The <strong>Chinese</strong> calendarfollows a 12-year pattern, with each yearnamed after an animal.There are several legends to explain this,but <strong>Reflect</strong>’s favourite is about an animalrace, organised by the Jade Emperor, inwhich the first twelve animals to cross thefast flowing river would be the winners andthey would each have a year of the zodiacnamed after them.The winning animals were, in order, the Rat,Ox, Tiger, Rabbit, Dragon, Snake, Horse,Goat, Monkey, Rooster, Dog, and finally theBoar. Unfortunately, the Cat missed out asthe mean Rat, who was riding on the backof the Ox with the cat, had pushed him intothe water; the Cat was very angry with theRat and since then cats have never beenfriends with rats.To help you celebrate the <strong>Year</strong> of theRabbit, <strong>Reflect</strong> have once again asked ourresident chef, Neil Walker, to come up witha delicious recipe…Hong Kong Style Sweet & Sour Chickenwith Chow Mein NoodlesWhen I was asked to write this recipefor <strong>Chinese</strong> <strong>New</strong> <strong>Year</strong>, I struggled to thinkexactly what to do! I don’t really cook<strong>Chinese</strong> food here at the restaurant andI didn’t want to just copy something froma recipe, so I thought back to my days asa Navy Chef, cooking ‘en-masse’ for 1,000hungry lads on the aircraft carrier – HMSInvincible.This recipe always went down well as it isfull of flavour and texture, plus it used tobe so easy to prepare in advance. Ok, so itmight not be true to its origins - I’m sure<strong>Chinese</strong> chefs don’t use tomato ketchupand golden syrup! - but it was all we had onboard at the time!Try and be really organised and haveeverything chopped, measured out andready to go as timing is essential in thisdish…IngredientsFor the noodles:1 packet of dry noodles1 onion, sliced4 tbsp soy sauce1 tbsp fish sauceFor the chicken:4 chicken breasts2 tbsp corn flour½ tsp salt1lt vegetable oilFor the sauce:3 tbsp vinegar1 green and 1 red pepper, cubed1 onion, diced1 small tin of pineapple rings, diced2 tbsp golden syrup4 tbsp tomato ketchup½ pint orange juice1 garlic clove, crushed2 tbsp corn flourStep 1 – make the noodles1. Fry the onion in a little vegetable oil for 2minutes. Cook noodles according to packetinstructions.2. Drain the noodles and add to the pan withthe soy and fish sauce and cook for a fewminutes.Step 2 – make the sauce1. Heat the vinegar, syrup, ketchup, orangejuice and garlic in a saucepan and bring tothe boil.2. Mix the corn flour with a little water,gradually adding to thicken the sauce.3. Add the peppers, onions and pineapple andsimmer gently for 5 minutes.Step 3 – make the chicken1. Heat the vegetable oil in a large wok orsaucepan.2. Dice the chicken breast into 1 inch cubes(approx) and toss in the corn flour and salt,coating the chicken evenly.3. Fry off the chicken in two batches forapprox 3 minutes and drain on kitchen paper– cut 1 piece in half to check if it’s cooked.Step 4 – serve and enjoy1. Having worked at the RVC’s pig unit priorto 1960, Joyce has always kept pigs and establishedher small herd of Gloucester Old Spots in 1985 –the oldest spotted pedigree breed in the world.A founder member of the Gloucester Old SpotsPig Breeders Club, a group established in 1990 topromote these pigs and assist breeders, Joyce ispassionate about the breed. She says: “They’re verydocile animals, which makes them very easy to handle.The Gloucester Old Spots is also an attractive pig withtheir spots, you’re never sure what markings you’re goingto end up with and of course, the meat is lovely!”Joyce’s pigs are based on a family-run mixed stockfarm, based near Ware, Hertfordshire, and areloose-housed within straw yards during the winter.Very little medication is used during the rearingprocess, only routine worming, and the herdis made up of just one boar and six sows, whoproduce, on average, two litters a year, as Joyceexplains: “Most people who rear rare breed pigs tendto focus on just a small number; personally six sows andone boar is the most I can manage, as our farm alsoproduces beef, sheep and turkey. As each sow producestwo litters and an average of 10 to 15 piglets per litter,I find they keep me very busy throughout the year.”Bloodlines differ in every breed; on the femaleside of the Gloucester Old Spots, the bloodlinesthat Joyce currently breeds include Princess Joan,Princess Mary and Star Antoinette, whilst allGloucester boars are one of four bloodlines, withJoyce’s being a Gerald.The majority of the farm’s Gloucester Old Spotsare sold as pedigree stock at around eight weeks toprivate customers, whilst the rest go for fatteningand are used for their tasty pork. Joyce says: “All ourpigs are sold privately to regular customers who mainlyfind us through word of mouth. I like to think we havea very good reputation locally and I think that oncesomeone has found they are happy with our pigs theytend to come back time and time again. This is sound advice.Writing about what you know will help youraudience to relate to your piece as well asidentify with you as an author.Writing fiction allows your imagination towander and your juices to flow, but makesure your story has a well planned structureand your story will write itself. The best plotsdevelop from well-structured characters sodon’t neglect your storytellers – make sureyou give them an interesting life.Also, when writing a novel, the mostimportant pages are the first and last. Thebeginning needs to make the reader wantto continue and the end needs to satisfyyour audience by tying up every looseend. It’s important to introduce your maincharacters as soon as possible; you canexplain their background as you get furtherinto the book.To write a non-fiction publication, youmust be well versed in your subject matterfor obvious reasons. The introductoryparagraph must inform the reader of thesubject matter of your article and theclosing paragraph must sum up yourconclusions.However, just writing about what you knowwon’t challenge you. Step outside yourcomfort zone once in a while and writeabout something you know nothing about.Make sure you do your research first!Finally, get a friend or relative to readthrough any drafts to ensure your spelling,punctuation and grammar is spot on beforeyou send your draft off to publishers. In2009, that number rocketed to 259 and by last November alone, 248 calls hadalready been made to the RSPCA.The public should take extra care when using antifreeze to avoid spillagesor leaks as cats may lap it up, either neat or when water coolant leaks fromcar radiators. Left over antifreeze and water coolant should also be disposedresponsibly. The safest way is to take it in a suitable container to a council refusesite which should have facilities for disposing of hazardous fluids.

Martin Pearson, ownerof the Kelso-based company, explainsthe origins of the product, he says: “I wasinvolved with the original development ofthe tests while working for another companyback in 1997. The original tests weredeveloped for a <strong>New</strong> Zealand company whohave been marketing them in NZ for the lastten years.”WeeFoal 38 can be used to diagnose and monitorthe pregnancy status of equines from 38 to 120 daysafter breeding. A single step equine test, WeeFoal38 tests for the presence of high levels of eCGswithin the mare’s urine and gives an accurate result.WeeFoal 120 is designed to diagnose and monitorpregnancy from 120 to 300 days after breeding,using the same methods and technology as WeeFoal38.
