a good supply of fuel ahead, as storms and accidents mightinterrupt the supply--not to speak of strikes.But our particular message now is in respect to food.We advise a fair supply of staple goods which do notrun into money--rice, beans, peas, oatmeal, potatoes, salt,sugar. What we have enumerated are staples. Boughtin reasonable quantities, they are the cheapest, as well asthe most wholesome food. The rice and the potatoes arerich in starch, while the beans and peas are richlynitrogenous and largely take the place of meats in supportof the human system.Meat in moderate quantities is wholesome and desirable,but not indispensable where beans and peas areused freely. However, certain portions of beef are soldcheap everywhere, the objection usually being that thecheap portions are tough. We want to give our readersa recipe, by the use of which they can always have tendermeat, even though they buy the cheapest and toughest.The recipe is the use of a small quantity of the bestvinegar in the preparation of the meat. Press the toughpieces of meat tightly into a jar, and put just enoughwater on it to cover it. Note the quantity of water used,and allow two teaspoonfuls of vinegar to a pint of water--a tablespoonful to a quart, and in same proportion forlarger quantities. Let this vinegar and water remain uponthe meat over night. In the morning cook your meat inwhatever way you may please, and it will be tender. Thesame treatment will make the toughest fowls tender. Ifthe vinegar is not quite good and strong, a larger quantitywill be needed. In frying steak, a teaspoonful of vinegarput into a large frying-pan will give the steak a spicyflavor and make it tender.
