YOUR BREVILLE Fresh KeeperBe<strong>for</strong>e first useBe<strong>for</strong>e using your vacuum sealer <strong>for</strong> <strong>the</strong> firsttime, remove any packaging material andpromotional labels. Ensure <strong>the</strong> applianceis switched off at <strong>the</strong> power outlet and<strong>the</strong> power cord is unplugged. Wash <strong>the</strong>removable drip tray in warm, soapy waterwith a soft cloth. Rinse and dry thoroughly.Wipe <strong>the</strong> vacuum sealer unit with a softdamp cloth. Do not place parts in <strong>the</strong>dishwasher.Using your<strong>Breville</strong> Fresh KeeperVacuum sealing with bags3. Using a vacuum sealer 20cm bag,place <strong>the</strong> item inside that needs to bevacuumed.4. Place <strong>the</strong> end of <strong>the</strong> bag across <strong>the</strong>sealing strip and up to <strong>the</strong> 2 white tabsin <strong>the</strong> drip tray.1. Place <strong>the</strong> vacuum sealer on a flat drysurface. Plug <strong>the</strong> power plug into a230/240V power outlet and press <strong>the</strong>power button on <strong>the</strong> back of <strong>the</strong> vacuumsealer to turn <strong>the</strong> unit on. The LED lightwill be white to indicate that <strong>the</strong> unit ison and ready.2. Press <strong>the</strong> release buttons on both sidesof <strong>the</strong> vacuum sealer to open <strong>the</strong> lid.The lid should open to a 90 degreeangle. Ensure that <strong>the</strong> drip tray is placedcorrectly in position.Close <strong>the</strong> lid, press and hold pressure on<strong>the</strong> middle of <strong>the</strong> lid to start <strong>the</strong> vacuumsealing. The LED light should turn blueto indicate that <strong>the</strong> vacuum sealer isunder vacuum.The LED light will turn red to indicatethat it is sealing. When red light startsto flash <strong>this</strong> is an indication <strong>the</strong> vacuumsealer is finished vacuuming and sealing.To remove bag press <strong>the</strong> 2 releasebuttons on ei<strong>the</strong>r side of <strong>the</strong> fresh keeperand remove bag.9

Plug <strong>the</strong> power plug into a230/240V power outlet and press <strong>the</strong>power button on <strong>the</strong> back of <strong>the</strong> vacuumsealer to turn <strong>the</strong> unit on. The LED lightwill be white to indicate that <strong>the</strong> unit ison and ready.4. If using a roll note that one end willneed to be sealed prior to placing itemin <strong>the</strong> bag. Simply place <strong>the</strong> end of <strong>the</strong>cut roll over <strong>the</strong> heat sealing area but notinto <strong>the</strong> drip tray. Close <strong>the</strong> lid, press andhold pressure on it to start <strong>the</strong> sealingprocess.2. Press <strong>the</strong> release buttons on both sidesof <strong>the</strong> vacuum sealer to open <strong>the</strong> lid.The lid should open to a 90 degreeangle. Ensure that <strong>the</strong> drip tray is placedcorrectly in position.NOTEThe LED indicator light will go bluefirst, <strong>the</strong> vacuum sealer will start to sealafter about 5 – 10 seconds and <strong>the</strong> lightwill turn red.3. Using <strong>the</strong> vacuum sealer 20cm roll, cutenough bag material from <strong>the</strong> roll to fit<strong>the</strong> item in that needs to be vacuumed.NOTEIf using rolls you will require about10cm more than <strong>the</strong> item as <strong>this</strong> extrapart will <strong>for</strong>m <strong>the</strong> seal.Once <strong>the</strong> red light starts to flash <strong>this</strong>will indicate that <strong>the</strong> seal is completeand you can remove <strong>the</strong> bag from <strong>the</strong>vacuum sealer and place items that needto be sealed into <strong>the</strong> bag.5. Place <strong>the</strong> food item in <strong>the</strong> bag. Place<strong>the</strong> end of <strong>the</strong> bag across <strong>the</strong> sealingstrip and up to <strong>the</strong> 2 white tabs in <strong>the</strong>drip tray. Close <strong>the</strong> lid, press and holdpressure on <strong>the</strong> middle of <strong>the</strong> lid tostart <strong>the</strong> vacuum sealing. The LED lightshould turn blue to indicate that <strong>the</strong>vacuum sealer is under vacuum.The LED light will turn red to indicatethat it is sealing. When red light startsto flash <strong>this</strong> is an indication <strong>the</strong> vacuumsealer is finished vacuuming and sealing.You can release your hand and remove<strong>the</strong> bag from <strong>the</strong> vacuum sealer.10

