CHOCOLATE, the gift from<br />
Mexico<br />
You probably know the popular novel Like Water<br />
for Chocolate by Mexican novelist Laura<br />
Esquivel. If you have wondered about the title<br />
and about what water has to do with chocolate,<br />
we’ll reveal you an ancient truth about this<br />
popular food.<br />
Chocolate, perhaps the most popular of sweet<br />
foods, has a long history in Mesoamerica and<br />
was an important part of Mayan and Aztec culture,<br />
at which time it was neither sweet nor a<br />
food, but a beverage, and a sour one at that.<br />
Today’s word chocolate derives from Nahuatl,<br />
the language of Aztecs, from word xocolalt,<br />
meaning bitter water*. The Aztecs made a variety<br />
of drinks made of chocolate, combined<br />
with honey, nuts, seeds, spices, flowers, hot<br />
chili pepper among others. The thick and cold<br />
drink was believed to be a health elixir with<br />
aphrodisiac qualities, bringing wisdom and<br />
power to anyone who enjoyed it.<br />

Probablemente ha oído sobre la popular novela<br />
de cómo Agua para Chocolate, de la novelista<br />
Mexicana Laura Esquivel. Si se ha preguntado<br />
sobre el título y qué tiene que ver el agua<br />
con el chocolate, le revelaremos una antigua<br />
verdad sobre este popular alimento.<br />
El Chocolate, probablemente el alimento dulce<br />
más popular, tiene una larga historia en Mesoamérica<br />
y fue un importante componente de la<br />
cultura Maya y Azteca, donde no era ni alimento<br />
ni dulce, sino una bebida amarga. Hoy en<br />
día la palabra chocolate se deriva de la palabra<br />
Nahuatl xocolaltx, que significa agua amarga*.<br />
Los aztecas hacían una gran variedad de bebidas<br />
derivadas del chocolate y la combinaban<br />
con miel, nueces, semillas, especias, flores,<br />
chile, etc. Se creía que esta bebida gruesa y<br />
fría era un elixir para la salud con cualidades<br />
afrodisiacas, dando poder y sabiduría a quien<br />
disfrutara de ella.

Aztecs valued cocoa beans so much, that they<br />
used them as currency as well. Four cocoa<br />
beans could get you a pumpkin, 10 a rabbit and<br />
100 could buy a decent slave. The Aztecs attributed<br />
the creation of the cocoa plant to their<br />
god Quetzalcoatl, who descended from heaven<br />
on the beam of a morning star carrying a<br />
cocoa tree from paradise.<br />
Los aztecas valoraban tanto el cacao que también<br />
lo utilizaban como moneda. Cuatro granos<br />
de cacao podía conseguirle una calabaza,<br />
10 un conejo y 100 un esclavo decente. Los<br />
aztecas atribuían la creación de la planta del<br />
cacao a su dios Quetzalcoatl, quien descendió<br />
del cielo con la última luz de la mañana trayendo<br />
un árbol de cacao del paraíso.<br />

The scientific name of the cocoa tree Theobroma<br />
is very suitable to its heavenly attributes, as<br />
it means "Food of the Goods". The Aztec emperor<br />
Montezuma drank thick chocolate which<br />
was dyed red. The drink was so prestigious<br />
that it was served in golden goblets that were<br />
thrown away after only one use! He liked it so<br />
much that he was purported to have ingested<br />
50 goblets every day!<br />
In Aztec times, the chocolate drink was used in<br />
important religious and social rituals, primarily<br />
by priests, emperors, soldiers and wealthy and<br />
honored merchants. Montezuma was the one<br />
who introduced cocoa beans and chocolate to<br />
the young Spaniard Hernán Cortés, who conquered<br />
México in 1519 and in 1528 returned to<br />
Spain with some cocoa beans. The Spaniards<br />
were the ones who first started to add sugar<br />
to the drink, and discovered that it was quite a<br />
delicacy when sweetened. The formula for this<br />
highly demanded and noble potion was kept a<br />
secret, which Spain managed to keep from the<br />
rest of the world for almost 100 years!<br />
Slowly, however, the secret was revealed, and<br />
chocolate was introduced to the royal courts<br />
of France in 1615 and in Austria in 1711. A<br />
Frenchman opened the first chocolate house<br />
in London in 1657, and Italians began serving<br />
chocolate in Florence and Venice in 1720. The<br />
chocolate was first introduced to the United<br />
States in 1764. The Industrial Revolution in<br />
18th century helped make chocolate available<br />
to masses. We got the first edible solid chocolate<br />
in 1847 by an Englishman Joseph Fry,<br />
and… well, you know the rest.<br />
Today, chocolate is still widely used in Mexico.<br />
Not just as a drink or as sweets, but also as an<br />
ingredient in the popular sauce mole, used for<br />
poultry, and more. The most traditional use for<br />
chocolate is for hot beverages such as Atole,<br />
Champurrado and Mexican Hot Chocolate.<br />

