Your kitchen is Basque and avant-garde at the
same time?
Our cuisine is an author cuisine of course, I would
say almost endemic.
Very important in our kitchen are the wonderful
products given us by our land. We add a touch of
modernity to Basque cuisine, with ingredients and
spices from all over the world. The goal is to find the
right balance between the vanguard and the roots
of tradition.
From where do you get your inspiration?
From everywhere. When my father I travel, to other
countries, meet other cultures, museums, films and
literature. In fact everything inspires us. A traffic light
with its three colors inspired a dessert! The moss
on some stones could inspire in us incorporating
green and gray in a dish. Our creation, “Cromlech”
comes from a megalithic monument we saw during
a walk in the countryside! ...
Creation is the magic word – just how do you
create an Arzak dish?
Some time ago, we separated production, that is
everyday cooking, and creation.
There is no connection between these two worlds.
How does this work?
On the first floor of the restaurant we have a laboratory
with all kinds of culinary research machines
and a stock of over a thousand flavors and ingredients.
We work with Xabi Guitierrez and Igor Zalakain,
our development team. And we create new
dishes for each season. But of course, the whole
Arzak team is essential to us.
How many new dishes do you create each year?
We create 50 dishes per year, which is actually a
lot.
My father always says that to evolve you have to
be open, to imagine, to see life as a child. It is our
common philosophy.
