• Cream of Green — Allow a package of frozenspinach to thaw, or use leftover chopped, cookedkale or collard greens. (This recipe does not workwell with fresh spinach.) Drain the greens well andadd to the blender. Add soft silken tofu, mashedpotatoes, or vegan sour cream and purée. Seas<strong>on</strong>with garlic or <strong>on</strong>i<strong>on</strong> powder or nutriti<strong>on</strong>al yeast.If you like, you can add in some shredded vegancheddar cheese, which will melt and add texturewhen heated.• Broccoli or Cauliflower Cheddar Soup —<str<strong>on</strong>g>An</str<strong>on</strong>g>other good way to use leftovers!