El nombre científico del árbol de cacao es<br />
Theobroma, el cual da honor a sus atributos<br />
celestiales, ya que significa "Comida de los<br />
Dioses". El emperador azteca Moctezuma bebía<br />
chocolate espeso teñido de rojo. La bebida<br />
era tan prestigiosa que era servida en copas<br />
de oro que eran desechadas después de tan<br />
solo un uso. ¡Le gustaba tanto que se proponía<br />
beber 50 copas al día!<br />
En esos días, la bebida de chocolate era usada<br />
en importantes rituales sociales y religiosos,<br />
primordialmente por sacerdotes, emperadores,<br />
soldados y por poderosos y honorables<br />
comerciantes. Moctezuma fue quien presentó<br />
los granos de cacao y chocolate al joven español<br />
Hernán Cortés, quien conquisto México en<br />
1519, y fue en 1528 cuando regreso a España<br />
con granos de cacao. Los españoles fueron<br />
los primeros en agregar azúcar a la bebida, y<br />
descubrieron que ese dulce realmente era un<br />
manjar. La fórmula para esta gran demandada<br />
y noble poción se mantuvo secreta, ¡Lo cual<br />
los españoles lograron por casi 100 años!<br />
Poco a poco, el secreto fue revelado y el chocolate<br />
fue presentado a la corte francesa en 1615<br />
y a Austria en 1711. Un francés abrió la primera<br />
casa de chocolate en Londres en 1657, y<br />
los italianos comenzaron a servir chocolate en<br />
Florencia y Venecia en 1720. El chocolate fue<br />
llevado a los Estados Unidos en 1764. La revolución<br />
industrial en el siglo XVIII ayudó a que el<br />
chocolate estuviera disponible para todos. La<br />
primera barra de chocolate sólido fue creada<br />
en 1847 por el inglés Joseph Fry… y bueno, lo<br />
demás ya lo conocemos.<br />
Hoy en día, el chocolate en México sigue<br />
siendo muy usado. No solo como una bebida<br />
o un dulce, sino como un ingrediente popular<br />
en los alimentos. El uso más tradicional para el<br />
chocolate es en bebidas calientes como atole,<br />
champurrado y chocolate caliente.

Atole is originally made with corn masa. It can<br />
also be made out of grits, wheat or rice, and<br />
have chocolate for taste. It is frequently served<br />
with tamales.<br />
Champurrado is also served as a dessert with<br />
Churros or a sweet bread called Pan Dulce.<br />
This drink is whipped up using a wooden whisk<br />
called a molinillo (you can also use a blender).<br />
The whisk is held between the palms of your<br />
hands. Then using a back and forth motion the<br />
whisk is moved back and forth in the mixture<br />
until it is aerated and frothy.<br />
Tejate is an Oaxacan specialty. An interesting<br />
cold drink is made of dark chocolate, corn masa,<br />
cocoa flowers, then marinated and frothed.<br />
Mole is a sauce that varies in content depending<br />
on the region. The traditional red mole<br />
contains chilies, garlic, nuts, tomato, spices<br />
and chocolate. It is important to note that the<br />
amount of chocolate is very small and enhances<br />
but does not overpower the sauce. The<br />
sauce is served with turkey or chicken. Mole<br />
does not use the Mexican flavoured chocolate<br />
but instead a dark bitter, unspiced version.<br />

