G. Niederegger GmbH & Co KG’s quality management inthe production of select marzipan specialities.Marzipan has its origins in the Orient, where it was served at the caliph's table asa special delicacy, and for a long time inEurope, marzipan could only be enjoyedby the elite such as crowned heads, princes and ladies of court. Today,Niederegger marzipan – the epitome ofLübeck marzipan – is one of the mostexclusive confectionery delicacies, asit is still made from expensive speciallyselectedMediterranean almonds.Lübeck marzipan maker Niederegger, produces marzipan products of the finestquality that even surpass the qualityrequirements for fine-grade "LübeckerEdelmarzipan". You can taste it in eachone of the more than 300 Niedereggerspecialties, which are produced from rawmarzipan paste made 100% from thefinest ingredients. The secret of the traditional recipe forNiederegger marzipan is the exact ratio ofalmonds to sugar and a secret ingredientthat is similar to rosewater.Niederegger marzipan is famousthroughout the world for its quality. "Thestrict quality demands governing ourproduction processes have been passeddown from generation to generation sinceour founding in 1806," explains Dr.Carsten Mahn, plant manager atNiederegger. "We have worked togethersuccessfully with METTLER TOLEDO inthe field of product inspection for over 10years," adds Dr. Mahn.

Reducing product giveawayMetal detectors from SAFELINE areintegrated into each of the productionlines. On the production line for"Niederegger Schwarzbrot" an R-SeriesSignature detector with an aperturemeasuring 700 x 125 mm checks theclassic dark chocolate marzipan loavesfor metal contamination. Multiple rowsof loaves are passed through the metaldetector on a wide belt. A retracting beltsystem automatically removes productsthat do not meet Niederegger's highquality requirements.R-Series Signature detectors can beintegrated into many inspection processesincluding conveyorised inspectionapplications. Operation is made easythrough an intuitive user interface.Other features available include dualfrequency technology, which providesmaximum detection sensitivity across awide range of different products. Even theXS3 checkweigher:• Consumer protection and raw material savingsthrough automatic detection and ejection of productsoutside weight tolerances• Touchscreen display with intuitive user interface• Stepless adjustable belt speed• Garvens offers several XS models for various weightranges and diverse applications. Product memory ofup to 200 articles. This makes the XS models idealfor manufacturers with a diverse product rangeSignature metal detector:• Optimum sensitivity and stability• Easy operation• Detector and system validation function• Single and dual-frequency options• Integration with a wide range of conveyor belt systems• Available in a range of finishes and sealing standardstiniest particles of stainless steel whichare notoriously difficult to identify canbe reliably detected. A further R-SeriesSignature detector is used for chocolatemarzipan products. This detector hasan aperture measuring 300 x 75 mmand detects magnetic and non-magneticmetal contaminants as small as 0.6 mmin size.In addition, a dynamic GARVENSS3 checkweigher ensures that theNiederegger products are the correctweight. Any products that are above orbelow the required weight are ejected fromthe production process by an automaticsorting function.Reliable, precise and fast weighingtechnology from METTLER TOLEDOensures that a consistent level of productquality is maintained at Niederegger.Signature metal detector assuring quality"Schwarzbrot" loaves are checked for traces of metalMETTLER TOLEDO offers both SAFELINEand GARVENS equipment covering thefull scope of modern product inspectionin a single entity. Ensuring high qualityX-ray Inspection SystemsEnsure Product IntegrityImagine you have been looking forward to a bar of chocolate all day. When youfinally sit down to enjoy it, you discover that the chocolate contains contaminationor you open the box to find missing or broken pieces? SAFELINE x-ray technologycan be used by confectionery manufacturers to help avoid such quality defects, helping ensure customer satisfaction. The new InspireX R20 SL ensures productfreshness by checking the seal integrityand measures gross or zoned mass forportion control to protect profitability.Confectionery packets where productis detected in the seal are eliminated asthis can mean the pack is not air tight, compromising quality. SAFELINE's x-raysystem can eliminate metal contaminantswhilst simultaneously using the massfunction to check the correct numberof items in a box. Throughput can bemaximised without compromisingproduct quality by simultaneouslyinspecting multiple lanes rather thanconverging these multiple lanes into asingle lane. Gross and zoned mass, aswell as contamination inspection canreadily be achieved for multi-laneproducts. Multi-lane capacity maximisesthroughput by increasing the packinspection rate up to 1500 packs perminute depending on pack size, conveyorbelt speed and number of lanes.www.mt.com/safeline-xrayX-ray inspection systems providecomplete brand protectionProtecting your brand by ensuringproduct quality and safety is paramountin a consumer brand driven world. Theconfectionery market grew in valueby 5% in 2007 and the competitionis getting stronger. Technology andequipment for modern chocolate-making,chocolate-coating and packagingrequire a relatively high level of capitalinvestment and that’s why theindustry has to rely on high-volumeproduction and economies of scale forproduction efficiency.Confectionery manufacturers requireassurance of maximum product integrity, with no loss in process efficiency. X-rayinspection systems provide completeproduct integrity by scanning eachindividual product for missing orincomplete confectionery, as well aschecking for contamination in boxescontaining