Chers Amis,<br />

It is entirely fitting and<br />

proper that the <strong>Hawaii</strong>/<br />

<strong>Pacific</strong> <strong>Region</strong>al<br />

Assemblage take place on<br />

the Big Island of <strong>Hawaii</strong>.<br />

The Big Island, the<br />

youngest of the <strong>Hawaii</strong>an<br />

Islands, is constantly<br />

growing and being enriched,<br />

as molten lava erupts <strong>from</strong><br />

Mauna Kea and surges to<br />

the sea. So too, our beloved<br />

Chaîne des Rôtisseurs has, in recent memory,<br />

undergone an “eruption” of sort. Much to our relief, the<br />

eruptions have<br />

stopped, and<br />

calm has<br />

returned. I<br />

believe that, just<br />

as the Big Island<br />

of <strong>Hawaii</strong> is<br />

flourishing, so<br />

too, the Chaîne<br />

here in the<br />

United States,<br />

under the<br />

inspired<br />

leadership of<br />

<strong>Bailli</strong> Délégué<br />

Joe Caruso, is<br />

thriving.<br />

One of the<br />

many benefits<br />

of living<br />

thousands of<br />

miles away <strong>from</strong> the nearest land mass is that we, here<br />

in <strong>Hawaii</strong>, tend to chart our own steady course. We do<br />

not get swept away with every wind promising change<br />

or personal advancement. We just go about our<br />

business, and do our very best in all things that we<br />

undertake.<br />

I am pleased and honored to be your <strong>Bailli</strong><br />

<strong>Provincial</strong>. I look forward to the year ahead, which I am<br />

confident will be one that we will all look back upon<br />

with a great sense of accomplishment and satisfaction.<br />

There is not doubt in my mind that we will continue to<br />

lead the way nationally.<br />

Here is more about <strong>Bailli</strong> <strong>Provincial</strong> <strong>Laurence</strong> <strong>Vogel</strong> as<br />

<strong>Bailli</strong> <strong>Provincial</strong> Honoraire Robert Lee, Jr. welcomes<br />

him into his new office.<br />

I bid you adieu and fond aloha as I am now<br />

semi-retired in my profession and have recommended<br />

Chambellan <strong>Provincial</strong><br />

<strong>Laurence</strong> <strong>Vogel</strong> to be<br />

the next <strong>Bailli</strong><br />

<strong>Provincial</strong>. Larry is<br />

the President of Y<br />

Hata Co in Honolulu<br />

that distributes food<br />

products and<br />

equipment, serving<br />

many of the hotels<br />

and restaurants in the<br />

<strong>Pacific</strong> area and<br />

likewise the military.<br />

He has been a great<br />

help to the Honolulu<br />

chapter, and six of<br />

his staff are Chaîne<br />

members. Y Hata Co<br />

has given<br />

scholarships to<br />

students and the<br />

Chaîne Foundation. He was honored by the Queen of<br />

Denmark and was Knighted by her because of his<br />

service to Denmark and <strong>Hawaii</strong>.<br />

Our <strong>Hawaii</strong>/<strong>Pacific</strong> region is<br />

flourishing. We have all enjoyed<br />

the delicious food, delectable<br />

wine, and delightful<br />

camaraderie within our own<br />

bailliages this past year. Here in<br />

this newsletter you have an<br />

opportunity to learn what<br />

various bailliages have been doing, see what is up<br />

and coming, and hear <strong>from</strong> our regional officers.<br />

Looking ahead, you will have the<br />

opportunity for a truly grand Chaîne experience at<br />

the <strong>Region</strong>al Assemblage, orchestrated by Big<br />

Island <strong>Bailli</strong> Wilhelm Pirngruber and the meeting<br />

Chair, <strong>Bailli</strong> <strong>Provincial</strong> Honoraire Fred Honda at<br />

the Hilton Waikoloa September 21-23. You should<br />

already have your invitation that describes not only<br />

the spectacular dinners, but also some adventurous<br />

excursions. In addition, a number of our national<br />

officers will be attending. They look forward to<br />

meeting as many of you as possible.<br />

The recent months have brought some<br />

transitions in Chaîne leadership. Most notably,<br />

<strong>Bailli</strong> <strong>Provincial</strong> Bob Lee stepped down, and Larry<br />