YOUR BREVILLE Fresh KeeperSealing BasicsVacuum sealing is an easy and convenientway to help preserve <strong>the</strong> freshness of yourfood.Vacuum sealing is not intended to replacerefrigeration or freezing.Food that normally requires refrigeration(below 4 degree) or freezing (below -17degree) even when vacuum sealed shouldstill be refrigerated or frozen. Vacuumsealing will help retain your food’s flavour,colour and texture. It may not stop <strong>the</strong>growth of certain kinds of bacteria andyeast fermentation. Vacuum sealing is not asubstitute <strong>for</strong> heat preserving or canning.NOTEVacuum seal can not restore or revivefood that is past its prime.Do not serve or consume food that has anodour, texture or appearance of food that hasgone bad.FreezingVacuum sealing helps prevent freezer burnby removing <strong>the</strong> air in <strong>the</strong> bag. There areo<strong>the</strong>r ways to fur<strong>the</strong>r extend <strong>the</strong> life of foodin your freezer.Placement (storage)The back of a freezer has a more constanttemperature than o<strong>the</strong>r areas near <strong>the</strong> doorof a freezer. Delicate foods which may thaweasily should be kept at <strong>the</strong> back of <strong>the</strong>freezer.Thawing foodFor <strong>the</strong> best results, thaw frozen foods ina refrigerator. Never thaw raw meats, fish,dairy or poultry at room temperature.Thawing by microwave may affect <strong>the</strong>texture of foods. If thawing by microwave,begin cooking process immediately afterthawing, to prevent bacteria growth.Microwaving and SimmeringThe vacuum sealer bags and rolls aremicrowave and simmer safe. To microwave,cut <strong>the</strong> bag on one corner so that <strong>the</strong> steamcan escape and place directly into <strong>the</strong>microwave. To simmer, place bag into <strong>the</strong>saucepan of simmering water with <strong>the</strong> top of<strong>the</strong> bag out of <strong>the</strong> water <strong>for</strong> easy removal.NOTEOnce bags or rolls are used in <strong>the</strong>microwave or cooked in a pot, <strong>the</strong>yshould not be re-used.Soups and SaucesTo vacuum seal soups and sauces, pourliquid in bag and leave at least 5cm of spaceat <strong>the</strong> top of <strong>the</strong> bag. Do not vacuum seal at<strong>this</strong> point. Place filled bag up right in <strong>the</strong>freezer and allow liquid to freeze. Removefrozen bag and <strong>the</strong>n proceed to vacuum sealit.NOTEIf you only require small amountsof stock or o<strong>the</strong>r liquids, you canpre-freeze in ice cube trays and useas much or as little as you wish. Tryvacuum sealing ice cubes in advance tosave time and freezer burn.FruitFor best results many fruits can be frozenbe<strong>for</strong>e vacuum sealing. Wash and dry <strong>the</strong>fruit. Then spread on a tray or baking sheet.Place <strong>the</strong> cooking sheet in <strong>the</strong> freezer<strong>for</strong> about 2 hours, <strong>the</strong>n transfer fruit to avacuum sealer bag and vacuum seal.11

YOUR BREVILLE Fresh KeeperVegetablesFrozen vegetables sometimes turn blackif <strong>the</strong>y are not blanched be<strong>for</strong>e freezing.To blanch vegetables, fill 1 litre pot withwater and bring to <strong>the</strong> boil. Also fill a largebowl with ice water and have a colander orstrainer on hand. Add vegetables to boilingwater and cook <strong>for</strong> <strong>the</strong> times suggested.Vegetables should retain a vibrant colourand remain crisp and ‘under cooked’.Remove from boiling water and plunge intoice water until completely chilled. These vegetables include broccoli,cabbage, brussel sprouts, cauliflower,kale,and turnips.MushroomsMushrooms need to brea<strong>the</strong> and shouldnever be sealed in plastic. The best wayto store mushrooms is to place <strong>the</strong>m ina brown paper bag and keep <strong>the</strong>m in <strong>the</strong>refrigerator.Meat, fish & poultryFor best results, wash poultry and wholeclean fish and gently pat dry with a cleanpaper towel.Beef, veal, lamb, pork and fish fillets shouldbe patted dry with a clean paper towel.This extra step saves you time when you areready to cook and also helps to maintaingood moisture levels and shape. For bestresults, pre-freeze prior to vacuum sealing<strong>for</strong> 1-2 hours to retain <strong>the</strong> moisture andshape of <strong>the</strong> meat.If vacuuming without freezing first, youshould also insert a paper towel into <strong>the</strong>bag and over each side of <strong>the</strong> meat be<strong>for</strong>evacuum sealing to absorb excess moistureand juices.NOTEVacuum sealing may cause meat todarken. This is due to <strong>the</strong> removal ofoxygen and does not indicate spoilage.Ground Coffee & o<strong>the</strong>r powdery foodsDue to small particle like nature of groundcoffee, it may be necessary to wrap a papertowel around <strong>the</strong> coffee being vacuumsealed, or place <strong>the</strong> coffee in a bag or <strong>the</strong>original packaging prior to vacuum sealing.Non edible itemsThe vacuum sealer sealing can be used tohelp preserve non edible items:Camping, travelling & emergencyequipment.Stays dry and takes up less room when it isvacuum sealed – bandages, matches, clo<strong>the</strong>s,maps, passport, batteries, torches, film, flaresetc.SilverHelps prevent tarnishing. To avoidpuncturing <strong>the</strong> vacuum sealer bags, place apaper towel or soft material over silver priorto vacuum sealing.12

YOUR BREVILLE Fresh KeeperResealing heat sealed bagsWe only recommend using Vacuum sealerbags <strong>for</strong> vacuum sealing, however youare able to reseal bags that have beencommercially heat sealed such as chips, nutsand biscuits.Trim <strong>the</strong> bag in a straight line, wipe awayany greasy reside or crumbs that may inhibit<strong>the</strong> seal. Place <strong>the</strong> bag over <strong>the</strong> sealing areabut not into <strong>the</strong> drip tray and seal.Plastic bags such as zip lock bags or plasticwrap cannot be sealed.13
