotel <strong>du</strong> <strong>Cap</strong>, Napoleon III style property built in 1871 and counting 70 rooms, suites and<br />
apartments is being entirely renovated to offer more comfort to the clients…<br />
An ambitious project of 20 million Euros realized to bring up to date the hotel while preserving<br />
its authenticity. Two new suites and five additional deluxe rooms offering a steam bath will be<br />
created and the total number of rooms will be equipped with LED TV screens and I-Pod readers.<br />

Installations at the <strong>Eden</strong>-<strong>Roc</strong> Pavilion<br />
<strong>Eden</strong>-<strong>Roc</strong>, a marine paradise<br />
Built in 1914, the <strong>Eden</strong>-<strong>Roc</strong> pavilion was<br />
originally the tea-room of the <strong>Hôtel</strong> <strong>du</strong><br />
<strong>Cap</strong>, much favoured by kings, maharajahs,<br />
businessmen and artists living on <strong>Cap</strong><br />
d’Antibes. Anatole France, winner of the<br />
Nobel Prize for literature in 1921, was one<br />
of its most fervent and regular customers.<br />
Following the creation of the pool and the<br />
installation of bungalows, rapidly baptised<br />
« Cabanes », <strong>Eden</strong> <strong>Roc</strong> became the hotel’s<br />
restaurant.<br />
The eighties saw the creation of Junior<br />
Suites, together with the creation of a<br />
sumptuous suite directly overlooking the<br />
rocks of <strong>Cap</strong> d’Antibes. Madonna, Sharon<br />
Stone, Barbra Streisand, Robert Redford,<br />
Bill Cosby, Steven Spielberg and many<br />
others have been the prestigious guests of<br />
this unique suite.<br />

The Junior Suites, each offering a surface<br />
