PASS·PØRT And the case was not simple at all. To reach the restaurant from outside the museum, they had to create access from the promenade on the Nervión estuary. The architect designed, for this purpose, a staircase with a parable profile and, simultaneously, a very private terrace backed by titanium scales on side of the building. To access the inside the architect had to design a transition from a room which is 130m long and 20m high, with serpentine works by Richard Serra called «The matter of time», to a completely open, very bright and white kitchen. This is where Fagor has implemented the dream of Josean Martinez Alija, chef of restaurant Nerua. An incredible kitchen, very very quiet, odor-free, ultra-clean and open to a room with only ten tables. The lines are straight, the white is extreme and there is no decoration. It is minimalism in its purest form. With one exception. The cornice that includes the iconic curves of the building and which separates the kitchen from the dining area. It is truly a beautiful achievement. 70 Gas�tron�ø�mad Et l’affaire n’était pas si simple. Pour rejoindre le restaurant depuis l’extérieur du musée, il fallait créer un accès depuis la promenade sur la ría Nervión. L’architecte a dessiné à cet effet un escalier en parabole et profile, en même temps, une terrasse très intime adossée aux écailles en titane du bâtiment. Pour l’accès intérieur, il fallait gérer la transition d’une salle de 130 me de long et de 20 m d’hauteur, avec les œuvres en serpentin de Richard Serra «The matter of time», vers une cuisine ouverte. C’est là que Fagor a mis en œuvre le rêve de Josean Martinez Alija, chef étoilé du restaurant Nerua. Une incroyable cuisine ouverte, silencieuse, calme, sans odeurs, ultra-clean et ouverte sur une salle avec à peine dix tables. Les lignes sont droites, la blancheur est extrême et il n’y a pas de décoration. Du minimalisme a l’état pur. Une seule dérogation, la corniche qui délimite la cuisine de la salle, qui reprend les courbes emblématiques du bâtiment. Belle prouesse. Y, es que el asunto en cuestión, no era tan sencillo. Para llegar al restaurante desde el exterior del museo, se creó un acceso desde el paseo marítimo sobre la ría del Nervión. El arquitecto diseñó para este propósito una escalera en forma de parábola y, al mismo tiempo, una íntima terraza adosada a las escamas de titanio del edificio. Para acceder desde el interior, se tuvo que gestionar la transición desde una sala de 130 m de largo y 20 m de altura, con las obras en serpentina de Richard Serra «The matter of time», a una cocina abierta. Aquí es donde Fagor hizo realidad el sueño de Josean Martínez Alija, chef del restaurante Nerua. Una cocina increíble, silenciosa, tranquila, sin olores, ultra limpia y abierta hacia un comedor con sólo diez mesas. Las líneas son puras, el blanco está omnipresente y no hay decoración. Minimalismo puro. Una sola excepción, la cornisa que bordea la cocina, delimitando su territorio, que incluye las curvas emblemáticas del edificio. Bella realización.
