<strong>FIBROUS</strong> <strong>Casings</strong><br />
<strong>FIBROUS</strong> <strong>Casings</strong> are a unique combination of regenerated cellulose applied to a special paper<br />
for exceptional strength and diameter uniformity. These casings can be used for a wide range of<br />
applications including pepperoni, salami, luncheon meats, boneless hams and other deli-style<br />
processed meats. They are ideal for slicing products requiring precise diameter control. Fibrous<br />
<strong>Casings</strong> can also be used for processed and smoked cheeses.<br />

Colors: A wide range of standard colors are available to meet all your product needs.<br />
Treatments: A variety of casing treatments have been tailored to provide meat adhesion or quick<br />
release after cooking/cooling.<br />
– E-Z PEEL ® <strong>FIBROUS</strong> is an internal treatment to promote easy release of the casing from<br />
the final product. The casing lifts away from the product quickly and cleanly, leaving no<br />
scarring of the product surface.<br />
– DS/SL <strong>FIBROUS</strong> has an inner surface treatment designed to promote adhesion to<br />
proteins. This treatment is used to ensure the casing adheres tightly to meat products like<br />
pepperoni or dried salami during the drying process. DS/SL treatments are also used for<br />
luncheon meats to minimize jelly pockets during cooking.<br />
Natural Colors/Flavors: Fibrous casings can be impregnated with natural colors or flavors to<br />
impart a unique finished appearance, taste or both to processed meats.<br />
– <strong>FIBROUS</strong> SMOKE MASTER ® casing is a pre-moisturized Fibrous casing treated with<br />
natural liquid smoke that will transfer smoke flavor and color to the surface of the product.<br />
<strong>FIBROUS</strong> SMOKE MASTER ® casings are available in low to strong smoke flavor as well<br />
as light to dark transfer colors.<br />
– <strong>FIBROUS</strong> COLOR MASTER casing is a pre-moisturized Fibrous casing that provides a<br />
caramel color to the surface of the product. Caramel colors range from golden to dark brown.<br />

Finish Formats:<br />
– <strong>Casings</strong> are available shirred, cut/clipped or rolls<br />
requiring soaking prior to use. Fibrous casings are<br />
also available pre-humidified as SHIRMATIC ® and<br />
Express (shirred) or REELKASE ® , ROLLMATIC ® (roll)<br />
forms are ready to use from the carton.<br />
– Pre-sticking is available on Fibrous casings.<br />
Pre-sticking is small holes that allow air evacuation<br />
during stuffing and excess surface water/fat to<br />
escape during cooking. Many different holes sizes<br />
and patterns are available.<br />
Moisture Proof (MP): For specific applications requiring<br />
moisture and oxygen barrier properties, MP casings are<br />
available. These are Fibrous casings with a moisture proof<br />
coating applied to the casing surface.<br />
Printing: Our presses are capable of one to eight color<br />
graphics to print front/back sides of the casing for product<br />
branding as well as nutrition and ingredient panels.<br />
Product Usage<br />
SOAKING: Fibrous casings which are not pre-humidified, must be soaked in water prior to use.<br />
The minimum recommended soaking time is 20 minutes in warm water 80° - 100° F (27° - 38° C).<br />
Pre-humidified casings (COLOR MASTER, Express, REELKASE ® , REELSMOKE ® , ROLLMATIC ® ,<br />
SHIRMATIC ® , and SMOKE MASTER ® ) do not require soaking prior to use.<br />
STUFFING / CLIPPING: It is important to select the proper clip size and clipping pressure to<br />
assure a tight fit without causing damage to the casing.<br />
Storage & Handling<br />
Store Fibrous casing in a cool, dry place avoiding proximity to heat sources as well as hot or<br />
freezing storage areas. Pre-humidified casings should be stored at temperatures between 55°<br />
to 75° F (12° - 24° C) and should remain sealed in original containers until ready for use. Unused<br />
casings should be kept in airtight bags and replaced in the original carton to maintain proper<br />
moisture content. Keep stock current by using the oldest stock first. To avoid possible damage, it<br />
is imperative that knives, sharp instruments and hooks not be used to open cartons.<br />
