7Receipes for Fallby Emily OsbornePumpkin FudgeIngredients3 cups white sugar1 cup milk3 tablespoons light corn syrup1/2 cup pumpkin puree1/4 teaspoon salt1 teaspoon pumpkin pie spice1 1/2 teaspoons vanilla extract1/2 cup butter1/2 cup chopped walnuts (optional)Directions1. Butter or grease one 8x8 inch pan.2. In a 3 quart saucepan, mix together sugar, milk,corn syrup, pumpkin and salt. Bring to a boil over highheat, stirring constantly. Reduce heat to medium and continueboiling. Do not stir.3. When mixture registers 232 degrees F (110 degreesC) on candy thermometer, or forms a soft ball whendropped into cold water, remove pan from heat. Stir inpumpkin pie spice, vanilla, butter and nuts. Cool to lukewarm(110 degrees F or 43 degrees C on candy thermometer).4. Beat mixture until it is very thick and loses some ofits gloss. Quickly pour into a greased eight-inch pan.When firm cut into 36 squares.Peanut Butter Chews1/2 cup peanut butter1/2 cup light corn syrup1/2 cup white sugar3 cups cornflakes cerealDirections1. In a heavy saucepan over medium heat, mix togetherthe peanut butter, corn syrup and sugar. Bring to aboil, remove from heat.2. Add cereal, mix well and mold into small balls.Senior Class Says Thanks!Each year the senior class provides a concessionstand at the White County Fair. The proceeds providethe class with money to pay for their senior trip and graduationexercises. The building that housed the concessionstand was destroyed two years ago.This year two men, Larry Douglas and BrandonDouglas, dedicated numerous hours of hard work to replacingthe building. These two men cooridinated thebuilding and work schedule. Several area businesses donatedmaterials, and community members donated theirtime.The Senior Class of 2011 would like to thank Larryand Brandon Douglas for their help. In addition, they wantto thank all those who helped with the construction of thebuilding and with operating the cafe during the fair.