<strong>Vogel</strong> is our new <strong>Bailli</strong> <strong>Provincial</strong>. We cannot<br />

thank Bob Lee enough for all the tireless work he<br />

has devoted to the Chaîne over many years, and we<br />

know that with <strong>Bailli</strong> <strong>Provincial</strong> Larry <strong>Vogel</strong>, we<br />

look to a continuing robust future for our region.<br />

We also owe many thanks to Echanson <strong>Provincial</strong><br />

John Doty, who has provided such memorable<br />

Mondiale events these past few years. And we are<br />

pleased to welcome David Gochros as our<br />

incoming Echanson <strong>Provincial</strong>. Culinaire<br />

<strong>Provincial</strong>e Kusuma Cooray continues to do a<br />

masterful job with the regional Jeune Commis<br />

competition, among other roles. Also, we are<br />

honored that our own Fred Honda is Chairman of<br />

the National Conseil d’Honneur Committee.<br />

Transitions, Treasured Memories, and Traditions<br />

Judith Kellogg, Chargée de Presse <strong>Provincial</strong>e<br />

Our local chapters continue to thrive. <strong>Bailli</strong><br />

Mitch Kysar has been leading the Maui chapter for<br />

a number of years with his lively and colorful style,<br />

but has found a worthy successor in Chris Speere,<br />

Professor of Culinary Arts at Maui Community<br />

College. Fred Hellekes has led the Honolulu<br />

chapter with his magnificent events for a number of<br />

years, and has been elevated to Chambellan<br />

<strong>Provincial</strong>, so will continue to contribute to the<br />

Chaîne with his usual creativity and flair. The<br />

Honolulu chapter is in very good hands with Dr.<br />

Garrett Saikley as new <strong>Bailli</strong>. Garrett’s<br />

sophisticated charm and superlative taste will make<br />

the Honolulu chapter proud. <strong>Bailli</strong> Mark<br />

Monoscalco continues to lead the Kauai/Oahu<br />

chapter admirably and energetically. Members<br />

appreciate the good fun, vision, and vitality he<br />

brings to the chapter. He has also been honored by<br />

being appointed Chairman of the National Chaîne<br />

Website Committee. And of course, the Big Island<br />

is led by talented Wilhelm Pirngruber. As Food and<br />

Beverage Director of the Hilton Waikoloa, he will<br />

have a chance to showcase both his professional<br />

expertise and his fine Chaîne leadership at<br />

September’s Assemblage. Don’t miss this event!<br />

Our vibrant Chargée de Presse <strong>Provincial</strong>e<br />

Honoraire Julie Honda has contributed two special<br />

features. First, Julie continues her delightful<br />

tradition of telling us about a member who is<br />

remarkable for some passion beyond work, food,<br />

and wine. In this case, our Culinaire <strong>Provincial</strong>e<br />

Kusuma Cooray, whom we know as a star in the<br />

culinary world, is also a rising star on the dance<br />

floor. And then, move over Ben Wood! “Julie’s<br />

Corner” is back, with all kinds of enticing insiders’<br />

tidbits about our members. She also offers some of<br />

the highlights of the Chicago Assemblage in July.<br />

The <strong>Hawaii</strong>/<strong>Pacific</strong> region was well represented!<br />