single or multiple layers, providing ultimate brand protection.SAFELINE's x-ray technology is notaffected by temperature changes, which allows optimum sensitivity ofcontamination detection, ensuring fastand reliable detection of foreign bodiessuch as glass, metal, stone and highdensity plastic, whilst maximisingproductivity. The systems also storeimages of rejected products for furtheranalysis and ultimate product traceability. The increasing trend to use foil/metallised packaging to improve productfreshness, does not need to compromiseproduct safety. X-ray inspection candetect for ferrous, non-ferrous andstainless steel metals inside all types ofpackaging, guaranteeing the qualityand safety of confectionery. The systemcan also check the presence of sweetsand that they are placed correctly in acarton or even a metal tin with the lidon. Another application could be theinspection of the thickness of chocolatecoating on moulded confectionery bars.E.g. bars that have internal wafers orbiscuit components missing, can berejected and easily reworked, as the bar isusually solid chocolate and hence muchdenser. This reduces expensive productgiveaway and provides instant returnon investment.Features and Benefits of X-rayinspection systems forconfectionery manufacturers:• Brand protection – offersunsurpassed detection of possiblemetal, glass and mineral stonecontaminants in confectionery• Product safety – cansimultaneously perform grossmass measurement with servofeedback to fillers to reducegiveaway and avoid anynon-compliance• Maximum uptime – due to quickproduct changeovers using asingle user friendly interface• Low cost of ownership – lowenergy x-rays are used negatingthe need to water cool thecabinet system• Easy integration into confectioneryproduction lines due to smallfootprint and bespoke design• Full traceability – identification ofthe user, all events, hourly testand log of reject imagesInspirex R20 X-ray inspection system with reject mechanismThe special seal inspection software checks between the outer green line and theinner black line only, for dark pixels - i.e. product in the sealSAFELINE's high contrast array enables verification of the seal integrity; the standard arraychecks for contamination, incorrect fills and mass measurement4 METTLER TOLEDO Confectionery News METTLER TOLEDO Confectionery News 5

Optimising production processesFeedback from GARVENS CheckweighersPrevents Costly OverfillConfectionery producers process high-grade, expensive ingredients – such aspistachio marzipan and fine liqueurs. Checkweighers from GARVENS not only allowthe completeness of product packages to be precisely controlled, they also helpprevent costly overfilling with their optional feedback control.Filling machines are automaticallyadjusted by the checkweigher in realtimeas soon as the fill quantity deviatesfrom the target weight. With this feature,an investment in a modern checkweighercan pay for itself in a short time. Theupper and lower limits can be set in thefeedback control menu and be tailoredto the respective filling machine usingcorrection factors and intervals. The diagram below shows the feedbackcontrol screen. Point 1 shows underfillingof products which have been rejected.Point 2 shows overfilling of products. Ifthe weight values are above or below thetolerance limits, the checkweigher sendsdetails for the necessary correction to thefilling machine, which then adjusts thedosing volume accordingly. This significantly reduces the likelihood offurther underweight products and just asimportant, minimises costly overfilling.www.mt.com/garvensGuiding the WayTo Effective Metal DetectionIn today’s increasingly competitive confectionery marketplace, newlegislation, industry standards and the growing influence of regulatorybodies have accelerated the demand for effective metal detection programmes. The exacting requirements of retailer organisations have also fuelled the need forefficient metal detection in all confectionery manufacturing processes.Installing metal detectors isnot enoughIn most modern manufacturing plants, the mere installation of metal detectorswill not guarantee that metal-free productis produced. For that to be achieved, thedetectors must form part of an overallmetal detection strategy. It is essential that all manufacturersendeavour to implement procedureswhich provide the peace of mind that allpossible steps are being taken to minimiseinstances of contamination. The definitive guideTo assist in developing such a strategy,METTLER TOLEDO SAFELINE haspublished a 64-page comprehensive metaldetection manual.Specifically developed for the global foodproduction industry, this definitive guideis essential reading for those involvedin understanding and implementingmetal detection technology – key foreffective brand protection, proving duediligence and showing compliancewith legislation.Significantly updatedEntitled ‘Reduction of MetalContamination – Building an EffectiveProgramme’, this guide replaces theoriginal SAFELINE Guide to ReducingMetal Contamination (‘The Red Book’).It has now been significantly updated, presenting the most up to date thinkingand practices. The guide details the criticalaspects for the creation, implementationand maintenance of an effective metaldetection programme, in a clearly writtenformat, supported by useful diagrams, charts and illustrations. In producing this guide, METTLERTOLEDO SAFELINE aims to ensure thatmanufacturers have access to all of thenecessary information to set up sucha programme. For more information, or to request yourown personal copy, please visit:www.mt.com/mdguideRequest your personal copy today! The guide has been made available free of charge to all manufacturers. To request your free personal copy, please visit:Feedback control feature with GARVENS XS checkweigherwww.mt.com/mdguide6 METTLER TOLEDO Confectionery News METTLER TOLEDO Confectionery News 7