El atole originalmente se elabora en base a<br />
la masa de maíz, puede también hacerse con<br />
sémola de maíz, trigo o arroz y condimentarse<br />
con cacao para darle sabor. Frecuentemente<br />
se acompaña de tamales.<br />
El champurrado es servido con churros o pan<br />
dulce. Esta bebida es batida utilizando un molinillo<br />
de madera, aunque también se puede<br />
utilizar una licuadora. El molinillo es sostenido<br />
con la palma de las manos, y usando un movimiento<br />
de vaivén, el molinillo se mueve hacia<br />
atrás y adelante en la mezcla hasta que se<br />
vuelve airosa y espumosa.<br />
El tejate es una especialidad Oaxaqueña. Una<br />
interesante bebida fría hecha de chocolate<br />
amargo, masa, flores de cacao entre otros. Se<br />
deja marinar y que espume.<br />
El mole es una salsa que varía en contenido<br />
dependiendo de la región. El tradicional mole<br />
rojo contiene chiles, ajo, nueces, tomate, especies<br />
y chocolate. Es importante notar que<br />
la cantidad de chocolate es muy pequeña,<br />
haciendo la salsa grandiosa sin dominar en el<br />
sabor. La salsa es servida con pavo o pollo. El<br />
mole no utiliza el tradicional chocolate mexicano<br />
de sabor, sino uno amargo y sin especias.

HOT MEXICAN CHOCOLATE<br />

Although Montezuma drank his frothy chocolate<br />
cold, we can enjoy a delicious whipped version<br />
of hot Mexican chocolate.<br />
In a bowl, put 1 cup sugar, ½ cup cocoa powder,<br />
and mix with enough water to make a thin paste.<br />
In a large pan, bring to a boil 4 cups milk.<br />
Break 2-4 cinnamon sticks into the milk.<br />
Reduce heat and simmer 5 minutes.<br />
Carefully stir in the cocoa mix.<br />
Turn off heat and whip to a froth just before serving.<br />
*There are several explanations about the origin<br />
of the word chocolate; the mentioned one is<br />
one of the most cited.<br />
CHOCOLATE CALIENTE MEXICANO<br />
Aunque Moctezuma bebía su espumoso chocolate<br />
frío, podemos disfrutar de una deliciosa<br />
versión de chocolate caliente.<br />
En un tazón, agregue 1 taza de azúcar, ½ taza<br />
de cacao en polvo y mézclelo con suficiente<br />
agua para formar una pasta espesa.<br />
En una olla grande, hierva 4 litros de leche.<br />
Agregue de 2 a 4 varitas de canela.<br />
Lleve a fuego lento y continúe así por 5 minutos.<br />
Con cuidado, agregue la mezcla de cacao.<br />
Apague el fuego y bata hasta espesar y sirva<br />
inmediatamente.<br />
*Hay diversas explicaciones sobre el origen de<br />
la palabra chocolate; la mencionada es la más<br />

We climb the stairs to the first floor<br />
to find a softly lit space with quilted<br />
leather walls, Missoni fabrics and<br />
"Lola" lamps in pastel shades. A<br />
very feminine place. A boudoir!<br />

le restaurant gastronomique<br />
"El Poblet" dans le centre historique<br />
de Valence.<br />
On monte les escaliers menant au<br />
premier étage et on retrouve un lieu<br />
à la lumière douce, avec des murs<br />
en cuir matelassé, des tissus de<br />
Missoni et des lampes "Lola" dans<br />
les tons pastel. Un lieu très girly.<br />
Très boudoir.<br />

de octubre pasado el restaurante<br />
gastronómico "El Poblet" en el centro<br />
histórico de Valencia.<br />
Subiendo las escaleras hasta el<br />
primer piso se encontrará con un<br />
lugar de luz suave, con paredes<br />
acolchadas en piel, telas de Missoni<br />
y lámparas "Lola" en tonos pastel.<br />
Un lugar muy femenino. Muy<br />
boudoir.