So, enjoy learning about all the goings-on in our<br />

very “happening” region!!<br />

was enthusiastically greeted by<br />

the Board of Directors at the<br />

Chicago meeting on June 30 th . I<br />

leave the office in capable hands<br />

as he too has risen in ranks <strong>from</strong><br />

Chevalier to his present office.<br />

Chambellan <strong>Provincial</strong> Fred<br />

Hellekes and Honolulu <strong>Bailli</strong>, Dr.<br />

Garrett Saikley were also<br />

inducted at the meeting with a bit<br />

of <strong>Hawaii</strong>ana. Dames Anna Lise<br />

<strong>Vogel</strong> and Bertie Lee presented<br />

maile leis to our newly inducted<br />

<strong>Provincial</strong> Officers.<br />

Our <strong>Hawaii</strong>/<strong>Pacific</strong> Island<br />

<strong>Region</strong> remains a separate<br />

<strong>Region</strong>, as with the Atlantic<br />

Caribbean <strong>Region</strong>s, and will not<br />

be assimilated into the Far West<br />

and South West <strong>Region</strong>s<br />

respectively. <strong>Hawaii</strong> and the<br />

Caribbean islands are culturally<br />

and ethnically unique, as well as<br />

being gastronomically distinctive<br />

with the various fusion cuisine<br />

and foods, besides being so<br />

distant <strong>from</strong> the mainland.<br />

<strong>Bailli</strong> Délégué Joe Caruso<br />

will not be a candidate for<br />

reelection in March 2008.<br />

Chancelier National George<br />

Brown will be in the running,<br />

with Gastronome Editor Sandi<br />

Miller as a candidate for<br />

Chancelier. Conseiller<br />

Gastronomique National Roger<br />

Tracy will also be a candidate for<br />

<strong>Bailli</strong> Délégué.<br />

We are awaiting the<br />

decision of the International<br />

Committee meeting in Germany<br />

on September 6 th as to whether<br />

Honolulu shall be the host city<br />

for the International Jeune<br />

Commis Competition in October,<br />

2009, as with the International<br />

Sommelier Competition. If<br />

Honolulu is selected, the<br />

National Council Meeting will<br />

also be held at the same time in<br />

Honolulu. Conseiller Culinaire<br />

National John Nihoff hopes that<br />

Honolulu will be selected as the<br />

host city.<br />

I look back with<br />

satisfaction at what has taken<br />

place over the past few years<br />

since I assumed Chaîne<br />

leadership, first as Honolulu<br />

<strong>Bailli</strong>, then Chambellan<br />

<strong>Provincial</strong>, and finally as <strong>Hawaii</strong>/<br />

<strong>Pacific</strong> <strong>Bailli</strong> <strong>Provincial</strong>.<br />

It has been a pleasure for<br />

me to be a member of the Chaîne<br />

for the past 30 years, having met<br />

so many friends here and at<br />

meetings on the mainland.<br />

I bid you a fond aloha nui<br />

loa and mahalo, and to our<br />

<strong>Provincial</strong> officers…<br />

Contributions<br />

A successful National<br />

Council Meeting was held<br />

here in June 2000 due to the<br />

hard work of our committee<br />

members.<br />

June 2001, the National<br />

Jeune Commis Competition<br />

was held in Honolulu as was<br />

the pilot study for a National<br />

Jeune Sommelier<br />

Competition. The first was<br />

then held in Las Vegas in<br />

2002, where our candidate,<br />

Roberto Viernes, won a<br />

silver medal.<br />

The <strong>Hawaii</strong>/<strong>Pacific</strong><br />

<strong>Region</strong> has 15 Fondateurs of<br />

our sub-organization, the<br />

Brillat Savarin: 13 <strong>from</strong> the<br />

Honolulu Chapter and 2<br />

<strong>from</strong> the Kauai/Oahu<br />

Chapter.<br />

There are 13 Honnoreur<br />

Members in the U.S.<br />

<strong>Bailli</strong>age, and the Honolulu<br />

chapter has 4 of them.<br />

as one of the 24<br />

International Chefs <strong>from</strong> 24<br />

countries to be featured in<br />

the international Chaîne<br />

The membership in the<br />

<strong>Hawaii</strong>/<strong>Pacific</strong> Islands<br />

region has increased in<br />

number, and has included<br />

many more Dames de la<br />

Chaîne.<br />

FRED HELLEKES, CHAMBELAN PROVINCIAL<br />

The Grand Chapître and National Council Meeting may be over,<br />

but the memories and excitement of those absolutely fabulous events in<br />

Chicago inspired us all and have given us great energy to plan our future<br />

events and tackle any challenge that may lay ahead.<br />

I am delighted and honored to be a part of a great team of Officers that<br />

under the leadership of our <strong>Bailli</strong> <strong>Provincial</strong> <strong>Laurence</strong> <strong>Vogel</strong> will guide<br />

the affairs of our organization for the next few years.<br />

As I look into the future, the spirit of the Chaîne will inspire our<br />

planning, whether it’s an informal Dinner Amical or a Formal Black Tie<br />

eight course dinner with white glove service. The concentration will be<br />

on exceptional food, well-paired wines and impeccable service. The<br />

planning and execution of a Chaîne event involves an extraordinary effort on the part of your Officers,<br />

as well as the Host establishment.<br />

I invite every member to show your support and appreciation for their efforts by attending future<br />

