BEVERAGES AND DESSERTS 383Cookies.— Mix 4 cups flour with 3 teaspoonsbaking powder <strong>and</strong> i cup sugar; pour into this 4tablespoons melted butter or drippings; add i cupraisins <strong>and</strong> i teaspoon cinnamon <strong>and</strong> cloves or allspice.Mix with enough water to make of the consistencyof biscuit dough. Roll out to about 3^inch thick (or thinner if raisins are omitted). Cutwith top of baking powder can, <strong>and</strong> bake to a lightbrown.. Puddings are either baked In an oven or reflector,or boiled in a cloth bag. Baked puddings arequickest <strong>and</strong> easiest to manage. A few examplesof simple puddings are given below. They may bevaried Indefinitely, according to materials available.Deep tin pudding pans are convenient to bake in.Snow may be substituted for eggs (see page 353).Rice Pudding.— Mix i pint cold boiled rice withI quart milk <strong>and</strong> sugar to taste. Put in a wellgreasedpan, dust nutmeg or cinnamon over thetop, <strong>and</strong> bake slowly one hour. Seeded raisins arean agreeable addition. A couple of eggs make the puddingricher.Fruit Pudding.— Line a deep dish or pan, wellgreased, with slices of buttered bread. Then putin a layer of fruit, dusting it with sugar <strong>and</strong> dottingwith small lumps of butter. Repeat these•alternate laj^ers until the dish Is full, the last layerbeing bread. Bake 3^ to ^ hour, with moderateheat. Eat hot, with the sweet sauce given below.Cottage Pudding.—1 pint flour,1/2 pint sugar,y2 pint milk,2 heaped tablespoonfuls butter,2 teaspoonfuls baking powder,Grated rind of a lemon,Mix thoroughly the flour <strong>and</strong> baking powder.Hub the butter <strong>and</strong> sugar to a cream, add the milk