Dacosta ahead of us is smiling,<br />
he’s happy. With some excitement<br />
he says: - "Have you noticed the<br />
letters in the stairwell?".<br />
- "Yes, a déjà vu" ...<br />
Indeed, these are the letters of the<br />
old "El Poblet" restaurant where I<br />
started my career more than twenty-five<br />
years ago and which I later<br />
renamed "Restaurante Quique<br />
Dacosta."<br />
- They are "collectors items"!<br />
Oh yes! The typography is very<br />
characteristic. It was invented<br />
at the time especially for us and<br />
when I changed the name of the<br />
restaurant I kept the letters.<br />
- The former "El Poblet" was a<br />
place of haute cuisine.<br />
It is also the purpose of the new<br />
"El Poblet."<br />
Dacosta nous attend souriant, il est<br />
heureux. Avec une certaine excitation<br />
il dit: -"avez-vous remarqué les<br />
lettres dans la cage de l’escalier ?" .<br />
- Oui, un air de déjà vu…<br />
En effet, ce sont les lettres de<br />
l’ancien "El Poblet" le restaurant<br />
où j’ai démarré ma carrière il y<br />
plus de vingt-cinq ans et que j’ai<br />
rebaptisé par la suite "Quique<br />
Dacosta Restaurante".<br />
- Elles sont donc "collector" !<br />
Oh oui ! La typographie, très caractéristique,<br />
avait été conçue à<br />
l’époque spécialement pour nous<br />
et lors du changement de nom du<br />
restaurant j’ai conservé les lettres.<br />
- L’ancien "El Poblet" était un<br />
lieu de haute cuisine.<br />
C’est également la vocation du<br />
nouveau "El Poblet".<br />

Dacosta nos espera sonriente,<br />
feliz. Con un poco de emoción,<br />
dice: -"¿Te has fijado en las letras<br />
en el hueco de la escalera?".<br />
- Sí, un aire familiar...<br />
Efectivamente, son la letras del<br />
antiguo "El Poblet", el restaurante<br />
donde empecé mi carrera hace<br />
más de veinticinco años, y al que<br />
más tarde le dí el nombre de<br />
"Restaurante Quique Dacosta".<br />
- Entonces son "colector"!<br />
¡Oh, sí! La tipografía, muy característica,<br />
fue concebida en aquellos<br />
momentos en el especialmente<br />
para nosotros y cuando cambié el<br />
nombre del restaurante, conservé<br />
las letras.<br />
- El antiguo "El Poblet" era un<br />
lugar de alta cocina.<br />
También es el propósito del nuevo<br />
"El Poblet".<br />

- Risky at a time when many<br />
prestigious restaurants are<br />
closing up shop.<br />
Indeed, and this is tragic for the<br />
profession. But with the opening<br />
of this restaurant I wanted, above<br />
all, not only to give pleasure to the<br />
guests, but also to send a message<br />
of hope - "Yes, a haute cuisine<br />
restaurant in Valencia – it IS<br />
possible." Currently the favoured<br />
model for all cooks is gastro-bar.<br />
However, I remain convinced of<br />
the value and future of haute gastronomie.<br />
We can make the cuisine<br />
avant-garde without being a<br />
restaurant worthy of Pritzker.<br />
- What is the average price for<br />
the whole meal?<br />
I wanted to democratize haute<br />
cuisine. For this I chose a nonluxury<br />
establishment which serves<br />
60 people a day. The average<br />
menu is about fifty euros for 3 or<br />
4 snacks, 7 or 8 dishes, 2 desserts<br />
and petits fours.<br />

- Risqué dans un moment où<br />
beaucoup de restaurants de<br />
prestige ferment.<br />
En effet, et c’est dramatique pour<br />
la profession. Mais avec l’ouverture<br />
de ce restaurant j’ai voulu,<br />
avant tout, donner du plaisir aux<br />
convives, mais également lancer<br />
un message d’espoir: -"oui, un restaurant<br />
de haute cuisine à Valence<br />
c’est possible". Actuellement le<br />
modèle pour tous les cuisiniers est<br />
le gastro-bar. Je reste convaincu<br />
que l’offre gastronomique de haut<br />
niveau a un futur. On peut faire de<br />
la cuisine d’auteur et d’avant-garde<br />
sans avoir un restaurant digne du<br />
Pritzker.<br />
- Quel sera le prix du ticket<br />
moyen ?<br />
J’ai souhaité démocratiser la<br />
haute cuisine. Pour cela j’ai choisi<br />
un cadre non luxueux où l’on sert<br />
60 personnes par jour. Le ticket<br />
moyen sera d’environ cinquante<br />
euros pour 3 ou 4 snacks, 7 ou 8<br />
plats, 2 desserts et des petits fours.<br />
- Es arriesgado en un momento<br />
en que muchos restaurantes de<br />
prestigio cierran.<br />
Es cierto, es un drama para la profesión.<br />
Sin embargo, con la apertura<br />
de este restaurante quería, sobre<br />
todo, dar placer a los clientes, por<br />
supuesto, pero también enviar un<br />
mensaje de esperanza -"Sí, un<br />
restaurante de alta cocina en Valencia<br />
es viable". Actualmente, el<br />
modelo de negocio para todos los<br />
cocineros es el gastro-bar. Sigo<br />
convencido de que la oferta gastronómica<br />
de alto nivel tiene futuro.<br />
Podemos hacer cocina de vanguardia<br />
sin un restaurante digno<br />
del Pritzker.<br />
- ¿Cuál es el precio del ticket<br />
medio?<br />
En este restaurante deseo democratizar<br />
la alta cocina. Para ello<br />
he elegido un lugar sin ostentaciones<br />
que atiende a 60 personas<br />
por día. El ticket medio es de alrededor<br />
cincuenta euros por 3 o 4<br />
aperitivos, 7 u 8 platos, 2 postres<br />
y petits fours.