functions whenever possible.<br />

FRED HONDA, BAILLI PROVINCIAL HONORAIRE AND CHAIR, CONSEIL D’HONNEUR<br />

The Conseil d’Honneur<br />

Committee was established in<br />

2003 at the National Meeting in<br />

Philadelphia, with Jack Stewman<br />

appointed as its first Chairman.<br />

Two years ago, <strong>Bailli</strong> Délégué<br />

Joseph Caruso appointed me to<br />

chair this committee.<br />

The purpose of this<br />

committee is to provide an entity<br />

within the <strong>Bailli</strong>age des Etats-<br />

Unis that would effectively<br />

encourage the ongoing<br />

participation of those members<br />

who have served the Chaîne with<br />

distinction as senior officers, and<br />

who no longer hold active office.<br />

The Committee<br />

recognizes eligible confréres who<br />

have rendered significant service<br />

to the Chaîne, understanding that<br />

it is well served by the sharing of<br />

past experiences. It serves to<br />

make available to the Board of<br />

Directors a cadre of talented<br />

individuals to draw upon to<br />

represent the Chaîne in<br />

ceremonial situations, as well as<br />

to serve in an advisory capacity<br />

of the national Council. Each<br />

year we carefully select eligible<br />

confréres to the Conseil<br />

d’Honneur.<br />

At the 2007 National<br />

Meeting, 13 new members were<br />

approved by the Executive<br />

Committee and by the <strong>Bailli</strong><br />

Délégué.<br />

To become eligible, a<br />

confrére is one who has served as<br />

a National or <strong>Region</strong>al Officer<br />

for an effective tour of duty, and<br />

who does not currently hold one<br />

of the aforementioned offices,<br />

and must be a member in good<br />

standing of the Chaîne for 10<br />

years consecutively.<br />

Our committee also<br />

recognizes that there are <strong>Bailli</strong>s<br />

who have served with distinction,<br />

20–30 or more years as Chapter<br />

<strong>Bailli</strong>s. At our next National<br />

Meeting, we hope to recommend<br />

an amendment to our guidelines,<br />

to include these deserving<br />

individuals.<br />

I hope to share other<br />

interesting news of the Conseil<br />

d’Honneur committee in future<br />

newsletters.<br />

The Kauai/Oahu <strong>Bailli</strong>age<br />

has had a busy and fun filled year.<br />

Our season started on September<br />

29 as the host <strong>Bailli</strong>age for the<br />

<strong>Hawaii</strong>/<strong>Pacific</strong> Islands <strong>Region</strong>al<br />

Assemblage. Hilton <strong>Hawaii</strong>an<br />

Village, Beach Resort and Spa,<br />

Tapa Ballroom was the venue for<br />

this gala dinner. Seventy four<br />

Chaîne members and guests<br />

attended and were treated to a<br />

fabulous meal prepared by Chef<br />

Rôtisseur Daniel LaGarde and his<br />

can join the “Hualalai Holoholo Pinz Trek<br />

Adventure,” which provides stunning views <strong>from</strong><br />

the 6,000 foot level. You can see the geologic<br />

forces that created the islands, walk amidst a forest<br />

of native birdsong and scramble through a lava<br />

tube.<br />

Best of all, the Assemblage provides a time<br />

to cement old friendships and meet wonderful<br />

people <strong>from</strong> other bailliages, as well as the national<br />

officers attending. <strong>Bailli</strong> Pirngruber and his staff,<br />

along with the event Chairman <strong>Bailli</strong> <strong>Provincial</strong><br />

