BØN·APPETIT Matriarchy Elena tells us, with humility and pride, her family history: The place where the restaurant is located was built by her great-grandparents, Jose Maria Arzak and Escolastica Lete in late 19th century as a tavern and eatery. Followed by her grandfather, Juan Ramon Arzak and her grandmother, Francisca Arratibel, who continued managing the restaurant after the premature loss of her husband. Her father started at the restaurant in 1966 in the partie of roast with his mother as the Chef. Elena, how was your integration into the restaurant? It was very natural, although at first I was very cautious. I was, however, not new to the culinary world, I already had a career, I had studied and learned much from my work experience. And when did you begin to create new dishes? My father is very generous and always encouraged me, saying: - “creates, create!” And so, I started to create. My first suggestions were to reduce the number of ingredients per dish. Three or four per plate as a maximum. I also implemented, for example, a change in the design of both the china and the visual presentation of the dishes. Gradually, I began to refine the courses to incorporate the techniques that I was fortunate enough to learn during my studies and practices in the best restaurants in the world. 20 Gas�tron�ø�mad Matriarcado Elena cuenta, con humildad y orgullo, la trayectoria familial en esta casa. Siguió su abuelo, Juan Ramón Arzak y su abuela, Francisca Arratibel, quién dió un gran empuje como casa de comidas tras la pérdida prematura de su esposo. Su padre, en 1966 entró a formar parte del restaurante en la partida de carnes asadas, siendo la Chef su madre. Elena, cómo fue su integración al restaurante? Fué algo realmente natural, a pesar de que al principio tuve mucha cautela. Tampoco llegué aquí del día a la mañana, yo tenía ya una trayectoria, habia estudiado, había aprendido mucho gracias a mis stages. Y cuándo empezó a crear platos? Mi padre siempre me animó, fue muy generoso de su parte y me decia: - ¡“crea, crea”! Y empecé a crear. Mis primeras sugerencias fueron con relación al nombre de ingredientes. Propuse que se redujesen a tres o cuatro máximo por plato. También introduje, por ejemplo, cambios en la vajilla, en los platos de presentación, en los diseños. Poco a poco, empecé a matizar los platos a incorporar las técnicas que tuve la suerte de aprender durante mis estudios y prácticas en los mejores restaurantes del mundo.