- How can you offer a gourmet<br />
menu for this price?<br />
As you saw on arriving my gastrobar<br />
"Vuelve Carolina" is located on<br />
the ground floor. This means that<br />
we share all necessary equipment<br />
needed for a restaurant, the cellar<br />
as well as all procurement.<br />
In addition, the dishes served at<br />
"El Poblet" are dishes which were<br />
served in past seasons at "Restaurante<br />
Quique Dacosta." So I do<br />
not have the impact and cost of research<br />
and development.<br />
- Is that what the name comes<br />
from? That you serve "vintage"<br />
food?<br />
The name was obvious ... and, indeed,<br />
yes we will also use classic<br />
“old” "El Poblet" dishes.<br />
- Comment faites-vous pour proposer<br />
un menu gastronomique à<br />
ce prix ?<br />
Comme vous l’avez constaté en<br />
arrivant, au rez-de-chaussée se<br />
situe mon gastro-bar "Vuelve Carolina".<br />
Ce qui veut dire que nous<br />
partageons tous les équipements<br />
nécessaires dans un restaurant, y<br />
compris la cave, ainsi que tous les<br />
achats.<br />
En outre, les plats servis à "El<br />
Poblet" sont les plats des anciennes<br />
saisons de "Quique Dacosta<br />
Restaurante". Je n’ai donc pas à<br />
impacter les frais de recherche et<br />
développement.<br />
- Le nom vient de là ? Du fait que<br />
vous allez servir des plats "vintage"<br />
?<br />
Le nom c’était comme une évidence…<br />
et, en effet, nous servirons<br />
également les classiques de<br />
l’ancien "El Poblet".<br />

- ¿Cómo es posible proponer un<br />
menú gastronómico a ese precio?<br />
Seguramente viste al llegar mi<br />
gastro-bar "Vuelve Carolina" en<br />
la planta baja. Esto significa que<br />
compartimos todos los equipos industriales<br />
necesarios en un restaurante,<br />
la bodega, así como todas<br />
las compras.<br />
Además, los platos que se sirven<br />
en "El Poblet" platos son los de<br />
las temporadas anteriores del<br />
"Restaurante Quique Dacosta".<br />
Así que no tengo que impactar en<br />
el costo de la investigación y del<br />
desarrollo.<br />
- ¿El nombre viene de ahí, del<br />
hecho de que servirán platos<br />
"vintage"?<br />
El nombre fue como una evidencia...<br />
y, efectivamente, serviremos<br />
los grandes clásicos del antiguo<br />
"El Poblet".<br />

will have a chance to catch up<br />
at "El Poblet".<br />
That was the original idea. It<br />
has been a month since we first<br />
opened the restaurant and with<br />

Tout à fait, c’était l’idée au début.<br />
Un mois vient de s’écouler depuis<br />
le lancement du restaurant et avec<br />
Manuela Romeralo en salle et<br />
avec Carolina Lourenço et German<br />
Carrizo en cuisine, cela va<br />
être difficile. Ils organisent des<br />
brainstormings pendant leur temps<br />
libre pour créer des nouveaux<br />
plats! Je crois que nous arriverons<br />
à terme à 80% d’anciens plats et<br />
20% de plats crées à "El Poblet" de<br />
Valence.<br />