Honoraire Fred Honda, have been working for a<br />

year to provide us this privileged opportunity to<br />

take advantage of the best the Chaîne can deliver.<br />

tasting of two wines. Joleen Wilt,<br />

Owner and Chef David Passanisi,<br />

created a delicious dinner that<br />

was served after Roberto’s<br />

lecture.<br />

Our holiday party<br />

“Christmas by the Sea” was held<br />

on December 11 at Bali by the<br />

Sea Restaurant at the Hilton<br />

<strong>Hawaii</strong>an Village. Chef Rôtisseur<br />

Daniel LaGarde and Chef Adam<br />

Hightower teamed up to present<br />

an extraordinary holiday dinner<br />

for sixty four members and<br />

guests.<br />

On March 7 the Kauai/<br />

Oahu <strong>Bailli</strong>age held its annual<br />

meeting at Waialae Country Club.<br />

Chef Rôtisseur and Commandeur,<br />

Guido Ulmann, Executive Chef<br />

and his staff prepared and served<br />

a dinner of exceptional quality for<br />

forty nine members and guests.<br />

Our season ended with<br />

“Un Diner Extraordinaire” at<br />

Chef Mavro Restaurant on May<br />

20. Twenty six members and<br />

guests explored the intricate<br />

flavors of the cuisine prepare by<br />

Chef George Mavrothalassitis.<br />

We look forward to<br />

sharing many gastronomic<br />

highlights with you in this<br />

CHRIS SPEERE, BAILLI, MAUI<br />

It is an honor and<br />

pleasure to address you<br />

as <strong>Bailli</strong> of our Maui<br />

Chapter of the Confrérie<br />

de la Chaîne des<br />

Rôtisseurs. As we go<br />

about our busy<br />

professional lives the<br />

time to re-energize at the<br />

table with good friends,<br />

fine food and<br />

thoughtfully selected<br />

wines often becomes<br />

elusive. The Maui<br />

Chapter of the Chaîne des Rôtisseurs exists, in<br />

many ways, to capture special moments centered<br />

on food, friends, wine and the enrichment of our<br />

spirits. Paul Bocuse, the great Chef of France,<br />

stated “ We take care of ourselves, emphasizing<br />

moderation while realizing that the delight in good<br />

food is also an indispensable ingredient at our<br />

tables”. It is with this thought in mind that the<br />

2006/2007 report of our Maui Chapter is presented.<br />

On Saturday December 9 th 2006, we held<br />

our holiday season event with induction ceremony<br />

at the Lahaina Store Grille & Oyster Bar. We dined<br />

under the stars and “Up on the Roof” enjoying the<br />

best shellfish and seafood available in the world.<br />

General Manager David Hanley and Executive<br />

Chef Craig Erickson designed an exceptional menu<br />

highlighting seafood recipes and specialties <strong>from</strong><br />

countries around the globe with wine selections<br />

perfectly paired to each course of our menu!<br />

Vintage Port and cigars concluded the evening, as<br />

is our custom.<br />

Our first event for 2007 was at E&O<br />

Trading Company Southeast Asian Grill in Lahaina<br />

on Saturday, March 31. E&O Trading Company<br />

was selected by the Hale Aina Restaurant Awards<br />

Panel, as the “Best New Restaurant on Maui for<br />

2006.” We were treated to the exotic flavors of the<br />

East as we journeyed down the “Spice Trail”<br />

sampling the creative talents of Chef de Cuisine<br />

Nick Salvi. Wine selections perfectly paired to<br />

each flavorful course were offered. General<br />

Manager Robert Comstock and Operating Partner<br />

David Alaire designed an exceptional evening full<br />

of intrigue and entertainment fit only for Maui’s<br />

elite Sheiks and Princesses.<br />

At the Young Chef Competition on March<br />

24 th at Kapiolani Community College, Kyle<br />

Malaqui, currently employed at Haliimaile General<br />

Store, represented our Maui chapter.<br />

Our second event for 2007, on June 24, was<br />

at Café Marc Aurel located in the historic town of<br />

old Wailuku at the base of the lush and mysterious<br />

Iao Valley. Cafe Marc Aurel allowed our members<br />

to experience the finest in high quality wines,<br />

specialty cheeses, imported meats, organic greens,<br />

vine ripened fruits and vegetables, organic coffee<br />

drinks, and handmade desserts. Cafe Marc Aurel<br />

offered “Rustic Simplicity” in an old world<br />

ambience. The event was hip, fun, and comfortably<br />

cozy as we enjoyed an early Sunday evening out<br />

with our fellow Chaîne members and their special<br />

invited guests.<br />

On September 15, Chef David Patterson of<br />

Hotel Hana Maui will bring his culinary expertise<br />

and inspirational farm fresh cuisine to the Maui<br />

Culinary Academy to prepare a special dinner<br />

exclusively for our Maui Chaîne members. Chef<br />

Patterson has an extensive culinary background,<br />

which includes the Maisonette, Mobil Travel<br />

Guide's longest-running five-star restaurant in<br />

America. An aspiring spear fisherman and culinary<br />

gardener, David has made tremendous strides<br />

