Having completed his education in 1972, Dewan was given theopportunity to work in the prestigious Golf Club of New Delhi’s kitchen for the summer. It is here, that his culinaryinterests were sparked and he kept his “summer job” for three years. In 1975, now sure of his passion, he enrolled in a 10month intensive chef’s training course at the Five star Ashoka Hotel, Delhi, from the Ashoka, Chef Bisht then went to Fivestar Lodi Hotel in New Delhi for 16 months as chef-de-Party.In 1978, he left India for Bahrain, in the gulf of the Middle East, there he was chef for the newly open Indian restaurant,Amir, till 1981. Then on to the Gaylord Indian <strong>Restaurant</strong> in Kobe, Japan where he worked from 1982 till 1995.In 1995, Chef Bisht came to California, as executive Chef at Nawab of India, Santa Monica.
