One that is oftenoverlooked, but deserves to bein the spotlight is fennel. Oftenmislabeled as anise, fennel is amember of the Apiaceae family.It has a mild, slightly sweet anise or licorice flavor. It isalso an excellent source of vitamin C, dietary fiber,and potassium.Local fennel can be purchased at the <strong>Schenectady</strong>Greenmarket (Sundays, <strong>10</strong> a.m.-2 p.m.), the TroyFarmers Market (Saturdays, 9 a.m.-1 p.m.), and theSaratoga Farmers Market (Saturdays, 9 a.m.-1 p.m.).Look for small and firm white bulbs that are free ofbruises and blemishes. <strong>The</strong> stalks should be crisp, likecelery, with light and feathery fronds.Shaved Fennel and Apple Salad1 1/2 Tablespoons Apple cider vinegar1/3 Cup Extra-virgin olive oilSalt and Pepper to taste1 Bulb fennel, very thinly sliced1 Granny Smith apple, peeled, cored, and thinly sliced.Fennel fronds, as needed (approximately 1/2 Tbsp)Begin by preparing the dressing. Place the apple cidervinegar in a bowl and, while whisking, slowly add theolive oil. Season the dressing with a small amount ofsalt and pepper. She was selected as a consultant to thenational Advisory Committee for INTELECOM’sAnatomy and Physiology Project.In the next fewyears, thousands ofscience students atcommunity collegesacross the countrycould be watchingscenarios suggestedby Dr. SyedaMunaim, AssociateProfessor in theMathematics,Science andTechnologyDepartment.Syeda was selectedfrom among facultyfrom across thecountry to serve as aconsultant on theAdvisory Committee for INTELECOM’s Anatomy and PhysiologyProject. <strong>The</strong> group consisted of educators from a variety of health caredisciplines, including medicine, nursing, allied health physicians assistantand pharmacy. INTELECOM (Intelligent Telecommunications), is aCalifornia-based non-profit corporation and producer of curriculum-basedmedia for online, distance and classroom learning.Syeda travelled to Pasadena, Calif., last month for a weekend session,providing her insight about how students in her anatomy and physiologyclasses could benefit from real-life video clip scenarios to help them graspdifficult concepts. <strong>The</strong> streamlined clips would accompany all chapters instandard anatomy and physiology textbooks used at SCCC and in collegesthroughout the country. For example, videos would include interviewswith doctors and surgeons and actors portraying real scenarios that wouldbenefit students.“<strong>The</strong>y (INTELECOM) are really trying to reach students like ours, suchas nursing students and allied health students. We were central to thediscussion.