locating Maui’s best food products and ingredients.<br />

He works diligently with over a dozen local farms<br />

and fisherman to ensure that guests at Hotel Hana-<br />

Maui receive the highest quality fish and produce.<br />

Details on this event are forth coming!<br />

In closing, Mitch Kysar, our <strong>Bailli</strong> for over<br />

Davis. Conseiller<br />

Culinaire <strong>Provincial</strong>e Kusuma Cooray’s decision to<br />

take dance lessons <strong>from</strong> the ship’s dancing<br />

instructor, Robert Linowsky, altered her leisure<br />

lifestyle forever. For the remainder of the cruise,<br />

Kusuma was a fixture in the class.<br />

Her pursuit of her newfound passion led her<br />

to Christopher Bayot, voted dancing instructor of<br />

the year in 2005, and the “Keep on Dancing”<br />

school. Like a caterpillar <strong>from</strong> a cocoon, she has<br />

become the beautiful dancing butterfly we were<br />

privileged to witness at the recent School of<br />

Dancing Invitational Showcase, May 12 at the<br />

Sheraton Waikiki. The opening dance with her<br />

instructor Bayhot revealed a confident,<br />

set sail again for a "One Night<br />

Cruise to Nowhere", Saturday,<br />

April 28, 2008 on the Pride of<br />

Aloha ship. That's enough<br />

planning for now, but there's<br />

more to come!"<br />

professional dancer dressed in her country’s, Sri<br />

Lanka’s finest, created by its top designers. Her<br />

fabulous fuchsia sari, with gold encrusted<br />

embroidery on the bodice, echoed the design of her<br />

floor length slit skirt. Her necklace and earrings<br />

featured Ceylonese emeralds, garnets, diamonds<br />

and rubies. As Honorary Consul General of Sri<br />

Lanka, she was the epitome of her country’s finest<br />

resources.<br />

Christopher Bayot, her mentor and current<br />

instructor, had Chrysanne’s of London specially<br />

design an exquisite ball gown for the international<br />

waltz he choreographed for her. She looked<br />

professional. She was ready. She waltzed the dance<br />

floor as though she owned it and for that moment,<br />

she did.<br />

Kusuma continues her routine and is<br />

preparing for the <strong>Hawaii</strong> Star Ball coming up this<br />

September. In her debut last year at that event, she<br />

placed first in each of the three categories in which<br />

she competed. Attaining her goal is a continuing<br />

challenge.<br />

Besides being Culinary Professor at the<br />

Kapiolani Community College, she also represents<br />

Sri Lanka as Honorary Consul.<br />

Bradenton, Florida. She attended<br />

the Chicago Assemblage on her<br />

way to her <strong>Hawaii</strong> oceanfront<br />

condo where she will be until<br />

October. We met at the popular<br />

Tru Restaurant where she was at<br />

a nearby table with her date.<br />

The Monoscalcos were<br />

perfect hosts for the Kauai/Oahu<br />

bailliage and many others who<br />

joined them on their ambitious<br />

pre-Assemblage “Kama’aina<br />

tour” that included as many of<br />

Chicago points of interest as<br />

possible. Natives of Chicago,<br />

they know the city like the back<br />

of their hand and their<br />

combination of the Italian and<br />

<strong>Hawaii</strong>an hospitality was second<br />

to none. Prior to the Assemblage,<br />

the Monoscalcos were on the<br />

to Wrigley Field and rooting for<br />

the Cubs was one of the<br />

highlights. We made plans with<br />

Joe Caruso to attend. It was well<br />

worth the effort of getting there<br />

to be part of this world-renowned<br />

shrine of baseball. Having the<br />

Cubs win the game made it all<br />

the sweeter. Dr. Maurice<br />

Nicholson and his wife Kathryn,<br />

Karen and Fred Sherwood, and<br />

Burt and Maxine Hobson were<br />

all part of the cheering section.<br />

The Drake is a beautiful,<br />

restored hotel that is very<br />

elegant, right on the lake, and<br />

walking distance to the famous<br />

Michigan Avenue, the shopping<br />

Mecca of Chicagoland. Many<br />

members took the opportunity to<br />

shop, others like Judith Kellogg<br />

play “Wicked.” I tried to get<br />

tickets to see Oprah, but they<br />

Jeune Commis National Competitors on the back<br />

cover the following year. For her years of<br />

significant contributions as a <strong>Region</strong>al and<br />

National Officer, Hughes was awarded the Conseil<br />

d'Honneur des Etats-Unis red, white, and blue<br />

ribbon with matching medallion.<br />

Conseiller Gastronomique Etats-Unis<br />

Honoraire Dr. Mel Sturman was awarded the same<br />

Conseil d'Honneur medallion for his exemplary<br />

leadership by <strong>Bailli</strong> Joe Caruso. Some of you may<br />

remember Dr. Sturman as the driving force behind<br />

the so very successful <strong>Hawaii</strong> Millennium<br />

Assemblage.<br />

<strong>Bailli</strong> Délégué Joe Caruso recognized<br />

newly elevated <strong>Bailli</strong> <strong>Provincial</strong> Larry <strong>Vogel</strong> with a<br />

