PHYSICAL-CHEMICAL PROPERTIES OF MONASCUSMETABOLITESNicoleta Radu 1 , Yiannis Kourkoutas 2 , Mariana Ferdes 31 USAMV Cluj Napoca and Politehnica University of Bucharest, Bioengineering and BiotechnologyDepartment; e-mail: nicolbiotec@yahoo.com2 Dr. Yiannis Kourkoutas Department of Molecular Biology & Genetics Democritus University ofThrace, Alexandroupolis Greece3 Politehnica University of Bucharest, Bioengineering and Biotechnology DepartmentKeywords: biopigment, food safety, mycotoxin contentMonascal metabolites are widely using as food colorant in Asia, Europe and United States.Bioprocesses, based on solid state or submerged biosynthesis [1-3] are recommended as natural fooddyes, but the safety product is insufficiently solved, due to content of citrinin. Citrinin is a mycotoxinespecially toxic to liver and kidney tissue and is suspected of being a renal carcinogen leading torenal tumors. Used two strains we obtained the biopigments which are characterized by UV-VIS,infrared spectra, mass spectrometry and HPLC, in order to establish the major compounds inMonascus metabolite and the mycotoxin concentration in them. The main conclusion of our study isthe following: metabolites obtaining in solid state or in submerged biosynthesis were a content ofmycotoxin less than 25 ppm and is suitable to use as raw material in food industry.References1.You-Zhi Wang Xiu-Lian Ju and Yu-Guang Zhou (2005), The variability of citrinin production in Monascus typecultures Food Microbiology, (22)145-148.2.Betina, V.
