Casings are formulated to minimize purging.<br />
VISCOAT COLOR MASTER Casings from <strong>Viskase</strong> are 4.3 mils /<br />
110 µ and multi-layer, barrier casings that are treated with natural<br />
colors to impart a unique finished appearance to processed meats.<br />
Casings are ready to use and our remarkable Diameter Control<br />
ensures optimum productivity, reducing product giveaway.<br />
VISCOAT COLOR MASTER incorporates an Oxygen and<br />
Moisture Barrier, which eliminates the need for peeling, repackaging<br />
and the transfer of moisture, while maximizing product yield during<br />
cooking.<br />
� Caramel P: provides a uniform golden to brown color on the surface of poultry products that<br />
gives the look of an oven-roasted turkey<br />
� Caramel H: provides a light to dark brown color to the surface of ham products where an<br />
oven-roasted or oil-browned color and appearance are needed<br />
� Caramel B: provides a mottled black color on the surface of roast beef / Black Forest ham<br />
that enhances the natural meat colors<br />
� Caramel S: provides a mix of smoke flavor and smoke / caramel color to the surface of ham<br />

Storage & Handling<br />
VISCOAT COLOR MASTER Casings should be stored in a cool, dry place away from steam<br />
pipes, hot storage areas or direct sunlight. The recommended storage temperature is<br />
40° - 85° F (4° - 30° C). Keep stock fresh by usin g the oldest stock first. Store cartons with<br />
product label showing. To avoid possible damage to casings, do not use sharp knives,<br />
instruments or hooks to open cartons.<br />