silver star for his generous contribution and<br />

support to Chaîne.<br />

Chargée de Presse <strong>Provincial</strong>e Judith<br />

Kellogg has an extremely busy schedule but<br />

manages to keep her priorities in order. Prior to<br />

Chicago, she visited her parents in Boulder, then<br />

returned to Chicago to the Assemblage.<br />

Immediately after, she flew to a conference in<br />

Leeds, England, where activities were highlighted<br />

by donning medieval armor and taking a medieval<br />

cooking class. Mission accomplished, she then<br />

flew to the little town of Dingle, Ireland, to meet<br />

her sister, niece and Big Charlie, her horse for the<br />

week, where the trio trotted, trekked, and galloped<br />

to their hearts’ content.<br />

I was pleasantly surprised to see Jules and<br />

Pat Bernard of the Virginia Chaîne and D.C.<br />

Chapter, respectively, when Larry and Anna Lise<br />

<strong>Vogel</strong> and Fred and I attended the recent Maui<br />

Chaîne Event. The Bernards were members of my<br />

post-neighbor island tour, which included Maui in<br />

2000. They fell in love with Maui and I introduced<br />

them to a realtor. They returned 7 years later ready<br />

to build on their oceanfront Kapalua property. Jules<br />

is transferring his Virginia Chaîne membership to<br />

our Maui Chaîne chapter.<br />

Kudos to the new Maui Chapter’s <strong>Bailli</strong><br />

Christopher Speere for the innovative event held at<br />

Café Marc Aurel in historical Wailuku town.<br />

Relieved of his host duties, Maui <strong>Bailli</strong> Honoraire<br />

Mitch Kysar only had eyes for his pretty wife Joan<br />

who accompanied him.<br />

Maître de Hôtelier Lee Harlow of the<br />

<strong>Hawaii</strong> Island Chapter has attended every National<br />

Chaîne since <strong>Bailli</strong> Délégué Joe Caruso inducted<br />

her at the Wynn Resort in Las Vegas last May (that<br />

would be both Scottsdale and Chicago). A potential<br />

Chaîne officer in the making, she makes the time<br />

and has the interest.<br />

A sweetened grape vine has brought to my<br />

attention that we have a spicy Playboy Bunny in<br />

our midst. In fact, in her Bay Area days, Kai<br />

Cowell of the Kauai/Oahu chapter was named San<br />

Francisco Playboy Bunny of the Year. Despite all<br />

that glamour, cooking was still Kai’s foremost<br />

interest. She entered the CIA Culinary Academy,<br />

realizing her culinary dream. She developed her<br />

own line of spices <strong>from</strong> scratch, under the Kaiulani<br />

label. With the support of her husband Don, she is<br />

the creator, distributor, marketer and salesperson<br />

supplying at least twenty-five local food<br />

establishments. You can meet her personally every<br />

Saturday at the Kapiolani Community College<br />

Open Market where it all began. The sweetened<br />

grapevine maintains, “she is the best cook and she<br />

still looks hot.”<br />

GRAND CHAPÎTRE 2007, LAURENCE VOGEL, BAILLI PROVINCIAL<br />

If the Grand Chapître 2007, which took place in<br />

Chicago, Illinois, June 29 th –July 3 rd , had to be described<br />

in one word, that word, quite appropriately, would be<br />

“outstanding!” The meeting was filled, <strong>from</strong> beginning<br />

to end, with many worthwhile, interesting and, with one<br />

exception, pleasurable, meetings and events.<br />

I was proud of the fact that <strong>Hawaii</strong>, despite our<br />

long distance <strong>from</strong> Chicago, was extremely well<br />

represented. Fred Hellekes and Mira Han, Fred and<br />

Julie Honda, Judith Kellogg and Bruce Liebert, Bob<br />

and Bertie Lee, Mark and Mirella Monoscalco, Garrett<br />

Saikley, Kathryn and Mau Nicholson, Gina Schultz,<br />

Louise Boston, Susan and Sid<br />

Lee, and Anna Lise and I were<br />

there to carry our <strong>Region</strong>al<br />

Banner on high.<br />

On arrival, Friday night,<br />

our group had the distinction<br />

and honor of hosting our <strong>Bailli</strong><br />

Délégué, Joe Caruso and Dame<br />

Joan Caruso, at a private dinner<br />

at the renowned Everest<br />

Restaurant, atop the 40 th floor<br />

of the Chicago Stock Exchange.<br />

Our <strong>Hawaii</strong> group further<br />

bonded together the following<br />

evening at the equally wellknown<br />

Tru Restaurant.<br />

Bob Lee and I attended<br />

the <strong>Bailli</strong> Provinciaux meeting<br />

on Friday, where we had the<br />

opportunity to discuss, in a<br />

constructive manner, the<br />

overarching need of the Chaîne<br />

continually to focus on the defined purpose of our<br />

organization, and the need to advance it without rancor<br />

or divisiveness.<br />

A matter of major concern to us here in <strong>Hawaii</strong><br />

was also briefly discussed at the meeting: purportedly<br />

in order to save travel money, a proposal was surfaced<br />

to reduce the number of regions, which would have the<br />

result of eliminating our <strong>Pacific</strong>/<strong>Hawaii</strong> Islands <strong>Region</strong>,<br />

