It can be coloured with a few drops of foodcolouring but is better left unflavoured.To cover 30 biscuits:I egg white, at room temperature225g sieved icing sugarMethodBeat the egg white for a few seconds with a fork. Mix inthe icing sugar a little at a time until the mixture standsin soft peaks and is thick enough to spread. If the icingis for piping, beat in a little more icing sugar until theicing will stand In stiff peaks. Spread or pipe the icingover the biscuits. Leave to set
