GLAZES• Brushing a glaze over biscuits can provide a stickysurface that nuts or sugar can stick to, or simply togive an attractive finish.• To give biscuits a rich, glossy finish, use a wholebeaten egg or yolk. Brush the glaze lightly andevenly on the top.• The glaze can be diluted by adding I tbsp coldwater or milk and adding a pinch of caster sugarfor sweet biscuits; salt for savoury ones.• Lightly beaten egg white produces a clear, shinyfinish. Brush over the biscuits halfway through thebaking time, so that it soaks into the cookiesslightly and does not set to a crackled glaze. Itlooks effective sprinkled with a little sugar.
