<strong>Sunterra</strong> RecipeShepherd’s PieMEAT FILLING1 lb lean ground beef1 tbsp canola oil1 bay leaf1 tsp minced garlic1 medium onion, finely chopped1 stalk celery, diced (¼-inch dice)1 medium carrot, diced (¼-inch dice)½ cup green peas1 sprig fresh rosemary, finely chopped1 sprig fresh thyme, finely chopped1 tbsp flour (optional)½ cup to 1 cup beef stock1 tsp Worcestershire sauce1/4 cup corn kernals (optional)Salt and pepper to tasteCOOKINGBoil potatoes in salted water until tender. Mash the potatoes and stir in cream, butter,garlic, parsley and pepper.Mashed Potato Topping:5 medium-sized potatoes¼ cup cream or buttermilk¼ tsp minced garlic2-3 tbsp butter or margarine1 tbsp fresh parsley, roughly choppedSalt and pepper to tasteHeat oil in a skillet and sauté ground beef until lightly brown. Drain excess fat. Addonion, garlic and bay leaf and sauté for two to three minutes. Add vegetables, spicesand Worcestershire sauce and sauté about five minutes. If desired, sprinkle flour evenlyover the meat and vegetables and stir until flour is blended. Add beef stock and simmeruntil meat and vegetables are tender and moisture is absorbed. Discard bay leaf.Transfer filling to a shallow casserole dish and scoop or spread mashed potatoes ontop of filling. Bake at 350 o F (180 o C) for 25 to 35 minutes or until potatoes are goldenbrown and meat is bubbling.