("un plat qui ne se raconte<br />
pas", d’après Dacosta), La poule<br />
aux œufs d’or, Cubalibre de foie<br />
gras, Tripes de tomate, La brume;<br />
tous les plats signarure du chef<br />
sont là. Ou encore le fameux riz<br />
avec des cendres, véritable hommage<br />
au paysage automnal de<br />
Valence. Inspiré des rizières, que<br />
l’on brûle après la récolte afin de<br />
préparer les champs pour l’année<br />
suivante, on trouve,caché sous les<br />
cendres, un riz crémeux, qui revit.<br />

"Quique Dacosta" (el cierre<br />
tuvo lugar el 4 de noviembre)<br />
puede "ir a recuperación" en "El<br />
Poblet".<br />
Si, esa era la idea en un principio.<br />
Ha pasado un mes desde el<br />
lanzamiento del restaurante y con<br />
Manuela Romeralo en sala y Carolina<br />
Lourenço y Germán Carrizo en<br />
la cocina, será difícil. ¡Organizan<br />
brainstormings durante su tiempo<br />
libre para crear nuevos platos! Creo<br />
que con el tiempo ofreceremos<br />
80% de platos vintage y 20% de<br />
platos creados en "El Poblet" de<br />
Valencia.<br />
Ostras Guggenheim, El bosque<br />
encantado ("un plato que no se<br />
puede contar", según Dacosta),<br />
La gallina de los huevos de oro,<br />
Cubalibre de foie gras, Callos de<br />
Tomane, La niebla. Todos los platos<br />
emblemáticos del chef están en<br />
la carta. O el famoso "arroz con<br />
cenizas", verdadero homenaje<br />
al paisaje de otoño de Valencia.<br />
Inspirado de los arrozales que se<br />
queman después de la cosecha<br />
para preparar los campos para el<br />
próximo año, bajo las cenizas se<br />
esconde un arroz cremoso, que<br />
revive. Como "El Poblet".<br />

Christmas Apple Juice<br />
Ingredients:<br />
1 liter apple juice<br />
2 cinnamon sticks<br />
1 tablespoon honey<br />
25 ounces of water<br />
2 grs. of cloves<br />
2 star anise<br />
1 pinch of nutmeg<br />
Directions:<br />
Pour the apple juice, water, honey<br />
and spices into a saucepan.<br />
Heat over medium heat (careful<br />
not to aboil)<br />
Steep for 10 minutes (off the<br />
heat)<br />
Strain before serving.<br />

Ingrédients:<br />
1 litre de jus de pomme<br />
2 bâtons de cannelle<br />
1 C à soupe de miel<br />
25 cl d’eau<br />
2 grs. de clous de girofle<br />
2 étoiles de badiane<br />
1 pincée de noix de muscade<br />
Méthode:<br />
Verser le jus de pomme, l’eau, le<br />
miel el les épices dans une casserole.<br />
Faire chauffer à feu moyen, sans<br />
faire bouillir.<br />
Laisser infuser 10 min hors du feu.<br />
Filtrer avant de servir.<br />

Ingredientes:<br />
1 litro de zumo de manzanas<br />
2 varitas de canela<br />
2 C soperas de miel<br />
25 cl. de agua<br />

1 pizca de nuez moscada<br />
Método:<br />
Vierta el zumo de manzanas, el<br />
agua, la miel y las especias en<br />
un cazo.<br />
Caliente a fuego medio, sin que<br />
hierva.<br />
Retire del fuego y deje infusionar<br />
10 minutos.<br />
Filtre antes de servir.

1 dl grue de cacao<br />

bark pieces<br />
Peel of one organic orange in<br />
strips<br />
3 organic star anise<br />
2 liters of water<br />
Directions:<br />
Cook all ingredients in a pot until<br />
it boils. Set aside covered or<br />
under lid for 2 hours and sieve.<br />
Serving suggestion:<br />
Add 2-4 good quality organic almonds<br />

