It beganas a concept to establish a largebrewpub in the Seattle market, butwith a grander scale of wholesaledistribution than your averagebrewpub. <strong>The</strong> original location, inSeattle’s Capitol Hill, houses a 20-barrel brewing system and a fullservice restaurant and bar. In thepast, the site has hosted live music,large parties, benefits and beerfestivals. From 1997 to 2000 Elysianoperated a small, 4-barrel breweryand tavern at Sega Gameworks indowntown Seattle. <strong>The</strong> smallerlocation allowed the brewers toexperiment and craft unique specialtybeers in smaller batches. A year afterpulling out of Gameworks, in March2001, a new location was opened inthe Greenlake neighborhood. DubbedElysian-Tangletown, it is sited at theold home of the Honey Bear Bakery,a Seattle institution that closed itsdoors in 1999. <strong>The</strong> Greenlake sitehouses a 3-barrel brewing system, aswell as a full service restaurant andbar, allowing the brewers to onceagain craft those special brews. Sinceinception, Elysian has brewed over 60different beers, in large batches andsmall, including 6 always-flowingstandards, and 8 seasonal brews.


Grolsch BreweryMillerCoorsIn the seventeenth century, Holland’sGolden Age of influential Guilds, theprofessional brewer was highlyesteemed. A famous Dutch masterbrewer by the name of Peter Cuyper,from Grolle (present-day Groenlo), theNetherlands (a.k.a. Holland) was theson in law of the first recorded ownerof the famous Grolsch breweryfounded in 1615; Willem Neerfeldt.Groenlo translated means ‘green woodor forest’, hence Grolsch; ‘beer fromthe green forest’. In 1676Cuyper was appointed GuildMaster of all brewers inGrolle and introduced hisfellow brewers to the bestmethods and taught thesecrets of brewing goodbeer to the youngergenerations. Over theyears, beer from Grollegained something of areputation. It was PeterCuyper who wasresponsible forrefining the naturalmethod of beerbrewing, the samemethod used byGrolsch to thispresent day, almostfour centuries later.Olde English Malt LiquorOlde English 800, commonly referredto as “OE800”, is one of America’sleading malt liquor brands. OE wears thecrown because it is the “King of MaltLiquors”.Olde English High Gravity 800 wasintroduced in 2001. It features thesame smooth taste of the original OE,with an 8 percent alcohol by volume.

Pilotstoday still call their much moreadvanced autopilots by the sameaffectionate name.You can’t always be right there whena customer is deciding what beer toget, or whether they’re going to get abeer at all. You’re with othercustomers, you’re cooking, you’re onthe phone; you may not even knowthe customer’s making a decision andcould use some guidance. Maybe yourstaff isn’t as well-trained as you’d likejust yet, maybe they’re busy. Whathappens with that customer?Ask George for some help. In thiscase, it’s not an autopilot, it’s aproduct description: a shelf-talker, abeverage menu, or suggested beerpairings on your main menu.
