CANE SUGAR.Solving this equation, a is found to be .9125, i.e., the weight of mixedjuice is 91.25 per cent, of the weight of the cane, and if the actually observedrecords do not agree with this determination then an error is indicated as beingpresent.In the above argument Bc is the quantity representingthe total solids in the whole juice in the cane; it isnot usual to determine this quantity directly and in somefactories it is even customary to take the Brix of thefirst expressed juice as representing this quantity.The factor connecting the Brix of the first expressedjuice and the Brix of the whole or absolute juice of thecane is capable of ready determination ; the equationobtained above may also be used to obtain the relationbetween the Brix of the first expressed juice and theabsolute juice, the actually recorded weights of cane andjuice being employed; the factors found from analysisand from the recorded mcasurements should agree; adifference indicates an error.With canes of 12 per cent, fibre and first expressedjuice equal in weight of 60 per cent, of the cane, thewriter has found that the following relation holds :—(Brix of first expressed juice) .97 = Brix of absolute juice.Automatic Eecord of Density.—Langen's Apparatus for recording the densityof the juice is shown in Fig. 871; the juiceenters a containing vessel f and overflowingat d passes away at h; a constant level ofjuice is thus maintained; inside the narrowcentral portion of the vessel is a tube s, to thelower end of which is attached a rubber ball g;the upper portion of this tube is funnelshaped; this inner tube is filled with water;the height of the water is dependent on thepressure on the rubber ball, the pressurebeing in turn dependent on the density of thejuice. The level of the water is recorded bymeans of the float c, which carries a pencil apressing against the cylinder b, which revolvesby a clockwork arrangement every 24 hours;the lower portion of the inner tube is formed into a spiral at e, so as to ensurethe juice and water being of the same temperature.500
