A person, firm or corporation who begins a food operation afterOctober 1 st shall be required to pay only one-half (1/2) of the annual permit fee for the balance of that permit year.The Department shall determine the risk type. The risk type shall be based on the type of food served, the extent offood preparation involved, and the population served.
