CHAPTER XV.THE FILTRATION OF THE JUICE.In a previous chapter, it was shown how the juice was separated into apartially clear liquid and into a dirty liquor, formed out of the settlings andthe floating scum removed from the surface of the juice in the clarifiers;roughly about 90 per cent, of the juice will be obtained in the clear liquorand 10 per cent, in the scums, the latter containing about 10 per cent, ofsuspended solid matter. The seums are received in tanks where they arelimed and allowed to settle, the clear supernatant liquor being decanted andadded to the main bulk of the juice; the scums are then passed through thefilter presses, the clear filtered liquor being passed on to the evaporators.27318
