THE EVAPORATION OF THE JUICE TO SYRUP.inverted syphons connecting the discharge of one with the intake of the nextbody, and these are of such a length that the leg connected with the secondbody is from 12 to 18 inches longer than the column of liquid which is dueto the greatest pressure that can be possibly obtained between the two vessels.This apparatus is to a large extent self adjusting; there is only one cock tocontrol the flow of the juice into the apparatus, and the system of circulationprevents the juice in any vessel rising much above the level of the tube plate.Hagemann Evaporator.—This specialized type of standardevaporator is shown in Fig. 160. The peculiar points in this design are theautomatic regulation of the flow of the juice by traps a and by the juicetrays b taking the place of the syphons in Chapman's design; the horizontalbaffles c in the calandria ensure the action of the hottest steam at the upperlevel of juice and the vertical baffles d give an up and down circulation to thejuice.291