1 dl de pétales d’hibiscus séchés<br />
bio<br />
1 dl de grué de cacao<br />
1 dl de sucre non raffiné bio<br />
3 bâtons de cannelle bio écrasées<br />
pelures d’orange bio<br />
3 anis étoiles bio<br />
2 litres d’eau<br />
Méthode:<br />
Cuire tous les ingrédients dans<br />
une marmite jusqu’à ébullition.<br />
Mettez de côté avec le couvercle<br />
pendant 2 heures et filtrez.<br />
Suggestion de presentation:<br />
Avec 2-4 belles amandes bio<br />
Glögg ecológico de cacao e<br />
hibisco<br />
Ingredientes:<br />
1 dl de hibisco seco bio<br />
1 dl de grué de cacao<br />
1 dl de azúcar sin refinar bio<br />
3 ramas de canela bio aplastadas<br />
cáscaras de naranja bio<br />
3 anís estrellados<br />
2 litros de agua<br />
Método:<br />
Cocer todos los ingredientes en<br />
una olla hasta que hierva. Deje<br />
reposar tapado durante 2 horas<br />
y filtre.<br />

Known by many different names, lussekatt, lussebulle or saffronskuse have a central position in<br />
Swedish winter culture. Lussekatter, with their deep yellow colour and distinctive aroma of saffron,<br />
are strongly connected to the St. Lucia celebrations in Sweden. They come in many shapes and<br />
forms but the most common remains the "S" shape reminiscent of a sleeping cat.<br />
Connus sous plusieurs noms différents, lussekatt, saffronskuse ou lussebulle ils occupent une<br />
position centrale dans la tradition de l’hiver suédois. Les brioches de Sainte Lucie, d’un jaune<br />
profond et l’arôme caractéristique du safran, sont étroitement liées à la fête de la sainte Suède. Ils<br />
existent en différentes formes mais la plus populaire est toujours le "S" qui ressemble à un chaton<br />
en train de dormir.<br />
Conocidos por muchos nombres diferentes, lussekatt, lussebulle o saffronskuse, ocupan una posición<br />
central en la tradición del invierno sueco. Los bollitos de Santa Lucía, de color amarillo intenso y<br />
con su aroma característico de azafrán, están estrechamente vinculados a las celebraciones de la<br />
santa en Suecia. Existen en formas variadas pero la más común sigue siendo la "S" que recuerda<br />
a un gatito dormido.<br />

