Alzheimer’s disease is one of the fastest-growing chronic conditions in the U.S. By<br />

making certain nutrition and lifestyle choices we may protect ourselves from this<br />

common form of dementia. In this class, Dr. Dornbusch discusses how free radicals<br />

impact Alzheimer’s disease, as well as steps to reduce your exposure to them. He will<br />

Over the past 5,000 years, Traditional Chinese Medicine (TCM) has developed into a<br />

Intensify the Flavors of Fall with<br />

Roasted Vegetables<br />

Oven-roasting is a simple technique that enhances the flavor of almost any vegetable. With<br />

as few as three simple ingredients, you can create a savory side dish the entire family will<br />

love. The dry heat of the oven provides a range of results from sweet and tender on the<br />

inside to slightly crispy on the outside.<br />

Roasting is an excellent cooking method when entertaining. Roasted vegetables can be<br />

served hot out of the oven or at room temperature.<br />

TIP: When roasting several different vegetables together, cut them all to a similar size for uniform roasting.<br />

Roasted Cauliflower<br />

and Broccoli Combo<br />

Serves 4<br />

1 head of cauliflower, rinsed, trimmed<br />

and cut into florets<br />

1 pound broccoli, rinsed, trimmed<br />

and cut into florets (similar in<br />

size to cauliflower)<br />

2 cloves of garlic, peeled and<br />

coarsely minced<br />

3-4 Tbls melted pasture butter<br />

or coconut oil<br />

Coarse sea salt and freshly ground<br />

black pepper<br />

Parmesan cheese, grated (optional)<br />

Preheat oven to 425°F. In a large<br />

roasting pan or rimmed baking dish,<br />

toss cauliflower, broccoli and garlic with<br />

melted pasture butter or coconut oil.<br />

Sprinkle with sea salt and freshly ground<br />

black pepper and place in oven. Bake<br />

for 5 minutes at 425°F. Reduce heat<br />

to 375°F for about 20 minutes, stirring<br />

occasionally, until veggies are tender.<br />

Remove from oven, sprinkle with grated<br />

Parmesan cheese and serve immediately.<br />

Roasted Root<br />

Vegetable Confetti<br />

Serves 6<br />

1 celeriac root, peeled and grated<br />

2 large beets, peeled and grated<br />

2 parsnips, peeled and grated<br />

1 rutabaga, peeled and grated<br />

2 carrots, peeled and grated<br />

3 Tbls coconut oil, melted<br />

1 ½” piece of ginger, peeled and grated<br />

2 garlic cloves, crushed<br />

Salt and pepper<br />

Fresh parsley, washed and chopped<br />

Preheat oven to 375°F. In a large bowl<br />

toss together grated vegetables, oil,<br />

ginger, garlic, salt and pepper. Spoon<br />

vegetable mixture into a 13 x 9 inch<br />

baking dish. Place baking dish on bottom<br />

oven rack. Bake for 30 minutes, stirring<br />

occasionally. Remove from oven. Adjust<br />

salt and pepper. Garnish with fresh<br />

chopped herbs. Serve warm from the<br />

oven or at room temperature.<br />

Ginger Parsnip<br />

Pear Crisp<br />

Finish off your fall menu with this warm pear crisp infused with a hint of cardamom.<br />

Serves 6<br />

Crumble Topping:<br />

½ cup almond flour<br />

½ cup coconut palm sugar<br />

½ cup cold pasture butter, cubed<br />

½ cup hazelnuts<br />

¼ cup crystallized ginger<br />

2 tsp ground cardamom<br />

1 tsp cinnamon<br />

¼ tsp nutmeg<br />

Pear and Parsnip Filling:<br />

5 pears, peeled, cored and cubed<br />

4 medium parsnips, peeled and grated<br />

½ cup dried figs, stemmed and chopped<br />

2 Tbls lemon juice<br />

2 tsp vanilla<br />

1 tsp ground ginger<br />

1 tsp cinnamon<br />

¼ tsp sea salt<br />

Preheat oven to 350°F. In a food processor, pulse all crumble topping ingredients until a<br />

coarse crumb forms. Mixture should hold together when pinched between your fingers.<br />

Set aside.<br />

In a medium bowl, toss together pears, parsnips, figs, lemon juice, vanilla, ground<br />

ginger, cinnamon and sea salt. Spread pear and parsnip mixture in a 9 x 13 baking dish.<br />

Top filling with crumble topping mixture. Place baking dish on middle oven rack. Bake<br />

30 to 40 minutes until filling is cooked through and crumble is browned. Let cool for 20<br />

minutes and top with your favorite ice cream.
