Macaroni and Cheese1 to 2 tablespoons margarine1 tablespoon flour1 cup enriched milk (see first recipe)1 cup shredded cheddar cheese1 teaspoon minced onion1 teaspoon dry mustard2 cups cooked macaroniSalt and pepper to tasteIn a medium-size saucepan, melt the margarine overmedium heat. Add the flour, stirring constantly witha whisk until the butter is completely absorbed andthe mixture starts to bubble slightly. Add the milk allat once, and stir constantly until the sauce thickensenough to coat the back of the spoon. Add cheese,mustard, and onion, stirring until cheese is melted.Stir in the cooked macaroni. Add salt and pepper totaste. Place mixture in a greased one-quart casseroledish. Bake uncovered at 400 degrees for 15 minutesor until top is slightly browned.
