Edible EducationCranberry Orange LoafMakes 1 loaf, serves 6 to 82 cups all-purpose flour1 cup sugar1½ tsp baking powder1/2 tsp baking soda1/2 tsp salt1 large egg, well beaten1½ tbsp orange zest (or orange purée)3/4 cup fresh orange juice1 tsp vanilla extract4 tbsp unsalted butter, melted1 cup fresh or frozen cranberries, roughly chopped1/2 cup pecans (optional)Preheat the oven to 175 C (350 F). Grease a 9-inch by 5-inch loaf pan.In large bowl, whisk flour, sugar, baking powder, baking soda and salt.Whisk together beaten eggs, melted butter, vanilla extract, orange juice and zest.Stir into flour mixture until blended. Fold in the cranberries and pecans, beingcareful not to over mix. Pour into the prepared loaf pan.Bake for 45 to 60 minutes, until the loaf springs back when lightlytouched, or until a toothpick inserted into the centre of the loaf comesout clean.Allow to stand 10 to 15 minutes.
