Who decides at Arzak?
If a dish is featured on our menu it is because we
have decided upon it together, my father and I.
There is no such thing as a dish decided upon by
either Juan Mari or Elena, separately.
It is Arzak’s cuisine as I very much respect the opinion
of my father. We work together as a team.
We influence each other, create together and learn
from each other. We are extremely fortunate.
Is it a man’s world?
Not at Arzak! This is a matriarchy! (She says
laughing). My mother who is also very supportive
runs the administration. Today, there are five female
chefs de partie and the vast majority of floor staff
are women also. And when my first child was born
there were that year also 5 more children born by
members of the staff!
Do you find that there is gender discrimination
in the world of cooking?
I have not myself felt this but I think it will take time
overall before there is full equality.

¿Quién decide en Arzak?
Si un plato figura en nuestro menú es porque lo
hemos decidido juntos, mi padre y yo.
No hay un plato de Juan Mari y un plato de Elena.
Es la cocina de Arzak, pero por supuesto respeto
mucho la opinión de mi padre.
Trabajamos juntos, somos un tandém.
Nos influenciamos mutuamente, creamos juntos,
aprendemos el uno del otro.
Es una gran suerte.
¿Es un mundo de hombres?
¡En Arzak no! ¡Esto es un matriarcado! (me dice entre
risas). Mi madre, que también me apoya mucho,
dirige actualmente la parte de administración. Hoy
en día, cinco jefas de partida son mujeres así como
la gran mayoría del personal de sala. Y cuando yo
tuve a mi primer hijo hubo cinco niños más que nacieron
ese año entre los miembros del restaurante.
¿Hay discriminación en el mundo de la cocina
hacia las mujeres?
Yo no la he sentido nunca. Creo que es cuestion
de tiempo.