and folding it into the West Coast. This effort was<br />

raised at a meeting that took place before our recent<br />

election and change in leadership. We were recorded, at<br />

that time, as going along with the change. I vehemently<br />

objected on the ground that, as one of the most active<br />

and successful regions in the United States Chaîne, we<br />

are deserving of, and entitled to, “a place at the table.”<br />

To be thousands of miles away, and to be “taxed<br />

without representation,’’ is simply not fair or<br />

acceptable. No action has been taken, but I am<br />

concerned about the issue reappearing again.<br />

Throughout Saturday, June 30, all respective<br />

National Committee meetings were held. Two <strong>Hawaii</strong><br />

members are the chairmen of committees: Mark<br />

Monoscalco is the Chairman of the Website Committee,<br />

and Fred Honda, is the Chairman of the Conseil<br />

d’Honneur Committee.<br />

Attending <strong>Bailli</strong>s had a four-hour workshop, as well as<br />

a two-hour meeting on Sunday, July 1 st . The <strong>Bailli</strong><br />

Provinciaux met for a forum at 4:00 pm. At 6:00 pm,<br />

prior to the evening’s event, the Board of Directors<br />

met.<br />

Monday, July 2 nd was the<br />

Annual Board of Directors’ meeting,<br />

followed by the National Council<br />

meeting at 2:00 pm. The following<br />

are the major points covered:<br />

1. By-Laws Amendments proposed:<br />

- Schedule the Board of Directors<br />

meeting the same day as the Annual<br />

Meeting of the National Council<br />

- Limit the <strong>Bailli</strong> Délégué to a single<br />

three-year term of office.<br />

-In order to be nominated and serve<br />

as a <strong>Bailli</strong> <strong>Provincial</strong>, a candidate<br />

must have served a combined total<br />

of at least four years as either a<br />

<strong>Bailli</strong> and/or a Vice Chancelier-<br />

Argentier.<br />

2. Proof positive that Judith Kellogg,<br />

our Chargée de Presse <strong>Provincial</strong>e,<br />

has done an outstanding job was<br />

highlighted in the distributed<br />

materials. Judith has ensured that<br />

<strong>Hawaii</strong>’s various events have been very well presented<br />

in Gastronome.<br />

3. Mark Monoscalco presented an impressive five-page<br />

report of site activity for the last six months. He is<br />

working with “Keep in Touch Systems” to expand the<br />

scope of the current demonstration project to include all<br />

<strong>Region</strong>al <strong>Bailli</strong>ages.<br />

4. National Membership statistics: There are presently<br />

6,781 members.<br />

5. The 2007 International Competition will be held in<br />

Frankfurt Germany, September 6, 7, and 8. It is<br />

scheduled for Paris in 2008, and potentially in <strong>Hawaii</strong><br />

in 2009.<br />

6. In 2008, the Winter Board meeting will be January<br />

25–27 in San Antonio, Texas, and the Grand Chapître<br />

2008 will be held in Boston, Massachusetts June 28–<br />

July 2.<br />

7. On Sunday, July 1, the Induction of Kauai/Oahu<br />

Chapter Dame de la Chaîne Susan Lee, and the<br />

Elevations of Chambellan <strong>Provincial</strong> Fred Hellekes,<br />

Honolulu <strong>Bailli</strong> Garrett Saikley, and myself as <strong>Bailli</strong><br />

<strong>Provincial</strong>, were performed by <strong>Bailli</strong> Délégué Joe<br />

Caruso, prior to the gala black tie event at the Drake<br />

Hotel.<br />

8. On Monday, July 2, the <strong>Bailli</strong> Appreciation Dinner<br />

was held at the Union League Club, recognizing each<br />

<strong>Bailli</strong> present for his or her efforts. This recognition<br />

idea was conceived ten years ago by then <strong>Bailli</strong><br />

Délégué Burton Hobson. In Chicago, appropriately, the<br />

“gangster” attire of 1942 helped set the background for<br />

“Rick’s Café America,” <strong>from</strong> the Bogart/Bergman<br />

movie classic, “Casablanca.”<br />

At our Tuesday National Council meeting, I was<br />

greatly honored to receive the Silver Star of Excellence,<br />

which was presented to me by <strong>Bailli</strong> Délégué Joe<br />

Caruso. The Conseil d’Honneur medallion was<br />

awarded to Chargée de Presse <strong>Provincial</strong>e Honoraire<br />

Julie Honda for her ten years of dedicated and effective<br />

service as a regional officer.<br />

KUSUMA COORAY, CONSEILLER CULINAIRE PROVINCAIALE<br />

The big event for year 2007<br />

for the <strong>Hawaii</strong>/<strong>Pacific</strong> <strong>Region</strong><br />

was the Jeune Commis<br />

Competition. It was held on<br />

March 4, 2007, at the University<br />

of <strong>Hawaii</strong>’s Culinary Institute of<br />

the <strong>Pacific</strong> at Kapiolani<br />

Community College on Diamond<br />

Head.<br />

The Jeune Commis Competition<br />

is organized by the Chaîne des<br />

Rôtisseurs to support future<br />

young chefs. The purpose of this<br />

competition is to encourage and<br />

promote the culinary expertise of<br />

the Young Chef Rôtisseurs in the<br />

tradition of the Chaîne des<br />

Rôtisseurs by exposing them to a<br />

competitive environment with<br />

their peers. The competition<br />

offers young chefs the<br />

opportunity to showcase their<br />

talents and creativity in a<br />

<strong>Region</strong>al, National and<br />

International arena.<br />

The <strong>Region</strong>al<br />

Competition was a success<br />

because of the hard work put in<br />

by our board members and our<br />

<strong>Region</strong>al officers. Thank you to<br />

the team of judges who<br />

graciously accepted my<br />