SØLID<br />
Ingredients:<br />
200 gr butter<br />
5 dl milk<br />
2 gr saffron<br />
50 gr yeast<br />
½ tsp salt<br />
1-2 dl sugar<br />
1.4-1.5 dl while flour<br />
raisins for topping<br />
1 egg for glazing<br />
Directions:<br />
1. Melt the butter in the pan.<br />
Pour in the milk and heat to<br />
37°C.<br />
2. Crumble the yeast into<br />
a baking bowl. Pour in the<br />
lukewarm milk and mix.<br />
3. Crush the saffron and a small<br />
amount of sugar together using<br />
a pestle and mortar. Add this,<br />
the rest of the sugar and salt to<br />
the bowl and mix.<br />
4. Add most of the flour and<br />
work the dough well until it no<br />
longer sticks to the sides of the<br />
bowl. Cover the bowl with a<br />
towel to let the mixture rise for<br />
30-40’ .<br />
5. Sprinkle some flour on your<br />
baking surface and on your<br />
hands. Knead the dough lightly.<br />
When it’s no longer sticky, it’s<br />
ready to be separated and<br />
formed into Lussekatts. Garnish<br />
with raisins, pushing them down<br />
into dough.<br />
6. Place on a baking tray, cover<br />
with a teatowel and allow to rise<br />
for 15 mins.<br />
7. Beat the egg and glaze the<br />
top of each lussekatt with a<br />
brush.<br />
8. Bake in the oven at 250°C for<br />
about 8 minutes. Remove from<br />
oven, cover with a teatowel to<br />
keep the buns moist and allow<br />
to cool.<br />
9. Enjoy served with hot<br />
chocolate!<br />
40 Gas�tron�ø�mad<br />
Ingrédients:<br />
200 gr de beurre<br />
5 dl de lait<br />
2 gr de safran<br />
50 gr de levure<br />
½ cc de sel<br />
1-2 dl de sucre<br />
1.4 à 1.5 dl de farine<br />
raisins secs pour la garniture<br />
1 oeuf pour dorer<br />
Mode d’emploi:<br />
1. Faire fondre le beurre dans<br />
une poêle. Versez le lait et<br />
chauffer à 37°C.<br />
2. Émiettez la levure dans un bol<br />
allant au four. Versez le lait tiède<br />
et mélangez.<br />
3. Écrasez le safran dans une<br />
petite quantité de sucre à l’aide<br />
d’un mortier. Ajoutez le reste du<br />
sucre et le sel dans le robot et<br />
mélangez.<br />
4. Ajoutez la farine et travaillez<br />
la pâte jusqu’à ce qu’elle ne<br />
colle plus aux parois du bol.<br />
Couvrir le bol avec une serviette<br />
afin que le mélange monte<br />
(environ 30-40’).<br />
5. Saupoudrez un peu de<br />
farine sur votre plan de travail<br />
et sur vos mains. Pétrir la pâte<br />
légèrement. Quand elle ne colle<br />
plus, elle est prêt à être séparé<br />
et formé en "S". Garnir de raisins<br />
secs, les poussant vers le bas<br />
dans la pâte.<br />
6. Placer sur une plaque de<br />
cuisson, couvrir avec un torchon<br />
et laisser lever pendant 15<br />
minutes.<br />
7. Battre l’œuf et glacer le<br />
dessus de chaque lussekatt<br />
avec un pinceau.<br />
8. Cuire au four à 250°C pendant<br />
environ 8 minutes. Retirer du<br />
four, couvrir avec un torchon<br />
afin de maintenir l’humidité de<br />
brioches et laisser refroidir.<br />
9. Servez avec un chocolat<br />
chaud !<br />
Ingredientes:<br />
200 gr de mantequilla<br />
5 dl de leche<br />
2 gr de azafrán<br />
50 gr de levadura<br />
½ cc de sal<br />
1-2 dl de azúcar<br />
1,4 a 1,5 dl de harina<br />
pasas para decorar<br />
1 huevo para glasear<br />
Instrucciones:<br />
1. Derretir la mantequilla en<br />
una sartén. Vierta la leche y<br />
caliente a 37°C.<br />
2. Desmenuce la levadura en<br />
un recipiente para horno. Vierta<br />
la leche caliente y mezcle.<br />
3. Triture el azafrán en una<br />
pequeña cantidad de azúcar en<br />
un mortero. Añada el resto del<br />
azúcar y la sal en el robot y<br />
mezcle.<br />
4. Añada la harina y trabaje la<br />
masa hasta que no se pegue a<br />
las paredes del vaso del robot.<br />
Cubrir el recipiente con un<br />
lienzo para que la mezcla leve<br />
(30-40’).<br />
5. Espolvoree un poco de<br />
harina sobre la encimera y<br />
sobre las manos. Amase la<br />
masa ligeramente. Cuando<br />
ya no se pegue, significa que<br />
está lista para ser separada<br />
en forma de "S". Adorne con<br />
pasas, incrustándolas hacia<br />
abajo en la masa.<br />
6. Colóquelos en una lechefrita<br />
y cúbralos con un paño. Dejar<br />
levar durante 15 minutos.<br />
7. Bata el huevo y el barnice la<br />
parte superior de cada lussekatt<br />
con un pincel.<br />
8. Hornear a 250ºC durante<br />
aproximadamente 8 minutos.<br />
Retirar del horno, cubrir con<br />
un paño para mantener la<br />
humedad y deje enfriar.<br />
9. ¡Servir con chocolate a la<br />
taza!

the most beloved event by<br />
the public and the long line-ups<br />

a "Barbie"! Witness then<br />

"Let’s go disco." That’s the mantra used in the kitchen of the Michelin starred restaurant at The Cliff<br />
House Hotel in Ardmore (Ireland) when it’s time to knuckle down and get the job done.<br />
Let’s Go Disco is also now the title of the book from The Cliff House Hotel’s chef Martijn Kajuiter.<br />
With a foreword by Derek Bulmer, former editor of the Great Britain & Ireland Michelin Guide, who<br />
calls The House restaurant "one of the finest places to eat in Ireland and Martijn one of the most<br />
exciting chefs cooking in the country today" and with contributions from Martijn Kajuiter and each of<br />
his chefs as well as core text by journalist Alex Meehan, the book is designed by Red&Grey Design<br />
with photography by Shane O’Neill.<br />
An honest and generous, exuberant and openhanded insight into the complex nature both of the<br />
