Studimi gjithëpërfshirës u krye përgjatë gjithë zinxhirit të prodhimittë birrës, përfshirë mjediset brenda dhe jashtë saj si ato të prodhimit edhe të shërbimit dhe në bashkëpunim tëngushtë me të gjithë stafin e prodhimit dhe atë të laboratorit të fabrikës. Nga analiza dhe vlerësimi i rrezikut në këtoprocese pune, 9 prej tyre u përcaktuan si pika kritike të kontrollit (PKK), të cilat në fazën e zbatimit u reduktuan nëdy dhe në përfundim të vendosjes së masave korrigjuese dhe parandaluese, pas verifikimit të sistemit tëdokumentuar, të ngritur në përputhje me HACCP, sistemi rezultoi i efektshëm. Provat eksperimentale në laboratordhe vlerësimi i tregut, treguan për një përmirësim të dukshëm të cilësisë së produktit përfundimtar, sidomos nëaspektin e jetëgjatësisë së tij.Fjalët kyçe: Birra, HACCP, MEBAK, rrezik, pikat kritike të kontrollit..SUMMARYThis study was undertaken for the identification, evaluating, monitoring and verification of potencial risks, observedin the beer production factory “Birra Peja”. Comprehensive study was carried out for all the beer production chain,including areas inside and outside as well as those of production and servise in close cooperation vith all productionstaff and laboratory to the factory. From analysis and risk assessment in these work processes, nine of them wereidentified as critical control points (CCP), which in the implementation phase was reduced to two and thecompletion of the deployment of corrective and preventive measures after the verification system documented,established in accordance with HACCP, the system resulted effective. Experimental tests in the laboratory andmarket survey showed a significant improvement of the quality of the final product, particularly in light of his shelflife.Key words: Beer, HACCP, MEBAK, Hazard, Risk, Critical control pointHYRJESiguria e ushqimeve dhe mbrojtja ligjore e tyrejanë dy pika shumë të rëndësishme qëpreokupojnë prodhuesit, konsumatorët,organizatat kërkimore si dhe institucionetligjvënëse. Rritja e numrit të helmimeve ngaushqimet është tashmë problem i rëndësishëmshëndetësor dhe social-ekonomik për shumëvende në mbarë botën.
